本发明公开了一种无糖型金银花甘露的生产方法,它包括以下步骤:将柠檬酸、苹果酸、抗坏血酸、山梨醇、木糖醇、甜叶菊苷及金银花原汁用水溶解,搅拌后静置6‑24h,取上清液,先用板框压滤,然后向滤液中加入复合澄清剂,搅拌后静置4‑20h,最后用超声波反渗透过滤,滤液装瓶后灭菌,即得。本发明不仅能有效去除金银花甘露中的沉淀物,延长产品的贮藏期,产品常温下保质期达到24个月,产品达到无糖型,与没有采用静置、板框压滤、澄清和超声波反渗透过滤特定的联合技术相比,绿原酸等功能活性成分含量提高30-60%,提高产品的营养价值和风味口感,从而增强了产品的综合竞争力。

关于无糖型饮料的生产技术已有专利报道,中国发明专利申请号CN201710214367.7,公开了一种无糖型青钱柳饮料制备工艺,包括以下步骤: (1)青钱柳叶粉碎:粉碎至40-120目;(2)一次超声波控温提取;(4)二次超 高压提取;(5)将一次提取液和二次提取液混合,得到青钱青钱柳提取混合液; (6)调味,向青钱青钱柳提取混合液中添加木糖醇和β-环糊精;(7)过滤,将调 配好的饮料通过超滤膜过滤系统,进一步去除饮料中的细小杂质;(8)灭菌: 将饮料进行灭菌;(9)灌装:无菌灌装。本发明的优点是口感良好,且活动成 分提取率高、生物活性好;中国发明专利申请号CN201510353909.X公开了一 种无糖型生脉饮口服液,其次公开了所述的无糖型生脉饮口服液的制备方法, 其步骤如下:a)称取红参、麦冬和五味子并混合粉碎成粗粉,向粗粉中加入3-5 倍质量的乙醇,浸泡24-48h,渗漉,收集4000-5000ml渗漉液,减压浓缩至约 200-300ml,加水稀释,将稀释液搅匀并加入pH调节剂调至pH值为6.5-8.0, 然后置于4-8℃条件下冷藏48-72h;b)将冷藏后的稀释液置于4-8℃条件下以 10000-15000rpm的转速离心20-30min,向离心得到的上清液中先加防腐剂,再 加水至1000ml,然后用pH调节剂调节pH值至6.5-7.5,再加入缓冲剂,搅匀灌封,灭菌,即得。采用本发明公开的方法不仅使得稀释液的过滤效果好,而且过 滤速度快,同时制备得到的生脉饮口感好和稳定性非常好,可以进行大规模的 产业化生产;中国发明专利申请号CN201510128745.0一种无糖型芒果酸饮料 及其生产方法,其特征在于:包括如下步骤:(1)护色:将芒果的果肉片浸泡 在含0.2-1.0%食盐和0.2-1.0%抗坏血酸的混合液中5-30分钟;(2)循环打浆: 将经护色后的果肉片,分成若干小份,先取其中一小份加入0.2-1.0%抗坏血酸 的水溶液进行打浆,直至完全变成均匀的浆液,过滤得到芒果汁,再加入另一 小份芒果继续打浆,依次循环,获得浓度为20-50%的芒果汁;(3)加酶:向每千 克芒果汁中添加0.01-0.2%蛋白酶;(4)静置澄清:将加酶后的芒果汁静置, 离心去除沉淀,得到澄清芒果汁;(5)调配:每100重量份的澄清芒果汁添加 低聚果糖2-40重量份、三氯蔗糖0.005-0.03重量份作为甜味剂及菌种发 酵的营养成分,然后加热灭菌后,降温至35-45℃;(6)接种与厌氧发酵:加热 灭菌的芒果汁接种2-5%嗜热链球菌和2-5%双歧杆菌的菌液进行混合发酵,密 封进行厌氧发酵6-24h;(7)灭菌与罐装:发酵后芒果汁离心去除菌体,加热煮 沸灭菌,按每100重量份芒果汁的添加荸荠皮提取液5-20重量份,然后罐装保 存。
为了提高产品的稳定性,延长贮存期,CN 108201047A、CN 103271401A 等专利文献都采用了微孔滤膜过滤的方式,但这种方式只能除去部分大分子 物质,不能除去一些分子量相对较小且不稳定的成分,导致产品稳定性仍然 很差。为此,CN 105211440A、CN106360219A等专利文献采用了酶解技术, 即通过加入果胶酶、纤维素酶等对金银花提取物进行酶解,将大分子酶解成 小分子,从而提高产品的质量稳定性。但是这种方法又会使活性物质在酶解 过程中遭到破坏,从而降低产品的营养价值和口感。
发明内容
本发明的目的是针对上述缺陷,提供一种无糖型金银花甘露的的制备方 法,该方法通过联合采用静置、板框压滤、澄清和超声波反渗透过滤等技术, 从而提高无糖型金银花甘露感官品质,保留维生素C等营养物质,延长产品 的贮藏期。
上述目的是通过以下技术方案实现的:
一种无糖型金银花甘露的制备方法,包括以下步骤:
将柠檬酸、苹果酸、抗坏血酸、山梨醇、木糖醇及甜叶菊苷用水溶解, 然后加入金银花原汁,搅拌后静置6-24h,取上清液,先用板框压滤,然后向 滤液中加入复合澄清剂,搅拌后静置4-20h,最后用超声波反渗透过滤,反渗 透过滤液装瓶后灭菌,即得,
所述复合澄清剂由蒙脱石、单宁、明胶及壳聚糖组成,质量比为(1-5): (0.5-3):(0.5-3):(0.5-3);
所述个原料的重量份数为:
优选地,所述蒙脱石、单宁、明胶及壳聚糖的质量比为2:1:1:1。
优选地,所述复合澄清剂的加入量为板框压滤后滤液重量的4-14%。
优选地,所述超声波反渗透过滤膜截留分子量为10-100kDa,反渗透工作 压力0.5-0.9Mpa,超声波功率5-25KHz。
本发明的有益效果是:
1)本发明采用了采用静置、板框压滤、澄清和超声波反渗透过滤特定的 联合技术,金银花的利用率达到100%,与没有采用静置、板框压滤、澄清和 超声波反渗透过滤特定的联合技术相比,绿原酸等功能活性成分含量提高30 -60%。
2)本发明制得的无糖型金银花甘露稳定性好,常温下(25℃)保质期达 到24个月。
3)本发明制得的是无糖型(糖≤0.5g/100ml)金银花甘露,口感、色泽 好,营养丰富,老少咸宜,且特别适合糖尿病人和肥胖病人。高产品的营养 价值和风味口感,从而增强了产品的综合竞争力,本发明还具有生产效率高、 成本低等优点。
具体实施方式
下面结合具体实施例对本发明进行详细说明。
实施例1
取水100公斤、金银花原汁17.5公斤,柠檬酸0.3公斤,苹果酸0.3公斤, 抗坏血酸0.3公斤,山梨醇2.1公斤,木糖醇2.1公斤及甜叶菊苷2.1公斤, 混合均匀。取混合溶液搅拌后静置15h,取上清液,先用板框压滤,然后向滤 液中加入复合澄清剂(蒙脱石、单宁、明胶及壳聚糖=2:1:1:1),复合澄清剂加 入量为滤液重量的9%,搅拌后静置12h,最后用截留分子量为55kDa、反渗 透工作压力0.7Mpa及超声波功率15KHz的超声波反渗透过滤,反渗透过滤 液装瓶后灭菌,即得产品,产品常温下(25℃)保质期达到24个月,产品达 到无糖型(糖≤0.5g/100ml)。
实施例2
取水100公斤、金银花原汁5公斤,柠檬酸0.1公斤,苹果酸0.1公斤, 抗坏血酸0.1公斤,山梨醇0.2公斤,木糖醇0.2公斤及甜叶菊苷0.2公斤, 混合均匀。取混合溶液搅拌后静置6h,取上清液,先用板框压滤,然后向滤 液中加入复合澄清剂(蒙脱石、单宁、明胶及壳聚糖=2:1:1:1),复合澄清剂加 入量为滤液重量的4%,搅拌后静置12h,最后用截留分子量为10kDa、反渗 透工作压力0.5Mpa及超声波功率5KHz的超声波反渗透过滤,反渗透过滤液 装瓶后灭菌,即得产品,产品常温下(25℃)保质期达到24个月,产品达到 无糖型(糖≤0.5g/100ml)。
实施例3
取水100公斤、金银花原汁30公斤,柠檬酸0.5公斤,苹果酸0.5公斤, 抗坏血酸0.5公斤,山梨醇4公斤,木糖醇4公斤及甜叶菊苷4公斤,混合均 匀。取混合溶液搅拌后静置24h,取上清液,先用压板压滤,然后向滤液中加 入复合澄清剂(蒙脱石、单宁、明胶及壳聚糖=2:1:1:1),复合澄清剂加入量为 滤液重量的14%,搅拌后静置12h,最后用截留分子量为100kDa、反渗透工 作压力0.9Mpa及超声波功率25KHz的超声波反渗透过滤,反渗透过滤液装 瓶后灭菌,即得产品,产品常温下(25℃)保质期达到24个月,产品达到无 糖型(糖≤0.5g/100ml)。

1.一种无糖型金银花甘露的生产方法,其特征在于:包括以下步骤:
将柠檬酸、苹果酸、抗坏血酸、山梨醇、木糖醇及甜叶菊苷用水溶解,然后加入金银花原汁,搅拌后静置6-24h,取上清液,先用板框压滤,然后向滤液中加入复合澄清剂,搅拌后静置4-20h,最后用超声波反渗透过滤,反渗透过滤液装瓶后灭菌,即得,
所述复合澄清剂由蒙脱石、单宁、明胶及壳聚糖组成,质量比为(1-5):(0.5-3):(0.5-3):(0.5-3);
