现有技术中有一些针对灵芝饮品的工艺。如CN201010246739.2公开了“一种灵芝脱苦及灵芝饮料制作的方法”,本发明涉及一种灵芝脱苦及灵芝饮料制作的方法。包括以下操作步骤:(1)将干燥或新鲜的灵芝子实体,清净切成灵芝碎片;(2)用脱苦剂浸泡灵芝碎片,过滤,收集滤渣即为脱苦灵芝;(3)取脱苦灵芝,加水煮沸,过滤,滤液补水,离心后得到脱苦灵芝水提液;(4)在脱苦灵芝水提液中加入食品添加剂进行调配,得到调配液;(5)将调配液在60~70℃下加热5~10min进行催熟处理,得催熟液;(6)催熟液经过包装、巴氏灭菌后即得到成品灵芝饮料。灵芝饮料呈橘黄色,有淡淡的灵芝特有香味。根据调配工艺的不同,可得到清香淡雅型、浓香爽口型和酸甜可口型三种不同口味的灵芝饮料。又如CN201210560042.1公开了一种“复方灵芝饮料及其制作方法”,具体方法如下:该复方灵芝饮料包含以下重量体积比的原料:赤芝子实体1~5%、葛根和/或葛花0.5~3%、猴头菇0.1~2%、金针菇0.1~2%,其余为纯净水。其制作方法包括:1)制作第一提取液;2)制作第二提取液;3)提取液过滤并定容;4)滤膜过滤;5)灌装灭菌即得。本发明的复方灵芝饮料制作方法,其提取方法既可使产品中赤芝的特有香气和芝味得到充分释出,又能抑制赤芝的苦味物质和带异味的变性蛋白溶出。通过该制作方法制作的复方灵芝饮料,可充分发挥多种食用菇、芝的特点和协同作用,作为一种特色饮品,味甘而香,可用于日常饮用,也可用于宴会酒席,并且具有提高免疫功能、增进健康、护肝、解酒、养胃等功效。又如CN201610330534.X,本发明公开了一种补气养血的红豆灵芝饮料及其制备方法,由以下重量份的原料组成:红豆45~75份、红枣12~20份、南瓜20~30份、桂圆15~25份、红萝卜15~30份、香菇3~10份、蜂蜜10~30份、灵芝5~10份、当归1~4份、葛根2~5份、黄氏1~4份、党参1~3份、茯苓1~5份、枸杞2~7份、茶粉3~10份、调味料5~15份;所述调味料由以下重量份的原料组成:柠檬酸1~3份、麦芽糊精1~3份、淀粉酶0.5~2.5份、杏仁粉2~5份、核桃粉4~10份。本发明红豆灵芝饮料,制作简单,添加的南瓜和红萝卜等都是颇佳的补血佳品,当归、葛根等中药的添加,具有提高人体免疫力,补气养血等保健功能。又如CN200410039181.5,本发明公开了一种灵芝饮料及其制造方法。为解决现有灵芝饮料产品口感差的问题,其原料包括灵芝的水提取物;其原料还包括前项提取后的滤渣用复合水解酶进一步降解后的水溶物脱水后再用酒精溶解法脱除异味成分的产物;灵芝的水提取物是灵芝的常温水提物或和50-80℃水提物,水提用水量为灵芝重量的5~15倍,浸泡时间为1~3小时,提取方法还包括灵芝原料的粉碎和提取液的离心和真空浓缩;灵芝原料与成品饮料的重量比为0.1~20%。因此,其不含苦味成分,既具有灵芝的药理作用,又具有好的口感和丰富的营养,更符合现代人的消费要求,推广前景非常广阔。又如CN99122644.5,公开了“一种灵芝饮料及其生产方法”,本发明以灵芝提取液为主料,添加多种成份配以纯净水的灵芝饮料,其组份包括红茶水、白砂糖、柠檬酸、柠檬酸钠、苯甲酸钠、乙基麦芽粉、红茶香精、冰红茶香精。灵芝提取液是以灵芝与纯净水按1∶10煮沸浸泡制得。其生产方法是将上述的组份按一定的重量份额,分六个步骤进行,所制得的灵芝饮料不但可生津止渴,还具有健身、提神、防病的功效,该发明适于长期饮用,不受任何限制。
目前众多的灵芝饮品配方及生产工艺,存在以下四个方面的不足:
1.为了减少灵芝饮料的苦味,提高饮料的口感,采用将灵芝中的苦味物质脱除,或抑制苦味物质溶出的方法。而灵芝中呈苦味的是三萜类化合物,其具有抗肿瘤、保肝和抗过敏等重要的保健作用,是灵芝子实体中主要的功能性物质,以脱苦与抑溶方式来提高饮料的口感,会减弱灵芝饮料的保健效果。
2.采用酒精溶解法脱除异味成分,来消除灵芝饮料不愉快的菇味。这种方法同样会使灵芝中的一些醇溶性功能性物质丢失,在矫正饮料气味的同时,减弱了灵芝饮料的保健效果。
3.配方繁琐,主次不清,并添加香精、防腐剂等,削弱了灵芝饮品的真正价值。
4.工艺复杂,欠合理。如长时间的高温提取与灭菌,造成灵芝功能性成份的损失;还有采用酶解、发酵等工艺制作灵芝饮料,实用价值不大。
发明内容
为了克服上述背景技术中存在的缺陷,本发明提供一种灵芝仙草露及其制备方法。该配方采用功能强化,风味互补的原则设计;制备方法采用虹吸式连续萃取法用温水萃取有效成份,同时采用超高温瞬时灭菌法进行灭菌,尽量减少萃取及杀菌过程中的功能性成份损失,工艺简单易行。本发明在提高了灵芝饮料的香味、口感、色泽的同时,有效保存和强化了灵芝饮料的保健功效。
为了达到上述目的,本发明采用了如下技术方案:
一种灵芝仙草露,其配方包含如下质量份:灵芝干品0.15%~0.5%,仙草干品0.01%~0.1%,甜味料0%~7%,水92.4%~99.84%。
上述的甜味料包括白砂糖、冰糖、木糖醇、罗汉果甜苷、甜菊糖苷、三氯蔗糖、安赛蜜的一种或几种的混合物。
本发明还提供了上述灵芝仙草露的制备方法,包含如下步骤:
(1)原料挑选:取灵芝与仙草干品选优去劣,并去除泥砂等杂异物,用无菌水冲洗干净;
(2)混合粉碎:为了提高萃取效果,将清洗后的灵芝与仙草混合粉碎;
(3)萃取:用虹吸式连续提取罐萃取。具体操作如下:将无菌水贮罐中泵入一定量的无菌温水,然后将灵芝仙草混合粉碎物置于萃取罐中,打开进水阀加入混合物总质量的50~100倍的温水,关闭进水阀,将混合物与温水搅拌均匀,浸泡一段时间,然后开启进水阀与萃取液出口阀,调节流量平衡与萃取时间,萃取结束后,虹吸管会将萃取罐中的料液会自动抽出,废渣从排渣阀排出;
(4)粗滤:将萃取液粗滤去渣,得粗滤液;
(5)配料:将粗滤液与甜味料混合溶解,定容;
(6)精滤:将定容后的料液精滤;
(7)灭菌包装:将精滤后的料液,用超高温瞬时灭菌,经无菌包装后即为成品。
在优选的实施方式中,步骤(3)的灵芝仙草混合物浸泡及萃取温度为40~60℃。
在优选的实施方式中,步骤(3)的灵芝仙草混合物温水浸泡时间为15~30min,萃取时间为30~60min。
在优选的实施方式中,步骤(4)的粗滤介质密度为80~100目。
在优选的实施方式中,步骤(5)的精滤介质密度为0.4~0.6μm。
在优选的实施方式中,步骤(7)的超高温瞬时灭菌条件为温度135~138℃,时间为8~12S。
本发明与现有技术相比具有以下显著优点:
1.配方简洁,配伍合理:第一,改善风味利用仙草的清香抑制灵芝不愉快的菇味,同时
仙草中所含的凝胶多糖能明显压抑灵芝中三萜类物质的苦味感,能在不改变饮料营养保
健功能前提下,使饮料香气更好,苦味更少;第二,增强保健功效利用仙草降血压,
降血糖,保肝护肝的功效,强化灵芝的保健功能,使饮料的综合保健效果更佳。
2.工艺合理:为了减少原料香气成份挥发及功能性物质的热破坏,采用无菌温水提取法,
并采用超高温瞬时灭菌法进行灭菌,能有效减少原料有效成份损失及香气的逃逸。本发
明的虹吸连续提取法,具有效成份提取率高,工艺简洁流畅等优点。

具体实施方式
下面将参照实施例具体详细地解释本发明。但应当理解,实施例仅用于解释本发明实施方案,本发明不受这些实施例的限制。
实施例1
1.配方:灵芝干品3kg,仙草干品0.3kg,冰糖60kg,水936.7kg。
2.制作工工艺如下:
(1)原料挑选
取灵芝3kg与仙草干品0.3kg分挑选去除泥砂等杂异物,并用无菌水冲洗干净;
(2)混合粉碎
为了提高萃取效果,将清洗后的灵芝与仙草混合,粉碎至茸状;
(3)萃取
将无菌水贮罐1中泵入一定950kg的无菌温水,调节水温至50℃,然后将灵芝仙草混合粉碎物置于萃取罐4中,打开进水阀2加入250kg温水,关闭进水阀2,将混合物与温水搅拌均匀,浸泡一段20min,然后开启进口阀2与萃取液出口阀7,调节流量平衡,将萃取时间调节在45min,萃取结束后,虹吸管6会将萃取罐4中的料液会自动排空,废渣从排渣阀5排出,最后得萃取液925kg;
(4)粗滤
将萃取液用100目过滤介质粗滤去渣,得粗滤液;
(5)配料
交将粗滤液与甜味料混合溶解,最后将总料液用无菌水定容至1000kg;
(6)精滤
将定容后的料液用0.4μm的过滤介质精滤,得精滤液;
(7)灭菌装瓶
将精滤后的料液,经超高温瞬时灭菌,杀菌条件为135℃,12S,然后迅速冷却至40℃,进行无菌灌装,经检验合格后即为成品。
实施例2
1.配方:灵芝干品3.5kg,仙草干品0.5kg,木糖醇55kg,水941kg。
2.制作工工艺如下:
(1)原料挑选
取灵芝3.5kg与仙草干品0.5kg分挑选去除泥砂等杂异物,并用无菌水冲洗干净;
(2)混合粉碎
为了提高萃取效果,将清洗后的灵芝与仙草混合,粉碎至茸状;
(3)萃取
将无菌水贮罐1中泵入一定960kg的无菌温水,调节水温至60℃,然后将灵芝仙草混合粉碎物置于萃取罐4中,打开进水阀2加入300kg温水,关闭进水阀2,将混合物与温水搅拌均匀,浸泡一段15min,然后开启进口阀2与萃取液出口阀7,调节流量平衡,将萃取时间调节在50min,萃取结束后,虹吸管6会将萃取罐1中的料液会自动排空,废渣从排渣阀5排出,最后得萃取液930kg;
(4)粗滤
将萃取液用80目过滤介质粗滤去渣,得粗滤液;
(5)配料
交将粗滤液与甜味料混合溶解,最后将总料液用无菌水定容至1000kg;
(6)精滤
将定容后的料液用0.6μm的过滤介质精滤,得精滤液;
(7)灭菌装瓶
将精滤后的料液,经超高温瞬时灭菌,杀菌条件为138℃,8S,然后迅速冷却至40℃,进行无菌灌装,经检验合格后即为成品。
实施例3
1.配方:灵芝干品2.4kg,仙草干品0.4kg,罗汉果甜苷0.2kg,水997kg。
2.制作工工艺如下:
(1)原料挑选
取灵芝2.4kg与仙草干品0.4kg分挑选去除泥砂等杂异物,并用无菌水冲洗干净;
(2)混合粉碎
为了提高萃取效果,将清洗后的灵芝与仙草混合,粉碎至茸状;
(3)萃取
将无菌水贮罐1中泵入一定1000kg的无菌温水,调节水温至55℃,然后将灵芝仙草混合粉碎物置于萃取罐4中,打开进水阀2加入280kg温水,关闭进水阀2,将混合物与温水搅拌均匀,浸泡一段30min,然后开启进口阀2与萃取液出口阀7,调节流量平衡,将萃取时间调节在60min,萃取结束后,虹吸管6会将萃取罐4中的料液会自动排空,废渣从排渣阀5排出,最后得萃取液975kg;
(4)粗滤
将萃取液用100目过滤介质粗滤去渣,得粗滤液;
(5)配料
交将粗滤液与甜味料混合溶解,最后将总料液用无菌水定容至1000kg;
(6)精滤
将定容后的料液用0.4μm的过滤介质精滤,得精滤液;
(7)灭菌装瓶
将精滤后的料液,经超高温瞬时灭菌,杀菌条件为135℃,12S,然后迅速冷却至40℃,进行无菌灌装,经检验合格后即为成品。
上述实施例1、2和3的配方工艺所得到的灵芝仙草露,香味醇和,色泽清亮,口感甜爽略苦,并具有增强人体免疫力,调节血糖,控制血压,辅助肿瘤放化疗,保肝护肝,促进睡眠等方面的功效。本发明的制造方法简单易行,适宜于规模化工业生产。
以上实施例显示和描述了本发明的基本原理和主要特征和本发明的优点。本行业的技术人员应该了解,本发明不受上述实施例的限制,上述实施例和说明书中描述的只是说明本发明的原理,而不是以任何方式限制本发明的范围,在不脱离本发明范围的前提下,本发明还会有各种变化和改进,这些变化和改进都落入要求保护的范围内。
Claims (7)
1.一种灵芝仙草露,其特征在于,其配方包含如下质量份:灵芝干品0.15%~0.5%,仙草干品0.01%~0.1%,甜味料0%~7%,水92.4%~99.84%。
2.根椐权利要求1所述的灵芝仙草露,其特征在于,所述的甜味料包括白砂糖、冰糖、木糖醇、罗汉果甜苷、甜菊糖苷、三氯蔗糖、安赛蜜的一种或几种的混合物。
3.一种如权利要求1所述的灵芝仙草露的制备方法,其特征在于,包含如下步骤:
(1)原料挑选:取灵芝与仙草干品选优去劣,并去除泥砂等杂异物,用无菌水冲洗干净;
(2)混合粉碎:为了提高萃取效果,将清洗后的灵芝与仙草混合粉碎;
(3)萃取:用虹吸式连续提取罐萃取,具体操作如下:将无菌水贮罐中泵入一定量的无菌温水,然后将灵芝仙草混合粉碎物置于萃取罐中,打开进水阀加入混合物总质量的50~100倍的温水,关闭进水阀,将混合物与温水搅拌均匀,浸泡一段时间,然后开启进水阀与萃取液出口阀,调节流量平衡与萃取时间,萃取结束后,虹吸管会将萃取罐中的料液会自动抽出,废渣从排渣阀排出;

4.根椐权利要求3所述的灵芝仙草露的制备方法,其特征在于,步骤(3)中浸泡及萃取温度为40~60℃,浸泡时间为15~30min,萃取时间为30~60min。
5.根椐权利3所述的灵芝仙草露的制备方法,其特征在于,步骤(4)的粗滤介质密度为80~100目。
6.根椐权利要求3所述的灵芝仙草露的制备方法,其特征在于,步骤(5)的精滤介质密度为0.4~0.6μm。
7.根椐权利要求3所述的灵芝仙草露的制备方法,其特征在于,步骤(7)的超高温瞬时灭菌条件为温度135~138℃,时间为8~12S。
