背景技术
石斛,别名:石斛兰、石兰、吊兰花、金钗石斛、枫豆,呈圆柱形或扁圆柱形,长约30cm,直径0.4-1.2cm,表面黄绿色,光滑或有纵纹,节明显,色较深,节上有膜质叶鞘。肉质多汁,易折断。气微,味微苦而回甜,嚼之有黏性。石斛是我国古文献中最早记载的兰科植物之一,2000年以前《神农本草经》中就有记载,其味甘淡微咸,性属清润,清中有补,补中有清,能养阴清热,益胃生津。有一定解热镇痛作用,能促进胃液分泌,助消化;还有增强新陈代谢、抗衰老、延年益寿等作用。石斛是我国传统的名贵中药,现代临床医学证实,石斛能抑制肾脏微粒体Na/K-ATP酶活性,可滋阴清热。目前糖尿病逐渐成为影响人类健康的第一大杀手。现代医学研究表明,石斛可显著降低糖尿病菌模型大鼠血糖、胰高血糖素,增加胰岛素、C肽的分泌。抑制胰岛素降解,提高胰岛素敏感指数,抑制游离脂肪酸的分泌,显著降低肥胖糖尿病模型大鼠的肿瘤坏死因子,千年以来它一直和灵芝,人参,冬虫夏草等一样被列为上品中药。
石斛的营养价值极高,是传统的名贵药材,因目前加工工艺上的不足,易导致石斛在加工过程中营养成分的流失,也造成了资源上的浪费。将石斛加工成一种石斛保健酒,不仅提高了原料的营养价值和经济价值,也同时增加了一种石斛的深加工产品。
发明内容
本发明要解决的技术问题是提供一种石斛保健酒的酿造方法,采用金钗石斛为原料,辅以云苓、夜交藤、紫菀、乌灵参、红门兰,经破壁粉碎、提取、密封发酵、后发酵、超滤膜澄清、陈酿等加工工序,制得的成品保健酒营养价值高、酒香独特,口感醇绵,还具有益胃生津、清热镇痛、降低血糖、延年益寿的功效。
本发明解决其技术问题所采取的技术方案是:
一种石斛保健酒的酿造方法,其特征在于,采用以下生产步骤:
(1)清洗:选择新鲜、肉质多汁的野生金钗石斛的茎为原材料,洗净、去除杂质后,用淘米水浸泡30-40分钟,捞出,沥干;淘米水具有较强的清洁杀菌作用,有效地清洗石斛表面的顽固污渍;
(2)烘软:将石斛放置烘箱中,在60-65℃的条件下进行温火烘制,烘制时间15-20分钟,待石斛肉质变软,切成2-3cm的小段;
(3)破壁粉碎:先将石斛进行微波低温干燥处理,再采用超微破壁粉碎机,将石斛破壁粉碎,既减少了石斛的营养成分流失,也保留了其有效成分,超微粉碎细度为320-350目,温度为45-50℃,相对湿度保持在35-40%,粉碎得到石斛超微粉;
(4)药汁提取:锅中入水煮沸,加入云苓、夜交藤、紫菀、乌灵参、红门兰,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
(5)密封发酵:将冷冻干燥后的活性干酵母复水活化,得到活化酵母液;取25%石斛超微粉、30%药粉和45%药汁,混合均匀,加入2-5%活化酵母液,入旋转发酵罐中进行密封发酵,使原料进行充分发酵,提高成品酒的口感与质量,温度控制在25-28℃,时间为12-18小时;
(6)后发酵:采用螺旋连续式压滤机进行过滤,得发酵醪液;将发酵醪液泵入发酵桶中开始后发酵,时间为8-10小时,过滤,得后发酵醪液;
(7)澄清:将后发酵醪液泵入膜分离设备中,采用超滤膜法,得澄清液;
(8)陈酿、提取:将澄清液倒入木桶中,加入少许柠檬酸,陈酿10-12个月,再采用回流法进行提取,得到成品酒;
(9)杀菌、包装:采用巴氏灭菌,温度为90-100℃,杀菌后用玻璃瓶趁热灌装,密封包装,即为成品。
有益效果:本发明采用石斛为原料,辅以云苓、夜交藤、紫菀、乌灵参、红门兰,经破壁粉碎、提取、密封发酵、后发酵、超滤膜澄清、陈酿等加工工序,制得的成品保健酒营养价值高、酒香独特,口感醇绵,还具有益胃生津、清热镇痛、降低血糖、延年益寿的功效,是一种滋补养生、营养价值极高的保健品,酒香醇绵,自然纯正。
具体实施方式
实施例1:
一种石斛保健酒的酿造方法,其特征在于,采用以下生产步骤:
(1)清洗:选择新鲜、肉质多汁的野生紫皮石斛的茎为原材料,洗净、去除杂质后,用淘米水浸泡20分钟,捞出,沥干;淘米水具有较强的清洁杀菌作用,有效地清洗石斛表面的顽固污渍;
(2)烘软:将石斛放置烘箱中,在45℃的条件下进行低温烘制,烘制时间30分钟,待石斛肉质变软,切成4cm的小段;
(3)破壁粉碎:先将石斛进行真空干燥处理,再采用超微破壁粉碎机,将石斛破壁粉碎,既减少了石斛的营养成分流失,也保留了其有效成分,超微粉碎细度为400目,温度为60℃,相对湿度保持在28%,粉碎得到石斛超微粉;
(4)药汁提取:锅中入水煮沸,加入天麦冬、女贞子、莪术、雪莲、赤芍,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
(5)密封发酵:将冷冻干燥后的活性干酵母复水活化,得到活化酵母液;取35%石斛超微粉、25%药粉和40%药汁,混合均匀,加入8-10%活化酵母液,入连续式发酵罐中进行密封发酵,使原料进行充分发酵,提高成品酒的口感与质量,温度控制在20℃,时间为8-10小时;
(6)后发酵:采用气囊压榨机进行压榨过滤,得发酵醪液;将发酵醪液泵入发酵桶中开始后发酵,时间为15小时,过滤,得发酵醪液;
(7)澄清:将发酵醪液泵入膜分离设备中,采用超滤膜法,得澄清液;
(8)陈酿、提取:将澄清液倒入木桶中,加入少许苹果酸,陈酿1年,再采用回流法进行提取,得到成品酒;
(9)杀菌、包装:采用巴氏灭菌,温度为85℃,杀菌后用玻璃瓶趁热灌装,密封包装,即为成品。

一种石斛保健酒的酿造方法,其特征在于,采用以下生产步骤:
(1)清洗:选择新鲜、肉质多汁的野生铁皮石斛的茎为原材料,洗净、去除杂质后,用淘米水浸泡50分钟,捞出,沥干;淘米水具有较强的清洁杀菌作用,有效地清洗石斛表面的顽固污渍;
(2)烘软:将石斛置于阳光下烘晒1-2天,再放于阴凉处回软2-3天,将其切成2-3cm的小段;
(3)破壁粉碎:先将石斛进行微波真空干燥处理,再采用超微破壁粉碎机,将石斛破壁粉碎,既减少了石斛的营养成分流失,也保留了其有效成分,超微粉碎细度为280目,温度为58℃,相对湿度保持在42%,粉碎得到石斛超微粉;

(5)密封发酵:将冷冻干燥后的活性干酵母复水活化,得到活化酵母液;取20%石斛超微粉、45%药粉和35%药汁,混合均匀,加入6-8%活化酵母液,入旋转发酵罐中进行密封发酵,使原料进行充分发酵,提高成品酒的口感与质量,温度控制在35℃,时间为6-8小时;
(6)后发酵:采用卧式双压板式压滤机进行过滤,得发酵醪液;将发酵醪液泵入发酵桶中开始后发酵,时间为15小时,过滤,得发酵醪液;
(7)澄清:将发酵醪液泵加入明胶和单宁,静置一周,采用虹吸法吸取上清液,得澄清液;
(8)陈酿、提取:将澄清液倒入木桶中,加入少许柠檬酸,陈酿18个月,再采用超声波提取,得到成品酒;
(9)杀菌、包装:采用水浴加热灭菌,温度为105℃,杀菌后用玻璃瓶趁热灌装,密封包装,即为成品。

一种石斛保健酒的酿造方法,其特征在于,采用以下生产步骤:
(1)清洗:选择新鲜、肉质多汁的野生金钗石斛的茎为原材料,洗净、去除杂质后,用淘米水浸泡30-40分钟,捞出,沥干;淘米水具有较强的清洁杀菌作用,有效地清洗石斛表面的顽固污渍;
(2)烘软:将石斛放置烘箱中,在70℃的条件下进行温火烘制,烘制时间10分钟,待石斛肉质变软,切成2-3cm的小段;
(3)破壁粉碎:先将石斛进行冷冻干燥处理,再采用超微破壁粉碎机,将石斛破壁粉碎,既减少了石斛的营养成分流失,也保留了其有效成分,超微粉碎细度为420目,温度为60℃,相对湿度保持在36%,粉碎得到石斛超微粉;
(4)药汁提取:锅中入水煮沸,加入姬松茸精粉、冬凌草、泽兰、沙参、蜂胶粉,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
(5)密封发酵:采用试管斜面活化,将纯种葡萄酒酵母接入8°Bé的麦芽糖汁制成的斜面培养基上,在28℃下培养15小时后,得到酵母活化液;取30%石斛超微粉、30%药粉和40%药汁,混合均匀,加入8%活化酵母液,入旋转发酵罐中进行密封发酵,使原料进行充分发酵,提高成品酒的口感与质量,温度控制在22℃,时间为10小时,待发酵醪中的残糖降至0.1%,发酵结束;
(6)后发酵:采用硅藻土过滤机进行过滤,得发酵醪液;将发酵醪液泵入发酵桶中开始后发酵,时间为20小时,过滤,得发酵醪液;
(7)澄清:采用冷热处理,先发酵醪液迅速降温至-3~-5℃,处理3-5小时,再置于密闭容器中加热至75℃,保持20分钟,待其自然冷却,微孔过滤,得澄清液;
(8)陈酿、提取:将澄清液倒入木桶中,陈酿2-3年,再采用预水解SBE技术进行提取,得到成品酒;
(9)杀菌、包装:采用板式热交换器杀菌,温度为65℃,杀菌后用玻璃瓶趁热灌装,密封包装,即为成品。

(2)烘软:将石斛放置烘箱中,在60-65℃的条件下进行温火烘制,烘制时间15-20分钟,待石斛肉质变软,切成2-3cm的小段;
(3)破壁粉碎:先将石斛进行微波低温干燥处理,再采用超微破壁粉碎机,将石斛破壁粉碎,超微粉碎细度为320-350目,温度为45-50℃,相对湿度保持在35-40%,粉碎得到石斛超微粉;
(4)药汁提取:锅中入水煮沸,加入云苓、夜交藤、紫菀、乌灵参、红门兰,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
