Abstract
本发明公开了一种具有锁钙补钙强骨功能的胶原营养面条,其主要由下列重量份的原料所构成:面粉70~90份;胶原蛋白0.1~10份;魔芋粉0.1~10份;钙源(优选柠檬酸钙)0.1~10份;水25~40份;和食盐1~3份。本发明制成的面条因为添加了魔芋粉口感好、Q弹,不容易断条,不糊汤,且其中添加的胶原蛋白、柠檬酸钙具有锁钙补钙强骨功能的保健作用,对人体的营养摄入以及营养成分的补充都具有积极的作用,既能够满足日常饮食需要又能达到锁钙补钙强骨的保健作用。

技术领域
本发明涉及一种配方组合物,尤其涉及一种以面粉(优选小麦粉)、胶原蛋白、魔芋粉、钙源(优选柠檬酸钙)、水、食盐为原料制备的辅助补钙的营养配方产品(例如,胶原营养面条)。
背景技术
小麦粉挂面,是中国比较喜欢和经常食用的一种主要面食产品,但是其营养成分只有小麦淀粉和膳食纤维,且弹性不足、口感一般,且营养成分单调。只能满足人们现在生活的一般要求,无法满足人体对其它高营养成分的需求。
魔芋,主要成分是葡甘聚糖,其化学结构是由分子比1:1.6~1.7的葡萄糖和甘露糖残基通过β-1,4糖苷键聚合而成的高分子杂多糖,属于可溶性半纤维素。含有十六种氨基酸、十种矿物质微量元素和丰富的食物纤维,低热、低脂、低糖。葡甘聚糖作为膳食纤维,不含热量,有饱腹感,且能减少和延缓葡萄糖的吸收,是糖尿病的良好辅助药物,且可预防肥胖和缓慢减肥。对预防和治疗结肠癌、乳腺癌、肥胖症的人群是一种治病健体的食品,还能使血液内胆固醇降低;魔芋还能降低甘油三脂水平,且血脂达正常水平后不再持续下降,调节脂质代谢。魔芋粉的加入能使挂面口感更好,且不容易断条。
柠檬酸钙属于有机钙源的一种,与无机钙源相比生物利用率高,钙质吸收好,对肾、尿结石的影响很小;柠檬酸钙中钙质的吸收与胃酸水平无关,不会引起胃酸分泌水平较低的人出现肠胃道反应。添加柠檬酸钙以保持骨骼在生长中钙的来源充足,而且柠檬酸钙可以促进人体对锌的吸收。
因此,开发一款口感好、Q弹,不容易断条,不糊汤的面条,既能够满足日常饮食需要又能达到锁钙补钙强骨的保健作用,具有十分重要的意义。
发明内容
本发明提供了一种具有锁钙补钙强骨功能的胶原营养面条,既能够满足日常饮食需要又能达到锁钙补钙强骨的保健作用。
因此,本发明提供以下各项:
1.一种具有锁钙补钙强骨功能的营养配方产品(例如,胶原营养面条产品),其中所述配方产品按重量份计包含以下各项或由以下各项组成:面粉(优选小麦粉)70~90份;胶原蛋白0.1~10份;魔芋粉0.1~10份;钙源(优选柠檬酸钙)0.1~10份;水25~40份;食盐1~3份。优选上述重量份(除了配料“水”)是干重重量份。术语“干重”在本文中意思是含水量低于5%(wt),优选低于4%、3%、2%、1%、0.5%、0.2%或0.1%。
2.根据以上1所述的配方产品,其中所述配方产品按重量份计包含以下各项或由以下各项组成:小麦粉80~90份;胶原蛋白5~10份;魔芋粉5~10份;柠檬酸钙5~10份;水30~40份;和食盐2~3份。
3.根据以上1或2所述的配方产品,其中所述胶原蛋白为I型胶原蛋白、II型胶原蛋白(复合骨胶原)、III型胶原蛋白或它们的混合物,和/或来源于生物软骨(如鸡软骨、鱼软骨、牛软骨、猪软骨及其它生物软骨)、鱼鳞、动物皮肤(如鱼皮、猪皮、牛皮及其它生物皮肤)、生物肌腱组织、骨骼提取制得的胶原、骨胶原、骨胶原蛋白、骨胶原蛋白肽、胶原蛋白肽、I型胶原蛋白、II型胶原蛋白(复合骨胶原)、III型胶原蛋白、软骨粉或它们的组合。
4.根据以上1至3中任一项所述的配方产品,其中所述面粉选自由以下组成的组:小麦粉、紫薯粉、荞麦粉、玉米淀粉或它们的组合。
5.根据以上1至4中任一项所述的配方产品,其中所述钙源选自由以下组成的组:柠檬酸钙、醋酸钙、乳矿物盐、碳酸钙、酪蛋白钙、氯化钙、柠檬酸苹果酸钙、葡萄糖酸钙、乳酸钙、苹果酸钙、磷酸氢钙、磷酸二氢钙、磷酸钙、硫酸钙、抗坏血酸钙、甘油磷酸钙及其组合,优选为柠檬酸钙。
6.根据以上1至5中任一项所述的配方产品,其中所述配方产品按重量份计还可包含1-10份的酪蛋白磷酸肽、壳寡糖、酵母β-葡聚糖、大豆异黄酮、葛根(提取物)、姜黄(提取物)、维生素D、维生素K2或它们的组合。
7.根据以上1至6中任一项所述的配方产品,其还包含一种或多种甜味剂、调味剂、稳定剂、着色剂等食品添加剂和/或药用辅料。
8.根据以上1至7中任一项所述的配方产品,其可被配制为粉末、颗粒、溶液、混悬液、片剂、或胶囊的药物制剂形式或被配制成面包、软或硬糖果、特殊医学用途配方食品、饮料、乳制品、奶粉、饼干、面条或代餐产品的食品形式。
9.一种制备根据以上1至8中任一项所述的配方产品的方法,所述方法包括:将所述面粉、胶原蛋白、魔芋粉、钙源、水、食盐制成所述配方制品(例如,食品、保健食品、营养品和药品)。
具体实施方式
根据本发明的一个方面,提供了一种具有锁钙补钙强骨功能的胶原营养面条产品,其中所述含有面粉(优选小麦粉)、胶原蛋白、魔芋粉、钙源(优选柠檬酸钙)、水和食盐。
面粉
在本发明中,面粉是指用于制备面条等产品的主材。根据本发明,面粉可以选自由以下组成的组:小麦粉、紫薯粉、荞麦粉、玉米淀粉或它们的组合。
胶原蛋白[优选含有负电分子粘多糖的II型胶原蛋白(复合骨胶原)]
胶原蛋白是一种生物高分子,是动物结缔组织中的主要成分,也是哺乳动物体内含量最多、分布最广的功能性蛋白,占蛋白质总量的25%~30%,某些生物体甚至高达80%以上。骨骼中的有机质70%-80%是胶原蛋白,是构成骨骼网状结构的物质基础,能够起到促进骨骼的形成、维持骨骼的韧性、提高骨骼强度等作用。
魔芋

酪蛋白磷酸肽(CPP)
酪蛋白磷酸肽是以牛乳酪蛋白为原料,通过生物技术制得的具有生物活性的多肽,可用于各种营养、保健食品中,能有效促进人体对钙、铁、锌等二价矿物营养素的吸收和利用。
酪蛋白磷酸肽是用胰酶或胰蛋白酶水解的酪蛋白,经过精制、纯化制成,其核心结构为:—Se r(P)-Se r(P)-Se r(P)-G lu-G lu-(Se r:丝氨酸,G lu:谷氨酸,P:磷酸基)。这一结构中的磷酸丝氨酸残基(-Se r(P)-)成簇存在,在肠道PH弱碱性环境下带负电荷,可阻止消化酶的进一步作用,使CPP不会被进一步水解而在肠中稳定存在。国内研究发现,CPP中氮与磷的摩尔比值越小,CPP的肽链越短,磷酸基的密度越大,则CPP纯度越高,促进钙的吸收和利用作用也就越强。
钙只有以离子形态存在时才易被吸收,而且在中性和弱碱性环境中又容易与酸根离子形成不溶性盐而流失。CPP对钙的吸收作用主要表现为,在中性和弱碱性环境下能与钙结合,抑制不溶性沉淀的生成,避免钙的流失,最终因游离钙浓度的提高而被动吸收。
对于本发明用于一种具有辅助锁钙补钙强骨功能的胶原产品中各组分的配比,没有特别限制。在本发明的一个优选实施方案中,所述配方产品按重量份计包含以下各项或由以下各项组成:面粉(优选小麦粉)70-90份(例如,70份、75份、80份、85份、90份);胶原蛋白0.1-10份(例如,1份、3份、5份、7份、9份);魔芋粉0.1-10份(例如,1份、3份、5份、7份、9份);钙(离子)源(柠檬酸钙)0.1-10份(例如,1份、3份、5份、7份、9份);水25-40份(例如,25份、30份、35份、40份、45份);食盐(NaCl)1-3份(例如,1份、1.5份、2份、2.5份、3份)。
在本发明的另一个优选实施方案中,本发明用于一种辅助锁钙补钙强骨的胶原营养面条是仅由面粉(优选小麦粉)、胶原蛋白、魔芋粉、钙源(优选柠檬酸钙)、水、食盐组成,优选所述配方产品按重量份计由以下组成:面粉(优选小麦粉)70~90份;胶原蛋白0.1~10份;魔芋粉0.1~10份;钙源(优选柠檬酸钙)0.1~10份;水25~40份;食盐1~3份。
在本发明的另一个实施方案中,所述配方产品还包含另外的锁钙补钙强骨的成分。在一个优选实施方案中,所述配方产品按重量份计还可包含1-50份酪蛋白磷酸肽、壳寡糖、酵母β-葡聚糖、大豆异黄酮、葛根(提取物)、姜黄(提取物)、维生素D、维生素K2或它们的组合。
在本发明的另一个实施方案中,所述配方产品还包含一种或多种药物或食物上可接受的辅剂,例如甜味剂、调味剂、稳定剂、着色剂等食品添加剂和/或药用辅料。
本发明的配方产品可以被配制为粉末、颗粒、溶液、混悬液、片剂、胶囊的药物制剂形式或被配制成面包、软或硬糖果、特殊医学用途食品、饮料、乳制品、奶粉、饼干、面条或代餐产品的食品形式。

在以下实施例/实验中,小麦粉采购自河南金龙面业有限公司(批号:20171001),胶原蛋白(复合骨胶原)采购自湖北和格复合骨胶原生物科技有限公司(批号:20171001),魔芋粉采购自湖北强森魔芋科技有限公司(批号:2017101202),柠檬酸钙采购自山东恒通生物科技有限公司(批号:171025),食盐采购自中盐上海市盐业公司(批号:17101612),水为纯净水。
制备实施例
实施例1:
在该实施例中,本发明的配方产品(组合物)按重量份(除水之外为干重,以下同)包括:小麦粉80份;胶原蛋白5份;魔芋粉5份;柠檬酸钙5份;水30份;食盐1份。根据标准方法制成挂面。
实施例2:
在该实施例中,本发明的配方产品(组合物)按重量份包括:小麦粉85份;胶原蛋白7份;魔芋粉7份;柠檬酸钙5份;水35份;食盐1.5份。根据标准方法制成挂面。
实施例3:
在该实施例中,本发明的配方产品(组合物)按重量份包括:小麦粉90份;胶原蛋白9份;魔芋粉9份;柠檬酸钙6份;水35份;食盐2份。根据标准方法制成挂面。
实施例4:补钙测试动物实验
选用健康SPF级雌性大鼠120只,体重250~270g,5月龄,未交配。随机分配为4组,每组30只。其中1组为正常组,喂食大鼠颗粒饲料;2、3、4组用于大鼠卵巢切除建模(刘康,季晖,李绍瓶,等.三种大鼠骨质疏松模型的比较研究[J].中国骨质疏松杂质,1998,11(4):13-18)。2组为模型空白对照组,喂食大鼠颗粒饲料,3组为投食本发明的配方产品(组合物)实施例3的实验组,4组为投食钙尔奇D600(惠氏制药)阳性对照组。
除正常组外,对2、3、4组进行双侧卵巢切除,术后肌肉注射青霉素0.4ml/250g,连续3天,建成骨质疏松模型。通过对不同组别的大鼠进行投食干预,连续喂食20天,测定大鼠股骨头骨密度(采用双能量X射线骨密度仪,型号:AKDX-09W-I,生产厂家:深圳市艾克瑞电气有限公司)。各组大鼠股骨头骨密度变化结果见表1。

由表1可见连续喂食20天后,食用钙尔奇D600和食用本发明的挂面的大鼠股骨头的骨密度值大致相当。食用本发明的挂面,能够使大鼠的骨密度值恢复到正常值,其效果优于食用钙尔奇D600。证明本发明配方组合物对大鼠骨骼生产、提高骨密度有显著的功效。
实施例5:本发明的应用效果统计实验
选取60名年龄在60-75岁之间是老年人,随机分成两组,对照组和实验组,每组30人。对照组和实验组接受相同的正常标准饮食,不同之处在于对照组每人每日晚餐食用普通市售的面条一顿,实验组每人每日晚餐食用同重量的本发明实施例3生产的面条一顿,食用时间为一个月,实验开始前和饮食干预一个月后分别用超声波骨密度仪检测每人的股骨骨密度,记录骨密度指标T值(骨密度T值:是将检测所得到骨密度(BMD)与健康30~35岁年轻人的骨峰值的比值,骨密度仪可自动显示)。实验统计结果见表2。

结果:对照组,各人骨密度实验前后基本无变化,实验前30人T值平均为-2.1,一个月后T值平均为-2.1;实验组中,实验前30人T值平均为-2.0,一个月后T值平均为-1.6。以上试验结果证明本发明提供的具有锁钙补钙强骨功能的胶原营养面条,能够显著提高人体内钙元素的含量,达到强骨的作用。
实施例6:本发明面条产品的性能测定
经测试,实施例1、实施例2制备的挂面与市售同类面条产品对比,其自然断条率、熟断条率及采用感官模糊评价法的口感好、Q弹、不糊汤得出的数据如下表所示,采用的主要检测方法为:
1、自然断条率、熟断条率按照LS/T 3212-2014挂面粮食行业标准附录B、附录C的检测方法检测。
2、感官模糊评价法基于面条口感好、Q弹、不糊汤3个评价指标,每个指标各占比30%、30%、40%,进行感官模糊评价,得出各产品的总分情况。

结果显示:
自然断条率:采用本发明制备的面条自然断条率,优于市售面条1(金沙河鸡蛋麦芯挂面(花色挂面),河北金沙河面业有限责任公司,生产批号:20171220)、市售面条2(新良鸡蛋挂面(花色挂面),新乡市冠滋食品有限公司,生产批号:20171128);
熟断条率:采用本发明制备的实施例1面条、实施例2面条熟断条率远低于市售面条1、市售面条2。
感官模糊评价得分:实施例1面条>实施例2面条>市售面条1>市售面条2,说明本发明制备的面条在口感好、Q弹、不糊汤方面远远优于市场同类产品。
以上所述仅为本发明的较佳实施例,并不用以限制本发明,凡在本发明的精神和原则之内,所作的任何修改、等同替换、改进等,均应包含在本发明的保护范围之内。
Claims (9)
1.一种营养配方产品,其中所述配方产品按重量份计包含:面粉70~90份;胶原蛋白0.1~10份;魔芋粉0.1~10份;钙源0.1~10份;水25~40份;和食盐1~3份。
2.根据权利要求1所述的配方产品,其中所述配方产品按重量份计包含:面粉80~90份;胶原蛋白5~10份;魔芋粉5~10份;钙源5~10份;水30~40份;和食盐2~3份。
3.根据权利要求1或2所述的配方产品,其中所述胶原蛋白为I型胶原蛋白、II型胶原蛋白(复合骨胶原)、III型胶原蛋白或它们的混合物,和/或来源于生物软骨(如鸡软骨、鱼软骨、牛软骨、猪软骨及其它生物软骨)、鱼鳞、动物皮肤(如鱼皮、猪皮、牛皮及其它生物皮肤)、生物肌腱组织、骨骼提取制得的胶原、骨胶原、骨胶原蛋白、骨胶原蛋白肽、胶原蛋白肽、I型胶原蛋白、II型胶原蛋白(复合骨胶原)、III型胶原蛋白、软骨粉或它们的组合。
4.根据权利要求1至3中任一项所述的配方产品,其中所述面粉选自由以下组成的组:小麦粉、紫薯粉、荞麦粉、玉米淀粉或它们的组合。
5.根据权利要求1至4中任一项所述的配方产品,其中所述钙源选自由以下组成的组:柠檬酸钙、醋酸钙、乳矿物盐、碳酸钙、酪蛋白钙、氯化钙、柠檬酸苹果酸钙、葡萄糖酸钙、乳酸钙、苹果酸钙、磷酸氢钙、磷酸二氢钙、磷酸钙、硫酸钙、抗坏血酸钙、甘油磷酸钙及其组合,优选为柠檬酸钙。
6.根据权利要求1至5中任一项所述的配方产品,其中所述配方产品按重量份计还可包含1-10份的酪蛋白磷酸肽、壳寡糖、酵母β-葡聚糖、大豆异黄酮、葛根(提取物)、姜黄(提取物)、维生素D、维生素K2或它们的组合。
7.根据权利要求1至6中任一项所述的配方产品,其还包含一种或多种甜味剂、调味剂、稳定剂、着色剂等食品添加剂和/或药用辅料。
8.根据权利要求1至7中任一项所述的配方产品,其可被配制为粉末、颗粒、溶液、混悬液、片剂、或胶囊的药物制剂形式或被配制成面包、软或硬糖果、特殊医学用途配方食品、饮料、乳制品、奶粉、饼干、面条或代餐产品的食品形式。
9.一种制备根据权利要求1至8中任一项所述的配方产品的方法,所述方法包括:将所述面粉、胶原蛋白、魔芋粉、钙源、水、食盐制成所述配方制品(例如,食品、保健食品、营养品和药品)。
