背景技术
随着生活水平的提高,休闲食品一直是深受广大人民群众喜爱的食品。休闲食品正在逐渐升格成为百姓日常的必需消费品,随着经济的发展和消费水平的提高,消费者对于休闲食品数量和品质的需求不断增长。米稀是一种具有一定粘度和稠度的半固态物质,是由各种谷物经机械粉碎和水煮糊化后得到的。米稀更容易被人体消化吸收,可迅速为身体提供能量;各种谷类混合的米糊含有更丰富的营养和保健作用;谷物香气释放充分,增进感官享受,促进食欲。
一种营养米稀及其制备方法(申请号201710534127.5),其包括以下组分大米、粳米、燕麦片、葵麦、小麦胚芽、麦芽、获荃、白扁豆炒、百合、芍药、人参、甘草、陈皮、桔梗、芡实、砂仁。该申请组分配方中添加了人参,人参属珍贵药材,价格昂贵。其次,原料组分间的功效选用重叠,另外,其制备工艺较为复杂。
发明内容
为弥补现有技术的不足,本发明提供一种营养茶米稀的制备方法,通过改变原料配比,改善了产品的整体口感,另外油茶叶大大提升了其抗氧化、抗衰老功效,且制备方法简单易行。
本发明的技术方案如下:一种营养茶米稀的制备方法包括如下顺序的步骤:
(1)将粳米50份、油茶叶10份、南非叶20份、云苓20份、白扁豆10份、百合8份、芍药9份、陈皮8份、甘草7份分别进行浸洗并去除杂质;
(2)将原料分别进行粉碎研磨后,过80目筛;
(3)将各原料过筛后混合得到混合物;
(4)将步骤(3)得到的混合物进行二次精磨,过100目筛得到混合物;糊化操作可防止营养成分的流失或被破坏,也可起到保护层的作用,避免蛋白接触高温焦糊而产生不利健康的物质。另外它可使米稀变浓稠,减缓在冲调沏泡时原料内部热量的散发,使米稀具有保温性,延长了米稀的冷却时间,解决低温环境早餐容易冷的缺点,健脾护胃;
(5)将步骤(4)得到的混合物吸水后在72℃进行糊化,糊化时间30min;
(6)对步骤(5)糊化后的混合物进行蒸制熟化,100℃蒸制1h得到混合物;蒸制使水份最大限度渗透到蛋白质胶体粒子内部,使之吸水膨胀,互相粘连,进一步形成网络组织,清除米稀内应力,使内部结构稳定;
(7)采用冷冻干燥法对步骤(6)的混合物进行干燥6h;由于干燥在真空下进行,氧气极少,因此一些易氧化的物质得到了保护,最大限度地保存食品的色、香、味;可以使热敏性的物料干燥后保留热敏成分,如百合、芍药中的维生素等;脱水彻底可节省包装费用,食用加水冲调容易复原,有延长保质期的效果;
(8)对冷冻干燥后的混合物进行破碎,破碎后颗粒大小为3-5mm;
(9)灭菌包装,热封避光常温保存即得营养茶米稀。
茶多酚是茶叶中多酚类物质的总称,包括黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等。主要为黄烷醇(儿茶素)类,儿茶素占60~80%。类物质茶多酚又称茶鞣或茶单宁,是形成茶叶色香味的主要成份之一,也是茶叶中有保健功能的主要成份之一。研究表明,茶多酚等活性物质具解毒和抗辐射作用。
粳米,有早、中、晚之分,北粳凉,南粳温;赤粳热,白粳凉;新粳热,陈粳凉。煮粥最养人,老幼皆宜。粳米含有16种氨基酸及铁、钼、锌等微量元素和维生素B1、B12等营养物质,蛋白质含量比普通大米高出50%。《本草纲目》记载:其有滋阴补肾,健脾暖肝、明目活血功效。无论煮粥还是煲汤,均是一种滋补佳品。
燕麦,经济价值最高,主要表现在营养、医疗保健和饲用价值均高。燕麦中的β-葡聚糖可减缓血液中葡萄糖含量的增加,预防和控制肥胖症、糖尿病及心血管疾病。燕麦富含的膳食纤维具有清理肠道垃圾的作用。
油茶叶,色清味香,营养丰富,耐贮藏,收敛止血;解毒。茶叶中的咖啡碱能促使人体中枢神经兴奋,增强大脑皮层的兴奋过程,起到提神益思、清心的效果。对于缓解偏头痛也有一定的功效。其中含强效的抗氧化剂以及维生素C,不但可以清除体内的自由基,还能分泌出对抗紧张压力的荷尔蒙。绿茶中所含的少量的咖啡因可以刺激中枢神经、振奋精神。
南非叶,味苦涩性凉,具有清热解毒的功效;功能散热、凉血和清血;适用于降血压、降胆固醇、糖尿病、风热性或血热性皮肤病,及皮肤搔痒的治疗;而抗氧化剂具有抵抗自由基的攻击、防止细胞氧化的功用。
粳米和白扁豆中含有丰富的淀粉酶,芍药有纤维素酶,淀粉酶和纤维素酶可溶解油茶叶和南非叶的细胞壁,“破壁”过程会促使其中的酚类、黄酮类、萜类物质大量溶出,提高营养价值。另外所选组分均为不同种属,营养成分,口感效果都大不相同。除此之外加入油茶叶后,由于茶叶中含有的天然茶多酚成分有抗菌抑菌、护色的作用,利用这一点应用到本发明来延缓、防止产品发生腐败变质,保持米稀品质,延长食品货架期和保持期。同时甘草性甜,又可以与南非叶的苦涩味进行中和,维持米稀口感。
本发明的有益效果如下:
(1)本发明制备的米稀营养丰富,含有较多的膳食纤维,可有效降低血糖、血脂和胆固醇,具有健脾和胃、提神醒脑、补气益脾、缓解疲劳等功效;
(2)制备方法简单易行,体系科学完善,适合工厂化生产;
(3)不添加任何香精、色素、防腐剂。
具体实施方式
下面结合具体实施例对本发明做进一步的说明,若无特殊说明,本发明所用原料及设备均为本领域的常规技术手段。
实施例1
本实施例营养米稀的配方为:粳米50份、油茶叶10份、南非叶20份、云苓20份、白扁豆10份、百合8份、芍药9份、陈皮8份、甘草7份。
制备过程如下:
(1)将上述原料分别进行浸洗并去除杂质;
(2)将原料分别进行粉碎研磨后,过80目筛;
(3)将各原料过筛后混合得到混合物;
(4)将步骤(3)得到的混合物进行二次精磨,过100目筛得到混合物;
(5)将步骤(4)得到的混合物吸水后在72℃进行糊化,糊化时间30min;
(6)对步骤(5)糊化后的混合物进行蒸制熟化,100℃蒸制1h得到混合物;
(7)采用冷冻干燥法对步骤(6)的混合物进行干燥6h;
(8)对冷却干燥后的混合物进行破碎,破碎后颗粒大小为3mm;
(9)灭菌包装,热封避光保存即得营养茶米稀。
实施例2
本实施例营养米稀的配方为:粳米50份、油茶叶10份、南非叶20份、云苓20份、白扁豆10份、百合8份、芍药9份、陈皮8份、甘草7份。
制备过程如下:

(9)灭菌包装,热封避光保存即得营养茶米稀。
将实施例1制备的营养茶米稀与市售杨氏双德原浆五谷米稀进行感官评定对比试验,结果如下表1。

由上表1知,本发明制备的营养茶米稀,颜色均匀,米色柔和协调,特殊且浓郁米茶混香,获得消费者的普遍认可。
上述实施例只是用于对本发明的举例和说明,而非意在将本发明限制于所描述的实施例范围内。此外本领域技术人员可以理解的是,本发明不局限于上述实施例,根据本发明的教导还可以做出更多种的变型和修改,这些变型和修改均落在本发明所要求保护的范围内。
Claims (1)
1.一种营养茶米稀的制备方法,其特征在于,包括如下顺序的步骤:
(1)将粳米50份、油茶叶10份、南非叶20份、云苓20份、白扁豆10份、百合8份、芍药9份、陈皮8份、甘草7份分别进行浸洗并去除杂质;
(2)将原料分别进行粉碎研磨后,过80目筛;
(3)将各原料过筛后混合得到混合物;
(4)将步骤(3)得到的混合物进行二次精磨,过100目筛得到混合物;
(5)将步骤(4)得到的混合物吸水后在72℃进行糊化,糊化时间30min;
(6)对步骤(5)糊化后的混合物进行蒸制熟化,100℃蒸制1h得到混合物;
(7)采用冷冻干燥法对步骤(6)的混合物进行干燥6h;
(8)对冷冻干燥后的混合物进行破碎,破碎后颗粒大小为3-5mm;
(9)灭菌包装,热封避光保存即得营养茶米稀。
