本发明涉及一种香味酱,确切的说是一种花生、芝麻、核桃仁鸡味香料酱。
背景技术
酱料是我国传统的饮食佐料,其炮制方法简单,原料易取而得到人们的喜爱,但传统的料酱大都以咸味及麻辣味为主,而以香味为主的酱料却知之甚少,市场上也很难买到有香味特色的各种酱料。
发明内容
本发明的目的就是提供一种以香味为主要特色的香料酱,以增加酱料的花色品种,满足广大食客的要求。
本发明是选择花生、芝麻、核桃仁、鸡肉香精进行组合制备的,各原料在下述重量范围内都能取得较好的香味效果:
花生800-1200克、芝麻800-1200克、核桃仁400-600克、鸡肉香精28-32克,白糖120-160克,盐25-35克。
优选为:
花生1000克、芝麻1000克、核桃仁500克、鸡肉香精30克,白糖150克,盐30克。
制备方法
1、将花生放入铁锅内炒熟;
2、将芝麻洗净晒干,放在铁锅中不加油炒熟;
3、将核桃仁放入铁锅内炒熟;
4、将花生和核桃仁炒熟放凉后搓去外皮;
5、将去皮的花生、核桃仁放入粉碎机中,再加入芝麻、白糖和盐打磨成细腻香滑的酱汁,再加入鸡肉香精搅拌均匀即得花生、芝麻、核桃鸡味香料酱;
6、将香料酱装袋密封,每袋100克。
本发明制出的香料酱香气扑鼻,诱人食欲,搭配面条,配馒头、面包片可以直接食用,花生中含有儿茶素对人体有较强的抗老化作用,花生中还含有丰富的脂肪油,可以起到润肺止咳的作用,花生、核桃仁油中含有大量的亚油酸,亚油酸可使人体内胆固醇分解为胆汁酸排出体外,能避免胆固醇在人体内沉积,减少胆固醇发病机会,能防止冠心病和动脉硬化,常食香料酱有益于人体延缓衰老,滋补气血。

Claims (3)

1.一种花生、芝麻、核桃鸡味香料酱,其特征在于:它是由下述重量范围内的原料制成:
花生800-1200克、芝麻800-1200克、核桃仁400-600克、鸡肉香精28-32克,白糖120-160克,盐25-35克。
2.根据权利要求1所述的香料酱,其特征在于:各原料的用量如下:
花生1000克、芝麻1000克、核桃仁500克、鸡肉香精30克,白糖150克,盐30克。
3.根据权利要求1或2所述香料酱的制备方法,其特征在于:它包括下列步骤:
(1)将花生放入铁锅内炒熟;
(2)将芝麻洗净晒干,放在铁锅中不加油炒熟;
(3)将核桃仁放入铁锅内炒熟;
(4)将花生和核桃仁炒熟放凉后搓去外皮;
(5)将去皮的花生、核桃仁放入粉碎机中,再加入芝麻、白糖和盐打磨成细腻香滑的酱汁,再加入鸡肉香精搅拌均匀即得花生、芝麻、核桃鸡味香料酱;
(6)将香料酱装袋密封,每袋100克。
