背景技术
目前,营养补充剂的各种凝胶样食品组合物是可商购的。针对不同目的或消费者群体,存在不同配制品的营养补充剂的已知凝胶样组合物。对于从事体力活动并伴有力竭或疲劳的个体来说,优选在一段时间或很长一段时间内补充适当的营养素。
出于提供营养补充剂的目的,凝胶样食品组合物含有各种组分。然而,根据各组分的类型及其组合,会出现一些问题。例如,已知含有特定氨基酸(例如支链氨基酸)的凝胶样食品组合物表现出苦味和/或令人不快的气味。另外,已知褐变是由蛋白质或氨基酸与糖类之间发生的美拉德反应引起的;并影响储存稳定性。此外,当含有蛋白质的凝胶样食品组合物表现出较差的蛋白质分散性时,在摄取组合物期间产生有关光滑度的问题,这导致不能得到具有优秀储存稳定性的凝胶样食品组合物。

(2)提供了一种凝胶样组合物,其表现出优异的组分分散性、储存中良好维持的凝胶样态和优异风味。
(3)提供了一种凝胶样食品组合物,用于缓解肌肉疼痛和/或疲劳。
(4)提供了一种凝胶样食品组合物,其抑制由体力活动引起的肌肉蛋白降解,进一步抑制免疫受损,并具有防止异物进入体内的生物防御作用。

具体实施方式
在凝胶样食品组合物中含有的游离支链氨基酸是在其侧链上具有分支结构的游离氨基酸;并且例如是选自下组的至少一个成员,该组由以下组成:缬氨酸、亮氨酸和异亮氨酸。该游离支链氨基酸优选为自由地选自下组的至少两个成员,该组由以下组成:缬氨酸、亮氨酸和异亮氨酸,或者优选为全部这三个成员。由于含有的这些游离支链氨基酸,该凝胶样食品组合物能够使支链氨基酸快速吸收到体内。从这个观点出发,该凝胶样食品组合物中含有的游离支链氨基酸为“添加氨基酸”,并且与构成蛋白质等的氨基酸不同。

在一个实施例中,该凝胶样食品组合物优选地含有酸化剂以掩盖苦味或以调节pH。酸化剂的实例包括有机酸,如抗坏血酸、柠檬酸、葡糖酸、琥珀酸、酒石酸、乳酸、富马酸、苹果酸、己二酸和植酸;无机酸,如磷酸;及其盐。盐的实例包括碱金属盐,如钾盐和钠盐。该凝胶样食品组合物可以含有这些酸化剂中的一个成员、或两个或更多个成员的任何组合。酸化剂优选地为选自抗坏血酸、柠檬酸、葡糖酸、酒石酸、乳酸、苹果酸、磷酸及其盐的一个成员、或两个或更多个成员。

在一个实施例中,该凝胶样食品组合物优选地含有胶凝剂。当该凝胶样食品组合物含有胶凝剂时,提供了呈胶冻形式的食品组合物。可以包含在该食品组合物中的胶凝剂不受特别限制,只要该胶凝剂用于食品和饮料领域即可。胶凝剂的实例包括琼脂、角叉菜胶、黄原胶、瓜尔胶、果胶、结冷胶、刺槐豆胶、阿拉伯树胶、黄蓍胶、大豆多糖和明胶。该食品组合物可以含有这些胶凝剂中的一个成员、或两个或更多个成员的任何组合。在一个实施例中,从分散性的立场来看,胶凝剂优选地为大豆多糖。除了大豆多糖之外,该凝胶样食品组合物还可以进一步含有选自琼脂、角叉菜胶、黄原胶、瓜尔胶、果胶、结冷胶、刺槐豆胶、阿拉伯树胶和黄蓍胶的一个成员、或两个或更多个成员。这些没有特别的限制,只要它们用于食品和饮料领域即可。
该凝胶样食品组合物中的大豆多糖的含量是根据目的可以适当确定的,并且没有特别限制。例如,该凝胶样食品组合物中的大豆多糖的含量为0.2wt%至1.7wt%,优选为0.5wt%至1.5wt%,并且更优选为0.5wt%至1.0wt%。
该凝胶样食品组合物中的胶凝剂的含量是根据目的可以适当确定的,并且没有特别限制。例如,该凝胶样食品组合物中的胶凝剂的含量为0.2wt%至3.0wt%,优选为0.5wt%至2.5wt%,并且进一步优选为0.7wt%至2.0wt%。
该凝胶样食品组合物的pH是根据目的可以适当确定的,并且没有特别限制。例如,该凝胶样组合物的pH为3至5.0,优选为3.2至4.2,并且进一步优选为3.3至4.0。
除了上述组分之外,该食品组合物还可以含有用于食品和饮料领域的任选的组分。这种任选的组分例如是以下添加剂中的一个成员,如调味剂、维生素、矿物质、抗氧化剂、着色材料、乳化剂、防腐剂、调味料、果汁提取物、蔬菜提取物和质量稳定剂;或者这些成员中的两个或更多个的组合。
矿物质没有特别的限制,并且实例包括氯化钠、氯化钾、氯化钙、氯化镁、乳酸钙、乳酸钠等。这些矿物质可以适当地单独使用或以两种或更多种的组合使用。
维生素没有特别的限制,并且实例包括维生素A、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、维生素D、维生素E、维生素F、维生素H、维生素K、维生素P、泛酸、胆碱、叶酸、肌醇、烟酸和对氨基苯甲酸(PABA)。这些维生素可以适当地单独使用或以两种或更多种的组合使用。
该凝胶样食品组合物不仅可以作为一般食品和饮料提供,而且还可以作为各种功能性(特殊用途)食品提供,如膳食补充剂、特定保健用途的食品、具有营养功能诉求的食品、具有功能诉求的食品、病人食品、老年人食品、身体脆弱的人的食品和运动员的食品。
在一个实施例中,该凝胶样食品组合物优选地在体力活动之前、期间或之后摄入。如这里所用的“体力活动之前”是指例如在体力活动之前一天内,优选在体力活动之前半天内,优选在体力活动之前6小时内,或优选在体力活动之前3小时内,进一步优选在体力活动之前1小时内,或者进一步优选在体力活动之前30分钟内。“体力活动之后”是指例如在体力活动之后1天内,优选在体力活动之后半天内,优选在体力活动之后6小时内,或优选在体力活动之后3小时内,进一步优选在体力活动之后1小时内,或者进一步优选在体力活动之后30分钟内。在一个实施例中,优选地被连续摄取该凝胶样食品组合物持续预定时间段(例如,2天或更多、3天或更多、4天或更多、5天或更多、6天或更多、1周或更多、和1个月或更多)。可以每天一次或一天多次(例如,2次或3次)摄入该凝胶样食品组合物。
在一个实施例中,该凝胶样食品组合物可以是肌肉蛋白的降解抑制剂、疲劳恢复剂和/或免疫刺激剂。
可以根据任何程序通过混合上述组分来获得该食品组合物。饮料或胶冻形式的食品组合物可以通过将各组分溶于水中并任选地加热溶液来获得。
在一个实施例中,该凝胶样食品组合物优选地为单份包装形式。“单份包装形式”是指在一份中用于消耗的预定量的食品。这种包装形式没有特别限制,并且实例包括小袋(例如,铝袋)、瓶子、罐子、纸容器和塑料瓶。在一个实施例中,该包装形式优选地为具有喷口的小袋。可以一次摄入单份包装形式的凝胶样食品组合物的多个包装(例如,2个包装或3个包装)。在一些情况下,以这种方式消耗可能是优选的,例如,在剧烈的体力活动之前或之后。
每份的摄入量没有特别限制,并且可以根据目的适当地确定。例如,每份的摄入量为50g至400g或55g至350g,并且更优选为60g至270g。

生产实例1
将各配制品1至9的组分溶解于水中,并调节pH,由此制备配制品1至9的胶凝组合物。表1显示作为游离氨基酸添加的游离缬氨酸、游离亮氨酸、游离异亮氨酸和游离精氨酸的量。

·颜色变化(A:不变,B:稍微变化,C:稍微更多变化,D:变化,E:显著变化)
·发生沉降(a:完全没有发生,b:很少发生,c:轻微发生,d:发生,e:显著发生)

生产实例2
制备100g含有9g蔗糖、8.7g乳清蛋白、2×1010个乳酸菌(b240)和2.5g游离氨基酸(游离支链氨基酸和游离精氨酸)的凝胶样食品组合物。
测试实例2
过夜禁食期之后,对八名健康男性成年人给予生产实例2的凝胶样食品组合物一次。在摄入前和摄入之后15、30、45、60、90、120和180分钟处收集他们的血液,以测量他们的血液中氨基酸水平和血清胰岛素水平。图1显示了测量的血液中氨基酸水平的变化,并且图2显示了血液中BCAA水平的变化。图3显示了血清胰岛素水平的变化。图1和2显示了摄入之后45分钟时血液中氨基酸水平和血液中BCAA水平的峰值(在该处,值达到顶峰)。这些结果表明通过摄入该凝胶样食品组合物引起的迅速吸收和血液水平的迅速增加。另外,如图3所示,该凝胶样食品组合物的摄入促进了刺激蛋白质合成的胰岛素的分泌,这表明体内的蛋白质代谢被设置成朝向蛋白质合成代谢。
Claims (10)
1.一种凝胶样食品组合物,其包含1wt%至10wt%的游离支链氨基酸、1wt%至12wt%的蛋白质和104/g至1014/g的益生菌,其进一步包含0.2wt%至1.7wt%的大豆多糖和7wt%至20wt%的糖,并且所述凝胶样食品组合物的pH为3至5.0。
2.根据权利要求1所述的凝胶样食品组合物,其进一步包含0.1wt%至2.5wt%的游离非支链氨基酸。
3.根据权利要求1所述的凝胶样食品组合物,其中该蛋白质是乳清蛋白。
4.根据权利要求1所述的凝胶样食品组合物,其中该糖是选自下组的至少一个成员,该组由以下组成:蔗糖、葡萄糖和糊精。
5.根据权利要求1所述的凝胶样食品组合物,其中该游离支链氨基酸是选自下组的至少一个成员,该组由以下组成:缬氨酸、亮氨酸和异亮氨酸。
6.根据权利要求2所述的凝胶样食品组合物,其中该游离非支链氨基酸是精氨酸。
7.根据权利要求1所述的凝胶样食品组合物,其中该益生菌是乳酸菌。
8.根据权利要求1所述的凝胶样食品组合物,其呈单份包装形式。
9.根据权利要求8所述的凝胶样食品组合物,其中该单份包装形式为50g至400g。
10.根据权利要求1所述的凝胶样食品组合物,其呈单份包装形式,该凝胶样食品组合物为肌肉蛋白的降解抑制剂、疲劳恢复剂和/或免疫刺激剂。
