背景技术
我国于2016年颁布的某纲要文件指出了食品和医药工业应当中高速发展和向中高端迈进。除此以外,国人很早就开始注重养生保健,注重以食疗、药膳等来预防和调理慢性病以及急性病理状态后的康复过程,维持和促进机体的健康与康复。我国的中医养生理论已提出5000多年,《黄帝内经》提出“药食同源”和“治未病”理念也有2000多年的历史,现代临床营养学在全球范围内的不断发展,这些都为当代功能性食品、特殊医学用途配方食品、保健食品和药品(特别是中药类)的研究提供了宝贵的理论基础。
许多疾病本身往往会造成患者机体代谢紊乱、体质恶化,并可能引起不同程度的营养不良。外科手术虽然对于疾病是一种治疗措施,但其对机体本身也是一种创伤。由于手术的刺激和伤口组织修复的需要,机体的分解代谢增强,对于营养物质的需求也相应增加。与此同时,术后患者的抵抗力下降,恢复过程中常常伴有发热、感染、代谢紊乱、消化吸收功能下降等症状,甚至会发生较严重的并发症。尽管目前市场上已经有一些围手术期的营养食品,但其在提高机体免疫能力,减轻术后症状方面的表现还有待提高。
因此,有必要提供一种围手术期营养食品,以提高机体的免疫能力,减轻术后症状,加快伤口愈合。

本发明的主要目的在于提供一种围手术期营养食品,以解决现有技术中的围手术期营养食品在提高机体免疫能力,减轻术后症状方面的表现欠佳的问题。
为了实现上述目的,根据本发明的一个方面,提供了一种围手术期营养食品,其包括谷物胚芽粉、食源性短肽以及食用酵母。
进一步地,按重量份计,营养食品包括3~40份的谷物胚芽粉、1~20份的食源性短肽以及1~20份的食用酵母。
进一步地,按重量份计,营养食品包括18~26份的谷物胚芽粉、8~16份的食源性短肽以及7~15份的食用酵母。
进一步地,谷物胚芽粉为小麦胚芽粉、大米胚芽粉及玉米胚芽粉中的一种或多种;优选地,食源性短肽为小麦低聚肽、胶原肽、大豆肽、玉米肽、乳清蛋白肽及卵白蛋白肽中的一种或多种;优选地,食用酵母为核酸酵母。
进一步地,营养食品还包括松花粉;优选地,按重量份计,营养食品包括2~8份的松花粉。
进一步地,食用酵母与松花粉之间的重量比为2.2~3:1。
进一步地,营养食品还包括膳食纤维;优选地,按重量份计,营养食品包括4~18份的膳食纤维;更优选地,膳食纤维为低聚木糖、低聚果糖、异麦芽低聚糖、纤维素、半纤维素、果胶、海藻胶、木质素及菊粉中的一种或多种。

小麦胚芽是整个麦粒营养价值最高的部分,小麦胚芽粉中含有蛋白质27.0~30.5%、脂肪10.5~13.0%、可溶性无氮物40.0~47.0%、粗纤维2.0~2.2%、灰分4.0%~5.0%、水分9.5%~11.5%。除了几种主要的营养素外,还含有许多对人体健康十分有益的维生素和矿物质。含有丰富的维生素B族、维生素D、不饱和脂肪酸、核酸、叶酸、二十八烷醇和钙、铁、锌、硒等十余种矿物质,是非常理想的微量金属元素供给源。而且,其中还还有丰富的生育酚,且其胚芽凝聚具有抗微生物和抗诱变性等多种生物效应。小麦胚芽中不仅蛋白质含量丰富,氨基酸全面平衡,而且易于人体吸收,是很好的优质全价蛋白质营养源。小麦胚芽可广泛用于增补食品中的蛋白质,强化食品的氨基酸营养价值,是一种天然的优质食品蛋白质和氨基酸强化剂。小麦胚芽油中亚油酸占50%~60%,亚油酸可经花生四烯酸转换成前列腺素前体,而前列腺素是人体重要激素,不仅调节人体代谢,更能增强人体活力。大米胚芽粉和玉米胚芽粉中也含有丰富的蛋白质、维生素E、不饱和脂肪酸。总之,选用上述几种谷物胚芽粉能够进一步提高围手术期患者的抵抗能力,减轻术后症状,加快伤口愈合。
上述食源性短肽可以选择常用的类型。在一种优选的实施方式中,食源性短肽为小麦低聚肽、大豆肽、玉米肽、乳清蛋白肽、胶原肽及卵白蛋白肽中的一种或多种。小麦低聚肽的特点是谷氨酰胺含量很丰富,谷氨酰胺可以促进肌细胞内蛋白质合成,促进肌细胞的生长和分化;刺激生长激素、胰岛素和睾酮的分泌,使机体处于合成状态,从而增加力量,提高耐力。谷氨酰胺还有利于增强免疫系统的功能、维持胃肠道黏膜结构完整性、参与合成谷胱甘肽(一种重要的抗氧化剂)、改善脑功能,维持肾脏、胰腺、胆囊和肝脏的正常功能。除此以外,小麦低聚肽具有ACE抑制作用、免疫调节、抗氧化等多种生物活性,能够更有效地刺激机体淋巴细胞增殖、增强巨噬细胞吞噬功能,从而能够更有效地提高机体抵御外界病原体感染的能力,缓解术后症状。同时,小麦低聚肽还能够抑制血管紧张素转化酶的活性,从而生理性地降低血压,这也有利于进一步提高手术安全性。大豆肽可以增加人体重要免疫器官:胸腺的体积的健康程度,从而可以更有效地增强机体免疫力。且大豆肽还具有快速缓解疲劳、增强肌肉力量、降血压等功效。玉米肽、乳清蛋白肽、胶原肽及卵白蛋白肽也具有与小麦低聚肽和大豆肽类似的功效。除此以外,上述几种食源性短肽更易吸收,更适宜作为围手术期患者的日常营养元素。优选食源性短肽为小麦低聚肽和胶原肽(优选海洋鱼胶原肽),胶原肽胶原蛋白肽对骨骼和皮肤具有保健作用。以皮肤为例,胶原蛋白肽通过抗氧化、提升角质层含水量、促进成纤维细胞增殖、减少黑色素形成、增加受伤组织中羟脯氨酸含量等,可以修复光损伤、改善光老化、改善皮肤吸水保水能力、促进皮肤伤口愈合。尤其是海洋胶原肽具有较强的抗氧化活性,可以清除体内的自由基,减少炎症反应,增强人体免疫功能,进而增强抗感染能力。
优选地,食用酵母为核酸酵母。核酸酵母相较于其他类型的食用酵母而言,其核苷酸的含量更高,且含有丰富的谷胱甘肽,不仅能消除人体自由基,还可以更有效地提高人体免疫力。
在一种优选的实施方式中,营养食品还包括松花粉。松花粉具有收敛止血、燥湿敛疮的功效,添加在本发明上述的营养食品中能够进一步缓解术后出血,对皮肤糜烂、脓水淋漓也有很好的抑制作用。优选地,按重量份计,营养食品包括2~8份的松花粉。
为了更好地发挥成分之间的协同作用,在一种优选的实施方式中,食用酵母与松花粉之间的重量比为2.2~3:1。将二者的用量比例控制在上述范围内,对于机体的免疫能力提升具有更显著的效果,能够进一步缓解术后症状,加快伤口愈合。
为了进一步提高上述营养食品的营养全面性,在一种优选的实施方式中,营养食品还包括膳食纤维。优选地,按重量份计,营养食品包括4~18份的膳食纤维;更优选地,膳食纤维为低聚木糖、低聚果糖、异麦芽低聚糖、纤维素、半纤维素、果胶、海藻胶、木质素及菊粉中的一种或多种。加入上述膳食纤维,还有利于改善围手术期患者常出现的便秘症状。
在一种优选的实施方式中,营养食品还包括功能性营养素,且功能性营养素为维生素A、维生素E、维生素D、维生素B1、维生素B2、维生素B6、维生素B12、泛酸、烟酸、叶酸、肌醇、牛磺酸、左旋肉碱、红曲粉、植物甾醇、大豆磷脂、甘氨酸、脯氨酸、组氨酸、精氨酸、姜黄素、谷氨酰胺及β-葡聚糖中的一种或多种。加入上述功能性营养素,有利于进一步提高上述营养食品的营养全面性,从而进一步提高围手术期患者的免疫力和抵抗力。
具体的功能营养素的添加量可以进行调整。在一种优选的实施方式中,按重量份计,营养食品包括0.2~2份的功能性营养素。
在一种优选的实施方式中,营养食品还包括矿物质;优选地,按重量份计,营养食品还包括0.2~1.4份的矿物质;更优选地,矿物质为葡萄糖酸亚铁、乳酸锌、甘氨酸锌、L-苏糖酸钙、葡萄糖酸钙、乳酸镁、葡萄糖酸锰、亚硒酸钠、富硒酵母及硫酸铜中的一种或多种。矿物质和维生素一样,是人体必须的元素,矿物质是无法自身产生、合成,因此在上述营养食品中添加上述矿物质能够为机体补充适当的矿物质,进一步保证营养元素的摄入。
在一种优选的实施方式中,按重量份计,营养食品还包括1~50份的果蔬粉,优选地,果蔬粉为香蕉粉、芒果粉、菠萝粉、菠萝蜜粉、榴莲粉、椰肉粉、椰枣粉、柠檬粉、荔枝粉、龙眼粉、苹果粉、枣粉、梨粉、杏粉、山楂粉、柿粉、橙粉、柑橘粉、柚子粉、桃粉、草莓粉、树莓粉、桑葚粉、石榴粉、樱桃粉、无花果粉、黑加仑粉、哈密瓜粉、西瓜粉、木瓜粉、番茄粉、胡萝卜粉、葡萄粉、南瓜粉、猕猴桃粉、枸杞粉、沙棘粉、蔓越莓粉、蓝莓果粉、阿萨伊果粉、诺丽果粉及猴面包果粉中的一种或多种。果蔬粉富含各种抗氧化性营养素、维生素、膳食纤维、碳水化合物和天然风味物质等,加入上述果蔬粉,有利于进一步提高上述营养食品的风味和营养,从而进一步提高围手术期患者的免疫力和抵抗力。
可选地,上述营养食品中还包括20~200份的谷物粉。需说明的是,上述“谷物粉”指的是全谷物粉或不含麸皮和胚芽部分的精白谷物粉。这样,该营养食品可以直接代替传统主食,作为围手术期患者的日常主食食用。谷物粉中含有碳水化合物、蛋白质、无机盐及少量的脂肪和B族维生素,应用于本发明可以供应人体必要的能量、蛋白质和少量的矿物质、维生素等营养成分。在一种优选的实施方式中,谷物粉为稻米粉、粟米粉、黍米粉、高粱米粉、玉米粉、小麦粉、大麦粉、燕麦粉及青稞粉中的一种或多种。优选为稻米粉和/或粟米粉。相较于其他类型的米粉,稻米粉和粟米粉更容易吸收,更适于术后患者食用。稻米粉可以为大米粉、籼米粉、粳米粉、紫米粉、黑米粉、糯米粉等,粟米粉即为小米粉。
优选地,按重量份计,本发明提供的围手术期营养食品包括10份的小麦胚芽粉、5份的大米胚芽粉、5份的玉米胚芽粉、4份的菊粉、4份的低聚木糖、4份的低聚果糖、3份的异麦芽低聚糖、5份的小麦低聚肽、5份的大豆肽、3份的玉米肽、2份的胶原肽、13份的核酸酵母、5份的松花粉、1份的功能性营养素、1份的矿物质及10份的香蕉粉。
优选地,按重量份计,本发明提供的围手术期营养食品包括20份的小麦胚芽粉、15份的菊粉、15份的小麦低聚肽、10份的胶原肽、13份的核酸酵母、5份的松花粉、1份的功能性营养素、1份的矿物质及5份的枸杞粉。
上述营养食品的具体制备过程简单,只需将各成分混合即可,具体的谷物胚芽粉,只需分别将对应的原料冻干或烘干、研磨即可。食源性短肽、核酸酵母、松花粉、膳食纤维、矿物质、果蔬粉等均可以购买。可以是粉状外观,还可以通过挤压塑形、3D打印等方式呈现各种造型,比如:类大米型等,根据具体工艺不同,可按传统方式蒸煮后食用,也可直接用低于沸点的水浸泡复水后低温速食。当上述营养食品是粉状时,特别是谷物粉、果蔬粉的含量为零或较少时,还特别适合做为其他食品(功能性主食、功能性饮料)的核心原料,销售给相关食品企业使用,继续添加更多谷物粉、果蔬粉或其他成分,制造新配方、新形态的功能性食品或饮料。
具体制备方法可以如下:
粉状食品:原料过筛制粒:将经过超微粉碎后的所有原料分别过60~12500目筛制粒,然后搅拌混合,得到超微制粒化的围手术期粉状食品;
3D造形食品:将上述混合均匀的粉状食品为原料,向其中添加谷物粉,也可添加适当种类的食品添加剂,喂入具有类3D打印原理的挤压成形机,在相应温度及压力参数下,打印成形后,旋切成米粒状;然后干燥,得到3D造形的围手术期营养食品。
以下通过实施例进一步说明本发明的有益效果:
各营养食品的制备方法具体如下:
原料过筛制粒:将以下各实施例和各对比例中所列举的原料经过超微粉碎,并添加相当于食物总重量的90%的大米粉,所有原料粉分别过60~12500目筛制粒,然后搅拌混合,得到超微制粒化的粉末。将各实施例和各对比例中相应的食物粉末喂入具有类3D打印原理的挤压成形机,在相应温度及压力参数下,打印成形后,旋切成米粒状;然后干燥,得到3D造形的围手术期营养食品。
实施例1至12
各实施例中提供了成分不同、配比不同的围手术期患者营养食品,除了均含有重量百分含量为90%的大米粉以外,其余各成分和其用量见表1和2:

对比例2
除了重量百分比为90%的大米粉以外,其余成分按重量份计,该营养食品包括10份的小麦胚芽粉、5份的大米胚芽粉、5份的玉米胚芽粉、4份的菊粉、4份的低聚木糖、4份的低聚果糖、3份的异麦芽低聚糖、5份的小麦低聚肽、5份的大豆肽、3份的玉米肽、2份的胶原肽、5份的松花粉、1份的功能性营养素(同实施例12)、1份的矿物质(同实施例12)及10份的香蕉粉。
对比例3
除了重量百分比为90%的大米粉以外,其余成分按重量份计,该营养食品包括10份的小麦胚芽粉、5份的大米胚芽粉、5份的玉米胚芽粉、4份的菊粉、4份的低聚木糖、4份的低聚果糖、3份的异麦芽低聚糖、13份的核酸酵母、5份的松花粉、1份的功能性营养素(同实施例12)、1份的矿物质(同实施例12)及10份的香蕉粉。
对比例4
该对比例以纯大米作为对比。
对上述实施例1至12及对比例1至4中的营养食品的性能进行测试:
(1)动物急慢性毒性试验
试验动物:普通级NIH小鼠,体重18g±2g,每组4只,雌雄各半。
试验方法:分别将实施例1至12、对比例1至4中的营养食品熟化后调成糊状,喂食给每一组小鼠,连续喂食30天。
试验结果:30天中,各组小鼠均无死亡,行为活泼,摄食量如常,毛色光亮无疏松污,无惊厥嗜唾,眼、口、鼻、耳及肛周无异常分泌物,无断尾烂趾。分别从每组中选择2只处死,肉眼所见:心、肝、肺、胃内及胸腺等重要脏器,未见异常改变,表明各营养食品均无毒性。
(2)临床试验
试验对象:临床围手术期患者640人,均来自同一家医院,其中男500人,女140人,随机分成16组,每组40人,各组术后伤口大致均衡分配;各组平均年龄均在32~36岁。
试验方法:各组患者在手术实施后均采用正常的临床手段与路径进行治疗及康复,无论患者病情是否需要医疗级别的肠内(以鼻饲方式摄入为主)及肠外(静脉输注)特殊医学营养干预,均等到允许摄入住院期间普通餐饮(包括院内食堂餐饮或外卖餐饮)的阶段,才同时开始使用上述各营养食品。不同的是分别将实施例1至12、对比例1至4中的营养食品对应于不同的组作为其患者的一日三餐食用食品,患者均在术后允许摄入住院期间普通餐饮的阶段,即开始服用,并完全替代普通餐饮中的主食部分(米饭、面食等)直至伤口完全愈合。
评价标准:伤口是否感染、感染症状消失的快慢、伤口愈合快慢、愈后疤痕大小。
试验结果见表3:

从以上的描述中,可以看出,本发明上述的实施例实现了如下技术效果:
本发明提供的营养食品创新性地将谷物胚芽粉、食源性短肽和食用酵母这三类营养物质协同添加中,能够显著加强患者的营养物质添加,能够明显提高机体免疫能力,从而能够有效减轻术后症状,加快伤口愈合。
与此同时,本发明中的营养食品可以作为围手术期患者的日常食品,从而能够为其提供更充分全面的营养元素,发挥更大的功效。本发明以服务百姓健康为己任,经精心研发提出了上述适合围手术期患者食用的营养食品,具有广泛而深远的意义。
以上所述仅为本发明的优选实施例而已,并不用于限制本发明,对于本领域的技术人员来说,本发明可以有各种更改和变化。凡在本发明的精神和原则之内,所作的任何修改、等同替换、改进等,均应包含在本发明的保护范围之内。
Claims (11)
1.一种围手术期营养食品,其特征在于,所述营养食品包括谷物胚芽粉、食源性短肽以及食用酵母。
2.根据权利要求1所述的营养食品,其特征在于,按重量份计,所述营养食品包括3~40份的所述谷物胚芽粉、1~20份的所述食源性短肽以及1~20份的所述食用酵母。
3.根据权利要求2所述的营养食品,其特征在于,按重量份计,所述营养食品包括18~26份的所述谷物胚芽粉、8~16份的所述食源性短肽以及7~15份的所述食用酵母。
4.根据权利要求1至3中任一项所述的营养食品,其特征在于,所述谷物胚芽粉为小麦胚芽粉、大米胚芽粉及玉米胚芽粉中的一种或多种;
优选地,所述食源性短肽为小麦低聚肽、胶原肽、大豆肽、玉米肽、乳清蛋白肽及卵白蛋白肽中的一种或多种;
优选地,所述食用酵母为核酸酵母。
5.根据权利要求2或3所述的营养食品,其特征在于,所述营养食品还包括松花粉;优选地,按重量份计,所述营养食品包括2~8份的所述松花粉。
6.根据权利要求5所述的营养食品,其特征在于,所述食用酵母与所述松花粉之间的重量比为2.2~3:1。
7.根据权利要求6所述的营养食品,其特征在于,所述营养食品还包括膳食纤维;优选地,按重量份计,所述营养食品包括4~18份的所述膳食纤维;更优选地,所述膳食纤维为低聚木糖、低聚果糖、异麦芽低聚糖、纤维素、半纤维素、果胶、海藻胶、木质素及菊粉中的一种或多种。
8.根据权利要求7所述的营养食品,其特征在于,所述营养食品还包括功能性营养素,且所述功能性营养素为维生素A、维生素E、维生素D、维生素B1、维生素B2、维生素B6、维生素B12、泛酸、烟酸、叶酸、肌醇、牛磺酸、左旋肉碱、红曲粉、植物甾醇、大豆磷脂、甘氨酸、脯氨酸、组氨酸、精氨酸、姜黄素、谷氨酰胺及β-葡聚糖中的一种或多种。
9.根据权利要求8所述的营养食品,其特征在于,按重量份计,所述营养食品包括0.2~2份的所述功能性营养素。
10.根据权利要求7所述的营养食品,其特征在于,所述营养食品还包括矿物质;优选地,按重量份计,所述营养食品还包括0.2~1.4份的所述矿物质;更优选地,所述矿物质为葡萄糖酸亚铁、乳酸锌、甘氨酸锌、L-苏糖酸钙、葡萄糖酸钙、乳酸镁、葡萄糖酸锰、亚硒酸钠、富硒酵母及硫酸铜中的一种或多种。
