粉丝是我国的传统食品之一,由于其口感柔润嫩滑,爽口宜人,因此深受人们的喜爱。目前,市面上生产的粉丝主要是利用红薯、马铃薯、香蕉、豌豆、玉米等植物原料中淀粉制备,其主要成分是碳水化合物,由于原料营养不高,致使现有的粉丝蛋白质偏低,营养结构差,经常食用会影响人们身体健康,很有必要开发一种既有这些粉丝特性,又有营养价值,还经济实惠,风味独特,并且生产加工简单的一种能为大众欢迎的粉丝食品。
鸡豆又称鹰嘴豆、又名桃尔豆、鸡心豆等,是印度和巴基斯坦的重要的蔬菜之一,在欧洲食用鹰嘴豆也十分普遍,也是维吾尔医常用药材。因其面形奇特,尖如鹰嘴,故称此名。鹰嘴豆为豆科草本植物,起源于亚洲西部和近东地区。 是世界上栽培面积较大的豆类植物,约一亿五千万亩,其中印度和巴基斯坦两国的种植面积 占全世界的80%以上,中国只有零星分布。鹰嘴豆的淀粉具有板栗香味。鹰嘴豆粉加上奶粉制成豆乳粉,易于吸收消化,是婴儿和老年人的营养食品。鹰嘴豆还可以做成各种点心和油炸豆。籽粒可做利尿剂、催奶剂、可治疗失眠,预防皮肤病和防治胆病等。

本发明解决上述技术问题的技术方案如下:一种鸡豆养颜降血脂风味粉丝及其制备方法,其原料组分如下:鸡豆 80~100重量份;香蕉淀粉20~40重量份;玉米淀粉60~80重量份;食盐 2~3重量份;刀豆壳 2~4重量份;甘草 3~5 重量份;果蔬10~15重量份;添加剂8~12重量份;
所述添加剂由魔芋甘露聚糖、透明质酸钠和普鲁兰多糖组成,三者质量比为1:0.5~0.8: 0.15~0.3。
本发明还公开了上述的鸡豆养颜降血脂风味粉丝制备方法,包括以下步骤:
1)将胡萝卜榨汁,取胡萝卜汁;
2)取刀豆壳与甘草加水浸泡、煎煮,固液分离取煎煮液;
3)取鸡豆放入脱壳机当中将鸡豆的壳脱掉,过60目筛去鸡豆皮渣,将脱壳的鸡豆放入研磨机粉碎,将鸡豆粉过80~120目筛去渣,鸡豆细粉放入容器中;然后再加入适量的沸水后将粉团调成鸡豆粉浆液;
4)加水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液;
5)将香蕉烤干后制成香蕉淀粉,取香蕉淀粉总质量10%~15%的香蕉淀粉加水调成糊,加入前述添加液并冲入沸水搅拌获得粉芡;
6)按原料组成将玉米淀粉、盐、剩余的香蕉淀粉,以及前述胡萝卜汁、煎煮液和鸡豆粉浆液加入所述粉芡中,加水进行和面,获得含水量在45~50%的粉团;
7)将粉团置于粉丝机中挤压熟化成型,冷却老化,风干,获得鸡豆养颜降血脂风味粉丝。
进一步,步骤2)取刀豆壳与甘草,加药材总质量6~8倍量的水浸泡0.5~1.5 h、煎煮30~60min,固液分离取煎煮液。

具体实施方式
以下对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
实施例1
(1)原料组分:
鸡豆 80重量份;香蕉淀粉 40重量份;玉米淀粉80重量份;食盐3重量份;刀豆壳3重量份;甘草5 重量份;胡萝卜10重量份;添加剂10重量份。
所述添加剂由魔芋甘露聚糖、透明质酸钠和普鲁兰多糖组成,三者质量比为1:0.8:0.2。
(2)制备步骤:
1)将胡萝卜榨汁,取胡萝卜汁备用;
2)取刀豆壳与甘草加药材总质量6倍量的水浸泡0.5h、煎煮50min,固液分离取煎煮液备用;
3)鸡豆放入脱壳机当中将鸡豆的壳脱掉,过60目筛去鸡豆皮渣,将脱壳的鸡豆放入研磨机粉碎,将鸡豆粉过80目筛去渣,鸡豆细粉放入容器中;然后再加入适量的沸水后将粉团调成鸡豆粉浆液备用;
4)加40℃水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液备用。
5)取香蕉淀粉总质量15%的香蕉淀粉加水调成糊,加入添加液并冲入沸水搅拌获得粉芡;
6)将剩余香蕉淀粉、玉米淀粉、盐,以及之前制备的胡萝卜汁、煎煮液和鸡豆粉浆液加入所述粉芡中,加水进行和面,获得含水量在50%的粉团;
7)将粉团置于粉丝机中挤压熟化成型,0℃冷却老化4h,风干,获得鸡豆养颜降血脂风味粉丝。
实施例2
(1) 原料组分:
鸡豆 100重量份;香蕉淀粉 30重量份;玉米淀粉60重量份;食盐2重量份;刀豆壳2重量份;甘草4 重量份;胡萝卜12重量份;添加剂8重量份。
所述添加剂由魔芋甘露聚糖、透明质酸钠和普鲁兰多糖组成,三者质量比为1:0.5:0.3。
(2) 制备步骤:
1)将胡萝卜榨汁,取胡萝卜汁备用;
2)取刀豆壳与甘草加药材总质量8倍量的水浸泡1.5h、煎煮40min,固液分离取煎煮液备用;
3) 鸡豆放入脱壳机当中将鸡豆的壳脱掉,过60目筛去鸡豆皮渣,将脱壳的鸡豆放入研磨机粉碎,将鸡豆粉过100目筛去渣,鸡豆细粉放入容器中;然后再加入适量的沸水后将粉团调成鸡豆粉浆液备用;
4)加50℃水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液备用。
5)取香蕉淀粉总质量10%的香蕉淀粉加水调成糊,加入添加液并冲入沸水搅拌获得粉芡;
6)将剩余香蕉淀粉、玉米淀粉、盐,以及之前制备的胡萝卜汁、煎煮液和豆浆液加入所述粉芡中,加水进行和面,获得含水质量在45%的粉团;
7)将粉团置于粉丝机中挤压熟化成型,4℃冷却老化12h,风干,获得鸡豆养颜降血脂风味粉丝。
实施例3
(1)原料组分
鸡豆 90重量份;香蕉淀粉 20重量份;玉米淀粉70重量份;食盐2重量份;刀豆壳4重量份;甘草3重量份;胡萝卜15重量份;添加剂12重量份。
所述添加剂由魔芋甘露聚糖、透明质酸钠和普鲁兰多糖组成,三者质量比为1:0.75:0.15。
(2)制备步骤:
1)将胡萝卜榨汁,取胡萝卜汁备用;
2)取刀豆壳与甘草加药材总质量7倍量的水浸泡1 h、煎煮45min,固液分离取煎煮液备用;
3)鸡豆放入脱壳机当中将鸡豆的壳脱掉,过60目筛去鸡豆皮渣,将脱壳的鸡豆放入研磨机粉碎,将鸡豆粉过120目筛去渣,鸡豆细粉放入容器中;然后再加入适量的沸水后将粉团调成鸡豆粉浆液备用;
4)加水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液备用。
5)取香蕉淀粉总质量12%的香蕉淀粉加水调成糊,加入添加液并冲入沸水搅拌获得粉芡;
6)将剩余香蕉淀粉、玉米淀粉、盐,以及之前制备的胡萝卜汁、煎煮液和豆浆液加入所述粉芡中,加水进行和面,获得含水量在50%的粉团;
7)将粉团置于粉丝机中挤压熟化成型,2℃冷却老化10h,风干,获得鸡豆养颜降血脂风味粉丝。

1.一种鸡豆养颜降血脂风味粉丝及其制备方法,其特征在于,其原料组成如下:
鸡豆 80~100重量份;香蕉淀粉20~40重量份;玉米淀粉60~80重量份;食盐 2~3重量份;刀豆壳 2~4重量份;甘草 3~5 重量份;果蔬10~15重量份;添加剂8~12重量份;
所述添加剂由魔芋甘露聚糖、透明质酸钠和普鲁兰多糖组成,三者质量比为1:0.5~0.8: 0.15~0.3。
2.本发明还公开了上述的鸡豆养颜降血脂风味粉丝制备方法,包括以下步骤:
1)将胡萝卜榨汁,取胡萝卜汁;
2)取刀豆壳与甘草加水浸泡、煎煮,固液分离取煎煮液;
3)取鸡豆放入脱壳机当中将鸡豆的壳脱掉,过60目筛去鸡豆皮渣,将脱壳的鸡豆放入研磨机粉碎,将鸡豆粉过80~120目筛去渣,鸡豆细粉放入容器中;然后再加入适量的沸水后将粉团调成鸡豆粉浆液;
4)加水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液;
5)
将香蕉烤干后制成香蕉淀粉,取香蕉淀粉总质量10%~15%的香蕉淀粉加水调成糊,加入前述添加液并冲入沸水搅拌获得粉芡;
6)按原料组成将玉米淀粉、盐、剩余的香蕉淀粉,以及前述胡萝卜汁、煎煮液和鸡豆粉浆液加入所述粉芡中,加水进行和面,获得含水量在45~50%的粉团;
7)将粉团置于粉丝机中挤压熟化成型,冷却老化,风干,获得鸡豆养颜降血脂风味粉丝。
3. 根据权利要求2所述的制备方法,其特征在于,步骤2)取刀豆壳与甘草药材总质量6~8倍量的水浸泡0.5~1.5 h、煎煮30~60 min,固液分离取煎煮液。
4.根据权利要求2所述的制备方法,其特征在于,步骤3)鸡豆脱皮后过60目筛去鸡豆皮渣,磨好后过80~120目筛除去鸡豆渣,鸡豆粉用沸水烫5~10分钟。
5.根据权利要求2所述的制备方法,其特征在于,步骤4)用40~50℃的水溶解魔芋甘露聚糖、透明质酸钠和普鲁兰多糖,获得添加液。
6.根据权利要求2所述的制备方法,其特征在于,步骤7)冷却老化的条件为:0~4 ℃冷却老化4~12 h。
