本发明属于冷饮食品领域,特别涉及一种低糖高纤冰淇淋。
背景技术
随着人们生活水平提高,人们不仅越来越重视副食品的口感,更加重视食品的营养价值和保健功效。冰淇淋是人们夏季非常喜爱的一种副食品,现在市售冰淇淋虽然口味多样,但是高脂高糖,达不到营养和消脂的要求,针对上述弊端,中国专利申请号为201410681427.2的发明中选择含有天然酵素的木瓜、低能量的冬瓜和多种天然成分为主要原料,研制出一种消脂冰淇淋;不过本发明仍含有10-15%蔗糖,对需要控糖的老年人和糖尿病患者是不利的;传统的冰淇淋的含高脂高糖,对需要控糖的老年人和糖尿病患者更是不利。还有在传统的冰淇淋基础上添加其他一些水果,药食同源食材,改善口味,以奶油口感冰淇淋居多,添加药食同源食材的药味太浓,销售量受到影响。
发明内容
本发明的目的是提供一种低糖高纤冰淇淋,其特征在于,使用牛奶和稀奶油为主要原料,以使用山梨糖醇和乳糖醇为甜味物质代替白砂糖,以聚葡萄糖,菊粉增加干物质,同时作为膳食纤维来源,使用适量乳化稳定剂和三氯蔗糖作甜味剂,经混合,均质,杀菌,老化,凝冻,硬化的工艺过程,制成一种低糖高纤冰淇淋;具体原材料配比如下:
牛奶62.14%,稀奶油16%,山梨糖醇6.5%,乳糖醇5.5%,脱脂奶粉2.4,聚葡萄糖利体素3.5%,菊粉(低聚果糖)3.5%,乳化稳定剂0.45,三氯蔗糖0.014,
上述原材料配比中,使用牛奶作为溶剂混合其他原料,保证产品充足的乳蛋白含量>3%,同时使用稀奶油作为产品脂肪的来源,保证冰淇淋的口感顺滑,且保证了纯正冰淇淋的概念;产品中仅含乳粉中天然存在的乳糖包含在成品中,使乳糖含量低于5%,因乳糖在肠道内不易被分解,不会引起血糖快速上升;同时由于糖含量低,综合计算产品总热量相比普通冰淇淋低20%;
其次,产品中添加了聚葡萄糖与作为低聚果糖的菊粉,这两种具有可溶性膳食纤维,总的膳食纤维含量大于6%,符合高纤食品的要求;适量的水溶性膳食纤维可以防治便秘、有利于肠道中益生菌的增殖。
本发明的有益效果是随着人们生活水平的提高,保证一定量的膳食纤维摄入显得越来越重要;本发明具有适量的水溶性膳食纤维可以防治便秘,有利于肠道中益生菌的增殖;有利于肠道健康,有利于控制血脂及体重控制。本发明综合了低糖和高膳食纤维的优点,适合对美食的追求同时注重健康饮食的人群。
具体实施方式
本发明提供一种低糖高纤冰淇淋,具体原材料配比如下:牛奶62.14%,稀奶油16%,山梨糖醇6.5%,乳糖醇5.5%,脱脂奶粉2.4,聚葡萄糖利体素3.5%,菊粉3.5%,乳化稳定剂0.45,三氯蔗糖0.014;其中,本发明是使用牛奶和稀奶油为主要原料,以使用山梨糖醇和乳糖醇为甜味物质代替白砂糖,增加干物料包括聚葡萄糖和作为低聚果糖的菊粉;同时也作为膳食纤维来源;使用适量乳化稳定剂和三氯蔗糖作甜味剂;所述低糖高纤冰淇淋的主要经过混料,预混时温度应保持在70℃之间,待温度大于40℃后向混料锅加入干物料聚葡萄糖和菊粉,稳定剂需与乳糖醇进行预混,然后再加入混料锅中,在混料锅及混料罐之间物料循环加热,混合均匀后进行均质杀菌。采用二级均质,一级均质压力:150BAR;二级均质压力:50BAR,然后在87.5±2.7℃温度下进行30S杀菌;杀菌后,出口温度为≤10℃,老化成熟时间在4至72小时之间,温度0-4℃;再经过凝冻机粘度控制在30%-40%;膨胀率控制在60%-75%;速度控制在500-1500L/hr凝冻、硬化的工艺过程,制成一种低糖高纤冰淇淋成品、然后包装,入库。
