Abstract
本发明公开了一种牡丹花健脾养血复合保健饮料及其制备方法。该饮料是由以下重量百分比的原料组成:牡丹花液20-30%、仙人掌汁10-20%、山药浆10-20%、柠檬酸3-5%、果糖3-5%、异麦芽糖醇6-10%、Vc0.5-2%、黄原胶0.05-0.1%、余量纯净水。该保健饮料制备工艺简单、口感细腻、醇厚、爽口、纯天然、安全健康且具有牡丹、仙人掌和山药的多重营养保健功能,非常适合脾胃虚弱、气血不足的女性及中老年人饮用。
Description
技术领域
本发明涉及一种保健饮料,具体来说是一种健脾养血的保健饮料及其制备方法,属于保健品技术领域。
背景技术
牡丹素有“国色天香”、“花中之王”的美称。随着科学技术的发展,牡丹花开随人意,一年四季都有花。牡丹除作欣赏之外,还有较高的食用和药用价值。牡丹花含有多种具有营养和医疗作用的功能性成分,牡丹花含总黄酮 1.2 ~ 1.7%氨基酸 7.8%活 性多糖 27.8%维生素 0.47%,儿茶素 0.04%。牡丹花瓣中富含多种维生素、酶、 糖类和黄铜及人体所需的 8 种氨基酸、7种常量元素和 8种微量元素,还含有牡丹花甙、紫云英甙、 蹄纹天竺甙、松油醇、牡丹黄酮醇、异黄酮醇、香叶醇、活性多糖等40余种活性成分,有行气活血、清热止痛、通经之功能,久服可益身延寿。
仙人掌是一种天然绿色植物,含有丰富的矿物质、蛋白质、纤维素和钙、磷、铁、维生素C、维生素B,能帮助消除人体内多余的胆固醇,起到降低血糖、降低血脂、降血压之功效,有清热解毒,排毒生肌,行气活血等保健作用。种植食用型仙人掌生产成本低,不需农药和化肥,无污染,属于绿色有机食品。长期食用可对人体产生清热解毒、消炎解暑、开胃健脾、清咽润肺等功效。经有关权威部门验证,食用仙人掌具有一定的降血糖和较明显的降低血胆固醇及甘油三脂的作用。
山药,又名怀山药,属薯蓣科、多年生蔬菜。山药营养丰富,含有多种微量元素及维生素,并含有皂甙黏液质、胆碱、糖蛋白和自由氨基酸、多酚氧化酶、烟酸、抗坏血酸等。山药具有较高的药用价值,古代医书中称山药可驱寒热邪气,补中益气力,长肌肉,久服耳聪明目,具有健脾养胃,补肺益肾,扶正防癌,养生延年的功效。山药既具有一定的保健功能,又有清甜的口感和清新的香味,开发成饮料具有很好的市场前景。
目前,市场上饮料品种繁多,主要是一些针对青少年消费人群的功能性饮料和碳酸饮料,它们大都添加各种各样的色素和添加剂,长期饮用对人体的健康造成巨大的损害。因而,研发出一种口感好,营养全面且符合脾胃虚弱、气血不足的女性和中老年人饮用的保健饮料十分必要。
发明内容
针对现有技术中存在的问题,本发明提供了一种牡丹花健脾养血复合保健饮料。该保健饮料制备工艺简单、口感细腻、醇厚、爽口、纯天然、安全健康且具有牡丹、仙人掌和山药的多重营养保健功能,非常适合脾胃虚弱、气血不足的女性及中老年人饮用。
本发明还提供了上述保健饮料的制备方法。
本发明采用以下技术方案:
一种牡丹花健脾养血复合保健饮料,其特征在于,它由以下重量百分比的原料组成:牡丹花液20-30%、仙人掌汁10-20%、山药浆10-20%、柠檬酸3-5%、果糖3-5%、异麦芽糖醇6-10%、Vc 0.5-2%、黄原胶0.05-0.1%、余量纯净水。
优选的,上述牡丹花健脾养血复合保健饮料是由以下重量百分比的原料组成:牡丹花液28%、仙人掌汁15%、山药浆15%、柠檬酸4%、果糖4%、异麦芽糖醇8%、Vc 1.5%、黄原胶0.08%、余量纯净水。
一种牡丹花健脾养血复合保健饮料的制备方法,其特征在于,它包括以下步骤:
1)牡丹花液的制备:选取新鲜的牡丹花瓣置于通风处晾晒至其水分含量为40%-50%,然后将其放入1000ml纯净水中,同时将Vc加入水溶液中,采用微波处理15-20min后,密闭浸泡24h后过滤,滤液即为牡丹花液,冷藏备用;
2)仙人掌汁的制备:将新鲜仙人掌清洗去外皮,切碎成0.3cm的细条,然后放入榨汁机中榨汁,用200-250目筛网过滤得一次滤液备用,滤渣中再加入5倍重量的纯净水重复榨汁过滤两次,得到的滤液与一次滤液混合后加热到88℃,保持30-40s后迅速冷却至35℃,然后用300目筛网精滤制成澄清的仙人掌汁备用;
3)山药浆的制备:选择外形圆整、表面光滑、无病虫害的鲜山药,清洗干净后放入锅中蒸煮20min,然后剥皮后的熟山药捣碎并于55-65℃烘干至粉末状,将所得山药粉加入4倍于其重量的纯净水中,加热升温到95℃并保持1-2h,待溶液降至常温后用150目筛网过滤,滤液即为山药浆;
4)调配:将牡丹花液、仙人掌汁、山药浆混合,加入柠檬酸、果糖、异麦芽糖醇、黄原胶进行调配,300目筛进一步精滤;
5)均质、脱气:将精滤后的混合饮料在20-25MPa的高压均质机均质,然后真空脱气;
6)灌装、灭菌:80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
所述步骤1)中微波处理功率为800W。
所述步骤5)中均质时间为15-20min。
所述步骤5)中真空脱气时间3-5min,脱气温度为60℃。
本发明的有益效果是:本发明制成的保健饮料含有牡丹花、仙人掌和山药的多重营养成分和保健功效,具有益气养血、健脾和胃、清热止痛的作用,且其配方科学合理,制备工艺简单,口感细腻、醇厚、爽口、纯天然、安全健康。
本发明的创新点在于:
本本发明的配方全新,含有牡丹花、仙人掌和山药的组合物,具有优异的保健效果,营养更全面,配方产品口感良好,改善了单一产品口感差,营养不全面的问题,其健脾补血效果保健效果好,产品制备工艺简单。
具体实施方式
下面结合具体实施例对本发明做进一步的详细说明。
实施例1
一种牡丹花健脾养血复合保健饮料,它由以下重量百分比的原料组成:牡丹花液20%、仙人掌汁10%、山药浆10%、柠檬酸3%、果糖3%、异麦芽糖醇6%、Vc 0.5%、黄原胶0.05%、余量纯净水。
其制备方法如下:
1)牡丹花液的制备:选取新鲜的牡丹花瓣置于通风处晾晒至其水分含量为40%-50%,然后将其放入1000ml纯净水中,同时将Vc加入水溶液中,采用800W的微波处理15-20min后,密闭浸泡24h后过滤,滤液即为牡丹花液,冷藏备用;
2)仙人掌汁的制备:将新鲜仙人掌清洗去外皮,切碎成0.3cm的细条,然后放入榨汁机中榨汁,用200-250目筛网过滤得一次滤液备用,滤渣中再加入5倍重量的纯净水重复榨汁过滤两次,得到的滤液与一次滤液混合后加热到88℃,保持30-40s后迅速冷却至35℃,然后用300目筛网精滤制成澄清的仙人掌汁备用;
3)山药浆的制备:选择外形圆整、表面光滑、无病虫害的鲜山药,清洗干净后放入锅中蒸煮20min,然后剥皮后的熟山药捣碎并于55-65℃烘干至粉末状,将所得山药粉加入4倍于其重量的纯净水中,加热升温到95℃并保持1-2h,待溶液降至常温后用150目筛网过滤,滤液即为山药浆;

5)均质、脱气:将精滤后的混合饮料在20-25MPa的高压均质机均质15-20min,然后真空脱气3-5min,脱气温度为60℃;
6)灌装、灭菌:80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
实施例2
一种牡丹花健脾养血复合保健饮料,它由以下重量百分比的原料组成:牡丹花液30%、仙人掌汁20%、山药浆20%、柠檬酸5%、果糖5%、异麦芽糖醇10%、Vc 2%、黄原胶0.1%、余量纯净水。
本实施例保健饮料的制备方法同实施例1。
实施例3
一种牡丹花健脾养血复合保健饮料,它由以下重量百分比的原料组成:牡丹花液28%、仙人掌汁15%、山药浆15%、柠檬酸4%、果糖4%、异麦芽糖醇8%、Vc 1.5%、黄原胶0.08%、余量纯净水。
本实施例保健饮料的制备方法同实施例1。
测试例1
感官质量评价实验
将发明实施例1-3制备的保健饮料与单一牡丹花液、仙人掌汁、山药浆制备的饮料进行感官评价对比。评价打分标准如表1。

由经过筛选和训练的50人专业感官评价员组成评价小组对其整体的风味、酸度、甜度进行评价打分,该结果中配方1-3分别为上述实施例1-3产品,配方4-6分别为牡丹花液、仙人掌汁、山药浆制得的饮料,评价得分结果见表2 。

从表 2中可以看出,配方1-3的整体风味得分均在4.6分以上,是容易接受的饮品;而配方4-6的整体风味得分均在3.8分以下,口感较差,因而本发明制得的产品是一种营养丰富,口感细腻、醇厚、爽口、纯天然、安全健康的保健饮品。
测试例2
本发明产品补血作用效果实验研究
本发明研究了该健脾养血的保健饮料对乙酰苯肼致小鼠血虚模型红细胞、血红蛋白的影响。取小鼠90只,随机分为9组,分别为空白对照组、模型组、实施例1-3组以及牡丹花液组、仙人掌汁组、和山药浆组,各组给药剂量为15ml/kg,空白对照组和模型组给予等量蒸馏水,每24h灌胃1次,连续给药10d。阳性对照组为复方阿胶浆(15mL/kg)。于实验的第1,4,7天皮下注射2%乙酰苯肼生理盐水溶液,首次剂量为200mg/kg,后2次减半,造模的第9天即可造成溶血性血虚模型。造模的同时开始灌胃给药,于末次给药2h后各组小鼠眼眶采血,观察动物的一般特征及红细胞数和血红蛋白变化情况。

上述实验中,结果造模第4、5天,空白对照组小鼠皮毛光泽而致密,眼睛明亮,活动敏捷,鼻唇湿润呈淡粉色,尾巴粗、圆,色粉红。模型组状态最差,活动减少,精神萎靡,闭目,尾、耳颜色苍白,被毛粗乱、蓬松且无光泽,体质量随饮食及饮水量减少而下降。牡丹花液组一般状态比模型组稍好,实施例1-3组及复方阿胶浆组逐渐趋于正常,毛色有光泽而致密,活动灵活,耳、尾略露血色。模型组小鼠皮下注射乙酰苯肼后,红细胞数和血红蛋白值均较空白对照组小鼠明显下降(P均<0.01);实施例1-3组及复方阿胶浆组小鼠红细胞数和血红蛋白值均高于模型组。因而从上述结果可以看出,本发明制备的保健饮料对血虚症小鼠的红细胞数量及血红蛋白含量具有明显的升高作用,因而具有极高的临床应用价值,非常适合各个时期气血不足的女性及中老年人饮用。
测试例3
本发明保健饮料人体试食实验
实验对象:随机选取具有脾胃失和症状的患者480例,平均分为6组,每组80人,各组年龄比较无显著性差异(p>0.05)。
实验方法:对1-3组患者分别每日饮用实施例1-3制备的保健饮料,每日于早晚饭后1小时饮用100ml;第4-6组分别采用同样的方法和剂量分别饮用相应的单一牡丹花液、仙人掌汁和山药浆,连续饮用90天后观察结果。
实验结果:见表4。
痊愈:食欲不振、消化不良、胃脘隐痛、呕吐痰涎、纳呆痞闷、 体倦乏力等临床常见症状基本消失不见;
有效:食欲不振、消化不良、胃脘隐痛、呕吐痰涎、纳呆痞闷、 体倦乏力等临床常见症状消失大半或部分缓解;
无效:食欲不振、消化不良、胃脘隐痛、呕吐痰涎、纳呆痞闷、 体倦乏力等临床常见症状无任何明显变化。
表4 实验结果统计
从上述实验结果可以看出,本发明实施例制备的保健饮料对脾胃失和具有非常优异的治疗及调节作用,其总有效率达97.5%以上,且各组分间协同增效,对食欲不振、消化不良、胃脘隐痛、呕吐痰涎、纳呆痞闷、体倦乏力等脾胃失和患者调节效果要比任何单一组分或者所有组分的效果叠加总和都要好,因而,本发明制备的是一种具有健脾和胃、益气养血的保健饮料。

1.一种牡丹花健脾养血复合保健饮料,其特征在于,它由以下重量百分比的原料组成:牡丹花液20-30%、仙人掌汁10-20%、山药浆10-20%、柠檬酸3-5%、果糖3-5%、异麦芽糖醇6-10%、Vc 0.5-2%、黄原胶0.05-0.1%、余量纯净水。
2.根据权利要求1所述的牡丹花健脾养血复合保健饮料,其特征在于,它是由以下重量百分比的原料组成:牡丹花液28%、仙人掌汁15%、山药浆15%、柠檬酸4%、果糖4%、异麦芽糖醇8%、Vc 1.5%、黄原胶0.08%、余量纯净水。
3.一种权利要求1或2所述的牡丹花健脾养血复合保健饮料的制备方法,其特征在于,它包括以下步骤:
