Abstract
本发明公开了一种富硒枸杞泡腾片及其制备方法,由包括以下重量份数的原料制备而成:枸杞粉2‑25份、柠檬酸20‑40份、碳酸氢钠20‑40份、山楂粉1‑10份、西柚粉1‑20份、刺梨粉1‑20份、麦芽糊精8‑20份、抗性糊精8‑20份、木糖醇7‑30份、三氯蔗糖0.01‑3份、富硒酵母0‑1份、PEG 6000 0.1‑5份。本发明的富硒枸杞泡腾片通过泡腾片中添加富硒酵母,添加功能营养成分,达到补充有机硒的作用同时协同促进各种营养成分的吸收。
Description
技术领域
本发明涉及食品加工技术领域,尤其涉及一种富硒枸杞泡腾片及其制备方法。
背景技术
枸杞是宁夏著名特产之一,居"宁夏五宝"之首,是一种具有较高保健和药用开发价值的功能性产品,属卫生部公布的药食同源食物。枸杞中含有丰富的枸杞多糖、脂肪、蛋白质、游离氨基酸、牛磺酸、甜菜碱、维生素B1、B2、E、C、类胡萝卜素,枸杞中的矿物元素也非常丰富,如钾、钠、钙、镁、铁、铜、锰、锌、硒等。因为富含上述的营养成分,赋予枸杞保护视力、养肝护肝等生理功效。
硒是人体必需的14种微量元素之一,近20年来,越来越多的研究发现硒具有清除自由基、抗癌、保护肝脏、防衰老、增强免疫等生物学功能。国内外大量临床实验证明,人体缺硒可引起某些重要器官的功能失调,导致许多严重疾病发生。中国是一个缺硒大国,据《中华人民共和国地方疾病与环境因素图集》揭示,从东北三省起斜穿至云贵高原,占中国国土面积的72%地区存在一条低硒地带,其中30%为严重缺硒地区,粮食等天然食物硒含量较低。华北、东北、西北等大中城市都属于缺硒地区。中国二十二个省市的部分地区,约七亿人生活在低硒地区。大部分地区食物中硒含量在0.02mg/kg以下,东南沿海是中国富硒地区,也只有0.10mg/kg,是联合国卫生组织规定的最低限。中国人群食物中尚达不到每天每人40微克以上的标准补硒水平,尤其是缺硒地区人群,更难从食物中达到补硒的目的。硒在人体内无法合成,所以要满足人体对硒的需求,就需要每天补充硒。按世界卫生组织要求:人体膳食中每日最低需求量为40微克硒,而营养补充在50-250微克硒为宜。
发明内容
本发明的目的是要提供一种方便食用便于携带的富硒枸杞泡腾片及其制备方法。可用于补硒人群高效补充有机硒,本发明在枸杞泡腾片中添加富硒酵母,促进人体对枸杞营养成分的吸收,提高硒成分的吸收效率。
为了实现上述目的,本发明的技术方案如下:
本发明公开了一种富硒枸杞泡腾片,由包括以下重量份数的原料制备而成:枸杞粉2-25份、柠檬酸20-40份、碳酸氢钠20-40份、山楂粉1-10份、西柚粉1-20份、刺梨粉1-20份、麦芽糊精8-20份、抗性糊精8-20份、木糖醇7-30份、三氯蔗糖0.01-3份、富硒酵母0-1份、PEG 6000 0.1-5份。
本发明还提供了一种富硒枸杞泡腾片的制备方法,包括以下步骤:
(1)将按重量份数计的枸杞粉2-25份、西柚粉1-20份、山楂粉1-10份、刺梨粉1-20份、柠檬酸20-40份、麦芽糊精8-20份、抗性糊精8-20份、木糖醇7-30份、富硒酵母0-1份、三氯蔗糖0.01-3份混合均匀;加入食用酒精制软材,过20目筛,40℃烘箱烘干,20目筛制粒;
(2)将碳酸氢钠20-40份与熔融PEG60000.1-5份混匀,过20目筛,制粒;
(3)将步骤(1)和步骤(2)的制得的20目筛的颗粒,混合均匀压片即得泡腾片。
更进一步的,所述枸杞粉由枸杞浸提物通过喷雾干燥而得;所述枸杞浸提物的物料与水质量比为1:1-10。
更进一步的,西柚粉为西柚经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:2-8。
更进一步的,山楂粉为山楂经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:1-12。
更进一步的,刺梨粉为刺梨经过打浆,喷雾干燥所得,所属打浆的物料与水质量比为1:1-20
本发明的一种富硒枸杞泡腾片,含有功效成分为,枸杞、富硒酵母、山楂、西柚、刺梨。均为市售产品。
枸杞属于茄科枸杞属,枸杞含有丰富的氨基酸、矿物质、微量元素、生物碱、VC、B1、B2、钙、镁、铜、锌、锰、铁、铅、镍、镉、钴、铬、钾、钠等各种营养成分。枸杞鲜果中含油率达到5.54%,总糖的含量为6.9%,总酸的含量为0.73%,维生素C含量为3.02mg/100g,维生素B1含量为0.07mg/100g,维生素B2含量为0.02mg/100g,总花色苷的含量达386.9mg/100g。
富硒酵母中的硒含量达到1000~2500mg/kg(即1000-2500ppm),其蛋白质含量大于45%,维生素B1为3.2mg/kg,维生素B2为33.2mg/kg,是一种很好的功能性食品原料。富硒酵母中生物硒含量占总硒量的95%以上,利用率高非常适合人体吸收利用。与化学硒相比,生理活性较高,毒性低,富硒酵母的毒性大大低于亚硒酸钠,对肿瘤的抑制效果较亚硒酸钠显著。人体摄入富硒酵母后血液中硒含量的提高明显高于亚硒酸钠。
PEG 6000为分子量达到5500-7500的是聚乙二醇,无毒、无刺激性,具有良好的水溶性,并与许多有机物组份有良好的相溶性。它们具有优良的润滑性、保湿性、分散性、粘接剂、抗静电剂及柔软剂等采用高分子量的
山楂,含山楂酸等多种有机酸,味酸甘,并含解脂酶,入胃后,能增强酶的作用,促进肉食消化,有助于胆固醇转化,
西柚,西柚中含有宝贵的天然维生素P和丰富的维生素C以及可溶性纤维素,是含糖分较少的水果。维生素P可以增强皮肤及毛孔的功能,有利于皮肤保健和美容。维生素C可参与人体胶原蛋白合成,促进抗体的生成,以增强肌体的解毒功能。减肥人士的餐单都少不了它。
刺梨,是一种稀有的果实。刺梨的药用价值很高,其花、叶果、籽可入药,有健胃、消食、滋补,止泻的功效。特别是刺梨富含超氧化物歧化酶(简称SOD),SOD是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。刺梨肉质肥厚、味酸甜、果实富含糖、维生素、胡萝卜素、有机酸和20多种氨基酸、10余种对人体有益的微量元素,以及过氧化物歧化酶。果实内含有丰富的维生素C,被称为“维C之王”。
本发明的配方原料甄选,充分考量成分中各种营养物质的均衡和协同作用,枸杞中含有多种氨基酸和微量元素,其中钙、镁、锌、铁的含量也很高。本发明所提供的原料配比中,配方中所选的成分刺梨粉、西柚粉、山楂粉中含有丰富的VC可促进人体对枸杞中富含的铁元素的吸收,补气补血,提高机体抵抗体,补虚益气、养血安神,减缓气血不足、倦怠无力、失眠多梦等症状;富硒酵母中富含的维生素B2可参与枸杞中氨基酸、脂肪、碳水化合物的代谢,有利于皮肤组织生长抗皮肤衰老的有益效果。各项营养素之间互相协同作用,更有助于人体的吸收。
与现有技术相比,本发明的有益效果为:
(1)本发明研制的泡腾片为枸杞深加工拓宽了思路,提高了枸杞经济附加值,延长了枸杞产业链。
(2)本发明通过在含枸杞的泡腾片中添加富硒酵母,可用于缺硒人群达到补充有机硒的作用。同时甄选添加富含维C和SOD等营养成分的功效成分,各项营养素之间互相协同作用,更有助于人体对泡腾片中各种营养成分的吸收。
(3)本发明的产品采用片剂的形式,方便人们食用,携带。
(4)本组方科学,制备方法简单,易生产制备。
(5)原料中营养成分丰富,不仅可用于缺硒人群,而且有美容养颜,改善肤质,提高免疫力的功效,可以改善亚健康状态。

PEG6000 0.5份

三氯蔗糖 0.1份
其中,枸杞粉为枸杞浸提物通过喷雾干燥而得;所述打浆的物料与水质量比为1:4。西柚粉为西柚经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:5。山楂粉为山楂经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:4。
将碳酸氢钠与熔融态PEG6000混合后的颗粒过20目筛,制粒备用;
将上述重量份数的枸杞粉、西柚粉、山楂粉、刺梨粉、麦芽糊精、抗性淀粉、木糖醇、富硒酵母混合均匀,加入质量体积比为20份左右的食用酒精混匀,过20目筛,40℃的烘箱条件下烘干,整粒;
将上述两种制粒颗粒混合进行压片即得泡腾片。
实施例2
按如下重量配比称取各原料组分:
枸杞粉 5份
西柚粉 2份
山楂粉 3份

柠檬酸 27份
碳酸氢钠 23份
抗性糊精 15份
麦芽糊精 10份
木糖醇 12份
富硒酵母 0.03份

其中,枸杞粉为枸杞浸提物通过喷雾干燥而得;所述打浆的物料与水质量比为1:2。西柚粉为西柚经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:4.8。山楂粉为山楂经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:6。
将碳酸氢钠与熔融态PEG6000混合后的颗粒过20目筛,制粒备用;
将上述重量份数的枸杞粉、西柚粉、山楂粉、刺梨粉、麦芽糊精、抗性淀粉、木糖醇、富硒酵母混合均匀,加入质量体积比为20份左右的食用酒精混匀,过20目筛,40℃的烘箱条件下烘干,整粒;
将上述两种制粒颗粒混合进行压片即得泡腾片。

其中,枸杞粉为枸杞浸提物通过喷雾干燥而得;所述打浆的物料与水质量比为1:6。西柚粉为西柚经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:4。山楂粉为山楂经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:3。
将碳酸氢钠与熔融态PEG6000混合后的颗粒过20目筛,制粒备用;

本发明的富硒枸杞泡腾片,色泽均匀一致,片形完整,大小一致,无裂缝、缺角,表面光滑;口感具有怡人的枸杞清香,无异味;无肉眼可见外来杂质,存放12-24个月无霉点。
功效验证式样:
受试人群选300人,分三组,每组100人,男性55人、女性45人年龄30-50岁,饮用本发明的富硒枸杞泡腾片,每日二次,每次1-2片,效果对比试验如下表。
患者王某,女,35岁,主要症状胃肠胀痛,目赤干涩。每日服用1-2片本发明泡腾片后,一个月后,胃肠胀痛感消失,眼睛不适感减弱,视力有所提高。持续饮用免疫力得到提高。
患者赵某,男,46岁,胃肠蠕动不好,胃胀气,长期口臭,常感疲乏无力。服用本发明产品后,每日1-2片本发明泡腾片后,服用15天后,胃肠不适感,口臭减弱,继续服用2个月,胃肠不适消失,打嗝现象消失,口气清新,,精神状态大大改善。
患者C,女,35岁,主要症状口干目赤,胃胀无食欲,经常失眠,睡眠效果不好。坚持服用本发明产品半月后,胃胀缓解,后又继续服用1个月后,口干目赤得到控制和改善,2个月后失眠状况改善,睡眠质量有所提高。
患者D,女,36岁,症状:目赤、睡眠差,气短、脸上有褐斑、头晕,目眩。服用本泡腾片3个月后,肤色变好,皮肤细腻,光润,睡眠好,脸上的褐斑变淡。
功效验证结论:本发明的富硒枸杞泡腾片口味清香怡人,适应面较广,并具有较好的保健功能,可以缓解亚健康状态。在补硒、消积、健脾胃、提高免疫力,改善肤色和肤质方面具有良好的功效。泡腾片口感怡人,作为休闲饮品,每日适量饮用可以消积食,降低脾胃不适感。长期饮用增强人体免疫力,清肺、明目,具有保健效果。

1.一种富硒枸杞泡腾片,其特征在于,所述的泡腾片由包括以下重量份数的原料制备而成:枸杞粉2-25份、柠檬酸20-40份、碳酸氢钠20-40份、山楂粉1-10份、西柚粉1-20份、刺梨粉1-20份、麦芽糊精8-20份、抗性糊精8-20份、木糖醇7-30份、三氯蔗糖0.01-3份、富硒酵母0-1份、PEG 6000 0.1-5份。
2.根据权利要求1所述的一种富硒枸杞泡腾片,其特征在于,制备方法包括以下步骤:
(1)将按重量份数计的枸杞粉2-25份、西柚粉1-20份、山楂粉1-10份、刺梨粉1-20份、柠檬酸20-40份、麦芽糊精8-20份、抗性糊精8-20份、木糖醇7-30份、富硒酵母0-1份、三氯蔗糖0.01-3份混合均匀;加入食用酒精制软材,过20目筛制粒,40℃烘箱烘干,20目筛整粒;
(2)将碳酸氢钠20-40份与熔融PEG60000.1-5份混匀,过20目筛,制粒;
(3)将步骤(1)和步骤(2)的制得的20目筛的颗粒,混合均匀压片即得泡腾片。
3.根据权利要求1或2所述的一种富硒枸杞泡腾片,所述枸杞粉由枸杞和水经过打浆,通过喷雾干燥而得;所述枸杞浸提物的物料与水质量比为1:1-10。
4.根据权利要求1或2所述的一种富硒枸杞泡腾片,所述西柚粉为西柚经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:2-8。
5.根据权利要求1或2所述的一种富硒枸杞泡腾片,所述山楂粉为山楂经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:1-12。
6.根据权利要求1或2所述的一种富硒枸杞泡腾片,所述刺梨粉为刺梨经过打浆,喷雾干燥所得;所述打浆的物料与水质量比为1:1-20。
