本发明涉及一种刺梨菓珍及其制备方法,属于菓珍制备技术领域。
背景技术
刺梨的药用价值很高,其花、叶果、籽可入药,有健胃、消食、滋补,止泻的功效。特别是刺梨富含超氧化物歧化酶(简称 SOD),SOD 是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。刺梨的果实同时也是加工保健食品的上等原料,成熟的刺梨肉质肥厚、味酸甜、果实富含糖、维生素、胡萝卜素、有机酸和 20 多种氨基酸、10余种对人体有益的微量元素,以及过氧化物歧化酶。尤其是维生素 C含量极高,是当前水果中最高的,每 100 克鲜果中含量841.58~3541.13 毫克,是柑橘的50倍,猕猴桃的10倍,具有“维生素 C 之王”的美称。
目前,市场上的果珍 ( 速溶固体饮料 ) 以人们常食用的水果如橙、苹果、水蜜桃、菠 萝等为原料制备成水果粉,向水果粉中加入适量的甜味剂、增稠剂、调味剂等配制包装而成的,或者向水果粉中加入水果香精或香料、甜味剂、增稠剂、调味剂、色素(合成)等配制包装而成。果珍外观和口感虽与天然水果饮品没有差异,但是几乎没有或者缺乏营养价值。随着人们对健康需求的日益提高,在选择饮料时不仅要求饮料具有营养价值,同时还希望能够具有养生保健的作用,尤其是人们在日常生活中面对电脑和电视的时间越来越多,对眼睛造成的危害越来越明显。因此,希望提供一种能够补充人眼所需营养,开胃健脾、补充维生素,对眼睛的视觉功能有保健和改善作用的果珍。

本发明的目的在于,提供一种刺梨菓珍及其制备方法。该刺梨菓珍具有具有开胃健脾、补充维生素等作用。
本发明的技术方案:一种刺梨菓珍,按照重量计,由刺梨10-20份、脐橙10-20、食品添加剂2-4份、焦磷酸铁2-4份、食用葡萄糖4-8份、食用香精1-2份、L-抗坏血酸1-2份组成。
前述的刺梨菓珍,由刺梨15份、脐橙15、食品添加剂3份、焦磷酸铁3份、食用葡萄糖5份、食用香精1.5份、L-抗坏血酸1.5份组成。
前述的刺梨菓珍及其制备方法,包括有以下步骤:
(1)将刺梨、脐橙切成片状,烘干、粉碎、微波炉干燥3-5分钟、杀菌,制得A品;
(2)备料 :将食品添加剂、焦磷酸铁、食用葡萄糖、食用香精和L-抗坏血酸按照2:2:4:1的比例混合配比,制得B品;
(3)将制得的A品与B品统分混合、烘干20-30分钟,杀菌、包装,即得。

(1)将刺梨、脐橙切成片状,烘干、粉碎、微波炉干燥4分钟、杀菌,制得A品;
