本发明涉及一种营养猪肉酱,所述营养猪肉酱由下列物料按照重量百分比构成:猪肉30‑50份、香菇30‑50份、香菜5‑10份、植物油80‑100份、豆豉10‑20份、芡实5‑10份、党参5‑10份、枸杞子5‑10份、茯苓4‑8份、白糖5‑10份、食盐10‑15份、葱蒜5‑10份、生姜3‑5份、鸡精3‑5份、黄豆酱20‑30份、香辛料10‑20份、纯净水100‑200份;该猪肉酱配料合理,选材精良,不光美味可口,而且具有丰富的营养,可以作为佐餐或者作为烹饪的配料食用。

本发明涉及一种酱料,尤其是一种营养猪肉酱,还涉及到其制备方法。
背景技术
酱类食品佐料,是很多人喜爱的调味食品佐料,猪肉酱可以即食也可以作为烹饪
佐料为很多人喜爱。但是市场上大多数猪肉酱营养比较单一,往往只具有味道上的鲜美,滋补的益处不够。随着人们对保健的需求不断提升,人们对调味品的要求也从单一的追求口感,到美味和营养都有所要求。因此,有必要开发一种营养猪肉酱,兼具美味和营养的特点。
发明内容
本发明要解决的技术问题是提供一种猪肉酱及其制备方法,不仅美味可口,而且具有滋补营养的功能。
为解决上述技术问题,本发明提供一种营养猪肉酱,所述营养猪肉酱由下列物料按照重量百分比构成:猪肉30-50份、香菇30-50份、香菜5-10份、植物油80-100份、豆豉10-20份、芡实5-10份、党参5-10份、枸杞子5-10份、茯苓4-8份、白糖5-10份、食盐10-15份、葱蒜5-10份、生姜3-5份、鸡精3-5份、黄豆酱20-30份、香辛料10-20份、纯净水100-200份。

所述营养猪肉酱其制备方法包括如下步骤:1)取新鲜猪肉清洗后加工为3*3mm左右猪肉粒待用;2)将香菇泡发洗净后加工为3*3mm左右待用;3)将步骤2)的香菇粒热油烹制到金黄色后捞出;4)将切好的葱蒜、姜及黄豆酱热油烹煮3-5分钟,再倒入豆豉炒制3分钟,再倒入香菇、猪肉粒炒制5-10分钟,接着加入食盐、白糖、鸡精、香辛料调味,继续翻炒5至10分钟;5)将芡实5-10份、党参5-10份、枸杞子5-10份、茯苓4-8份洗净后粉碎混合均匀,加入适当比例纯净水后放入瓦罐中熬制2-3小时,取滤液250-300ml;6)将步骤5)中药渣加入适量纯净水重复熬制2-3小时,取滤液250-300ml,将两次滤液混合均匀;7)将步骤6)所得的中药汁加入前面煮制好的猪肉酱充分搅拌;8)灭菌处理后装罐即为所得成品。
所述猪肉酱中选用了一些药食同源的中药材,各中药组分的补益作用如下:
芡实:味甘、涩,性平。归脾、肾经。补脾祛湿,益肾固精。用于脾虚泄泻,肾虚遗精,带下。
党参:性味甘,平,入手、足太阴经气分,有补中益气,生津的功能,治脾胃虚弱,气血两亏,体倦无力,食少,口渴,久泻,脱肛。
枸杞子:性平,味甘。归肝经、肾经。能够滋补肝肾、益精明目和养血、增强人的免疫力。
茯苓:性味甘淡,性平。入心、脾、肺经,有渗湿利水,益脾和胃,宁心安神的功能,治小便不利水肿胀痛,痰饮咳逆,呕哕,泄泻,遗精,淋浊,惊悸,健忘。
本发明的有益效果是:配料合理,选材精良,不光美味可口,而且具有丰富的营养,可以作为佐餐或者作为烹饪的配料食用。

下面结合具体实施方式,进一步阐明本发明,应理解下述具体实施方式仅用于说明本发明而不用于限制本发明的范围。
实施例1:
一种营养猪肉酱,由下列物料按照重量百分比构成:猪肉40份、香菇30份、香菜6份、植物油90份、豆豉12份、芡实6份、党参6份、枸杞子7份、茯苓5份、白糖6份、食盐10份、葱蒜5份、生姜4份、鸡精4份、黄豆酱22份、香辛料12份、纯净水150份。
所述营养猪肉酱其制备方法包括如下步骤:
1)取新鲜猪肉清洗后加工为3*3mm左右猪肉粒待用;2)将香菇泡发洗净后加工为3*3mm左右待用;3)将步骤2)的香菇粒热油烹制到金黄色后捞出;4)将切好的葱蒜、姜及黄豆酱热油烹煮3-5分钟,再倒入豆豉炒制3分钟,再倒入香菇、猪肉粒炒制5-10分钟,接着加入食盐、白糖、鸡精、香辛料调味,继续翻炒5至10分钟;5)将芡实6份、党参6份、枸杞子7份、茯苓5份洗净后粉碎混合均匀,加入适当比例纯净水后放入瓦罐中熬制2-3小时,取滤液250-300ml;6)将步骤5)中药渣加入适量纯净水重复熬制2-3小时,取滤液250-300ml,将两次滤液混合均匀;7)将步骤6)所得的中药汁加入前面煮制好的猪肉酱充分搅拌;8)灭菌处理后装罐即为所得成品。

所述营养猪肉酱其制备方法包括如下步骤:

2.根据权利要求1所述的一种营养猪肉酱,其特征在于:所述营养猪肉酱由下列物料按照重量百分比构成:猪肉40份、香菇30份、香菜6份、植物油90份、豆豉12份、芡实6份、党参6份、枸杞子7份、茯苓5份、白糖6份、食盐10份、葱蒜5份、生姜4份、鸡精4份、黄豆酱22份、香辛料12份、纯净水150份。
