Abstract
黑藜麦减肥代餐属于功能食品,尤以青藏高原天然无污染有机谷物黑藜麦提取物、胡椒碱、红藻萃取物、菊粉丙酸酯等原料制成的功能食品。该产品具有提高免疫力、减肥瘦身、降血压、降血脂、降血糖、通便排毒、抗癌等功效。
Description
一、技术领域:本发明属功能固体食品,尤以青藏高原天然无污染有机谷物黑藜麦提取物等原料,采取现代先进工艺加工而成的功能食品。
二、背景技术:本发明以黑藜麦提取物、胡椒碱、红藻萃取物、菊粉丙酸酯等原料制成的功能固体饮品。该产品具有提高免疫力、减肥瘦身、降血压、降血脂、降血糖、通便排毒、抗癌等功效。目前市场上还没有同类产品,创新研发该产品可为给减肥瘦身的人群提供了一种新产品。该产品以纯天然有机谷物和生物活性成分为原料制成的减肥代餐、纯度高、吸收好、生物活性强、无任何副作用、口感纯正、服用方便、效果明显,适应于各年龄段的减肥人群服用。
三、发明内容:肥胖是一种营养代谢综合失调性疾病和低度全身慢性炎症。研究发现,肥胖病因相当复杂,不仅有明显的遗传性,还与饮食和运动密切相关。在今天肥胖已成为一个社会严重的公共卫生问题。世界卫生组织(WHO)认为,肥胖与艾滋病、吸毒、凶酒并列为世界四大社会问题,医学界称之为人类死亡率高的癌症,冠心病、糖尿病、高血压、高血脂、心脑血管疾病都与肥胖直接有关。随着我国经济的快速发展,人民生活水平的不断提高,肥胖正在成为一个关注的流行病。根据世界卫生组织的统计数学显示,全球超重人数超过10亿多,有3亿多人严重肥胖,而发展中国家的肥胖比例大幅增加。在我国根据卫生部、科技部和国家统计局公布的营养与健康状况调查结果显示,我国13亿人口中有2亿人超重,特别是儿童超重迅速增长。预计今后肥胖患病率还将会有较大幅度的增长,肥胖会给国民健康造成严重的威胁,也会给个人和社会带来沉重的经济负担。
四、原料配方:黑藜麦提取物50-100千克、胡椒碱2-6千克、红藻萃取物6-12千克、菊粉丙酸酯10-20千克为原料。
五、技术方案:
(一)黑藜麦提取物(Chenopodium quinoa willd),又叫南美藜,奎麦,金谷子等。原产于美洲安第斯山区,是印加土著居民的主要传统食物,由于具有独特丰富全面的营养价值,养育了印加民族,被称为粮食之母,也可代替婴幼儿奶粉食用。近几年来引进我国青海等地区试种成功,在青藏高原海拔2800米的柴达木盆地大面积种植。黑藜麦属藜木科双叶子黑藜麦的成熟种子。性平味甘,具有全面均衡补充营养,有增强机体功能和增强免疫功能,修复体质,提高机体适应能力、调节内分泌、促进儿童生长发育、预防疾病、美容养颜、减肥、通便、延缓衰老、防癌抗癌、降血压、降血脂、降血糖、防治心脑血管疾病、辅助治疗慢性疾病等功效,也是孕产妇的超级营养食品,被联合国粮农组织认为黑藜麦是唯一单体植物既满足人体基本营养需求的食物,推荐黑藜麦为最适宜人类完美的营养食品,并列为全球10大健康营养的“超级谷物”,“未来食品”,以促进人类的健康。尤其适应于高血压、高血脂、高血糖、心脑血管疾病,以及婴幼儿、孕产妇、儿童、老年人等特殊体质等人群,长期食用效果显著。
营养成分:黑藜麦含有丰富的蛋白质(高达26%,且品质与奶粉和牛肉类相当),碳水化合物、脂肪、多种氨基酸、其中含有人体必需的全部9种氨基酸,比例适当且易吸收,还富含不饱和脂肪酸、花青素、类黄酮、β-葡聚糖、胆碱、甜菜碱、α一亚麻酸、矿物质钙、镁、磷、钾、铁、锌、硒、锰、铜等,维生素B族、叶酸、维生素E等化合物,膳食纤维含量高达7.1%,不含胆固醇。
生理功能:1、增强免疫功能:研究发现,黑藜麦具有增强机体防病抗病能力,调节机体免疫功能的作用,其中黑藜麦中丰富的蛋白质是构成血红球和抗体的主要成分。实验证明,严重缺乏会使人的免疫细胞中的淋巴球大减,造成严重的免疫机能下降,且易感染疾病。另外,黑藜麦中含有β-葡萄糖对机体免疫系统有极强的作用,具有活化细胞的功能,防止机体被感染和修复被破坏的组织,同时,黑藜麦中β-葡萄糖还有激活细胞,提高免疫功能的作用。而黑藜麦中均衡的营养物质也可通过改善体质提高免疫力。
2、降血压:数据研究表明,黑藜麦与控制血压有一定作用。研究推测,这可能是由黑藜麦中的钾、镁和钙平衡有利于降血压。此外黑藜麦中另一个降压因素可能是降压生物活性肽,黑藜麦中的蛋白质是血管紧张转换酶(ACE)抑制肽的来源,可以通过酶水解,胃肠道消化或食品加工过程释放出来。目前从多种蛋白质如酪蛋白、乳清蛋白、β-球蛋白等均能分离出抗高血压活性肽,在以自发性高血压大鼠实验中具有降血压活性。
3、降血脂:黑藜麦晶及其口服冲剂、黑藜麦粉对高脂血症和高脂血症家兔血清总胆固醇(TC)、甘油三酯(TG)、β-脂蛋白等均有明显的抑制作用,并能明显升高高密度脂蛋白的胆固醇(HDL-C)水平,其降血脂成分为食物纤维不溶蛋白及脂类等。
4、抗动脉粥样硬化:黑藜麦粉能明显抑制家兔血脂升高及红细胞胆固醇上升;能明显减轻动脉壁和肝脏脂质沉积,对主动脉内膜不斑块病变的形成有良好的抑制作用。
5、降血糖:研究认为,每天摄入适量的黑藜麦粉可降低患糖尿病的几率。因为黑藜麦中含有的钙、镁、维生素和β-葡萄糖可以增强人体合理使用胰岛素的功能。据报道,最新研究发现,经常进食黑藜麦粉食品,其中含有的脂肪酸可降低患糖尿病的风险,动物实验发现,动物体内存在的脂肪酸可帮助降低胰岛素抵抗性,他们对人体通过对黑藜麦制品摄入脂肪酸进行调查,研究了3700多名65岁以上老人跟踪调查,结果显示,与进食黑藜麦制最少的人相比,进食黑藜麦制品多的人患糖尿病的几率要低63%,同样也可以起到降低胰岛素抵抗作用,从而有效预防糖尿病。
6、减肥:多项研究表明,在摄入热量不变的前提下,饮食中增加黑藜麦制品的摄入量有助减肥。因为黑藜麦制品中含有丰富的胆碱和其他一些特殊的活性成分,能帮人体燃烧脂肪,减少脂肪堆积和控制体着有着重要的作用。黑藜麦制品有助于控制体重的另一因素可能与它含有丰富的蛋白质和膳食纤维能增加人的饱腹感对食欲控制有关,因为蛋白质和膳食纤维能产生较强的饱腹感,延缓胃排空,从而减少其他食物的摄入量来控制食欲,达到减肥的作用。另外,黑藜麦含有丰富的花青素,可以抑制脂肪细胞、巨噬细胞和血管内皮细胞,因而发挥降血脂、抗肥胖、抗炎和抗糖尿病的独特功效来实现减肥的显著作用。
7、抗肥胖炎症:肥胖是代谢炎症的诱发因素,因此,黑藜麦含有丰富的花青素,对肥胖的抑制作用可以从源头抑制代谢炎症反应,通过对小鼠12周的实验显示,可显著减轻体质量,减少白色脂肪组织量,显著抑制炎性细胞因子的释放和减少脂肪组织产生的炎症介质。
8、通便:黑藜麦中含有丰富的膳食纤维,能使食物在肠内通过的时间缩短,使大肠内的粪便量相对增加,有助于大肠的蠕动,使粪便易予排出,从而达到通便作用。
此外,黑藜麦还具有延缓衰老、防治心脑血管疾病、护眼明目、通便、辅助治疗慢性疾病等作用。
(二)胡椒碱减肥:最新研究表明,胡椒碱可抑制新的脂肪细胞形成;对肥胖患者具有显著的减肥功效。据报道,国外研究发现,胡椒碱可以调节基因活跃程度,从而控制新的脂肪细胞的形成过程。通过这种途径,胡椒碱还可以诱发一种新陈代谢的链式反应,降低血液组织中的脂肪含量,从而起到显著减肥的作用。这项新研究为研发治疗肥胖症药物或减肥产品提供新方法。
(三)红藻萃取物:(Gelidium amansi extract GAE)红藻萃取物可抑制高脂肪饮食诱导的肥胖。研究证实,持续12周摄入含红藻萃取物的高脂肪饮食对老鼠的体重具有显著的抑制作用,对肥胖老鼠有明显的减肥效果。另据报道,国外研究人员分析红藻萃取物对肥胖大鼠的体重、脂肪含量、血浆、肝脏脂质、脂肪因子分泌物和脂质代谢因子表达的影响,通过8周对肥胖大鼠对比实验结果显示,大鼠减少的体重和共轭亚油酸(CLA)组大鼠一样,共轭亚油酸是一种具有显著减肥功效的脂肪酸。研究还显示,与高脂肪组大鼠相比红藻萃取物组大鼠的体重明显降低。此外,红藻萃取物还可明显减少大鼠体重、脂肪组织质量、瘦蛋白浓度,血清和肝脏中甘油三酯和低密度酯蛋白水平。红藻萃取物还可刺激酯质代谢因子表达,降低高脂饮食诱导肥胖大鼠的体重。
(四)菊粉丙酸酯减肥瘦身:最新研究发现,菊粉丙酸酯可以抑制人的食欲,防止进食过量,具有很好的减肥作用。实验证实,肥胖者食用菊粉丙酸酯后,吃自助餐时可以减少16%的食量,能防止过量饮食。将菊粉丙酸酯添加在饼干中会使人长时间产生饱腹感,因为菊粉丙酸酯可刺激肠道产生可作用于大脑的激素,从而使饱腹感来得快,且持续时间长。通过对肥胖者进行随机双盲对比实验,研究人员对60名肥胖志愿者随机分为两组,其中一组服用菊粉丙酸酯,另一组服用魔芋粉作为对照组,实验结果显示,菊粉丙酸酯能有效防止饮食过量,另外,服用菊粉丙酸酯后,胃和肝脏上的脂肪也减少。因此,菊粉丙酸酯具有显著的抑食减肥作用。另外菊粉丙酸酯还具有通便的作用,也有利于减肥。
综上所述:本产品通过对36名女性每天服用黑藜麦减肥代餐,通过6周后的检测其体内脂肪含量,结果显示,每个试验者的基础代谢率平均提高13.8%,体重平均减少3.7%,体内平均脂肪下降3.3%,腰围平均减少3.6厘米。通过上数据表明,黑藜麦减肥代餐具有显著的减肥功效。
六、制作工艺:
1、原料处理:先将黑藜麦捡杂,清洗、沥干。
2、浸泡:将清洗后的黑藜麦加入1∶1-5水浸泡8-12小时。
3、磨浆:将浸泡后的黑藜麦加入1∶8-10的水磨成浆液。
4、过滤:将磨好的黑藜麦浆液送入过滤机,进行过滤。
5、均质浓缩:将过滤后的黑藜麦浆液加热至60℃,在25MPa下进行均质后浓缩至含固体物40-50%。
6、干燥:将浓缩后的黑藜麦浆液送入低温真空干燥机,真空度控制在0.696千帕,温度控制在30-40度,进行真空干燥,干燥时间2-4小时。
7、粉碎过筛:将干燥后黑藜麦固体物进行粉碎过80-10目筛(即黑藜麦速溶粉)。
8、混合搅拌:将黑藜麦粉与原料配方中剩余的原料胡椒碱、红藻、菊粉丙酸酯混合,充分搅拌均匀。
9、检验包装:将混合后的原料,经检验合格,包装为成品。
