一、技术领域:本发明属功能性谷物营养奶,尤以青藏高原天然无污染有机藜麦等原料,采取现代先进工艺加工而成的功能性养生植物奶。
二、背景技术:本发明以藜麦提取物、豌豆提取物、小麦提取物、红米提取物、青稞提取物、巴旦木提取物等原料制成的功能性谷物营养奶。该产品具有提高免疫力、促进儿童生长发育、抗氧化、延缓衰老、改善亚健康、强身健体、健脑益智、提高记忆力、抗疲劳、美容养颜、祛斑、保护视力、通便排毒、减肥、降脂、防癌抗癌等功效。目前市场上还没有同类产品,创新研发该产品可为给强身健体的人群提供了一种新产品。该产品以纯天然谷物为原料制成的速溶谷物营养奶,纯度高、吸收好、生物活性强、无任何副作用、口感纯正、服用方便、效果明显,适应于各年龄段的人群服用。
三、发明内容:“谷物奶”以青藏高原天然无污染优质谷物藜麦等原料,采用现代生产工艺加工而成的“谷物奶”,其营养丰富全面,不含乳糖和胆固醇,乳糖不耐症也可直接食用,也可作为食品原料进一步开发“谷物奶制品”。所含的脂肪以不饱和脂肪酸为主,含有动物奶粉没有的膳食纤维、异黄酮、胆碱等功能因子;较之动物奶粉“谷物奶”原料来源丰富稳定,生产成本更低,产量有保障,更环保节能,可避免奶牛养殖引发的污染和温室效应,还可弥补动物奶粉的产量不足和建立新的产品诉求及市场概念。其作为一种营养健康的食品原料“谷物奶”可部分替代动物奶粉,广泛应用于酸奶、固体饮料、奶茶及冰淇淋、糖果、饼干、烘焙等食品领域,特别是在新型酸奶和乳酸菌饮品开发上,很有应用前景。采用谷物等新型原料,开发“谷物奶”及系列制品,可拓宽延伸酸奶等乳制品类,加强市场的竞争力,从而促进产业稳步发展,将会带来巨大的经济效益和商机及发展前景。
四、原料配方:藜麦提取物30-50千克、豌豆提取物10-30千克、小麦提取物5-20千克、红米提取物20-40千克、青稞提取物(大麦)5-30千克、巴旦木提取物10-30千克、辅料为原料。
五、技术方案:
(一)藜麦提取物(Chenopodium quinoa willd),又叫南美藜,奎麦,金谷子等。原产于美洲安第斯山区,是印加土著居民的主要传统食物,由于具有独特丰富全面的营养价值,养育了印加民族,被称为粮食之母,也可代替婴幼儿奶粉食用。近几年来引进我国青海等地区试种成功,在青藏高原海拔2800以上的柴达木盆地大面积种植。藜麦属藜本科双叶子藜麦的成熟种子。性平味甘,具有全面均衡补充营养,有增强机体功能和增强免疫功能,修复体质,提高机体适应能力、调节内分泌、促进儿童生长发育、预防疾病、美容养颜、减肥、通便、延缓衰老、防癌抗癌、降血压、降血脂、降血糖、防治心脑血管疾病、辅助治疗慢性疾病等功效,也是孕产妇的超级营养食品,被联合国粮农组织认为藜麦是唯一单体植物既满足人体基本营养需求的食物,推荐藜麦为最适宜人类完美的营养食品,并列为全球10大健康营养的“超级谷物”,“未来食品”,以促进人类的健康。尤其适应于高血压、高血脂、高血糖、心脑血管疾病,以及婴幼儿、孕产妇、儿童、老年人等特殊体质等人群,长期食用效果显著。
营养成分:藜麦含有丰富的蛋白质(高达26%,且品质与奶粉和牛肉类相当),碳水化合物、脂肪、多种氨基酸、其中含有人体必需的全部9种氨基酸,比例适当且易吸收,还富含不饱和脂肪酸、类黄酮、β-葡聚糖、胆碱、甜菜碱、α一亚麻酸、矿物质钙、镁、磷、钾、铁、锌、硒、锰、铜等,维生素B族、叶酸、维生素E等化合物,膳食纤维含量高达7.1%,不含胆固醇。
生理功能:1、增强免疫功能:研究发现,藜麦具有增强机体防病抗病能力,调节机体免疫功能的作用,其中藜麦中丰富的蛋白质是构成血红球和抗体的主要成分。实验证明,严重缺乏会使人的免疫细胞中的淋巴球大减,造成严重的免疫机能下降,且易感染疾病。另外,藜麦中含有β-葡萄糖对机体免疫系统有极强的作用,具有活化细胞的功能,防止机体被感染和修复被破坏的组织,同时,藜麦中β-葡萄糖还有激活细胞,提高免疫功能的作用。而藜麦中均衡的营养物质也可通过改善体质提高免疫力。
2、降血压:数据研究表明,藜麦与控制血压有一定作用。研究推测,这可能是由藜麦中的钾、镁和钙平衡有利于降血压。此外藜麦中另一个降压因素可能是降压生物活性肽,藜麦中的蛋白质是血管紧张转换酶(ACE)抑制肽的来源,可以通过酶水解,胃肠道消化或食品加工过程释放出来。目前从多种蛋白质如酪蛋白、乳清蛋白、β-球蛋白等均能分离出抗高血压活性肽,在以自发性高血压大鼠实验中具有降血压活性。
3、降血脂:藜麦晶及其口服冲剂、藜麦粉对高脂血症和高脂血症家兔血清总胆固醇(TC)、甘油三酯(TG)、β-脂蛋白等均有明显的抑制作用,并能明显升高高密度脂蛋白的胆固醇(HDL-C)水平,其降血脂成分为食物纤维不溶蛋白及脂类等。
4、抗动脉粥样硬化:藜麦粉能明显抑制家兔血脂升高及红细胞胆固醇上升;能明显减轻动脉壁和肝脏脂质沉积,对主动脉内膜不斑块病变的形成有良好的抑制作用。
5、降血糖:研究认为,每天摄入适量的藜麦粉可降低患糖尿病的几率。因为藜麦中含有的钙、镁、维生素和β-葡萄糖可以增强人体合理使用胰岛素的功能。据报道,最新研究发现,经常进食藜麦粉食品,其中含有的脂肪酸可降低患糖尿病的风险,动物实验发现,动物体内存在的脂肪酸可帮助降低胰岛素抵抗性,他们对人体通过对藜麦制品摄入脂肪酸进行调查,研究了3700多名65岁以上老人跟踪调查,结果显示,与进食藜麦制最少的人相比,进食藜麦制品多的人患糖尿病的几率要低63%,同样也可以起到降低胰岛素抵抗作用,从而有效预防糖尿病。
6、减肥:多项研究表明,在摄入热量不变的前提下,饮食中增加藜麦制品的摄入量有助减肥。因为藜麦制品中含有丰富的胆碱和其他一些特殊的活性成分,能帮人体燃烧脂肪,减少脂肪堆积和控制体着有着重要的作用。藜麦制品有助于控制体重的另一因素可能与它含有丰富的蛋白质和膳食纤维能增加人的饱腹感对食欲控制有关,因为蛋白质和膳食纤维能产生较强的饱腹感,延缓胃排空,从而减少其他食物的摄入量来控制食欲,达到减肥的作用。

10、促进儿童生长发育:儿童生长发育的物质基础是各种已知的营养素,包括蛋白质、脂肪、碳水化合物、能量、维生素和有机盐等,它们不但决定着儿童生长发育的速度,也决定着生长发育的质量,长期的营养素不足,都会延缓儿童的生长发育,阻碍生理成熟,乃至发生因儿童营养不良所致矮小症。为保证儿童的生长发育,必须在日常生活中提供多种必需的营养素。因此要保证儿童良好的生长发育,就必须保证营养素齐全,数量充足,比例适当,以得到合理营养。据研究证明,藜麦是植物超级全营养,营养成分与牛奶和牛肉相当,在给非洲贫困地区的孩子每天吃适量的藜麦制品,2年后这些孩子的肌肉发育加快、身高增长、智力提高,在学校里更加活跃,喜欢说话和经常参加活动。因为藜麦能提供蛋白质、维生素、矿物质等营养素。因此,藜麦制品具有促进儿童生长发育功效。

(二)豌豆提取物:豌豆为豆科植物属豌豆的成熟种子,性平、味甘,归脾、胃经。可益中气,止泻痢,消痛肿、通便,利小便等功效。主治脾胃不适、心腹胀痛,乳汁不通。适用于气血虚弱,解毒排毒、美容养颜等作用。
化学成分:豌豆还有蛋白质,脂肪、碳水化合物,膳食纤维,多种维生素和矿物质及微量元素等成分。

(三)、小麦提取物(Trieicum aestivuml),小麦为禾本科一年生植物麦的成熟种子,我国食用小麦的历史悠久,也是我国人民主要的粮食作物之一,在人民的生活中占有很重要的地位,世界上有一半人口以小麦为主要粮食。小麦性平、味甘、归心、脾、肾经。具有益肾、养心安神、润肺健脾、除热止咳等功效。主治补中、益气脉、和五脏、调经络等作用。
营养成分:小麦含有丰富的蛋白质、脂肪、碳水化合物、氨基酸等大量的营养物质;如丰富的膳食纤维、B族维生素和维生素E、多种矿物质以及微量元素等营养成分。
生理作用:小麦能预防和治疗脚气病、末梢神经炎;改善治疗身体虚弱、自汗盗汗症状;还可降低血液中雌激素含量、防止乳腺癌,延缓女性更年期、降低胆固醇、预防高血压,脂肪肝。
(四)、红米提取物(Redrice),又叫红大米,为禾本科稻属一年生植物稻谷的种子,是一种营养价值横高的粗粮。性温、味甘,具有健脾养胃,促进消化、补血、活血化瘀等功效。现代医院研究表明,红米有改善营养不良、防止贫血、降低胆固醇、清除自由基、抗氧化、延缓衰老、降血压、降血脂、美容养颜、缓解疲劳、夜盲症、精神不振和失眠、防癌抗癌等功效。
营养成分:红米含有丰富的蛋白质、脂肪、碳水化合物、生物碱、植物甾醇、黄酮类化合物、膳食纤维、谷胱甘肽、红曲酶K、多种矿物质特别含有丰富的铁元素和多种微量元素、胡萝卜素、B族维生素、维生素A、维生素E等营养成分。特别适合儿童、孕妇、体弱者、中老年人。

(五)、青稞提取物(barley),又叫大麦、元麦等。青稞为禾本科大麦属谷物成熟种子。性平、味成、归脾、胃、大肠经。具有健脾养胃、益气止泻、壮精益力、除湿发汗的功效。适应脾胃气虚,倦怠无力,腹泻便唐者食用。现代医药研究表明,青稞具有降血脂、降低胆固醇、降血糖、降血压、预防心血管疾病、减肥、通便、抗癌、增强免疫力,明目护眼等作用。
化学成分:青稞含有蛋白质、脂肪、碳水化合物、膳食纤维、花青素、多种维生素、多种矿物质和微量元素等成分。
生理功能:1、增强免疫力:动物实验证明,青稞中β-葡聚糖具有增强免疫力功能。用青稞β-葡聚糖进行了大鼠腹腔巨噬细胞产生白介素(IL-1)及培养脾脏细胞诱导产生IL-2,干扰素(INF-γ)和IL-4的试验,结果证实,青稞β-葡聚糖能起到诱导作用,同时食用青稞β-葡聚糖对于已感染金黄色葡萄球菌有延长寿命的效果。研究认为,青稞β-葡聚糖能增强免疫功能的作用机理是通过刺激细胞SEB系统,使机体产生INF-γ,从而增强机体免疫力。
2、降血压:研究认为,青稞除了具有降低胆固醇和降血糖的作用外,青稞还有降血压的功效。据报道有人对18名男女轻度高血压症和高胰岛素血症的患者,用富β-葡聚糖青稞全粒粉早餐进行试验,结果显示,摄取青稞早餐组患者收缩期血压明显降低和扩张期血压明显降低,观察还发现,青稞早餐摄取组患者的总胆固醇、LDL(有害胆固醇)和血清葡萄糖也明显下降。试验结果证明,摄取青稞β-葡聚糖的食物可明显减少高血压治疗药和用量,改善了对血压的控制,具有治疗和预防高血压的作用。另外,分析还表明,青稞含有的花青素具有消炎、抗氧化、改善微循环和改善血管弹性,因此,具有降血压的作用,其作用相当于血管紧张素酶抑制剂(ACE-1)。另据报道,青稞、β-葡聚糖在人体内不能消化吸收,具有双岐杆菌的增值作用,能强化细胞功能,防止机体被感染和修复被破坏的组织。人们由于物理的原因或精神压力,导致免疫力降低,在辐射环境下或不合理的膳食均会使免疫力受损,青稞β-葡聚糖能促使提高抵抗力,减少传染疾病的侵害,有明显增强免疫力和抗癌作用。另外,还有降低电脑荧光屏辐射对人体造成的危害。
3、降血糖:青稞β-葡聚糖能提高食物消化物的黏性,从而延迟葡萄糖的吸收,达到降血糖的作用。动物试验显示,用富含青稞β-葡聚糖的基料饲喂高血糖模型大鼠,8周后大鼠血中血糖比高血糖对照组降低58.9%,餐后30分钟血溏升高值分别比正常对照组和高血糖对照组降低62.7%和76.7%,青稞β-葡聚糖具有调节血糖的作用。试验结果还证明,青稞β-葡聚糖可调节胰岛素水平,预防和辅助治疗由糖耐量而引起的糖尿病等症。其作用机理是青稞中β-葡聚糖在肠道吸收后膨胀增加容积,降低能量密度,抑制淀粉酶活性,干扰糖的代谢,延缓了人体对葡萄糖的吸收,从而降低空腹血糖和餐后血糖。
4、降血脂和胆固醇:青稞给动物喂食能明显对抗高脂饲料所致的动脉硬化,可使活性增加,血清胆固醇降低,显著升高高密度脂蛋白。青稞还能降低血清胆固醇和甘油三酯的含量,同时还能抑制饮食诱导肝组织胆固醇,甘油三酯、过氧化脂质含量增加。因此,具有良好的降血脂和胆固醇的作用。青稞含有大量的水溶性膳食纤维物质和β-葡聚糖,在进入肠道后会吸收大量水分,并形成胶状物质,能阻止肠壁细胞吸收脂质,起到降血脂的作用。
5、减肥:研究表明,青稞含有大量膳食纤维的食品可有效减少人体的饥饿感,从而达到控制饮食和体重的目的。研究发现,青稞是含有丰富膳食纤维的食品,可控制能量的摄入和对人体新陈代谢以及可调节食欲的激素产生有益影响,因此,青稞可有效控制人体食欲,起到减肥的作用。另外,青稞中的膳食纤维能与部分脂肪酸结合,使脂肪酸通过消化道时不能被吸收,对肥胖病人起到减轻体重的作用。
6、排毒:研究表明:青稞中膳食纤维对汞、砷、镉和其他重金属具有清除作用和对有机物具有吸附螯合作用。青稞可螯合吸附胆固醇,胆汁酸之类的有机物,抑制人体吸收,还可吸附肠道内的有毒物质(内源性毒素),化学药品(外源性毒物),并将其排除体外。
7、防止便秘:青稞中的丰富纤维能使食物在肠道内通过的时间缩短,使大肠内的粪便量相对增加,有助于大肠的蠕动,使粪便易于排出,从而达到防治便秘的作用。
8、预防大肠癌:研究发现,大肠癌的发生主要与毒素和致癌物在肠道内长期积累,与肠黏膜长期接触等因素有关,从而容易发生大肠癌。而青稞含有丰富的腾食纤维能吸附大肠中的致癌物质,使致癌物质浓度相对减少。加之膳食纤维有刺激肠道蠕动的作用,加快排空肠道毒素和致癌物,缩短了食物在大肠的停留时间,使致癌物质及时随大便排出体外。此外,青稞还可改善大肠的益生菌,增加肠内抗氧化剂,因此,有防治大肠癌的作用。
另外,青稞还具有增强免疫力,预防心脑血管疾病、抗缺氧、延缓衰老,清汤等作用。青稞含有的花青素还有护眼明目的作用。
(六)、巴旦木提取物:巴旦木为蔷薇科植物属巴旦木成熟的果仁,性微温、味甘。具有清肺、解饥、散寒、驱风、止泻、适用于止咳平喘、润肠通便,解毒排毒,美容养颜等功效。现代研究表明,巴旦木可治疗高血压、降血脂、降低胆固醇、降血糖、减肥、抗氧化、通便、延缓衰老、抗流感等作用。
化学成分:巴旦木含有丰富的蛋白质、脂肪、碳水化合物、膳食纤维、黄酮、消化酶、杏仁素酶、杏仁苷,多种维生素和矿物质等活性成分。
药理作用:1、抗氧化:巴旦木对氨基和自由基都有一定清除作用。通过EC50的对比发现,巴旦木具有很强自由基清除功效,其抗氧化作用机理为维生素E、维生素B2等营养成分,是通过清除氧自由基来实现的。
2、降血压:巴旦木煎剂给猫静脉注射,可引起明显持久的血压下降。
3、降血脂:巴旦木水提取物能增加大鼠血清中SOD活性及HDL-C含量,降低血清MDA及TC与HDL-C的比值,有研究显示,对80名中老年志愿者给于甜杏仁25g/d×4周,总胆固醇和脂蛋白有较大幅度的下降,LDL-C也有明显的下降。
4、降血糖:巴旦木富含多种营养物质,食用巴旦木有助降低糖尿病的风险。据报道,研究人员对48名女性和17名男性前期糖尿病患者为期16周的饮食对比实验,结果显示,两组相比,食用巴旦木食物的患者胰岛素敏感性明显提高,有助于调节血糖水平。
5、减肥瘦身:研究表明,巴旦木对塑造腹肌减肥起到重要的作用。巴旦木含有大量的膳食纤维和不饱和脂肪酸,能降低对零食的欲望,更能增加人的饱腹感,而不会使你吃得过量,因此,具有减肥功能。
6、预防心血管疾病:巴旦木含有丰富的活性营养成分和良好的药理作用,如维生素E、不饱和脂肪酸和膳食纤维共同作用能够降低低密度脂蛋白胆固醇水平下降9%。因此,巴旦木具有很好预防心血管疾病。
7、养颜美容:研究表明,巴旦木含有丰富的营养成分,有很好的美容养颜、祛斑美白的作用。能促进皮肤微循环、润肠通便、排毒,具有很好养颜美容功效。另外有防晒祛斑的作用,能帮助皮肤抵御紫外线的侵害,防止黑色素形成。
8、保护肝脏:巴旦木提取物经蛋白酶的水解产物对CCI4中毒大鼠的转氨酶和转肽酶、羟脯氨基酸升高均有抑制作用,并抑制由球蛋白溶解时间的延长和抑制肝脏结缔组织增生。因此,具有保护肝脏的作用。
9、抗过敏:研究表明,体内缺乏镁的动物与镁充足的动物相比,接触过敏源后血液里的组胺水平更高,巴旦木富含镁因子具有很好的抗过敏作用。
10、镇咳平喘:巴旦木提取物给小鼠灌胃,对SO2所致咳嗽有止咳作用。杏仁在消化道中可被肠道微生物产生的酶或本身所含的巴旦木苷酶所分解而产生微量氢氰酸,对呼吸中抠有抑制作用,以镇咳平喘,并能促进肺表面活性物质PS的合成,有利于呼吸功能。
11、通便:巴旦木有很好润肠通便作用,能刺激肠黏膜使其分泌增加,蠕动加快,吸收水分减少而泻下,以迅速排便。
12、抗癌:巴旦木提取物给小鼠灌胃,对小鼠移植性肝癌有明显的抑制作用。
另外,巴旦木还具有提高免疫力、抗突变、抗菌消炎、通便的作用。
13、解毒排毒:巴旦木具有益生元的特性,能够增加肠道内的有益菌,改善肠道中的菌群,有益肠内健康,促进通便排毒。别外,巴旦木含有的膳食纤维能促进肠道蠕动增加排毒能力,因此,巴旦木具有很好的解毒排毒作用。

1.高级藜麦谷粒营养奶的制作工艺,其组成特征为:藜麦提取物30-50千克、豌豆提取物10-30千克、小麦提取物5-20千克、红米提取物20-40千克、青稞提取物(大麦)5-30千克、巴旦木提取物10-30千克、辅料为原料,经过将以上配方种各种原料分别加入1∶1-5的水浸泡8-12小时后,再加入8-10倍的水磨成浆液,送入过滤机,过滤后将浆液加热至60℃,在25MPa下进行均质后浓缩至含固体物40-50%,送入冷冻室在-40℃-70℃进行冷冻干燥,干燥后的各种原料固体物进行粉碎后过80-100目筛,混合调配,充分搅拌均匀,经检验合格,包装为成品。
