生酮减肥代餐奶昔属于功能固体饮品,尤以青藏高原天然无糖牦牛酸奶粉(牛奶)、中链三酸甘油、佛手瓜粉(黄椒)、约氏乳杆菌、聚葡萄糖等辅料为原料制成的功能食品。该产品具有提高免疫力、减肥、降血压、降血脂、降血糖、通便排毒、抗癌等功效,该产品的制作工艺:调配混合、搅拌、检验、包装成为正式产品。
Description
一、技术领域:本发明属功能固体饮品,尤以青藏高原天然无污染有机牦牛酸奶等原料,采取现代先进工艺加工而成的功能食品。
二、背景技术:本发明以无糖牦牛酸奶粉、中链三酸甘油、佛手瓜粉(黄椒)、约氏乳杆菌、聚葡萄糖等原料制成的功能固体饮品。该产品具有提高免疫力、减肥、降血压、降血脂、降血糖、通便排毒、抗癌等功效。目前市场上还没有同类产品,创新研发该产品可为给减肥瘦身的人群提供了一种新产品。该产品以纯天然和生物活性成分为原料制成的减肥奶昔、纯度高、吸收好、生物活性强、无任何副作用、口感纯正、服用方便、效果明显,适应于各年龄段的减肥人群服用。
三、发明内容:肥胖是一种营养代谢综合失调性疾病和低度全身慢性炎症。研究发现,肥胖病因相当复杂,不仅有明显的遗传性,还与饮食和运动密切相关。在今天肥胖已成为一个社会严重的公共卫生问题。世界卫生组织(WHO)认为,肥胖与艾滋病、吸毒、凶酒并列为世界四大社会问题,医学界称之为人类死亡率高的癌症,冠心病、糖尿病、高血压、高血脂、心脑血管疾病都与肥胖直接有关。随着我国经济的快速发展,人民生活水平的不断提高,肥胖正在成为一个关注的流行病。根据世界卫生组织的统计数学显示,全球超重人数超过10亿多,有3亿多人严重肥胖,而发展中国家的肥胖比例大幅增加。在我国根据卫生部、科技部和国家统计局公布的营养与健康状况调查结果显示,我国13亿人口中有2亿人超重,特别是儿童超重迅速增长。预计今后肥胖患病率还将会有较大幅度的增长,肥胖会给国民健康造成严重的威胁,也会给个人和社会带来沉重的经济负担。
四、原料配方:无糖牦牛酸奶粉(牛奶)20-50千克、中链三酸甘油1-10千克、佛手瓜粉(黄椒)30-70千克、约氏乳杆菌0.5-1.5千克、聚葡萄糖10-16千克、辅料为原料。
五、技术方案:
(一)、牦牛酸奶(people wantto drinkyakmilk),酸奶是以牦牛奶为原料,经添加不同的菌种发酵剂,发酵而成的酸奶。牦牛奶是生长在天然无污染,被世人称为净土的青藏高原海拔3500米以上的一种独有的牛种牦牛所产生的牛奶。特别是在青藏高原严酷的自然环境,造就了牦牛特具有的抗寒冷、耐高温、抗强紫外线、耐缺氧、强力抗疾病生存能力。这就是藏牦牛能适应各种恶劣环境下的独特之处。营养学家研究发现,藏牦牛全身都是宝,被称为高原之宝,由于独特的自然环境,藏牦牛奶中的乳铁蛋白和免疫球蛋白,维生素和矿物质等成分含量都远远超过了普通牛奶、另外、牦牛奶含有的二十碳五烯酸和二十二碳六烯酸及共轭亚油酸,这也是大自然特别恩赐于藏族人民强健的体质和抵抗疾病的能力。牦牛奶,性平、味甘、归肺、胃经。有补虚、益肺胃、生津润肠。适用于儿童青少年、老年身体虚弱、消化不良、肠燥便秘。现代研究表明,牦牛酸奶具有促进生长发育、防治骨质疏松、增强免疫力、延缓衰老、降血压、降血糖、减肥瘦身、美容养颜、抗癌等功效。
营养成成分:牦牛酸奶含有100多种营养成分,如蛋白质、氨基酸、多种维生素、矿物质和微量元素,其中8种人体必需氨基酸比例适宜,特别适合儿童青少年生长发育,增强体质和免疫功能,减肥等作用,为低糖生酮包含。
生理功能:1、减肥:近年来多项研究表明,在摄入热量不变的前提下,饮食中增加牦牛乳制品的摄入量有助于减肥。因为牦牛乳制品含有丰富的钙和其他一些特殊的活性成分,能帮助人体燃烧脂肪,减少脂肪积累和控制体重有着重要的作用。牦牛乳制品有助于控制体重的另一个因素可能与它对食欲的控制有关。研究表明,无论在高脂肪或低脂肪膳食条件下,膳食加入牦牛乳制品都增加餐后缩胆囊肽的分泌,产生较强的饱腹感,从而控制食饮。进一步研究证实,牦牛奶中钙能帮助人体降低脂防储备的同时加速脂肪燃烧速度。牦牛乳制品能帮助减肥的另一个重要原因是乳清蛋白,乳清蛋白所包含的营养成分可刺激肌肉组织构建,而这个过程也正是燃烧脂肪的过程。另外,牦牛酸奶还具有调节肠道功能、降血脂、降血糖、降低胆固醇,增强免疫力,美容养颜,防癌抗癌等功能。
2、降血压,近年来研究数据表明,乳制品可能与控制血压相关联。分析证实乳制品的钙比非乳制品钙增补剂降压效果高1倍。研究推测,这可能是由乳制品的钾、镁和钙恰当平衡有利于降血压。乳制品的另一个降血压因素可能使降压生物活性肽。牦牛酸奶粉中的酪蛋白和乳清蛋白都是血管紧张素转换酶(ACE)抑制肽的来源,他们可以通过酶水解、胃肠道消化或食品加过程释放出来。目前,从多种奶酪乳清、酪蛋白、乳清蛋白、β-乳球蛋白等均能分离出抗高血压活性肽,在以自发性高血压大鼠为材料实验中具有降血压活性。
3、降血糖:研究表明,每天喝一些牦牛酸奶粉可降40%的几率患糖尿病。因为牛奶中的钙、镁、维生素D可以增强人体合理使用胰岛素的功能。
另据报道,美国最新研究发现,经常进食牦牛酸奶粉,其中含有一种脂肪酸可降低患2型糖尿病的风险。研究动物实验发现,动物体内存在的棕榈酸可帮助降低胰岛素抵抗性,他们对人体通过奶制品摄入反式棕榈酸进行了调查,研究了3700多名65岁以上老年人进行了跟踪调查。结果显示,与进食奶制品最少的人相比,进食全脂奶制品最多的人患2型糖尿病的几率要低63%。其作用是因为常食全脂奶制品的人血液中的反式棕榈酸的水平较高,同样可以起到降低胰岛素抵抗作用,从而有效预防糖尿病。
(二)中链三酸甘油(MCT),是存在于牛奶和椰子油的一种脂肪酸。中链三酸甘油进入人体后在脂蛋白酶的作用下为机体提供能量和必须的脂肪酸。具有增强饱腹感、减肥、降血脂、降低胆固醇、抗疲劳和生酮作用等。
生理功能:1、生酮作用:中链三酸甘油具有比长链三酸甘油较多的生酮作用,对外围组织供能较多,有一定的节氮作用。
2、减肥:中链三酸甘油能提高人体新陈代谢率,加快燃烧热量,促进膳食中的卡路里含量消耗和能量代谢,提高机体中的糖脂代谢。减少人体脂肪的堆积和减少两餐之间饥饿,防止过量饮食。因此,中链三酸甘油具有显著的减肥效果。
(三)佛手瓜粉(sechium edule),又名寿瓜,为葫芦科佛手瓜属成熟的果实。具有和中理气、疏肝止咳的作用。适用于消化不良、胸闷气胀、呕吐、肝胃气痛及支气管炎咳嗽等功能。现代研究表明,佛手瓜有减肥降脂、增强免疫力、降血压、扩张血管、防治心血管疾病、利尿等作用。
化学成分:佛手瓜含有蛋白质、脂肪、低糖(2.5%)、膳食纤维、多种维生素和多种矿物质及微量元素等活性成分,为低热量生酮食物。

(四)、约氏乳杆菌(Lactobacillus),约氏乳杆菌是一类能利用可发酵碳水化合物产生大量乳酸菌其中的一种。具有多种生物学活性功能。
生物学功能:1、减肥:约氏乳杆菌具有很好的减肥功效。一项新研究表明,如果在进餐时补充适量的约氏乳杆菌,对食物的消耗将大大超过机体对食物的利用,对食用的食物很少会被机体吸收,已达到减肥的效果。其作用机理为,约氏乳杆菌能阻断脂肪、胆固醇和甘油三脂在体内的合成,阻断脂肪和胆固醇的吸收,增加脂肪燃烧,调节脂肪代谢水平的能力。因此,约氏乳杆菌具有显著的减肥功效。
(五)聚葡萄糖(Polydex-tpose),又称聚糊精,是一种高分子多糖化合物,属膳食纤维范畴。科学研究表明,聚葡萄糖具有减肥、降血脂、调节血糖、整肠通便、排毒养颜、防癌等功效。
生理功能:1、减肥:许多研究证实,聚葡萄糖有很好的减肥功效。能阻断肠黏膜对糖和淀粉的吸收,极大降低脂肪被吸收的机会,从而减少脂肪在体内合成,起到控制体重的作用。另外,聚葡萄糖还可抑制食欲,它有很强的吸水性,黏度大,膨胀率高的特点,进入胃肠吸水后膨胀,使人产生强烈的饱腹感,从而减少食物的摄入量来减少脂肪和胆固醇的吸收。因此,聚葡萄糖可以阻断外源性脂肪吸收,使得体内合成脂肪来源受阻,从而达到自然减肥的功效。另据国外报道,聚葡萄糖具有明显的减肥功效,研究人员发现,聚葡萄糖可以对人体新陈代谢以及可以调节食欲的激素产生有利影响,因此,聚葡萄糖可有效控制人的食欲,达到减轻人的体重。
2、降血脂:聚葡萄糖具有降低血清总胆固醇和甘油三酯,升高高密度脂蛋白,降低低密度脂蛋白的功能,从而防治动脉硬化指数。动物实验结果显示,聚葡萄糖能吸附胆汁酸和胃肠道胆固醇及抑制胆固醇在肠道内的吸收,促进胆固醇的转化,并将排出体外,从而使胆固醇和甘油三酯明显下降。
3、调节血糖:聚葡萄糖能改善末梢组织对胰岛素的感受性,降低胰岛素的要求,抑制胰岛素分泌,阻碍对糖的吸收,从而达到降低血糖水平的目的。而且还有防治糖尿病并发症的作用。
4、排毒养颜:聚葡萄糖属高分子水溶性多糖,能增加肠道蠕动,帮助肠道将有害毒素排出体外。研究表明,聚葡萄糖能有效调节肠道PH值,改善有益细菌繁殖环境,使双歧杆菌等有益菌群迅速增加,从而抑制腐败菌的生长,防止肠道黏膜萎缩,并及时将体内的毒素和代谢废物排出体外,避免毒素从皮肤汗腺排出,从而达到排毒养颜的作用。
5、调节肠道菌群:聚葡萄糖能促进肠道有益菌的增殖,是有效的益生元,进入人体后在胃肠上半部分不能被消化吸收,以完整的形式到达肠道被发酵,以促进肠道有益菌(双歧杆菌、乳酸杆菌)等繁殖。另外,聚葡萄糖被有益菌发酵产生的短链脂肪酸使肠道PH值下降,从而抑制肠道内一些不耐酸的病源微生物如沙门氏菌等腐败生长,改善肠道环境,减少了肠道腐败物质的产生。
6、防治便秘:聚葡萄糖为水溶性膳食纤维,能使大肠需动,有利于肠道内容物运动,增加排便次数,使粪便排出。同时聚葡萄糖还有很强的吸水性,增加大便中的含水量由此使大便变软,加速排便频率,起到润肠通便和防治便秘的作用。

8、防癌抗癌:有动物实验显示,聚葡萄糖对小肉癌S180有明显的抑制作用,其作用机理是聚葡萄糖能有效干扰癌细胞的代谢功能,对胃和结肠癌细胞有较好的敏感性。给动物喂食10%的聚葡萄糖,可降低1.2-二甲基脂诱发肠癌的发生率。
另外,聚葡萄糖还能防龋齿和促进矿物质吸收的作用。
综上所述,本产品通过对36名女性每天服用生酮减肥营养代餐奶昔,通过6周后的检测其体内脂肪含量,结果显示,每个试验者的基础代谢率平均提高13.8%,体重平均减少3.7%,体内平均脂肪下降3.3%,腰围平均减少3.6厘米。通过上数据表明,生酮减肥营养代餐奶昔具有显著的减肥功效。

1.生酮减肥代餐奶昔的制作工艺,其组成特征为:取无糖牦牛酸奶粉(牛奶)20-50千克、中链三酸甘油1-10千克、佛手瓜粉(黄椒)30-70千克、约氏乳杆菌0.5-1.5千克、聚葡萄糖10-16千克、辅料为原料,经过将以上原料调配混合、充分搅拌均匀,检验合格,包装成为正式产品。
