本发明属于一种新型醋饮品的制备技术领域,具体涉及到一种番茄醋的制备方法。
技术背景
果醋能促进新陈代谢,调节酸碱平衡,消除疲劳,含有十种以上的有机酸和人体所需的多种氨基酸。经过长时间劳动和剧烈运动后,人体内会产生大量乳酸,使人感觉疲劳,如在此时补充果醋,能促进代谢功能恢复,从而消除疲劳。另外,果醋中含有的钾、锌等多种矿物元素在体内代谢后会生成碱性物质,能防止血液酸化,达到调节酸碱平衡的目的。
同时,从有关文献中获悉,果醋还具有如下显著的功效:
(1)降低胆固醇:经常食醋是降低胆固醇的一种有效方法,因为醋中富含尼克酸和维生素,它们均是胆固醇的克星,能促进胆固醇经肠道随粪便排出,使血浆和组织中胆固醇含量减少。研究证实,心血管病患者每天服用20毫升果醋,6个月后胆固醇平均降低9.5%,中性脂肪减少11.3%,血液黏度亦有所下降;
(2)提高免疫力:果醋具有防癌抗癌作用果醋中含有丰富的维生素、氨基酸和氧,能在体内与钙质合成醋酸钙,增强钙质各式果醋成品的吸收。果醋中还含有丰富的维生素C,维生素C是一种强大的抗氧化剂,能防止细胞癌变和细胞衰老,还可阻止强致癌物亚硝胺在体内的合成,促使亚硝胺的分解,使亚硝胺在体内的含量下降,保护机体免受侵害,防止胃癌、食道癌等癌症的发生;
(3)促进血液循环、降压:果醋中含有可促进心血管扩张、冠状动脉血流量增加、产生降压效果的三萜类物质和黄酮成分,对高血压、高血脂、脑血栓、动脉硬化等多种疾病有防治作用;

所述的番茄,别名番柿,六月柿,西红柿,洋柿子,毛秀才。中国大部分地区称西红柿,是茄科茄属的一种植物,同时又是营养成分很高的果实。可食用部分97%。每100g中含能量79kj,水分94.4g、蛋白质0.9g、脂肪0.2g,膳食纤维0.5g,碳水化合物3.5g、胡萝卜素550μg、视黄醇当量92μg、硫胺素0.03mg、核黄素0.03mg、尼克酸0.6mg;维生素19mg,维生素E0.57mg;钾163mg、钠5mg、钙10mg、镁9mg,铁0.4mg,锰0.08mg、锌0.13mg、铜0.06mg,磷2mg;硒0.15μg。且含腺嘌呤、胆碱、番茄碱以及抗炎、利尿、降压的成分。
据营养学家研究测定:每人每天食用50~100克鲜番茄,即可满足人体对几种维生素和矿物质的需要。番茄富含的“番茄素”,而番茄红素具有很强的抗氧化活性,实际上,番茄红素的名称是来源于番茄,是茄科番茄属。番茄是番茄红素最丰富的食物来源。番茄红素有以下药理作用:
(1)抗衰老:番茄红素不仅仅是当今工业上重要的天然食品着色剂,更为重要的是它是很强的抗氧化剂。给人体补充番茄红素,可以帮助身体抵抗各种因自由基引起的退化老化性疾病;
(2)降低心血管疾病的危险性:自由基造成的退化效应,是心血管疾病的头号元凶。一旦产生血液中脂质过氧化连锁反应,使脂肪酸产生聚合作用。当这些大分子的脂质聚合物沉积在血管壁时,便会使血管发生硬化和阻塞。在欧洲的多家医学研究中心所做的临床试验显示,番茄红素由于其很强的抗氧化作用,可以有效地减轻和预防心血管疾病,降心血管疾病的危险性;
(3)防癌抗癌:番茄红素通过有效清除体内的自由基,预防和修复细胞损伤,抑制DNA的氧化,从而降低癌症的发生率。番茄红素还具有细胞生长调控和细胞间信息感应等生化作用。研究表明,番茄红素能够有效预防前列腺癌、消化道癌、肝癌、肺癌、乳腺癌、膀胱癌、子宫癌、皮肤癌等;在很多世界性卫生组织推荐的抗癌或保健食品中,番茄总是位居前列。日本的研究发现,在随机选择的居民血浆中的维生素A、C、E、β胡萝卜素和番茄红素的水平分析中,只有血浆番茄红素与胃癌呈显著负相关。以上的研究均说明番茄红素和番茄制品能显著降低胃癌和食管癌的发病率。
从有关文件中获悉,番茄还具有如下食料效果:
(1)消炎:番茄碱在动物实验申有明显的消炎作用。
(2)补血:酸奶的蛋白质成分能促进铁的吸收,因此,把西红柿和酸奶搭配在一起榨出的西红柿酸奶汁是提高体内铁元素吸收的良好来源,可有效补血。
(3)健胃消食,润肠通便:所含苹果酸、柠檬酸等有机酸,能促使胃液分泌,对脂肪及蛋白质的消化。增加胃酸浓度,调整胃肠功能,有助胃肠疾病的康复。所含果酸及纤维素,有助消化、润肠通便作用,可防治便秘。
(4)清热解毒,生津止渴:番茄性凉味甘酸,有清热生津、养阴凉血的功效,对发热烦渴、口干舌燥、牙龈出血、胃热口苦、虚火上升有较好治疗效果。
(5)降脂降压,利尿排钠:所含维生素C、芦丁、番茄红素及果酸,可降低血胆固醇,预防动脉粥样硬化及冠心病。另含有大量的钾及碱性矿物质,能促进血中钠盐的排出,有降压、利尿、消肿作用,对高血压、肾脏病有良好的辅助治疗作用。降低血压经常发生牙龈出血或皮下出血的患者,吃番茄有助于改善症状。
(6)抗血凝聚,防脑血栓:国外研究发现,从番茄籽周围黄色果冻状的汁液中分离出来了一种被称为P3的物质,具有抗血小板凝聚的功效,可以防止脑血栓的发生。患冠心病及中风的病人每天适量饮用番茄汁有益于病的康复。
(7)防白内障,黄斑变性:所含维生素A、C,可预防白内障,还对夜盲症有一定防治效果;番茄红素具有抑制脂质过氧化的作用,能防止自由基的破坏,抑制视网膜黄斑变性,维护视力。
(8)美容护肤,治皮肤病:番茄含胡萝卜素和维生素A、C,有祛雀斑、美容、抗衰老、护肤等功效,治真菌、感染性皮肤病。尼克酸能维持胃液的正常分泌,促进红血球的形成,有利于保持血管壁的弹性和保护皮肤.另一项研究显示,番茄汁还对消除狐臭有一定作用。
(9)维护性功能:番茄红素吸收后聚集于前列腺、肾上腺等处,促使前列腺液分泌旺盛,可维护射精功能;番茄多汁,可以利尿,肾炎病人也宜食用。女性多吃番茄可激发性欲和激情。
(10)抗癌:番茄红素具有独特的抗氧化能力,能清除自由基,保护细胞,使脱氧核糖核酸及基因免遭破坏,能阻止癌变进程。西红柿除了对前列腺癌有预防作用外,还能有效减少胰腺癌、直肠癌、喉癌、口腔癌、肺癌、乳腺癌等癌症的发病危险。
(11)抗衰老:番茄中的维C,有生津止渴,健胃消食,凉血平肝,清热解毒,降低血压之功效,对高血压、肾脏病人有良好的辅助治疗作用。多吃番茄具有抗衰老作用,使皮肤保持白皙。
(12)改善牙龈出血:经常发生牙龈出血或皮下出血的患者,吃番茄有助于改善症状。
(13)促进消化:番茄所含的苹果酸或柠檬酸,有助于胃液对脂肪及蛋白。
所述的乳酸菌乳酸菌指发酵糖类主要产物为乳酸的一类无芽孢、革兰氏染色阳性细菌的总称。凡是能从葡萄糖或乳糖的发酵过程中产生乳酸的细菌统称为乳酸菌。这是一群相当庞杂的细菌,目前至少可分为18个属,共有200多种。除极少数外,其中绝大部分都是人体内必不可少的且具有重要生理功能的菌群,其广泛存在于人体的肠道中。目前已被国内外生物学家所证实,肠内乳酸菌与健康长寿有着非常密切的直接关系。乳酸菌是一种存在于人类体内的益生菌。乳酸菌能够将碳水化合物发酵成乳酸,因而得名。益生菌能够帮助消化,有助人体肠脏的健康,因此常被视为健康食品,添加在酸奶之内。
乳酸菌在动物体内能发挥许多的生理功能。大量研究资料表明,乳酸菌能促进动物生长,调节胃肠道正常菌群、维持微生态平衡,从而改善胃肠道功能;提高食物消化率和生物效价;降低血清胆固醇,控制内毒素;抑制肠道内腐败菌生长:提高机体免疫力等。
从有关文献中获悉,乳酸菌通过发酵产生的有机酸、特殊酶系、酸菌素等物质具有特殊生理功能,可刺激组织发育,对机体的营养状态、生理功能、免疫反应和应激反应等产生如下作用:
(1)提供营养物质,促进机体生长乳酸菌如果能在体内正常发挥代谢活性,就能直接为宿主提供可利用的必需氨基酸和各种维生素(维生素B族和K等),还可提高矿物元素的生物活性,进而达到为宿主提供必需营养物质、增强动物的营养代谢、直接促其生长的作用。Dalmin等研究报道乳酸菌可以改良水质,提高斑节对虾的存活率、生长速率和健康状况。Hamad(1979)试验证明,小麦、稻米等谷物用乳酸菌发酵后,营养价值大大提高。此外,乳酸菌产生的酸性代谢产物使肠道环境偏酸性,而一般消化酶的最适PH值为偏酸性(淀粉酶6.5、糖化酶4.4),这样就有利于营养素的消化吸收。何机峻的产生还可加强肠道的蠕动和分泌,也可促进消化吸收养分。
(2)改善胃肠道功能,维持肠道菌群平衡动物的整个消化道在正常情况下都寄生有大量微生物
(3)改善免疫能力,乳酸杆菌和双歧杆菌一方面能明显激活巨噬细胞的吞噬作用,另一方面由于它能在肠道定植,相当于天然自动免疫。它们还能刺激腹膜巨噬细胞、诱导产生干扰素、促进细胞分裂、产生抗体及促进细胞免疫等,所以能增强机体的非特异性和特异性免疫反应,提高机体的抗病能力。Pergidon等(1988)报道,口服乳酸菌后,对巨璇细胞的半乳糖甙酶活性、巨噬细胞的吞噬活性等具有显著的激活和促进作用。当异物侵入机体时,免疫细胞被乳酸菌激活,增强了机体对异物产生抗体的作用。Chndra(1984)认为,乳酸菌之所以具有有激机体产生抗体的作用,是由于菌体通过淋巴结、粘膜刺激淋巴细胞接受刺激的淋巴细胞再通过肠系膜淋巴结(MIN)循环到血流中,并分布全身,从而调节机体的免疫应笞。
(4)抗菌作用,乳酸菌对一些腐败菌和低温细菌有较好的抑制作用。可用于防治腹泻、下痢、肠炎、便秘和由于肠道功能紊乱引起的多种疾病以及皮肤炎症。
本发明是通过以下技术方案来实现的:
一种番茄醋的制备方法,技术方案中包括如下步骤:
1、原料采集:采集7~8成熟、无霉烂、无变质、无病虫害的大果番茄或小果番茄果实备用。
2、原料处理:将番茄果实清洗干净,并清除其他杂质,然后将番茄果实摊开,直至把附在的番茄果实表面的水分沥干备用。
3、打浆:把番茄果实打成肉浆备用。
4、原料配比:番茄肉浆100斤、红糖8~10斤、乳酸菌4~5斤。
5、混料发酵:将上述原料混合并搅拌均匀,然后放置于容器中进行好氧发酵,在温度为23~25°环境下发酵8~20天。
6、浆渣分离:将发酵物进行过滤得到澄清的原醋母液。
7、勾兑:按需将原醋母液勾兑适量的清水而得成品食用番茄醋原料液。
8、成品:按量将番茄醋原料液分装于盛装容器中,然后经过灭菌而得番茄醋成品。
本发明既有如下优点:
1、本发明所提出的番茄醋制备工艺简单,容易实施。
2、实施本发明所需的番茄原料极为丰富,而且原料成本低。
3、通过实施本发明,主要原料——番茄,其营养非常丰富,同时还具有显著的食料效果。
4、通过实施本发明,所用菌种——乳酸菌。是一群相当庞杂的细菌,目前至少可分为18个属,共有200多种。除极少数外,其中绝大部分都是人体内必不可少的且具有重要生理功能的菌群,其广泛存在于人体的肠道中。目前已被国内外生物学家所证实,肠内乳酸菌与健康长寿有着非常密切的直接关系。
5、传统的水果果醋大都是通过添加各种辅助原料勾兑而成。通过实施本发明,果醋制备过程没有参杂醋精、香精等辅助原料,制备出来的番茄果醋保持水果的香味、口感纯正,柔和爽口。适口性好,口感佳、激起人的食欲,是一种具有多种保健功能的果醋饮品,市场前景非常好。
6、通过实施本发明,改变了目前市场上番茄深加工产品稀少的现状,解决了番茄的产后出路,并带动番茄相关产业的发展,形成新的经济增长点,具有巨大的经济效益和社会效益。
具体实施方式
下面结合实施例对本发明的方法进一步说明。
一种番茄醋的制备方法,具体实施方式如下:
1、原料采集:采集7~8成熟、无霉烂、无变质、无病虫害的大果番茄或小果番茄果实备用。
2、原料处理:将番茄果实清洗干净,并清除其他杂质,然后将番茄果实摊开,直至把附在的番茄果实表面的水分沥干备用。
3、打浆:把番茄果实打成肉浆备用。
4、原料配比:番茄肉浆100斤、红糖8~10斤、乳酸菌4~5斤。
5、混料发酵:将上述原料混合并搅拌均匀,然后放置于容器中进行好氧发酵,在温度为23~25°环境下发酵8~20天。
6、浆渣分离:将发酵物进行过滤得到澄清的原醋母液。
7、勾兑:按需将原醋母液勾兑适量的清水而得成品食用番茄醋原料液。
8、成品:按量将番茄醋原料液分装于盛装容器中,然后经过灭菌而得番茄醋成品。
Claims (2)
1.一种番茄醋的制备方法,其特征包括如下步骤:
(1)原料采集:采集7~8成熟、无霉烂、无变质、无病虫害的番茄果实备用;
(2)原料处理:将番茄果实清洗干净,并清除其他杂质,然后将番茄果实摊开,直至把附在的番茄果实表面的水分沥干备用;
(3)打浆:把番茄果实打成肉浆备用;
(4)原料配比:番茄肉浆100斤、红糖8~10斤、乳酸菌4~5斤;
(5)混料发酵:将上述原料混合并搅拌均匀,然后放置于容器中进行好氧发酵,在温度为23~25°环境下发酵8~20天;
(6)浆渣分离:将发酵物进行过滤得到澄清的原醋母液;
(7)勾兑:按需将原醋母液勾兑适量的清水而得成品食用番茄醋原料液;
(8)成品:按量将番茄醋原料液分装于盛装容器中,然后经过灭菌而得番茄醋成品。
2.根据权利要求1中所述的一种番茄醋的制备方法,其特征在于:所述的番茄可以是大果番茄品种,也可以是小果番茄品种。
