Abstract
此发明公开了一种适用于痛风病人的富含花青素的松仁蛋白肽固体饮料及其制备方法。此固体饮料含微胶囊化松仁蛋白肽、蓝莓冻干粉、桑葚冻干粉、草莓冻干粉、树莓冻干粉、覆盆子冻干粉、蔓越莓冻干粉、红心火龙果冻干粉、樱桃冻干粉、紫葡萄冻干粉、黑李子冻干粉、黑加仑冻干粉、血橙冻干粉、西柚冻干粉、红心柚子冻干粉、无花果冻干粉、红甜菜冻干粉、紫甘蓝冻干粉、枸杞冻干粉、紫胡萝卜冻干粉、芹菜籽粉冻干粉、低聚木糖。此发明固体饮料富含花青素,有强抗氧化性及自由基清除能力,具有消炎、止痛、防治痛风、改善酸性体质的作用,并通过调理脾肾,恢复、提高肾脏自主排酸功能。此固体饮料便于携带冲调、感官性状良好、功效明显,应用前景广阔。
Description
技术领域
本发明涉及特殊医学用途配方食品技术领域,具体涉及一种适用于痛风病人的富含花青素的松仁蛋白肽功能性固体饮料及其制备方法。
背景技术
随着人们生活水平的提高,业余生活不断丰富,各种应酬也在不断增多。与此同时,作息不规律、缺少运动、饮食不当等原因,造成痛风发病率呈逐年上升的态势。据有关报道 ,欧美国家发病率在 0.2%~1.7%, 相当于癌症的发病率,而我国普通人群患病率约1.14%。痛风发病高峰年龄为40~50岁,约占痛风发病人群的90%,其中男女比例约为20:1。此年龄段的男人正值事业发展巅峰时期,也是一个大家庭的中流砥柱,所以此时患有痛风,无疑将给生活诸多方面带来极大影响。
痛风是一种由于嘌呤代谢紊乱所致的常见慢性疾病,其临床特点为高尿酸血症及由此引发的痛风性关节炎、关节畸形,并常累及肾脏引起炎症。痛风常因治疗不及时或护理不当而并发各种严重的疾病,比如糖尿病、高血压/高血脂、心肌梗塞/狭心症、脑血管障碍等。为了减轻患者痛苦,除积极应用药物治疗以外 ,还可通过调整饮食结构,辅以食物疗法,使血尿酸不同程度的降低,达到标本兼治的目的。
痛风患者应遵循多饮水、多摄入碳水化合物及含铁、硒、锌等矿物质的食物,且应以清淡的碱性素食为主,合理摄入蛋白质和各种维生素,可以多吃一些含嘌呤较低的优质蛋白,蛋白质摄入量限制在每 kg体重每日0.8~1.0g以下。限制嘌呤摄入、减少脂肪、钠盐及具有强烈刺激的调味品等的摄入、少饮酒或者禁酒的原则。
多喝水可促进排尿,适量碳水化合物可防止组织分解代谢产生酮体,使尿酸清除率和排泄量增加,通过饮用具有利尿作用的降酸饮料可增加饮水量,并促进尿酸排出。但在众多水果中痛风病人不适宜食用果糖含量高、偏热性的水果,因为果糖在进入人体后会加速嘌呤合成,增加体内尿酸,诱发痛风。痛风病人适宜少吃富含嘌呤的食品,如肉类、动物内脏类、鱼类、海鲜类及豆制品,但若要维持合理的蛋白量就要增加植物蛋白的摄入。另外,痛风病的发生与肥胖病、高脂血症密切相关,食用具有减肥降脂功效的食物也能起到辅助治疗痛风的作用。
因此,对于痛风病人来说,饮食禁忌非常多,搭配不合理容易营养缺乏,而食用不慎会使痛风加重,尤其在发病期间,更要加强饮食的护理。而市场上针对痛风病人的特膳食品极度匮乏,因此,本发明针对痛风患者的饮食特点研制了一种适用于痛风病人的富含花青素的松仁蛋白肽固体饮料,可有效控制并减缓痛风发作。
发明内容
本发明的目在于提供一种适用于痛风病人的富含花青素的松仁蛋白肽固体饮料,其含有以下原料:
微胶囊化松仁蛋白肽、蓝莓冻干粉、桑葚冻干粉、草莓冻干粉、树莓冻干粉、覆盆子冻干粉、蔓越莓冻干粉、红心火龙果冻干粉、樱桃冻干粉、紫葡萄冻干粉、黑李子冻干粉、黑加仑冻干粉、血橙冻干粉、西柚冻干粉、红心柚子冻干粉、无花果冻干粉、红甜菜冻干粉、紫甘蓝冻干粉、枸杞冻干粉、紫胡萝卜冻干粉、芹菜籽粉冻干粉、低聚木糖。
其特征在于,所含原料重量份优选为:
微胶囊化松仁蛋白肽5~30份、蓝莓冻干粉2~10份、桑葚冻干粉2~10份、草莓冻干粉2~10份、树莓冻干粉2~10份、覆盆子冻干粉2~10份、蔓越莓冻干粉2~10份、红心火龙果冻干粉2~10份、樱桃冻干粉2~10份、紫葡萄冻干粉2~10份、黑李子冻干粉2~10份、黑加仑冻干粉2~10份、血橙冻干粉2~10份、西柚冻干粉2~10份、红心柚子冻干粉2~10份、无花果冻干粉2~10份、红甜菜冻干粉2~10份、紫甘蓝冻干粉2~10份、枸杞冻干粉2~10份、紫胡萝卜冻干粉2~10份、芹菜籽粉冻干粉2~10份、低聚木糖1~5份。
本发明的组合物为粉剂。上述各种配料混合均匀,可保持其粉状,或经过造粒,制成粉状或颗粒状食品。
本发明还提供了上述固体饮料的制备方法,包括以下步骤:
(1)所有水果、蔬菜分别洗净、去皮、去籽,匀浆、过滤、将果汁真空低温浓缩至原体积的1/5,倾倒于不锈钢平托盘,低于-20℃冷冻,进行真空冷冻干燥,过40-200目筛,备用。
(2)芹菜籽60-80℃烘干5小时,高速粉碎机粉碎,过40-200目筛,备用。(3)水提松仁蛋白,以胃蛋白酶和胰蛋白酶在最适条件下水解,将酶解液真空冷冻干燥,以麦芽糊精对松仁蛋白肽进行微胶囊化包埋。
(4)混合:按照重量比接近的组分先混合,从重量比较小的部分逐级放大混合,于三维混合机中混合均匀。
(5)包装:用粉状自动包装机分装混好的物料,每袋5~30g。
本发明提供的适用于痛风患者的固体饮料配方具有以下优点:
1、松仁蛋白肽是红松种子经蛋白酶水解制得。松仁被誉为“长生果”、“长寿果”,松仁的氨基酸组成较为齐全,且人体必需氨基酸普遍较一般植物蛋白高。松仁蛋白具有增强免疫力的功效,经酶水解功效增强且更易吸收。
麦芽糊精:乳化能力强,果汁等原有营养风味不变,易被人体吸收,粘稠度提高,稳定性好,不易沉淀具有良好的口感和速溶增稠效果可使产品体积膨胀,不易结块,速溶,冲调性好,延长产品货架期,也可改善营养配比,提高营养比价,易消化吸收。具有甜度低,无异味,易消化,低热,溶解性好,发酵性小,填充效果好,不易吸潮,增稠性强,载体性好,稳定性好,难以变质的特性。麦芽糊精含有大量的多糖类,另外还含有钙、铁等对人体有益的微量元素及矿物质,并能促进人体正常的物质代谢。以麦芽糊精包埋松仁蛋白肽可使溶液均匀稳定、且调节风味。
2、本品通过调理脾肾,恢复、提高肾脏自主排酸功能,快速将酸毒排出体外。例如:葡萄性平味甘酸,入脾、肺、肾三经,多吃葡萄可以起到补气养血、滋肾宜肝、通利小便的功效;蔓越莓有增强免疫效果、预防泌尿系统感染的作用;桑葚性味甘寒、具有补肝益肾的功效。覆盆子归肝、肾、膀胱经,有益肾固精缩尿的功效。樱桃调中益气,健脾和胃,对风湿身痛等有益处。芹菜籽对高血压有特效,对风温症、风湿关节炎、痛风、高尿酸症等都有舒解作用。
3、葡萄、樱桃、柚子等均属于碱性水果,其有机酸在体内分解成二氧化碳和各种酸性盐而呈碱性,能够有效改善酸性体质。
4、所选水果多为少含果糖的,如火龙果,其果肉几乎不含果糖和蔗糖,糖分以葡萄糖为主,这种天然葡萄糖,容易吸收,适合痛风病人食用。
5、本品所选原料多为紫红色,紫红色蔬菜中含有丰富的花青素。花青素有强抗氧化性及自由基清除能力,并具有抑制炎症和过敏,增强血管弹性,改善关节的柔韧性的功效。
6、本品所添加的低聚木糖可以选择性地促进肠道双歧杆菌的增殖,持续摄入2周至3个月,总血清胆固醇可降低20—50dl。还可提高血清中多密度脂蛋白胆固醇占总胆固醇的比率,并降低血压,同时增强机体免疫力。
7、本品可日常饮用,预防痛风;还可以在患病后经常饮用,改善痛风症状;亦可在痛风发作期严格控制饮食时,作为辅助食品补充营养,控制症状加剧及并发症的发生,促进恢复健康。
8、在蔬果固体饮料制备过程中,采用真空低温浓缩技术和真空冷冻干燥技术,使原材料中营养物质得到充分保留。
9、本发明的适用于痛风患者的蔬果固体饮料配方具有种类丰富、搭配合理、颜色美观、风味优良、方便携带、易于冲调、功效明显等优点。
10、本发明的适用于痛风患者的蔬果固体饮料可促进痛风患者大量饮水,替代酒、咖啡等加重痛风的饮料,并在合理补充各种适宜营养成分的同时添加功能因子,有益于缓解痛风症状。
11、本发明的适用于痛风患者的蔬果固体饮料可辅助控制痛风急性发作、纠正高尿酸血症,预防尿酸盐沉积造成的关节破坏及肾脏损害,并预防复发,可提高痛风患者的生活质量。
12、本发明的适用于痛风患者的蔬果固体饮料工艺简单易行、适合工业生产,应用前景广阔。
具体实施方式
实施例1:
1、配方组成:高蛋白型
蓝莓冻干粉5份、桑葚冻干粉5份、草莓冻干粉5份、树莓冻干粉3份、覆盆子冻干粉3份、蔓越莓冻干粉2份、红心火龙果冻干粉5份、樱桃冻干粉3份、紫葡萄冻干粉5份、黑李子冻干粉2份、黑加仑冻干粉2份、血橙冻干粉5份、西柚冻干粉2份、红心柚子冻干粉2份、无花果冻干粉5份、红甜菜冻干粉5份、紫甘蓝冻干粉2份、枸杞冻干粉5份、紫胡萝卜冻干粉2份、芹菜籽粉冻干粉2份、微胶囊化松仁蛋白肽27份、低聚木糖3份。
2、制备方法:
本发明还提供了上述固体饮料的制备方法,包括以下步骤:
(1)所有水果、蔬菜分别洗净、去皮、去籽,匀浆、过滤、将果汁真空低温浓缩至原体积的1/5,倾倒于不锈钢平托盘,低于-20℃冷冻,进行真空冷冻干燥,过40-200目筛,备用。
(2)芹菜籽60-80℃烘干5小时,高速粉碎机粉碎,过40-200目筛,备用。
(3)水提松仁蛋白,以胃蛋白酶和胰蛋白酶在最适条件下水解,将酶解液真空冷冻干燥,以麦芽糊精对松仁蛋白肽进行微胶囊化包埋。
(4)混合:按照重量比接近的组分先混合,从重量比较小的部分逐级放大混合,于三维混合机中混合均匀。
(5)包装:用粉状自动包装机分装混好的物料,每袋20g。
实施例2:
1、配方组成:低蛋白型
蓝莓冻干粉6份、桑葚冻干粉6份、草莓冻干粉6份、树莓冻干粉6份、覆盆子冻干粉6份、蔓越莓冻干粉5份、红心火龙果冻干粉10份、樱桃冻干粉5份、紫葡萄冻干粉5份、黑李子冻干粉2份、黑加仑冻干粉5份、血橙冻干粉4份、西柚冻干粉4份、红心柚子冻干粉4份、无花果冻干粉5份、红甜菜冻干粉2份、紫甘蓝冻干粉2份、枸杞冻干粉5份、紫胡萝卜冻干粉2份、芹菜籽粉冻干粉2份、微胶囊化松仁蛋白肽5份、低聚木糖3份。
2、制备方法:
本发明还提供了上述固体饮料的制备方法,包括以下步骤:
(1)所有水果、蔬菜分别洗净、去皮、去籽,匀浆、过滤、将果汁真空低温浓缩至原体积的1/5,倾倒于不锈钢平托盘,低于-20℃冷冻,进行真空冷冻干燥,过40-200目筛,备用。
(2)芹菜籽60-80℃烘干5小时,高速粉碎机粉碎,过40-200目筛,备用。
(3)水提松仁蛋白,以胃蛋白酶和胰蛋白酶在最适条件下水解,将酶解液真空冷冻干燥,以麦芽糊精对松仁蛋白肽进行微胶囊化包埋。

Claims (4)
1.一种适用于痛风病人的富含花青素的松仁蛋白肽功能性固体饮料,其特征在于,所述的固体饮料制备原料均为适合痛风病人食用成分,组分中包含富含花青素的水果如:蓝莓、桑葚、草莓、树莓、覆盆子、蔓越莓、红心火龙果、樱桃、紫葡萄、黑李子、黑加仑、血橙、西柚、红心柚子、无花果;富含花青素的蔬菜如:红甜菜、紫甘蓝、枸杞、紫胡萝卜、芹菜籽;优质植物蛋白来源:微胶囊化松仁蛋白肽。
2.如权利要求1中所述的固体饮料,其特征在于,所述复合配方应以以下原料按质量组成份数配比加工而成:微胶囊化松仁蛋白肽5~30份、蓝莓冻干粉2~10份、桑葚冻干粉2~10份、草莓冻干粉2~10份、树莓冻干粉2~10份、覆盆子冻干粉2~10份、蔓越莓冻干粉2~10份、红心火龙果冻干粉2~10份、樱桃冻干粉2~10份、紫葡萄冻干粉2~10份、黑李子冻干粉2~10份、黑加仑冻干粉2~10份、血橙冻干粉2~10份、西柚冻干粉2~10份、红心柚子冻干粉2~10份、无花果冻干粉2~10份、红甜菜冻干粉2~10份、紫甘蓝冻干粉2~10份、枸杞冻干粉2~10份、紫胡萝卜冻干粉2~10份、芹菜籽粉冻干粉2~10份、低聚木糖1~5份。
3.如权利要求2中所述的微胶囊化松仁蛋白肽,其特征在于,松仁蛋白肽为红松松仁经蛋白酶水解得到,并以麦芽糊精对其进行包埋,由哈尔滨工业大学极端环境营养与防护研究所制备。
4.一种适用于痛风病人的富含花青素的松仁蛋白肽固体饮料,其特征在于,所述制备方法步骤如下:
本发明还提供了上述固体饮料的制备方法,包括以下步骤:
(1)水果、蔬菜分别洗净、去皮、去籽,匀浆、过滤、将蔬果汁真空低温浓缩至原体积的1/5,倾倒于不锈钢平托盘,低于-20℃冷冻,进行真空冷冻干燥,过40-200目筛,备用。
(2)芹菜籽60-80℃烘干5小时,高速粉碎机粉碎,过40-200目筛,备用。
(3)水提松仁蛋白,以胃蛋白酶和胰蛋白酶在最适条件下水解,将酶解液真空冷冻干燥,以麦芽糊精对松仁蛋白肽进行微胶囊化包埋。
