Abstract
本发明提供了一种天然植物类多功能营养饮料及其制备方法。该饮料主要由以下组分制成:综合植物粉5~10%,复合浓缩果汁15~25%,大豆多肽10~15%,余量的水;其中,综合植物粉的组成为:枸杞粉:刺梨粉:沙棘粉:佛手粉:水溶性姜黄粉=2:2:2:1:1;复合浓缩果汁为:苹果浓缩汁:橙浓缩汁:金桔浓缩汁=5:2:3。所述饮料的制备方法包括以下步骤:1)制备综合植物粉;2)将组成物质按比例混合;3)加水溶解;4)经巴士杀菌后装瓶。本发明制备的多功能营养饮料不仅口感良好,果香浓郁,遮蔽了药食同源成分刺激性口味,而且含有多种维生素和氨基酸等营养成分;且具有抗衰老、改善肠胃、清肺护肝等功能。

技术领域
本发明属于功能饮料生产技术领域,具体涉及一种天然植物类多功能营养饮料及其制备方法。
背景技术
近年来,随着经济的快速发展、社会的竞争激烈,人们的工作压力与日俱增,在快节奏的工作环境下,人们越来越喜欢在疲劳的下午喝一杯果汁饮料,而目前市场上可供饮用的果汁型饮料品种很多,但是具有多功能型的营养保健饮料却不多见;另一方面,由于工作节奏加快,社会竞争日益激烈,人们的饮食越来越依赖于快速便捷性食物,然而快餐型食物缺乏营养,无法提供人们所需的必需氨基酸和多种维生素等营养成分,增加肠胃负担。更为严重的是,人们长时间面对电脑、手机等办公设备,大部分人已经处于亚健康状态,电脑、手机等辐射性设备造成了普遍的身体疲劳与视力损伤,具有增强抵抗力和其他保健功能型的饮料成为了人们更加青睐的饮品选择。
在上述背景下,“药食同源”的食物成为了人们关注的热点。“药食同源”的物质既是食物又是药物,其具有药物的增益体魄的作用,又能日常食用。但由于其本身的药性,药食同源的食物往往味道较为刺激,或者有酸涩味,一般很难在饮料中使用,而大多是在用药时添加,采用这种原料的饮品因不被消费者所接受而限制了其经济价值的发挥。
另一方面,现有的功能型饮料虽然能够提供某一方面的保健功效,但是其口感很难保证,很多商家为了掩蔽药用原料的刺激性味道和苦涩味,而使用大量的香精或调味剂等食品添加剂,而这类添加剂的大量使用会对人体健康造成其他方面的损害,现有饮品很难达到在功效和口感方面的二者兼俱。如专利CN 201510917517.1公开了一种提供能量的运动型饮料,能够为运动后的快速恢复和缓解疲劳提供能量,然而该发明利用香精以及其他调味剂对于大豆多肽的不良风味进行调节,与消费者追求成分天然的观念不符,因此市场上亟需开发出一种口感良好、成分天然、具备丰富的营养以及具备保健功效的多功能性营养饮料。
发明内容
本发明的目的就是为了解决上述技术问题,而提供一种天然植物类多功能营养饮料及其制备方法。该饮料不仅采用纯天然的药食两用植物成分,很好地保留了天然植物的药用功效,具有较好的保健功能,而且具备口感良好、无刺激性味道和无苦涩味的特点,且不需要额外添加香精或调味剂等辅料添加剂,非常适合亚健康人群、运动人群、肠胃差的人群和工作生活压力大的人群,适用范围十分广泛。
为了实现上述目的,本发明将通过以下技术方案实现:
一种天然植物类多功能营养饮料,按重量百分比计,所述饮料包括以下组分:综合植物粉5~10%,复合浓缩果汁15~25%,大豆多肽10~15%,余量为水;所述综合植物粉由以下重量份的组分组成:枸杞粉:刺梨粉:沙棘粉:佛手粉:水溶性姜黄粉=2:2:2:1:1;所述复合浓缩果汁包括苹果浓缩汁、橙浓缩汁和金桔浓缩汁,复合浓缩果汁中各组分的比例为苹果浓缩汁:橙浓缩汁:金桔浓缩汁=5:2:3。
本发明提供的上述营养饮料,是采用五种天然植物制备而成的综合植物粉来保证饮料的保健功效,并复配以大豆多肽,形成了营养丰富、功能全面的保健饮品。
组成本发明的综合植物粉的五种成分,除了刺梨粉之外,其他四种成分均是《中国药典》中明确记载的“药食两用”性天然植物成分。其中枸杞有增强免疫和免疫调节功能的作用、还具有明显的促进造血功能、降血脂、抗脂肪肝以及抗衰老的作用;沙棘具有止咳祛痰、消食化滞、活血散瘀的功效,可用于咳嗽痰多、消化不良、食积腹痛、跌扑瘀肿、瘀血经闭等常见症状;佛手多糖具有较好的免疫调节、抗肿瘤作用,还有一定的镇痛镇惊和抗菌作用,还有很强的溶胆结石作用。佛手中富含的精油具有明显的抗菌、抗炎作用,能治疗晒伤、牛皮癣、粉刺,改善皮肤等,还能起到抗抑郁、舒缓情绪的作用;姜黄能够起到破血行气、通经止痛的作用,可用于改善胸胁剌痛,闭经,徵瘕,风湿肩臂疼痛,跌扑肿痛等症状;而且目前对于姜黄具有的护胃、保肝、降血脂、抗氧化、增强免疫力等多方面的保健功效正处于研究热点中。而刺梨的药用价值也很高,其花、叶果、籽均可入药,具有清热生津、健胃消食以及养颜美容等功效,刺梨富含超氧化物歧化酶(简称SOD),SOD是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。
本发明选用的综合植物粉,不仅具有全面的保健功效,而且富含丰富的营养成分。沙棘果实营养丰富,是目前世界上含有天然维生素种类最多的珍贵植物,据测定其果实中含有多种维生素、脂肪酸、微量元素、亚油素、沙棘黄酮、超氧化物等活性物质和人体所需的各种氨基酸。同时每100g沙棘果汁中含维生素C含量825-1100mg、维生素E含量250mg-400mg、维生素B1含量0.05mg-0.3mg、维生素B2含量0.03g-0.15g、维生素B12含量0.2mg-0.88mg、维生素K族化合物115、P族维生素20mg-350mg。从而被誉为天然维生素的宝库。刺梨果实中的营养成分也极其丰富,成熟的刺梨肉质肥厚、味酸甜,果实富含糖、维生素、胡萝卜素、有机酸和20多种氨基酸、10余种对人体有益的微量元素,尤其是维生素C含量极高,是当前水果中最高的,每100克鲜果中含量841.58~3541.13mg,是柑橘的50倍,猕猴桃的10倍,具有“维生素C之王”的美称。
本发明的原料组分中还添加复配了大豆多肽,大豆多肽是大豆蛋白在蛋白酶作用下水解成分子量较小的片段,其易吸收,营养价值高,具有提高免疫调节功能,抗疲劳功能,辅助降血压血脂、减肥等各种功能,比蛋白易溶解吸收。已有研究表明,大豆蛋白与玉米蛋白、大米蛋白和小麦蛋白相比,其氨基酸的种类和组成最为丰富,富含20多种氨基酸,而由于多肽比蛋白质和氨基酸具有更优的消化吸收效率,且更利于人体吸收平衡和对蛋白质的利用,因此本发明采用大豆多肽进行复配。
本发明按照上述组分的复配,很好地解决了饮料的多功能性和营养丰富等问题,适合各类人群特别是亚健康人群、运动人群和工作生活压力大的人群饮用。然而,申请人在研究中发现,上述组分的添加和使用,对于饮料的口感有重大影响,大量实验表明,上述物质添加进饮料中使得饮料的口感大大降低,将严重制约饮料的市场价值。
其中刺梨和沙棘虽然维生素C含量极高,但是其酸味很重,而且制成的饮料微涩,而佛手也有芸香科植物独特的苦涩味,姜黄的口感也略有苦味,并有较浓重的辛辣味。而大豆多肽作为蛋白酶的水解产物,有明显的异腥味,很难通过减少配比和简单的遮蔽方法除去不良风味,一般都只是作为辅料添加到食品中,且必需添加香精和调味剂等食品添加剂才能除去其不良风味。
发明人在保证饮料的多功效以及多营养的前提下,对饮料的口感进行了大量考察,并试图通过加入浓缩果汁来替代添加剂的方法来掩蔽原料的不良风味,然而加入香蕉汁、菠萝汁、水蜜桃汁和西瓜汁等,均很难得到一种可很好除去原料不良风味的配方,产品的口感始终很难提高,产品中添加的不同组分以及各组分的不同配比均会对饮料的口感产生重大影响,而发明人最终的研究结果表明,在以枸杞粉:刺梨粉:沙棘粉:佛手粉:水溶性姜黄粉=2:2:2:1:1的综合植物粉的配比下,并选择复合浓缩果汁中以苹果浓缩汁:橙浓缩汁:金桔浓缩汁=5:2:3的比例进行复配,能够很好解决饮料的口感问题,既除去了原料的不良风味,而且果汁中鲜橙原有的酸味和金桔的后苦味均得到了很好改善,根据此比例获得的饮料口感丰满,果香醇厚香甜,饮料中无酸味,基本无后苦味。但是,改变原料的组分和配比之后,饮料的口感将大大变差。
作为优选的实施方式,所述复合浓缩果汁还包括白葡萄浓缩汁、枇杷浓缩汁和红柚浓缩汁,复合浓缩果汁中各组分的比例为:苹果浓缩汁:橙浓缩汁:金桔浓缩汁:白葡萄浓缩汁:枇杷浓缩汁:红柚浓缩汁=5:2:3:5:1:2。
作为优选的实施方式,所述饮料还包括果胶,按重量百分比计,所述果胶的用量为0.1~0.2%,余量用水补足。果胶按照上述重量份进行添加,能够更好的提高饮料的口感,但是超出本发明的使用范围,饮料的口感会变厚腻。
作为更优选的实施方式,所述饮料由以下组分组成:综合植物粉5%,复合果汁25%,大豆多肽15%,果胶0.2%,余量为水。采用上述原料复配制备得到的多功能营养饮料的口感最佳,经感观评价效果最好。
此处进一步说明的是,本发明的饮料除了采用上述原料之外,还可以额外添加低聚糖类、水溶性膳食纤维等物质,均不会对本发明的饮料口感产生不利影响,且适合人体饮用和吸收,但低聚糖的用量建议在1~2%范围内较佳,水溶性膳食纤维的用量建议在3~5%范围内较佳。
本发明提供的上述饮料的制备方法包括以下步骤:
1)制取综合植物粉;
2)向步骤1)所得物,按比例加入所需原料,混合均匀;
3)向步骤2)所得物加入适量纯净水,搅拌均匀;
4)将步骤3)所得物进行巴士杀菌,后装瓶。
其中,所述综合植物粉由以下方法制备而得:
1)取所需植物原料,采用搅拌破碎机对植物原料进行细胞壁破壁处理,得到植物浆料;
2)向步骤1)所得植物浆料中加入适量水,进行超声动态连续逆流萃取;
3)对步骤2)所得萃取物进行卧式螺旋沉降离心,将分离后的清液经冷却器冷却至40℃~50℃,后经陶瓷复合膜管澄清处理;
4)对步骤3)所得清液进行反渗透膜浓缩,再进行双效真空浓缩;
5)对步骤4)所得浓缩液进行均质处理;均质压力为200MPa;
6)对步骤5)所得溶液进行喷雾干燥,进口温度为160℃,出口温度为70-80℃。
作为优选的实施方式,步骤2)中所述超声动态连续逆流萃取的工艺条件为:水温60~65℃,料液比为1:20,浸提时间60分钟。
作为优选的实施方式,步骤3)中所述卧式螺旋沉降离心的转速为3000r/min。
作为优选的实施方式,步骤3)中所述陶瓷复合膜管澄清处理的工艺条件为:压强3MPa,温度20℃,孔径0.2μm。
作为优选的实施方式,步骤4)中所述反渗透浓缩工艺条件为:反渗透压3MPa;所述真空浓缩工艺参数为:温度55~70℃,蒸汽压力<0.25MPa。
本发明采用上述方法进行制备综合植物粉,其中采用的超声动态连续逆流萃取方法比传统通过逆流提取原料方法既保证了易挥发、易变味、易变色物质的低温短时提取,又保证了渣的渗洗,同时得到的果汁色、香、味的保留度、提取率、浓度都更高。
而产品浓缩时应用的反渗透膜低温浓缩方法更加具有优势,其采用“错流循环浓缩”流程,间隙性生产,对提取液进行脱水浓缩,膜浓缩在常温(≤45℃)下进行,制得提取液澄清明亮具有原汁原味的风味又保留了香气成分,产品品质提高,流程简单、操作方便,物料损耗较低。
与现有技术相比,本发明的有益效果如下:
(1)本发明提供的饮料,具备多方面的保健功效,能够造血活血、抗衰老、抗辐射、改善肠胃、清肺护肝、辅助降血压血脂和减肥,适用于各种人群;
(2)本发明的饮料,还具备丰富的营养成分,含有多种维生素、脂肪酸、微量元素、超氧化物等活性物质和人体所需的各种氨基酸;
(3)本发明的饮料具有良好的口感,克服了原料的不良风味;饮料口感丰满,果香醇厚香甜,饮料中无酸味,基本无后苦味;
(4)本发明的饮料采用天然植物复配而成,不用额外添加香精、调节剂、添加剂。

以实施例1-6及对比例1-3所得饮料为实验对象,选取40人(20男20女,年龄18-45之间)对产品口感进行感官评定,其结果如表1所示:

选取不同人群对本发明实施例1-6制备的饮料进行日常饮用,每天饮用一次,共饮用30后进行功能性评价,结果发现:大部分人群在饮用本发明的饮料20天后,精神状况更好,抵抗力有所增强,工作压力得到有效缓解,肠胃不适症状得到改善,特别是运动人群在大量运动后饮用本发明的饮料,能够快速得到缓解,有助于精力的恢复。

4.根据权利要求3所述的天然植物类多功能营养饮料,其特征在于,按重量百分比计,所述饮料由以下组分组成:综合植物粉5%,复合果汁25%,大豆多肽15%,果胶0.2%,余量为水。
5.一种制备如权利要求1或2所述的天然植物类多功能营养饮料的方法,其特征在于,所述方法包括以下步骤:
1)制取综合植物粉;
2)向步骤1)所得物中按比例加入所需原料,后混合均匀;
3)向步骤2)所得物中加入适量纯净水,搅拌均匀;
4)将步骤3)所得物进行巴士杀菌,后装瓶,即得。
6.根据权利要求5所述的方法,其特征在于,所述综合植物粉由以下方法制备而得:
1)取所需植物原料,采用搅拌破碎机对植物原料进行细胞壁破壁处理,得到植物浆料;
2)向步骤1)所得植物浆料中加入适量水,进行超声动态连续逆流萃取;
3)对步骤2)所得萃取物进行卧式螺旋沉降离心,将分离后的清液经冷却器冷却至40℃~50℃,后经陶瓷复合膜管澄清处理;
4)对步骤3)所得澄清液进行反渗透膜浓缩,再进行双效真空浓缩处理;
5)对步骤4)所得浓缩液进行均质处理,均质压力为200MPa;
6)对步骤5)所得溶液进行喷雾干燥,进口温度为160℃,出口温度为70-80℃。
7.根据权利要求6所述的方法,其特征在于,步骤2)中所述超声动态连续逆流萃取的工艺条件为:水温60~65℃,料液比为1:20,浸提时间60分钟。
8.根据权利要求6所述的方法,其特征在于,步骤3)中所述卧式螺旋沉降离心的转速为3000r/min。
9.根据权利要求6所述的方法,其特征在于,步骤3)中所述陶瓷复合膜管澄清处理的工艺条件为:压强3MPa,温度20℃,孔径0.2μm。
10.根据权利要求6所述的方法,其特征在于,步骤4)中所述反渗透膜浓缩处理的工艺参数为:反渗透压3MPa;所述双效真空浓缩处理的工艺参数为:温度55~70℃,蒸汽压力<0.25MPa。
