Abstract
本发明公开一种富硒蓝莓饮料及其制备方法,该富硒蓝莓饮料由以下重量份的原料组成:富硒蓝莓35-55份、葡萄3-7份、菊花提取液5-10份、柚子2-6份、蜂蜜8-12份、白砂糖4-8份、枸杞0.5-1份、纯净水40-50份。发明以富硒蓝莓、葡萄、菊花提取液、柚子为原料制备得到,富含多种矿物质、有机硒元素、维生素、氨基酸及花青素,能清除体内自由基,具有消暑明目、健体养颜、降血糖血脂的功效。

技术领域
本发明属于食品加工领域,涉及一种饮品,具体是一种富含有机硒元素的蓝莓饮料及其制备方法。
背景技术
蓝莓,富含多种营养元素,具有很高的保健价值,除了富含常规的糖、酸和VC外,还有丰富的VE、VA、VB、SOD、熊果苷、蛋白质、花青苷、食用纤维以及钙、铁、锌、钾等矿物质,根据对蓝莓果实的分析测定:每100克蓝莓鲜果中花青苷色素含量高达163毫克,蛋白质400-700毫克,碳水化合物12.3-15.3毫克,维生素A 81-100国际单位,SOD 5.39国际单位;每1克鲜果中含钙220-920微克,磷98-274微,镁114-249微克,锌2.1-4.3微克,铁7.6-30.0微克,锗0.8-1.2微克,铜2.0-3.2微克。蓝莓中富含的这些营养物质,十分有益于人体健康成长,因此被世界粮农组织推荐为“五大健康水果”之一。
富硒蓝莓不仅含有上述丰富的营养成分,还含有丰富的有机硒元素,极大地增加了蓝莓的营养价值。《营养学报》2011年第5期463-466页公开了蓝莓中蛋白硒形态的富集分离及测定方法,说明了蓝莓中硒元素的含量丰富。硒元素是人体必需的微量矿物质营养素,人体本身的硒总含量为6-20mg。硒遍布各组织器官和体液,肾中浓度最高,对提高免疫力和预防癌症非常重要。由于人体内硒不存在长期贮藏硒的器官,机体所需的硒应该不断从饮食中得到足够量的硒,硒浓度的平衡对许多器官、组织的生理功能有着重要的保护作用和促进作用。
葡萄含有矿物质钙、钾、磷、铁以及多种维生素,以及多种人体必需氨基酸。
菊花具有很强的抗菌作用,对大肠杆菌、金黄色葡萄球菌等有很强的抑杀作用;同时还具有疏风散热、消炎解毒、平肝明目、祛痰止咳、理气止痛、凉血止血、降血压、抗病毒的功效,并且还可降低血液中的血脂和胆固醇,可预防心脏病的发生,并能增强身体的免疫能力。菊花对肠道中的细菌有抑菌作用,并促进胆汁分泌、降低血液浓度和刺激肠壁蠕动,很适合于制作清凉饮料。其作为新兴的食品和食品工业原料,它的头状花序可制成蜜饯、果酱、高级饮料、冰糕及糕点夹馅等多种食品。其主要含有菊甙、叶黄素、绿原酸、胆碱、黄酮、氨基酸、糖类、酯类、腺嘌呤、水苏碱、维生素A、维生素B1及挥发油等。
柚子柚肉中含有非常丰富的维生素C以及类胰岛素等成分,故有降血糖、降血脂、减肥、美肤养容等功效。经常食用,对高血压、糖尿病、血管硬化等疾病有辅助治疗作用,对肥胖者有健体养颜功能。柚子还具有健胃、润肺、补血、清肠、利便等功效,可促进伤口愈合,对败血症等有良好的辅助疗效。此外,柚子含有生理活性物质皮甙,可降低血液的黏滞度,减少血栓的形成,故而对脑血管疾病,如脑血栓、中风等也有较好的预防作用。而鲜柚肉由于含有类似胰岛素的成分,更是糖尿病患者的理想食品。
现有市场上,饮料的品种可谓多种多样,其功能也不尽相同。同时,市场上供应的富硒商品也很多,但其价格高、适用人群不普遍。为了弥补上述市场的不足,现提供一种新的技术方案。
发明内容
本发明的目的在于克服现有技术缺陷,提供一种富含有机硒元素的蓝莓饮料及其制备方法。
本发明的目的可以通过以下技术方案实现:
一种富硒蓝莓饮料,该富硒蓝莓饮料由以下重量份的原料组成:蓝莓35-55份、葡萄3-7份、菊花提取液5-10份、柚子2-6份、蜂蜜8-12份、白砂糖4-8份、枸杞0.5-1份、纯净水40-50份。
优选地,该富硒蓝莓饮料由以下重量份的原料组成:蓝莓40份、葡萄5份、菊花提取液7.5份、柚子4份、蜂蜜10份、白砂糖6份、枸杞0.8份、纯净水45份。
本发明还公开了一种制备富硒蓝莓饮料的方法,包括以下步骤:
(1)将蓝莓、葡萄、柚子、枸杞分别打浆,离心分离得到上清液待用;
(2)将菊花提取液、蜂蜜、白砂糖、纯净水加入到步骤(1)得到的上清液中,搅拌溶解得到蓝莓混合液;
(3)将步骤(2)得到的蓝莓混合液灭菌、冷却,得到蓝莓饮料。
富硒蓝莓饮料的产品中,有机硒元素主要由富硒蓝莓提供。此外蓝莓的果胶含量很高,能有效降低胆固醇,防止动脉粥样硬化,促进心血管健康;蓝莓含花青贰色素,具有活化视网膜功效,可以强化视力,防止眼球疲劳;蓝莓富含维生素C,有增强心脏功能,预防癌症和心脏病的功效,能防止脑神经衰老、增进脑力。
本发明的有益效果:本发明以蓝莓、葡萄、菊花提取液、柚子为原料制备得到,富含多种矿物质、有机硒元素、维生素、氨基酸及花青素,能清除体内自由基,具有消暑明目、健体养颜、降血糖血脂的功效。
具体实施方式
下面结合具体实施例对本发明作进一步详细描述。
实施例1
首先制备菊花提取液:将滁菊用水清洗,除去表面灰尘和蚜虫;将滁菊粉碎过筛,称取滁菊,加入纯水,搅拌提取,离心后得到滁菊提取液。
备料:备取清洗过的富硒蓝莓40kg和葡萄5kg,称取滁菊提取液7.5kg,去皮的柚子4kg、蜂蜜10kg、白砂糖6kg、枸杞0.8kg、纯净水45kg。
制备饮料:(1)将富硒蓝莓、葡萄、柚子、枸杞分别打浆,离心分离得到上清液待用;(2)将滁菊提取液、蜂蜜、白砂糖、纯净水加入到上清液中,搅拌溶解,得到富硒蓝莓混合液;(3)将得到的富硒蓝莓混合液灭菌、冷却,得到蓝莓饮料。
实施例2
制备菊花提取液:将滁菊、杭白菊用水清洗,除去表面灰尘和蚜虫;再将滁菊、杭白菊粉碎过筛,分别称取滁菊、杭白菊,加入纯水,搅拌提取,离心后分别得到滁菊提取液、杭白菊提取液;将滁菊提取液与杭白菊提取液以任意比例的混合,得到菊花提取液。
备料:备取清洗过的富硒蓝莓55kg和葡萄7kg,称取菊花提取液7kg,去皮的柚子6kg、蜂蜜12kg、白砂糖8kg、枸杞1kg、纯净水50kg。
制备饮料:(1)将富硒蓝莓、葡萄、柚子、枸杞分别打浆,离心分离得到上清液待用;(2)将菊花提取液、蜂蜜、白砂糖、纯净水加入到上清液中,搅拌溶解,得到富硒蓝莓混合液;(3)将得到的富硒蓝莓混合液灭菌、冷却,得到蓝莓饮料。
实施例3
制备菊花提取液:将滁菊、杭白菊、亳菊用水清洗,除去表面灰尘和蚜虫;再将滁菊、杭白菊、毫菊粉碎过筛,分别称取滁菊、杭白菊与毫菊,加入纯水,搅拌提取,离心后分别得到滁菊提取液、杭白菊提取液、毫菊提取液;将滁菊提取液、杭白菊提取液、亳菊提取液以任意比例的混合,得到菊花提取液。
备料:备取清洗过的富硒蓝莓37kg和葡萄3kg,称取菊花提取液5kg,去皮的柚子2kg、蜂蜜8kg、白砂糖4kg、枸杞0.5kg、纯净水40kg。
制备饮料:(1)将富硒蓝莓、葡萄、柚子、枸杞分别打浆,离心分离得到上清液待用;(2)将菊花提取液、蜂蜜、白砂糖、纯净水加入到上清液中,搅拌溶解,得到富硒蓝莓混合液;(3)将得到的富硒蓝莓混合液灭菌、冷却,得到蓝莓饮料。
本领域的技术人员可以通过现有技术中常规的方法对所得产品进行有机硒元素的含量检测。本发明按照《营养学报》2011年第5期463-466页公开的蓝莓中蛋白硒形态的富集分离及测定方法,对实施例1-3所得产品中的硒元素含量进行检测,通过检测所得实施例1-3饮料产品中硒元素含量如下表1;

1.一种富硒蓝莓饮料,其特征在于,该富硒蓝莓饮料由以下重量份的原料组成:富硒蓝莓35-55份、葡萄3-7份、菊花提取液5-10份、柚子2-6份、蜂蜜8-12份、白砂糖4-8份、枸杞0.5-1份、纯净水40-50份。
2.根据权利要求1所述的富硒蓝莓饮料,其特征在于,该富硒蓝莓饮料由以下重量份的原料组成:富硒蓝莓40份、葡萄5份、菊花提取液7.5份、柚子4份、蜂蜜10份、白砂糖6份、枸杞0.8份、纯净水45份。
3.一种制备如权利要求1或2所述富硒蓝莓饮料的方法,其特征在于,包括以下步骤:
(1)将富硒蓝莓、葡萄、柚子、枸杞分别打浆,离心分离得到上清液待用;
(2)将菊花提取液、蜂蜜、白砂糖、纯净水加入到步骤(1)得到的上清液中,搅拌溶解得到富硒蓝莓混合液;
(3)将步骤(2)得到的富硒蓝莓混合液灭菌、冷却,得到富硒蓝莓饮料。
