Abstract

本发明公开了一种檵木葛根醋的酿造工艺,所述的檵木葛根醋是以檵木为主要原料,以葛根为基质料,采用将檵木的叶和花杀青后进行复合酶处理,杀青能够去除檵木中携带的涩味,改善成品醋的口感与风味,复合酶处理能够提高檵木的利用效率,以葛根为基质,更加丰富了成品醋的营养物质,使成品醋具有清热解毒、通经活络、生津止渴等保健作用。

技术领域
本发明涉及一种醋的酿造工艺,尤其是涉及一种檵木葛根醋的酿造工艺。
背景技术
檵木通常为灌木,叶子椭圆形或卵圆形,花淡黄色,结蒴果,褐色,根、叶、花、果均能入药,味苦、涩,性平,能解热止血、通经活络、收敛止血,清热解毒,止泻。檵花味微甘、涩,性平,清暑解热、止咳、止血,用于咳嗽,咯血,衄血,血痢,血崩,遗精,泄泻。叶涩、苦,凉,可以收敛止血,清热解毒,用于创伤出血,烧、烫伤,扭伤,吐血,泄泻。根苦、涩,微温,用于咳血,跌打损伤,吐血,经闭,腹痛泄泻,关节酸痛。
葛根:中药名,为豆科植物野葛的干燥根,味甘、辛,性凉,归肺、胃经。《别录》记载:“疗伤寒中风头痛,解肌发表出汗,开腠理,疗金疮,止胁风痛。”具有解肌退热、生津止渴、升阳止泻等作用。
以檵木嫩叶为主要原料、葛根为基质酿造的檵木葛根醋,尚未见到相关产品上市。
发明内容
本发明针对提供一种檵木葛根醋的酿造工艺,充分利用了原料内的营养成分,提高了檵木、葛根的经济价值与营养价值,具有清热解毒、通经活络、生津止渴等作用。
本发明解决其技术问题所采取的技术方案是:
一种檵木葛根醋的酿造工艺,其特征在于,所述的酿造工艺采用以下步骤:
A.檵木预处理:取新鲜檵木叶、檵花,辅以优质的三七花、杜仲叶、矮地茶,去除杂质,清洗后沥干水分;取3kg的檵木嫩叶、2kg的檵花、1.5kg的三七花、1kg的杜仲叶和0.65kg的矮地茶,混合均匀,制得原料;采用128℃的蒸汽对原料叶进行杀青12s,蒸汽杀青后将原料叶用磨浆机磨碎,再入胶体磨,磨成檵木糜,向10kg檵木糜中加入0.015kg的纤维素酶、0.005kg的果胶酶,在48℃条件中联合水解60min,制成檵木泥;
B、葛根预处理:取新鲜、无腐烂的葛根、紫甘薯、菱角,冲洗干净,切成葛根块、紫甘薯块、菱角块,取7kg葛根块、4kg紫甘薯块、3kg菱角块混合均匀后置入蒸煮设备中蒸熟,冷却后用磨浆机磨碎,制成葛根泥;
C、混合:取檵木泥6kg、葛根泥4kg、豆粕粉3kg、麸皮2kg、荞麦粉1kg、党参粉1kg、青豆粉1kg,充分搅拌均匀,制成混合物;
D、蒸料、接种:混合物入蒸煮设备中,通入蒸汽,蒸35min,至熟透;后摊晾至室温,制成原料醅;
E、酒精发酵:向10kg原料醅中加入0.22kg的酒酵母,搅拌均匀后,加入18kg的饮用水,温度控制为50℃,发酵6天,制得醋醅;
F、醋酸发酵:向10kg醋醅中加入0.3kg的醋酸酵母菌,搅拌均匀,44℃环境下发酵11天后,不再控温,醋醅自然降温至35℃,发酵至醋醅酸度达8.2g/100ml时,停止醋酸发酵;
G、后熟:向10kg发酵后的醋醅中加入0.8kg的食盐,搅拌至均匀,静置4天;
H、压榨过滤:将后熟后的醋醅经过压滤机过滤,得醋酸发酵液,向10kg醋酸发酵液中加入0.03kg的壳聚糖、0.02kg的硅藻土,搅拌均匀,静置8h,制得发酵醋液;
I、陈酿:采用微波辅助冷处理加速醋液的陈酿,微波频率210MHz,冷处理时间1天,温度8℃;
J、杀菌、灌装:将檵木葛根醋在88℃环境下杀菌5min,杀菌后在真空无菌环境下灌装,通风干燥环境中贮藏。
有益效果:本发明采用将檵木的叶和花杀青后进行复合酶处理,杀青能够去除檵木中携带的涩味,改善成品醋的口感与风味,复合酶处理能够提高檵木的利用效率,以葛根为基质,更加丰富了成品醋的营养物质,使成品醋具有清热解毒、通经活络、生津止渴等保健作用。
具体实施方式
实施例1:
一种檵木葛根醋的酿造工艺,其特征在于,所述的酿造工艺采用以下步骤:
A.檵木预处理:取新鲜檵木叶、檵花,辅以优质的三七花、菊花脑嫩叶、女贞叶,去除杂质,清洗后沥干水分;取3kg的檵木嫩叶、2kg的檵花、1.5kg的三七花、1kg的菊花脑嫩叶和0.65kg的女贞叶,混合均匀,制得原料;采用128℃的蒸汽对原料叶进行杀青12s,蒸汽杀青后将原料叶用磨浆机磨碎,再入胶体磨,磨成檵木糜,向10kg檵木糜中加入0.015kg的纤维素酶、0.005kg的果胶酶,在48℃条件中联合水解60min,制成檵木泥;
B、葛根预处理:取新鲜、无腐烂的葛根、紫甘薯、菱角,冲洗干净,切成葛根块、紫甘薯块、菱角块,取7kg葛根块、4kg紫甘薯块、3kg菱角块混合均匀后置入蒸煮设备中蒸熟,冷却后用磨浆机磨碎,制成葛根泥;
C、混合:取檵木泥6kg、葛根泥4kg、豆粕粉3kg、麸皮2kg、荞麦粉1kg、党参粉1kg、青豆粉1kg,充分搅拌均匀,制成混合物;
D、蒸料、接种:混合物入蒸煮设备中,通入蒸汽,蒸35min,至熟透;后摊晾至室温,制成原料醅;
E、酒精发酵:向10kg原料醅中加入0.22kg的酒酵母,搅拌均匀后,加入18kg的饮用水,温度控制为50℃,发酵6天,制得醋醅;
F、醋酸发酵:向10kg醋醅中加入0.3kg的醋酸酵母菌,搅拌均匀,44℃环境下发酵11天后,不再控温,醋醅自然降温至35℃,发酵至醋醅酸度达8.2g/100ml时,停止醋酸发酵;
G、后熟:向10kg发酵后的醋醅中加入0.8kg的食盐,搅拌至均匀,静置4天;

A.檵木预处理:取新鲜檵木叶、檵花,辅以优质的三七花、栝楼皮、牡丹皮,去除杂质,清洗后沥干水分;取6kg的檵木嫩叶、3kg的檵花、2.5kg的三七花、1.2kg的栝楼皮和0.85kg的牡丹皮,混合均匀,制得原料;采用128℃的蒸汽对原料叶进行杀青12s,蒸汽杀青后将原料叶用磨浆机磨碎,再入胶体磨,磨成檵木糜,向10kg檵木糜中加入0.015kg的纤维素酶、0.005kg的果胶酶,在48℃条件中联合水解60min,制成檵木泥;
B、葛根预处理:取新鲜、无腐烂的葛根、紫甘薯、菱角,冲洗干净,切成葛根块、紫甘薯块、菱角块,取7kg葛根块、4kg紫甘薯块、3kg菱角块混合均匀后置入蒸煮设备中蒸熟,冷却后用磨浆机磨碎,制成葛根泥;

1.一种檵木葛根醋的酿造工艺,其特征在于,采用以下步骤:
A.檵木预处理:取新鲜檵木叶、檵花,辅以优质的三七花、杜仲叶、矮地茶,去除杂质,清洗后沥干水分;取3kg的檵木嫩叶、2kg的檵花、1.5kg的三七花、1kg的杜仲叶和0.65kg的矮地茶,混合均匀,制得原料;采用128℃的蒸汽对原料叶进行杀青12s,蒸汽杀青后将原料叶用磨浆机磨碎,再入胶体磨,磨成檵木糜,向10kg檵木糜中加入0.015kg的纤维素酶、0.005kg的果胶酶,在48℃条件中联合水解60min,制成檵木泥;
