Abstract
本发明公开了一种适用于老年人食用的河粉,每1千克米浆里加入100~120克小麦麸粉、50~60克膳食纤维粉、30~40克蛋白粉、20~30克果蔬汁、5~10克低聚果糖、0.1~0.2克芦丁、0.05~0.1克柠檬酸、0.2~0.5克酪朊酸钠以及0.1~0.2克复合维生素。本发明适用于老年人食用的河粉,既富含有蛋白质,同时还含有新鲜的果蔬汁和丰富的膳食纤维,能够满足老年人各个方面的营养需求,且易于吸收消化,热量低;另外,配方中的芦丁、柠檬酸、酪朊酸钠以及与复合维生素复配后不仅能有效提高河粉的弹性和韧性,在蒸煮时不易断裂,而且还能显著延长河粉成品的保质期。

技术领域
本发明涉及一种适用于老年人食用的河粉,属于食品加工工艺技术领域。
背景技术
老年人味觉、食欲较差,吃东西常觉得缺滋少味。老年人体内代谢以分解代谢为主,需用较多的蛋白质来补偿组织蛋白质的消耗。同时,老年人还需要多食用新鲜蔬菜,其含有丰富的维生素C和矿物质,还有较多的纤维素,对保护心血管和防癌便秘有重要作用。因此一种适合老年人食用的,味道美味,营养丰富全面,且易于消化吸收,还低热量、低糖的食物的开发很有必要。
发明内容
发明目的:本发明所要解决的技术问题是提供一种适用于老年人食用的河粉,该河粉不仅口感好,营养丰富全面,而且还具有长的保质期和保鲜期。
发明内容:为解决上述技术问题,本发明所采用的技术手段为:
一种适用于老年人食用的河粉,每1千克米浆里加入100~120克小麦麸粉、50~60克膳食纤维粉、30~40克蛋白粉、20~30克果蔬汁、5~10克低聚果糖、0.1~0.2克芦丁、0.05~0.1克柠檬酸、0.2~0.5克酪朊酸钠以及0.1~0.2克复合维生素。
其中,还包括0.2~0.3克海藻酸钠、0.3~0.5克碳酸钾以及0.5~1克食用盐。
其中,所述每mg复合维生素含有10~15ug维生素A、1~2ug维生素D、50~60ug维生素E、20~25ug维生素B1、20~25ug维生素B2、15~20ug维生素B6、2~3ug维生素B12、100~120ug烟酸、60~80ug叶酸、100~120ug泛酸以及50~60ug生物素。
其中,所述膳食纤维粉为抗性糊精和菊粉的混合物。
其中,所述米浆为:选用早籼米或按1∶1比例混合的早籼米与晚籼米,经粗粉碎过筛,加水和淀粉调浆,最后浆液超微粉碎即可。
其中,加水和淀粉调浆:按照粉水质量比1∶2进行调浆,按照籼米和淀粉的质量比为4∶1将淀粉添加到混合浆汁中并搅拌均匀。
有益效果:相比于现有技术,本发明适用于老年人食用的河粉,既富含有蛋白质,同时还含有新鲜的果蔬汁和丰富的膳食纤维,能够满足老年人各个方面的营养需求,且易于吸收消化,热量低;另外,配方中的芦丁、柠檬酸、酪朊酸钠以及与复合维生素复配后不仅能有效提高河粉的弹性和韧性,在蒸煮时不易断裂,而且还能显著延长河粉成品的保质期和保鲜期。
具体实施方式
以下对本发明的技术方案做进一步说明,但是本发明要求保护的范围并不局限于此。
实施例1
本发明适用于老年人食用的河粉,每1千克米浆里加入100克小麦麸粉、50克膳食纤维粉、30克蛋白粉、20克果蔬汁、5克低聚果糖、0.1克芦丁、0.05克柠檬酸、0.2克酪朊酸钠、0.1克复合维生素、0.2克海藻酸钠、0.3克碳酸钾以及0.5克食用盐;其中,每mg复合维生素中含有10~15ug维生素A、1~2ug维生素D、50~60ug维生素E、20~25ug维生素B1、20~25ug维生素B2、15~20ug维生素B6、2~3ug维生素B12、100~120ug烟酸、60~80ug叶酸、100~120ug泛酸以及50~60ug生物素;膳食纤维粉为抗性糊精和菊粉的混合物。
米浆为:选用早籼米或按1∶1比例混合的早籼米与晚籼米,经粗粉碎过筛,原料用粉碎机粉碎后过40目筛子;加水和淀粉调浆,按照粉水质量比1∶2进行调浆,按照籼米和淀粉的质量比为4∶1将淀粉添加到混合浆汁中并搅拌均匀;最后浆液超微粉碎,往调浆后的米浆里加入100克小麦麸粉、50克膳食纤维粉、30克蛋白粉、20克果蔬汁、5克低聚果糖、0.1克芦丁、0.05克柠檬酸、0.2克酪朊酸钠、0.1克复合维生素、0.2克海藻酸钠、0.3克碳酸钾以及0.5克食用盐,然后混合搅拌均匀后倒入胶体磨内循环磨浆5min进行超微粉碎,使粉粒粒径达10μm以下;粉浆从胶体磨中流出后直接进入蒸箱式连续蒸粉机,蒸片时间150s、压力0.35MPa、温度105℃,得蒸熟粉片;将蒸熟粉片充分冷却,然后用自动切条机进行切条即可。
实施例2
本发明适用于老年人食用的河粉,每1千克米浆里加入120克小麦麸粉、60克膳食纤维粉、40克蛋白粉、30克果蔬汁、10克低聚果糖、0.2克芦丁、0.1克柠檬酸、0.5克酪朊酸钠、0.2克复合维生素、0.3克海藻酸钠、0.5克碳酸钾以及1克食用盐;其中,每mg复合维生素含有10~15ug维生素A、1~2ug维生素D、50~60ug维生素E、20~25ug维生素B1、20~25ug维生素B2、15~20ug维生素B6、2~3ug维生素B12、100~120ug烟酸、60~80ug叶酸、100~120ug泛酸以及50~60ug生物素;膳食纤维粉为抗性糊精和菊粉的混合物。
米浆为:选用早籼米或按1∶1比例混合的早籼米与晚籼米,经粗粉碎过筛,原料用粉碎机粉碎后过40目筛子;加水和淀粉调浆,按照粉水质量比1∶2进行调浆,按照籼米和淀粉的质量比为4∶1将淀粉添加到混合浆汁中并搅拌均匀;最后浆液超微粉碎,往调浆后的米浆里加入120克小麦麸粉、60克膳食纤维粉、40克蛋白粉、30克果蔬汁、10克低聚果糖、0.2克芦丁、0.1克柠檬酸、0.5克酪朊酸钠、0.2克复合维生素、0.3克海藻酸钠、0.5克碳酸钾以及1克食用盐,然后混合搅拌均匀后倒入胶体磨内循环磨浆5min进行超微粉碎,使粉粒粒径达10μm以下;粉浆从胶体磨中流出后直接进入蒸箱式连续蒸粉机,蒸片时间150s、压力0.35MPa、温度105℃,得蒸熟粉片;将蒸熟粉片充分冷却,然后用自动切条机进行切条即可。
实施例3
将实施例1~实施例2制得的河粉条以及市面上买回来的河粉条分别于空气中常温下(23~27℃)放置,3天后,实施例1~实施例2制得的河粉条无酸馊味,河粉条手感不黏腻,市面上买回来的河粉条有点酸馊味,河粉条手感黏腻,浸泡河粉条的水呈浑浊,说明河粉条开始变质;5天后,实施例1~实施例2制得的河粉条仍无酸馊味,河粉条手感有点黏腻,市面上买回来的河粉条酸馊味很大,河粉条手感很黏腻,浸泡河粉条的水呈浑浊并且有泡泡,河粉条表面出现黑斑点,说明河粉条已经彻底变质腐坏;7天后,实施例1~实施例2制得的河粉条开始出现酸馊味,河粉条手感比较黏腻,浸泡河粉条的水呈浑浊状。
通过实施例3可以得到,相比于现有的河粉成品,本发明的河粉具有长的保质期和保鲜期。
显然,上述实施例仅仅是为清楚地说明本发明所作的举例,而并非是对本发明的实施方式的限定。对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其它不同形式的变化或变动。这里无需也无法对所有的实施方式予以穷举。而这些属于本发明的精神所引伸出的显而易见的变化或变动仍处于本发明的保护范围之中。
Claims (6)
1.一种适用于老年人食用的河粉,其特征在于:每1千克米浆里加入100~120克小麦麸粉、50~60克膳食纤维粉、30~40克蛋白粉、20~30克果蔬汁、5~10克低聚果糖、0.1~0.2克芦丁、0.05~0.1克柠檬酸、0.2~0.5克酪朊酸钠以及0.1~0.2克复合维生素。
2.根据权利要求1所述的适用于老年人食用的河粉,其特征在于:还包括0.2~0.3克海藻酸钠、0.3~0.5克碳酸钾以及0.5~1克食用盐。
3.根据权利要求1所述的适用于老年人食用的河粉,其特征在于:所述每mg复合维生素含有10~15ug维生素A、1~2ug维生素D、50~60ug维生素E、20~25ug维生素B1、20~25ug维生素B2、15~20ug维生素B6、2~3ug维生素B12、100~120ug烟酸、60~80ug叶酸、100~120ug泛酸以及50~60ug生物素。
4.根据权利要求1所述的适用于老年人食用的河粉,其特征在于:所述膳食纤维粉为抗性糊精和菊粉的混合物。
5.根据权利要求1所述的适用于老年人食用的河粉,其特征在于:所述米浆为:选用早籼米或按1∶1比例混合的早籼米与晚籼米,经粗粉碎过筛,加水和淀粉调浆,最后浆液超微粉碎即可。
6.根据权利要求5所述的适用于老年人食用的河粉,其特征在于:加水和淀粉调浆:按照粉水质量比1∶2进行调浆,按照籼米和淀粉的质量比为4∶1将淀粉添加到混合浆汁中并搅拌均匀。
