红薯(英文: sweet potato)原名番薯(学名:Ipomoea batatas (L.) Lam.),又名红芋、甘薯、蕃薯、大米、番芋、地瓜(北方)、红苕、线苕、白薯、金薯、甜薯、朱薯、枕薯、番葛、白芋、茴芋地瓜等。红薯属管状花目,旋花科一年生草本植物,长2米以上,平卧地面斜上,叶片通常为宽卵形,长4-13厘米,宽3-13厘米,花冠粉红色、白色、淡紫色或紫色,钟状或漏斗状,长3-4厘米,蒴果卵形或扁圆形,有假隔膜,分为4室,具地下块根,块根纺锤形,外皮土黄色或紫红色。红薯富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,有“长寿食品”之誉。含糖量达到15%-20%。有抗癌、保护心脏、预防肺气肿、糖尿病、减肥等功效。北方俗称地瓜、山芋。明代李时珍《本草纲目》记有“甘薯补虚,健脾开胃,强肾阴”,并说海中之人食之长寿。中医视红薯为良药。
红薯块根富含蛋白质、淀粉、 果胶、纤维素、 氨基酸、维生素及多种矿物质,含糖1.5%-5%。红薯块根具有活性成分,有 抗癌、保护心脏、预防 肺气肿、 糖尿病、减肥、美容等功效,有“ 长寿食品”美誉。另外,块根常除供食用外,还可以制糖和酿酒、制 酒精,也可制取淀粉、提取果胶等,制取的淀粉可以制作粉条和粉皮,可以制作美味的菜肴。
糯米(Glutinous rice)是糯稻脱壳的米,在中国南方称为糯米,而北方则多称为江米。糯米是制造粘性小吃,如粽、八宝粥、各式甜品的主要原料,糯米也是酿造醪糟(甜米酒)的主要原料。糯米含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸及淀粉等,营养丰富,为温补强壮食品,具有补中益气,健脾养胃,止虚汗之功效,对食欲不佳,腹胀腹泻有一定缓解作用 。糯米是一种温和的滋补品,有补虚、补血、健脾暖胃、止汗等作用。
长糯米即是籼糯,米粒细长,颜色呈粉白、不透明状,黏性强。另有一种圆糯米,属粳糯,形状圆短,白色不透明,口感甜腻,黏度稍逊于长糯米,适合做粽子、酒酿、汤圆、米饭等等。
因其香糯粘滑,常被用以制成风味小吃,深受大家喜爱。糍粑(6张)逢年过节很多地方都有吃年糕的习俗。正月十五的元宵也是由糯米粉制成的。糯米富含B族维生素,能温暖脾胃,补益中气。对脾胃虚寒、食欲不佳、腹胀腹泻有一定缓解作用。糯米有收涩作用,对尿频、自汗有较好的食疗效果。
糯米是一种温和的滋补品,有补虚、补血、健脾暖胃、止汗等作用。适用于脾胃虚寒所致的反胃、食欲减少、泄泻和气虚引起的汗虚、气短无力、妊娠腹坠胀等症。现代科学研究表明:糯米含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B及淀粉等,为温补强壮品。其中所含淀粉为支链淀粉,所以在肠胃中难以消化水解。
很多人不爱吃软糯的食物,认为不好消化,一吃就有被噎住的感觉。其实,与大米相比,糯米才更容易被消化吸收。糯米和大米的主要成分都是淀粉,但是糯米比大米含有的直链淀粉更少、支链淀粉更多,而通常支链淀粉被消化的效率比直链淀粉要高,因此糯米被消化的速度更胜一筹。

地瓜熟化后松软粉烂,糯米熟化后粘软,如果如果能将地瓜与糯米共同结合,制作出一种能存放时间更久的食品,就能解决人们食用的口感多样化问题。本发明的目的在于提供一种地瓜糯米片的制作方法,生产出一种口味独特的方便食品,不含膨松剂等添加剂的,且粘、松、脆、烂于一体,口感鲜香、酥脆、细腻化、即食化。
