本发明涉及一种食用菌的保鲜方法,其步骤为:首先选择新鲜、无霉烂、无虫蛀的食用菌为原料,用工具去除泥脚及杂质,尽量不破坏食用菌菇形,确保食用菌的完整性;然后用流动清水清洗食用菌,沥干水分;采用夹层包装箱,按箱体夹层体积注入液态氮,1.2~1.5g/m3,将注入口全密封;将沥干水分的食用菌整理好放入包装盒,按每10~20个菌菇包装成袋,密封;将密封好的包装袋放进夹层包装箱中密封;最后将包装箱根据需要放置在4℃~6℃的干燥环境中,避阳光照射、避高温、高压的环境中贮藏;或者放置在箱式冷藏车中进行远距离运输。本发明保鲜方法操作性强,适用面广,是高新技术在食用菌领域的实践应用,前景广阔。

技术领域
本发明属于食品加工技术领域,特别涉及一种保质、保味、保形的食用菌保鲜方法。
背景技术
食用菌是目前公认的绿色安全的无公害产品,其含有丰富的蛋白质、氨基酸、维生素、微量元素及碳水化合物,味道鲜美、风味独特。经研究证明,长期食用,具有防癌、抗癌的作用。但由于食用菌本身特殊的生理生化性质,新鲜的食用菌如果不及时食用,很快就会发生腐烂、变质,这一因素严重制约着食用菌市场的发展。但是因为食用菌中含有生物活性物质,对维护人体健康有重要的利用价值,深受人们的喜爱。所以,食用菌的保存和远距离运输是一个急待解决的问题。
发明内容
本发明的目的在于提供一种既方便保存,又有利于远距离运输的食用菌保鲜方法。
一种食用菌的保鲜方法,其体步骤为:
(1)原料选择:选择新鲜、无霉烂、无虫蛀的食用菌,用工具去除泥脚及杂质,尽量不破坏食用菌菇形,确保食用菌的完整性;
(2)清洗:用流动清水清洗食用菌,洗净后沥干水分备用;
(3)包装箱准备:采用夹层包装箱,按箱体夹层体积注入液态氮,1.2~1.5g/m3,将注入口全密封;
(4)包装:将沥干水分的食用菌整理好放入包装盒,按每10~20个菌菇包装成袋,密封;将密封好的包装袋顺序放进夹层包装箱中,密封;
(5) 贮藏或运输:将包装箱根据需要放置在4℃~6℃的干燥环境中,避阳光照射、避高温、高压的环境中贮藏;或者放置在箱式冷藏车中进行远距离运输。
本发明保鲜方法技术操作性强,适用面广,是高新技术在食用菌领域的实践应用,前景广阔。用本发明保鲜方法获得的食用菌有整朵菇形,色泽、外形保持原有特征,无收缩现象,可独立包装和小型统装,保存和运输方便,非常适应现代市场发展的需要。
具体实施方式
食用菌是可供人食用的蕈菌,蕈菌是指能形成大型的肉质(或胶质)子实体或菌核组织的高等真菌的类总称。食用菌又是一种有机、营养、保健的绿色食品,历来深受人们的喜爱。但是因为食用菌传统的经营模式是采集新鲜菌在当地销售,不能长时间保存和远距离运输,很不适应市场发展的需要。
技术人员通过试验,试制出一套适于新鲜食用菌保存且能远距离运输的食用菌保鲜方法,其具体步骤为:
(1)原料选择:选择新鲜、无霉烂、无虫蛀的食用菌为原料,用工具去除泥脚及杂质,尽量不破坏食用菌原料菇形,确保原料的完整性;
(2)清洗:用流动清水清洗食用菌,洗净后沥干水分备用;
(3)包装箱准备:采用特制夹层包装箱,按箱体夹层体积的2~3%向包装箱的夹层注入液态氮,将注入口全密封;
(4)包装:将沥干水分的食用菌整理好放入包装盒,按每10~20个菌菇包装成袋,密封;将密封好的包装袋顺序放进夹层箱中,密封;
(5) 贮藏或运输:将包装箱根据需要放置在4℃~6℃的干燥环境中,避阳光照射、避高温、高压的环境中贮藏;或者放置在箱式保温车中进行远距离运输。
本发明保鲜方法是利用液态氮沸点很低,常温下会汽化吸热,从而起到制冷保鲜的作用。使产品的风味物质及营养成份,产品的色泽、外形、风味较好地保持食用菌所特有的品质特征,营养成份损失最小,食用方便,保质期相对较长。

1.一种食用菌的保鲜方法,其特征在于:该保鲜方法的具体步骤为:
(1)原料选择:选择新鲜、无霉烂、无虫蛀的食用菌,用工具去除泥脚及杂质,尽量不破坏食用菌菇形,确保食用菌的完整性;
(2)清洗:用流动清水清洗食用菌,洗净后沥干水分备用;
(3)包装箱准备:采用夹层包装箱,按箱体夹层体积注入液态氮,1.2~1.5g/m3,将注入口全密封;
(4)包装:将沥干水分的食用菌整理好放入包装盒,按每10~20个菌菇包装成袋,密封;将密封好的包装袋顺序放进夹层包装箱中,密封;
