Abstract
本发明公开一种铁皮石斛养生饼干及其制备方法,其中,该铁皮石斛养生饼干按照重量份数计由:面粉40‑60份、酶解麦麸8‑18份、花生粉5‑10份、淮山粉5‑10份、薏仁粉5‑10份、芡实粉3‑5份、茯苓粉3‑5份、黄油0.5‑1份、植物油0.5‑1份、奶油0.5‑1份、铁皮石斛鲜榨汁15‑30份、中草药成分3‑5份、甜味剂1‑3份、蛋黄粉2‑8份、碳酸氢铵0.2‑0.4份、碳酸氢钠0.2‑0.4份和水10‑20份制备而成。本发明能充分利用铁皮石斛的营养价值,与其它原料合理组合,相辅相成,制备出的饼干不仅营养含量高,保健功效明显,且制作出来的养生饼具有富含人体所需的纤维物质,香脆微甜的优点。

本发明涉及一种食品制作技术领域,特别涉及一种铁皮石斛养生饼干及其制备方法。
背景技术
饼干作为主要的焙烤食品之一,具有携带方便,保质期长,老少皆宜等特点,是休闲或充饥的必备食品。然而目前的饼干所含的营养元素相对较少,导致营养价值不高。同时现有的饼干中添加有色素、香精、防腐剂等添加剂等,长期食用,危害人体健康。而且现有的饼干中大多数含有较高含量的白砂糖,长期食用,容易损伤牙齿,并容易引起肥胖。
随着我国国民经济的高速发展和人民生活水平的不断提高,食品安全观念已深入人心。经过长期的研究,目前市面上的饼干大多只具有充饥的效果,缺少对应纤维素成分不能满足人体的需求。并且口感较差,难以满足消费者日益增长的食用要求。
有鉴于此,有必要对上述的饼干进行进一步的改进。
发明内容
为解决上述至少一技术问题,本发明的主要目的是提供一种铁皮石斛养生饼干。
为实现上述目的,本发明提出的一种铁皮石斛养生饼干,由面粉、酶解麦麸、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉、黄油、植物油、奶油、铁皮石斛鲜榨汁、中草药成分、甜味剂、蛋黄粉、碳酸氢铵、碳酸氢钠和水制备而成,按照重量份数计为:面粉40-60份、酶解麦麸8-18份、花生粉5-10份、淮山粉5-10份、薏仁粉5-10份、芡实粉3-5份、茯苓粉3-5份、黄油0.5-1份、植物油0.5-1份、奶油0.5-1份、铁皮石斛鲜榨汁15-30份、中草药成分3-5份、甜味剂1-3份、蛋黄粉2-8份、碳酸氢铵0.2-0. 4份、碳酸氢钠0. 2-0. 4份和水10-20份。

为实现上述目地,本发明提供了另一种铁皮石斛养生饼干的制备方法,包括如下步骤:
(1)将中草药成分分别粉碎过80目筛后得到中草药粉,备用;
(2)将黄油、植物油、奶油、蛋黄粉和甜味剂混合乳化后,加入步骤(1)中得到的中草药粉,然后搅拌8-18min得到混合糊状物,将碳酸氢铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌8-18min,得到乳状混合物,备用;
(3)将面粉、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉混合加入铁皮石斛鲜榨汁和酶解麦麸,搅拌均匀后加入步骤(2)中的乳状混合物和余下的水,然后使用搅拌机边加边进行搅拌3-6min得酥牲饼干面团,或边加边进行搅拌8-18min得韧性饼干面团;
(4)将酥性饼干面团或韧性饼干面团放入饼干成型机,进行辊印成型,制成饼胚:
(5)将饼胚在200-350下进行烘烤1.2-2 .4h即可得到石斛养生饼。
麦麸含有丰富的膳食纤维,是人体必需的营养元素,可提高食物中的纤维成分,可改善大便秘结情况,同时可促使脂肪及氮的排泄,对临床常见纤维缺乏性疾病的防治作用意义重大:且富含的高纤维成分可降低粪便中的类固醇的排出,而人体内胆固醇的主要分界代谢过程是通过粪便的排泄,所以可以使血清胆固醇下降,动脉粥样硬化的形成减慢;还可降低血液中雌激素的含量,预防乳腺癌:麦皮中含有的B族维生素,在体内发挥着许多功能,而且还是食物正常代谢中不可缺少的营养成分;《本草拾遗》谓其“和面作饼,止泄痢,调中去热,健人。
花生粉富含亚油酸等人体必需的不饱和脂肪酸,有利于人体的吸收和消化,亚油酸在人体内不能合成,但对调节人体的生理机能,促进生长发育,降解胆固醇,预防高血压和动脉粥状硬化具有重要作用:花生蛋白质的氨基酸较完全,其含量高于动物蛋白,且不含胆固醇,是优质植物蛋白。
茶籽油不含芥酸,胆固醇、黄曲霉素和其它添加剂,经测试,油茶籽油中不饱和脂肪酸高达90%以上,油酸达到80-83%,亚油酸达到7-13%,并富含蛋白质和维生素A、B、D、E等,尤其是它所含的丰富的亚麻酸是人体必需而又不能合成的:茶叶籽油的油酸及亚油酸含量均高于橄榄油,故有“东方橄榄油”美誉。
玉米油富含人体必需的不饱和脂肪酸,含量达80%以上,主要为亚油酸和油酸,其中亚油酸平均含量达50%,亚油酸是人体自身不能合成的必需脂肪酸,它具有降低人体胆固醇、降血压、软化血管、增加人体肌肉和心脏、心血管系统的机能,预防和改善动脉硬化,减少心脏病发生等作用。
橄榄油能提高生物体的新陈代谢功能,橄榄油中含有80%以上的单不饱和脂肪酸和ω一3脂肪酸,而ω一3脂肪酸中的DHA可以增加胰岛素的敏感性,当细胞膜中不饱和脂肪脂肪酸的含量越高,拥有的双键数量越多,其活动性就越强:而有着6个双键的DHA是最不饱和脂脂肪酸,因此也就让细胞膜最具活动性:活动性强的细胞膜胰岛素受体的数量多,对胰岛素也就越敏感:当人体摄入适当比例的脂肪酸时,新陈代谢就更为正常,而发生肥胖、糖尿病的几率就会降低。
铁皮石斛味甘,性微寒、入胃、肾经;具有滋养阴津、增强体质、补益脾胃、护肝利胆、强筋降脂、降低血糖、抑制肿瘤、明亮眼睛、滋养肌肤和延年益寿等功效。
淮山又称山药,为薯蓣的块茎。是传统的药食兼用植物资源,其味甘、性平,具有补脾养胃,生津益肺,补肾涩精的功效,可用于治疗脾虚食少,久泻不止,肺虚喘咳,肾虚,糖尿病等症。
薏仁为薏苡的干燥成熟种仁,又名薏米、药玉米,水玉米(东北)性甘、微寒。具有抗肿瘤、降糖降脂、消炎镇痛止血、利水渗湿、免疫调节等作用,此外,还有抑制骨质疏松、缓解疲劳、调节生殖系统、治疗皮肤疾病等作用。
芡实属于天然补物,可食用也可入药,在《中国药典》中已阐述详尽,它具有固精益肾、止泻补脾、助气培元、开胃饮食等多种药效,被大家誉为“水中人参”。
茯苓,食药用真菌,始载于《神农本草经》,列为上品,称其“久服安魂养神,不饥延年”,有“十药九茯苓”一说。其性平,味甘、淡,归心、肺、脾、肾经; 具有利水渗湿、健脾补中、安神宁心之功效,现代医学研究表明,茯苓化学成分主要起作用的是茯苓多糖类和茯苓三萜类,其药效丰富。茯苓多糖具有抗肿瘤、保肝、利尿、抗衰老、抗炎、降血脂、增强免疫、催眠等作用,茯苓三萜具有抗肿瘤、保肝、抗衰老、抗炎、增强免疫等作用。
太子参为石竹科植物孩儿参的干燥块根,是中医临床常用补虚药,具有益气健脾、生津润肺作用,用于脾虚体倦、食欲不振、病后虚弱、气阴不足、自汗口渴、肺燥干咳。能改善慢性心衰、改善记忆、降低血糖、抗氧化活性等作用。
麦冬,性微寒、味甘、微苦,具有滋阴益精、养阴益气、清心除烦等功效,为中医常用的清热养阴润燥药。主要化学成分有皂苷、高异黄酮、多糖、凝集素等。麦冬皂苷具有多种生物活性,包括抑制静脉血栓、抗炎、止咳等活性。能保护血管内皮细胞凋亡、稳定线粒体膜电位、降低细胞通透性、防止钙离子内流增加。麦冬多糖具有多种生物活性,主要集中在抗心肌缺血、降血糖、清除超氧自由基作用、免疫活性等方面。近年来也有麦冬多糖具有抗氧化活性的相关研究报道。
鸡内金(coriumstomachiumgalli)为雉科鸡的干燥沙囊胃内壁, 常用中药,性酸、涩、平,归脾、胃、肾、膀胱经。具有健胃消食的作用, 可用于食积不消、呕吐泻痢、小儿疳积、食欲不振、积滞腹胀、遗尿、遗精、石淋涩痛、胆涨胁痛等, 还可用于治疗慢性肝炎。此外,还有报道鸡内金具有降脂、抗凝等作用。
炙甘草,甘草的一种炮制品,历史悠久,为2010 版《中国药典》单列炮制品种。具有镇咳平喘、抗心律失常、抗炎镇痛、调节免疫等作用。
蛋黄中有宝贵的卵磷脂、维生素A和维生素D,还有维生素E和维生素K,这些都是“脂溶牲维生素”:水溶性的维生素B族,也绝大多数存在于蛋黄之中;而蛋黄之所以呈浅黄色,就是因为它含有核黄素,而核黄素就是维生素B2,它可以预防烂嘴角、舌炎、嘴唇裂口等。
本发明技术方案的有益效果:
1、本发明以石斛为主要佐料,配合其它原料合理配伍,相辅相成,第一,选择主料是面粉配加花生粉、酶解麦麸,按照本发明的合理比例配伍能够增加面粉中含量单一的成分,添加花生粉能够增加亚油酸等人体必需的不饱和脂肪酸,因此制作出来的饼干更有利于人体的吸收和消化,且能促进生长发育,花生粉中含有的蛋白质氨基酸较完全,其含量高于动物蛋白,且不含胆固醇,降解胆固醇,预防高血压和动脉粥状硬化的作用:加入麦麸,增加膳食纤维降低粪便中的类固醇的排出,使血清胆固醇下降,动脉粥样硬化的形成减慢,且麦麸是经过酶解后得到的酶解麦麸,不仅能够保证麦麸的成分不变化且能够使得经过酶解过程麦麸中植酸大部分降解,部分不溶性膳食纤维转化为可溶性膳食纤维,同时释放被螯合的蛋白质及矿物质,提高了营养成分的生物利用率。对于麦麸进行酶解采用碱性蛋白酶进行水解,且调节合适的环境,麦麸能快速水解失活,提高水解速度,降低运动成本。第二,铁皮石斛含有大量的粘性胶质能明显改善烘焙类饼干的口感,其营养成分中的石斛多糖、石斛碱能明显提高人体免疫力,铁皮石斛多糖含有较高活性的超氧化物歧化酶(SOD)、过氧化物酶(POD)、过氧化氢酶(CAT),能显著提高超氧化物歧化酶(SOD)和血清钖羟脯氨酶(HYP)的水平,明显降低脂质过氧化物(LOP)和单胺氧化物(MAO),从而起到抗衰老作用。石斛碱具有抗肿瘤,抗氧化,降血糖,抑菌、止痛、解热等作用。第三,黄油营养是奶制品之首,牛奶炼成的黄油营养丰富,含维他命、矿物质、脂肪酸、醣化神经磷脂、胆固醇,不仅营养丰富,而且很香醇味美,绵甜可口。本发明选择的黄油为主油配加植物油(玉米油、茶籽油、橄榄油)既能够保证制作出来的饼干香醇味美,绵甜可口,又能够将植物油中富含的各种人体必需的元素,且黄油与植物油的适量比例能够避免单独使用黄油富含较高的胆固醇,茶籽油富含有人体必需而又不能合成的亚麻酸,并富含蛋白质和维生素A、B 、D、E等;玉米油富含人体必需的亚油酸和油酸,具有降低人体胆固醇、降血压、软化血管、增加人体肌肉和心脏、心血管系统的机能,预防和改善动脉硬化;减少心脏病发生等作用、橄榄油能提高生物体的新陈代谢功能,含有80%以上的单不饱和脂肪酸和ω-3脂肪酸,ω-脂肪酸中的DHA可以增加胰岛素的敏感性,有着6个双键的DHA是最不饱和脂肪酸,因此也就让细胞膜最具活动性:活动性强的细胞膜胰岛素受体的数量多,对胰岛素也就越敏感;当人体摄入适当比例的脂肪酸时,新陈代谢就更为正常,而发生肥胖、糖尿病的几率就会降低。
2、本发明石斛养生饼的配方中还添加了淮山、薏仁、芡实、茯苓、中草药成分和蛋黄,淮山含有皂苷元、多糖、有高脱氢表雄酮、抗性淀粉等化学成分具有降血糖、血脂和胆固醇,抗肿瘤、抗突变、调节脾胃、使排便通畅等功能。薏仁具有抗肿瘤、降糖降脂、消炎镇痛止血、利水渗湿、免疫调节等作用,此外,还有抑制骨质疏松、缓解疲劳、调节生殖系统、治疗皮肤疾病等作用。芡实具有助气培元、固精益肾、止泻补脾、开胃饮食等多种功效。茯苓具有利水渗湿、健脾补中、安神宁心之功效,茯苓多糖具有抗肿瘤、保肝、利尿、抗衰老、抗炎、降血脂、增强免疫、催眠等作用,茯苓三萜具有抗肿瘤、保肝、抗衰老、抗炎、增强免疫等作用。选用的中草药成分除了对“三高”具有一定的预防和缓解的作用,还具有滋补阴虚体弱、增强心脾功能、保肝利胆等显著疗效。蛋黄中富含卵磷脂,卵磷脂能使胰脏机能正常工作,分泌充分的胰岛素,有效地将血液中的葡萄糖运送到细胞中,缓解糖尿病的症状发作。
3、本发明制备石斛养生饼的方法简单,易操作,且经过先成糊后成浆再成型的流程,使得饼干成分能分布均匀,容易成型,减少烘烤的时间,从而能够降低成本。使用本发明原料和方法制备出来的饼干营养丰富、具有降血糖、降血压、降胆固醇、抗肿瘤、提高免疫力等保健作用,且味道可口、香脆低糖、具有嚼劲,所含热量较低,且形状各异能符合不同消费者的需求,深受人们喜爱。

应用上述原料配比制备一种铁皮石斛养生饼干,具体步骤如下:
(1)按照重量份数比将15份的新鲜麦麸加入0.075份碱性蛋白酶后与水在温度为50-60℃下混合90-110min,使麦麸脂肪酶失活,25-45℃下进行水解,最后烘干至含水率45%-75%时即可得到酶解麦麸;
(2)按照重量份数比将铁皮石斛鲜条和绿叶片各1.4份,加入10.2份水,放入破壁粉碎料理机以40000转/分,高速打浆2min,倒出粘状液,即可得铁皮石斛鲜榨汁;
(3)将淮山粉、薏仁粉、芡实粉、茯苓粉、太子参、麦冬、鸡内金和炙甘草粉碎过80目筛后全部混合得到混合粉,备用;
(4)将黄油、奶油、茶籽油、玉米油、橄榄油与蛋黄粉、甜味剂混合乳化后,加入步骤(3)中得到的混合粉,然后搅拌12min得到混合糊状物,将碳酸氨铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌12min,得到乳状混合物,备用;
(5)将面粉和花生粉混合加入酶解麦麸和铁皮石斛鲜榨汁,搅拌均匀后加入步骤(3)中的乳状混合物和余下的水,然后使用转数为220转/分的搅拌机边加边进行搅拌5min得酥性饼干面团,或边加边进行搅拌10min得韧性饼干面团;

实施例二
本发明提供了一种铁皮石斛养生饼干,由面粉、酶解麦麸、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉、黄油、植物油、奶油、铁皮石斛鲜榨汁、中草药成分、蛋黄粉、碳酸氢铵、碳酸氢钠和水制备而成,按照重量份数计为:面粉50份、酶解麦麸13份、花生粉7份、淮山粉6份、薏仁粉6份、芡实粉4份、茯苓粉4份、黄油0.8份、植物油0.8份、奶油0.8份、铁皮石斛鲜榨汁13份、中草药成分4份、甜味剂1份、蛋黄粉4份、碳酸氢铵0.25份、碳酸氢钠0.25份和水15份。
应用上述原料配比制备一种铁皮石斛养生饼干,具体步骤如下:
(1)按照重量份数比将13份的新鲜麦麸加入0.065份碱性蛋白酶后与水在温度为50-60℃下混合90-110min,使麦麸脂肪酶失活,25-45℃下进行水解,最后烘干至含水率45%-75%时即可得到酶解麦麸;

(3)将淮山粉、薏仁粉、芡实粉、茯苓粉、太子参、麦冬、鸡内金和炙甘草粉碎过80目筛后全部混合得到混合粉,备用;
(4)将黄油、奶油、茶籽油、玉米油、橄榄油与蛋黄粉、甜味剂混合乳化后,加入步骤(3)中得到的混合粉,然后搅拌12min得到混合糊状物,将碳酸氨铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌12min,得到乳状混合物,备用;

应用上述原料配比制备一种铁皮石斛养生饼干,具体步骤如下:
(1)按照重量份数比将14.5份的新鲜麦麸加入0.075份碱性蛋白酶后与水在温度为50-60℃下混合90-110min,使麦麸脂肪酶失活,25-45℃下进行水解,最后烘干至含水率45%-75%时即可得到酶解麦麸;
(2)按照重量份数比将铁皮石斛鲜条和绿叶片各1.3份,加入10.5份水,放入破壁粉碎料理机以40000转/分,高速打浆2min,倒出粘状液,即可得铁皮石斛鲜榨汁;
(3)将淮山粉、薏仁粉、芡实粉、茯苓粉、太子参、麦冬、鸡内金和炙甘草粉碎过80目筛后全部混合得到混合粉,备用;
(4)将黄油、奶油、茶籽油、玉米油、橄榄油与蛋黄粉、甜味剂混合乳化后,加入步骤(3)中得到的混合粉,然后搅拌12min得到混合糊状物,将碳酸氨铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌12min,得到乳状混合物,备用;

应用上述原料配比制备一种铁皮石斛养生饼干,具体步骤如下:
(1)按照重量份数比将14份的新鲜麦麸加入0.070份碱性蛋白酶后与水在温度为50-60℃下混合90-110min,使麦麸脂肪酶失活,25-45℃下进行水解,最后烘干至含水率45%-75%时即可得到酶解麦麸;
(2)按照重量份数比将铁皮石斛鲜条和绿叶片各1.5份,加入10.7份水,放入破壁粉碎料理机以40000转/分,高速打浆2min,倒出粘状液,即可得铁皮石斛鲜榨汁;
(3)将淮山粉、薏仁粉、芡实粉、茯苓粉、太子参、麦冬、鸡内金和炙甘草粉碎过80目筛后全部混合得到混合粉,备用;
(4)将黄油、奶油、茶籽油、玉米油、橄榄油与蛋黄粉、甜味剂混合乳化后,加入步骤(3)中得到的混合粉,然后搅拌12min得到混合糊状物,将碳酸氨铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌12min,得到乳状混合物,备用;

以下是本方案的具体测试数据:
1、将实验案例1-4制作而成的铁皮石斛养生饼干给90人(老、中、青各30人)试吃,并记录调查试吃效果,如表1所示:

由表1可知,本养生饼干普遍受到喜欢,但随着实施案中各成分配比变化,呈现有规律变化,在各类人群中,满足人数由老年人、中年人,最后到青年人递减,反映了养生需求与年龄及认知有密切关系,同时,调节口感对试吃效果也有影响。
2、将实施案例1制作而成的铁皮石斛养生饼干给250位特定病人(高血糖50人、高血脂50人、高胆固醇50人、高尿酸50人、脾胃不适50人)试吃30天,并记录调查试吃效果,如表2所示:

1.一种铁皮石斛养生饼干,其特征在于:所述铁皮石斛养生饼干由面粉、酶解麦麸、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉、黄油、植物油、奶油、铁皮石斛鲜榨汁、中草药成分、甜味剂、蛋黄粉、碳酸氢铵、碳酸氢钠和水制备而成,按照重量份数计为:面粉40-60份、酶解麦麸8-18份、花生粉5-10份、淮山粉5-10份、薏仁粉5-10份、芡实粉3-5份、茯苓粉3-5份、黄油0.5-1份、植物油0.5-1份、奶油0.5-1份、铁皮石斛鲜榨汁15-30份、中草药成分3-5份、甜味剂1-3份、蛋黄粉2-8份、碳酸氢铵0.2-0. 4份、碳酸氢钠0. 2-0. 4份和水10-20份。
2.如权利要求1所述的铁皮石斛养生饼干,其特征在于,所述铁皮石斛养生饼干由面粉、酶解麦麸、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉、黄油、植物油、奶油、铁皮石斛鲜榨汁、中草药成分、甜味剂、蛋黄粉、碳酸氢铵、碳酸氢钠和水制备而成,按照重量份数计为:面粉40-55份、酶解麦麸8-15份、花生粉5-8份、淮山粉5-8份、薏仁粉5-8份、芡实粉3-4份、茯苓粉3-4份、黄油0.5-1份、植物油0.5-1份、奶油0.5-1份、铁皮石斛鲜榨汁15-30份、中草药成分3-5份、甜味剂1-2份、蛋黄粉3-6份、碳酸氢铵0.2-0. 3份、碳酸氢钠0. 2-0. 3份和水12-20份。
3.如权利要求1所述的铁皮石斛养生饼干,其特征在于,所述铁皮石斛养生饼干由面粉、酶解麦麸、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉、黄油、植物油、奶油、铁皮石斛鲜榨汁、中草药成分、甜味剂、蛋黄粉、碳酸氢铵、碳酸氢钠和水制备而成,按照重量份数计为:面粉50份、酶解麦麸13份、花生粉7份、淮山粉6份、薏仁粉6份、芡实粉4份、茯苓粉4份、黄油0.8份、植物油0.8份、奶油0.8份、铁皮石斛鲜榨汁13份、中草药成分4份、甜味剂1份、蛋黄粉4份、碳酸氢铵0.25份、碳酸氢钠0.25份和水18份。
4.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述铁皮石斛鲜榨汁是将铁皮石斛鲜条和绿叶片各1份,加入4份水,放入破壁粉碎料理机以40000转/分,高速打浆2min,倒出粘状液,即可得铁皮石斛鲜榨汁。
5.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述中草药成分为太子参、麦冬、鸡内金和炙甘草中的一种或一种以上的组合。
6.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述甜味剂成分为木糖醇或木糖醇与蔗糖的混合物,其中,木糖醇与蔗糖的配比为4:1。
7.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述植物油为玉米油、茶籽油和橄榄油中的一种或一种以上的组合。
8.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述酶解麦麸是将新鲜麦麸加入碱性蛋白酶后与水在温度为50-60下混合90-110min ,使麦麸脂肪酶失活,然后再添加纤维素酶在温度为25-45℃下进行水解,最后烘干至含水率45%-75%时即可得到酶解麦麸。
9.如权利要求1-3任意一项所述的铁皮石斛养生饼干,其特征在于,所述新鲜麦麸加入碱性蛋白酶后与水混合按照重量份数比为新鲜麦麸:碱性蛋白酶:水﹦8-18:0.04-0.1:112-252;所述添加纤维素酶的总重量为新鲜麦麸总重量的0. 3%-0. 9%。
10.一种铁皮石斛养生饼干的制备方法,其特征在于,所述铁皮石斛养生饼干的制备方法包括如下步骤:
(1)将中草药成分分别粉碎过80目筛后得到中草药粉,备用;
(2)将黄油、植物油、奶油、蛋黄粉和甜味剂混合乳化后,加入步骤(1)中得到的中草药粉,然后搅拌8-18min得到混合糊状物,将碳酸氢铵和碳酸氢钠分别用适量水溶解后加入混合糊状物,搅拌8-18min,得到乳状混合物,备用;
(3)将面粉、花生粉、淮山粉、薏仁粉、芡实粉、茯苓粉混合加入铁皮石斛鲜榨汁和酶解麦麸,搅拌均匀后加入步骤(2)中的乳状混合物和余下的水,然后使用搅拌机边加边进行搅拌3-6min得酥牲饼干面团,或边加边进行搅拌8-18min得韧性饼干面团;
(4)将酥性饼干面团或韧性饼干面团放入饼干成型机,进行辊印成型,制成饼胚:
(5)将饼胚在200-350下进行烘烤1.2-2 .4h即可得到石斛养生饼。
