技术领域
本发明涉及饮品制作方法领域,尤其是一种小麦麸皮枸杞复合饮料的制作方法。
背景技术
麸皮是小麦加工为面粉后所得副产物,小麦制粉后,一般可得20%左右的麸皮。麸皮含有丰富的淀粉酶系、蛋白质、碳水化合物、维生素和矿物质等,麸皮对身体有益,能有效降低血液胆固醇、防止便秘、促进肠道有益细菌的繁殖,并且能调节血糖,降低心血管的发病率。我国是小麦生产大国,近年来小麦的年产量已超过1亿多吨,每年加工出的小麦麸皮可达2000万吨;麸皮因口感粗涩、直接食用很难消化吸收,因此大多数只能用作动物饲料,很少作为食品配料使用。
枸杞是茄科落叶灌木成熟后的果实,具有味甘、性平的特性,含甜菜碱、玉蜀黍黄素、酸浆红素、枸杞多糖、胡萝卜素、核黄素、烟酸、维生素C、抗坏血素、黄酮类物质、钙、铁、磷等多种营养成分,有润肺、清肝、滋肾、益气、补虚、祛风、明目等功能。
发明内容
为了克服上述技术问题,本发明提供一种小麦麸皮枸杞复合饮料的制作方法,将经复合酶酶解得到的小麦麸皮酶解液与枸杞汁复配调配制作成饮料,风味独特,营养丰富。
本发明解决其技术问题所采用的技术方案是:一种小麦麸皮枸杞复合饮料的制作方法,步骤如下:
(1)小麦麸皮粉粹:用高速粉粹机将小麦麸皮粉碎,粉碎后过60~80目筛备用;
(2)焙烤:将过滤后的小麦麸皮均匀铺开后放入烘箱中,在160~180℃下焙烤10~20min;
(3)酶解:经焙烤的小麦麸皮,以料水质量比为1:6~1:9加水混合均匀,加入纤维素酶0.15~0.30mL/g麸皮、半纤维素0.08~0.16mL/g麸皮、中性蛋白酶0.05~0.10mL/g麸皮和α-淀粉酶0.001~0.003mL/g麸皮进行酶解;pH值5.0~6.0,反应温度50~60℃,反应时间3~5 h;
(4)灭酶:反应结束后在沸水浴中静置10~15min灭酶;
(5)分离:冷却后利用离心机在3000~5000r/min条件下离心10~20 min,取上清液,即得酶解液;
(6)稀释:将酶解液稀释2~4倍;
(7)澄清:加入0.01~0.10g/L壳聚糖,静置10~20min后分离得澄清液;
(8)枸杞提取液制备:将枸杞清洗干净,与水混合进行熬制(冷凝回流)1~2h,料水质量比为1∶8~1∶10,用8层纱布过滤,滤渣与水混合进行熬制(冷凝回流)1~2h,料水质量比为1∶5~1∶8,再次过滤,将两次所得的滤液混合均匀,即为枸杞汁;
(9)调配:将麸皮酶解液、枸杞提取液、大麦茶汁按比例调配,搅拌均匀;
(10)灭菌:灭菌条件为115~121℃,10~20min。

具体实施方式
实施例1
一种小麦麸皮枸杞复合饮料的制作方法,步骤如下:
(1)小麦麸皮粉粹:用高速粉粹机将小麦麸皮粉碎,粉碎后过80目筛备用;
(2)焙烤:将过滤后的小麦麸皮均匀铺开后放入烘箱中,在160℃下焙烤10min;
(3)酶解:经焙烤的小麦麸皮,以料水质量比为1:8加水混合均匀,加入纤维素酶0.2914mL/g麸皮、半纤维素0.1457mL/g麸皮、中性蛋白酶0.0863mL/g麸皮和α-淀粉酶0.0023mL/g 麸皮进行酶解;pH值为6.0,反应温度60℃,反应时间4h;
(4)灭酶:反应结束后在沸水浴中静置10min灭酶;
(5)分离:冷却后利用离心机在3000r/min条件下离心20min,取上清液,即得酶解液;
(6)稀释:将酶解液稀释3倍;
(7)澄清:加入0.05g/L壳聚糖,静置20min后分离得澄清液;
(8)枸杞提取液制备:将枸杞清洗干净,与水混合进行熬制(冷凝回流)2h,料水质量比为1∶10,用8层纱布过滤,滤渣与水混合进行熬制(冷凝回流)1h,料水质量比为1∶5,再次过滤,将两次所得的滤液混合均匀,即为枸杞汁;
(9)调配:将麸皮酶解液、枸杞提取液、大麦茶汁按比例1:1:1调配,搅拌均匀;
(10)灭菌:灭菌条件为121℃,10min。
实施例2
一种小麦麸皮枸杞复合饮料的制作方法,步骤如下:
(1)小麦麸皮粉粹:用高速粉粹机将小麦麸皮粉碎,粉碎后过80目筛备用;
(2)焙烤:将过滤后的小麦麸皮均匀铺开后放入烘箱中,在160℃下焙烤10min;
(3)酶解:经焙烤的小麦麸皮,以料水质量比为1:8加水混合均匀,加入纤维素酶0.2514mL/g麸皮、半纤维素0.14mL/g麸皮、中性蛋白酶0.10mL/g麸皮和α-淀粉酶0.002mL/g麸皮进行酶解;pH值为5.5,反应温度60℃,反应时间4h;
(4)灭酶:反应结束后在沸水浴中静置15min灭酶;
(5)分离:冷却后利用离心机在3000r/min条件下离心20min,取上清液,即得酶解液;
(6)稀释:将酶解液稀释4倍;
(7)澄清:加入0.02g/L壳聚糖,静置10min后分离得澄清液;
(8)枸杞提取液制备:将枸杞清洗干净,与水混合进行熬制(冷凝回流)2h,料水质量比为1∶10,用8层纱布过滤,滤渣与水混合进行熬制(冷凝回流)1h,料水质量比为1∶5,再次过滤,将两次所得的滤液混合均匀,即为枸杞汁;
(9)调配:将麸皮酶解液、枸杞提取液、大麦茶汁按比例2:1:1调配,搅拌均匀;
(10)灭菌:灭菌条件为121℃,10min。
