技术领域
本发明涉及一种以枸杞、山楂、泽泻、何首乌、甜叶菊等药食同源中草药为主要原料具有调节血脂功效的功能性营养面粉,属于食品加工技术领域。
背景技术
小麦粉是我国重要主食如馒头、面条、饺子以及面包、糕点的原料。中国面粉产量占世界面粉产量的1/5,年面粉消费量在9100万吨左右。随着人们生活水平的不断提高,消费者对面制品的风味性、特色性及营养性提出了新要求,特别是随着生活水平的提高,高血脂人群日趋增多,成为影响我国人民群众身体健康的最大的隐患之一,目前对高血脂及由高血脂引发的并发症多采取药物治疗的方式,往往具有较大的副作用,而且不易根治。中草药是我国传统文化的瑰宝,在食疗方面具有药物治疗不可比拟的优势,结合我国传统医药的医疗保健功效,开发出具有调节血脂功效的营养面粉利国利民,具有重要的意义。
目前我国已经出现了结合中草药功效的保健面粉,如“一种降血糖营养面粉”(专利申请号201210130533.2)公开了一种降血糖营养面粉。但目前的制备工艺中多以粉碎后添加为主,未能充分发挥出中草药的功效,特别是中草药之间的协同功效难以在体内实现,制约着中草药组分保健功效的发挥。
发明内容
本发明提供一种以枸杞、山楂、泽泻、何首乌、甜叶菊等药食同源中草药为原料的功能性保健面粉及其生产工艺,该面粉产品具有调节血脂、增强免疫力等功效,能够满足人们追求口感、营养、保健等多层次要求。
为实现上述目的,本发明的技术方案如下:
一种具有调节血脂功效的营养面粉,其特征在于,原材料质量比为:小麦粉5000份、小麦胚芽粉100~200份、枸杞25~35份、山楂17~23份、泽泻15~25份、甜叶菊10~20份、何首乌10~15份、决明子10~15份、螺旋藻8~12份、玉米须8~12份、菌陈4~6份、虎杖3~5份、甘草3~5份。
本发明提供一种具有调节血脂功效的营养面粉生产工艺,其特征在于具体包括以下步骤:
(1)备料:按照上述比例备料;
(2)中草药原料预处理:将中草药原料去除生虫或腐烂者,然后根据原料的不同特性分别进行原料预处理:
山楂、枸杞:向清洗后的山楂后枸杞加入1.5~2倍水,打浆,按0.2~0.4g/100mL比例加入果胶酶,45~50℃条件下酶解1.5~2h;
②其他中草药:将清洗后的其他中草药粉碎,过40目筛;
(3)超声波辅助浸提:将步骤(2)中各项原料混合,加水至固液比1:5~8,按0.1~0.2g/100mL、0.4~0.8g/100mL、0.2~0.4g/100mL比例分别添加淀粉酶、糖化酶、纤维素酶,在超声波辅助作用下浸提30~60min,超声波频率300W,浸提温度60~80℃;
(4)离心:离心得上清液和固体残渣;
(5)二步超声波辅助浸提:固体残渣加入纯净水至固液比1:5~8,在超声波辅助作用下浸提20~30min,超声波频率300W,浸提温度60~80℃;
(6)离心:离心得上清液和固体残渣;
(7)蒸煮:固体残渣中加入纯净水至固液比1:5~8,煮沸保持10~20min;
(8)离心:离心得上清液和固体残渣;
(10)吸附:合并上清液,加入小麦胚芽粉,烘干;
(11)混合:将烘干后的小麦胚芽粉与小麦粉混合均匀。
本发明提供一种具有调节血脂功效的营养面粉,精选具有降血脂、降血糖功效的枸杞、山楂、泽泻、何首乌、决明子等药食同源中草药经微生物发酵制得,其中:山楂含糖类、蛋白质、脂肪、维生素C、胡萝卜素、淀粉、苹果酸、枸橼酸、钙和铁等物质,具有降血脂、血压、强心和抗心律不齐等作用,含有的黄酮类化合物牡荆素,是一种抗癌作用较强的药物;枸杞富含枸杞多糖、甜菜碱、阿托品、天仙子胺、胡萝卜素、维生素等多种营养物质,具有降血糖、增强免疫功能、延缓衰老、滋肝补肾、抗疲劳等功效;玉米须富含脂肪油、挥发油、树胶样物质、树脂、苦味糖甙、皂甙、生物碱、隐黄素、维生素C、泛酸,肌醇,维生素K、谷甾醇、豆甾醇、苹果酸、枸椽酸,酒石酸,草酸等营养物质,具有降血糖、降血脂、利尿等功效;甜叶菊叶片中含有菊糖甙,其甜度为蔗糖的150~300倍,是一种极好的天然甜味剂,不但无副作用,而且能治疗某些疾病,如治糖尿病,降血压,对肥胖症、心脏病、小儿虫齿等也有疗效,并有促进新陈代谢,强健身体的作用;决明子味甘苦性微寒,归肝、胆、肾三经,具清热、明目、润肠之功效。决明子含蒽甙类物质,分解后产生大黄素、大黄素甲醚、大黄酸、大黄酚及葡萄糖等,实验证明决明子具有降血压、降血脂、抗菌等作用,治疗高脂血症有一定疗效。
本发明提供一种具有调节血脂功效的营养面粉,其优势在于:一是本发明通过“二次超声波辅助浸提+煮沸”工艺提取中草药功能性成分,且在第一步超声波辅助浸提过程中添加了纤维素酶、淀粉酶、糖化酶等酶制剂,不仅降解了中草药之间的纤维状组织结构,提高了中草药活性成分的浸出率,而且将蛋白、木聚糖等降解为溶于水的多肽、低聚木糖等功能活性成分,提高了营养面粉的营养性和功能性;二是不同的中草药性味各异,功效存在着巨大的差异,不同的中草药组合后存在复杂的相互作用关系,且中草药之间的配比比较密切,不同配比也将使君臣佐使关系发生实质性的变化,从而使复合中草药的关系发生实质性改变,本申请通过科学配伍枸杞、山楂、泽泻、甜叶菊、何首乌、决明子、菌陈、玉米须、虎杖、甘草等中草药,充分发挥中草药原料之间的协同作用,提高了营养面粉的调节血脂功效;三是在中草药配伍中添加了甜叶菊,是一种天然型甜味剂,有效的掩盖了中草药的刺激性气味,使保健面条具有良好的适口性,克服了中草药保健面条适口性差的缺陷,同时甜叶菊具有抑制高血压、糖尿病、肥胖症、冠心病、小儿龋齿等病症。
以下用动物试验说明本发明取得的技术效果:
(1)试验动物
试验动物均为SD雄性大鼠,体重200±30克;
(2)模型制备
降血脂试验中采用高脂饲料喂饲制备高脂血症大鼠模型。高脂饲料配方:2%胆固醇,10%猪油,0.2%丙硫氧嘧啶,87.8%基础饲料,分别于第2、3周末大鼠禁食12 h,尾静脉取血检测血脂,较正常组血脂升高且稳定后,确认为高脂血症模型;
(3)试验分组
将试验大鼠分为五组,分别为正常组、模型对照组、试验组1、试验组2、试验组3,其中模型对照组每日灌胃给予相同计量的普通面粉,正常组每日灌胃给予相同计量的蒸馏水,试验组1每日灌胃给予相同计量的本申请功能性保健面粉,试验组2每日灌胃给予相同计量的功能性保健面粉(与本申请原料组成相同、配方比例不同),试验组3每日灌胃给予相同计量的功能性保健面粉(与本申请原料组成及比例相同,中草药处理方式为一次超声波辅助浸提);
(4)试验方法
降血脂试验:各组动物分别于给药前、给药后30 d取空静脉血,肝素抗凝,立即3 500 r/min离心5min提取血清,按要求保存,测定大鼠的TC、TG、HDL-C等指标;
(5)试验结果

由表1可以发现本申请对降低大鼠血脂具有较显著的功效(与模型对照组相比差异有统计学意义,P<0.01);试验组1的降血脂降血压效果显著优于试验组2和试验组3,差异有统计学意义(P<0.05),这表明中草药配方和功能性保健面粉加工工艺对功能性保健面粉的降血脂效果有显著的影响。
具体实施方式
实施例1:
一种具有调节血脂功效的营养面粉,其具体的生产工艺如下:
(1)备料:按照小麦粉5000份、小麦胚芽粉150份、枸杞30份、山楂20份、泽泻20份、甜叶菊15份、何首乌13份、决明子12份、螺旋藻10份、玉米须10份、菌陈5份、虎杖4份、甘草4份比例备料;
(2)中草药原料预处理:将中草药原料去除生虫或腐烂者,然后根据原料的不同特性分别进行原料预处理:
山楂、枸杞:向清洗后的山楂后枸杞加入1.8倍水,打浆,按0.3g/100mL比例加入果胶酶,45~50℃条件下酶解1.8h;
②其他中草药:将清洗后的其他中草药粉碎,过40目筛;
(3)超声波辅助浸提:将步骤(2)中各项原料混合,加水至固液比1:6,按0.15g/100mL、0.6g/100mL、0.3g/100mL比例分别添加淀粉酶、糖化酶、纤维素酶,在超声波辅助作用下浸提40min,超声波频率300W,浸提温度60~80℃;
(4)离心:离心得上清液和固体残渣;
(5)二步超声波辅助浸提:固体残渣加入纯净水至固液比1:7,在超声波辅助作用下浸提25min,超声波频率300W,浸提温度60~80℃;
(6)离心:离心得上清液和固体残渣;
(7)蒸煮:固体残渣中加入纯净水至固液比1:6,煮沸保持15min;
(8)离心:离心得上清液和固体残渣;
(10)吸附:合并上清液,加入小麦胚芽粉,烘干;
(11)混合:将烘干后的小麦胚芽粉与小麦粉混合均匀。
实施例2:
一种具有调节血脂功效的营养面粉,其具体的生产工艺如下:
(1)备料:按照小麦粉5000份、小麦胚芽粉200份、枸杞25份、山楂23份、泽泻15份、甜叶菊20份、何首乌10份、决明子15份、螺旋藻8份、玉米须12份、菌陈4份、虎杖5份、甘草3份比例备料;
(2)中草药原料预处理:将中草药原料去除生虫或腐烂者,然后根据原料的不同特性分别进行原料预处理:
山楂、枸杞:向清洗后的山楂后枸杞加入2倍水,打浆,按0.4g/100mL比例加入果胶酶,45~50℃条件下酶解1.5h;
②其他中草药:将清洗后的其他中草药粉碎,过40目筛;
(3)超声波辅助浸提:将步骤(2)中各项原料混合,加水至固液比1:8,按0.2g/100mL、0.8g/100mL、0.4g/100mL比例分别添加淀粉酶、糖化酶、纤维素酶,在超声波辅助作用下浸提30min,超声波频率300W,浸提温度60~80℃;
(4)离心:离心得上清液和固体残渣;
(5)二步超声波辅助浸提:固体残渣加入纯净水至固液比1:8,在超声波辅助作用下浸提20min,超声波频率300W,浸提温度60~80℃;
(6)离心:离心得上清液和固体残渣;
(7)蒸煮:固体残渣中加入纯净水至固液比1: 8,煮沸保持10min;
(8)离心:离心得上清液和固体残渣;
(10)吸附:合并上清液,加入小麦胚芽粉,烘干;
(11)混合:将烘干后的小麦胚芽粉与小麦粉混合均匀。
实施例3:
一种具有调节血脂功效的营养面粉,其具体的生产工艺如下:

(8)离心:离心得上清液和固体残渣;
(10)吸附:合并上清液,加入小麦胚芽粉,烘干;
(11)混合:将烘干后的小麦胚芽粉与小麦粉混合均匀。
以上实施例仅用于说明本发明的技术方案,而非对其进行限制;尽管参照前述实施例对被发明进行了详细的说明,但对于本领域的普通技术人员来说,依然可以对前述实施例所记载的技术方案进行修改,或者对其中部分技术特征进行等同替换;而对这些修改或者替换,并不使相应技术方案的本质脱离本发明所要求保护的技术方案的精神和范围。
Claims (1)
1.一种具有调节血脂功效的营养面粉,其特征在于生产工艺具体包括以下步骤:
(1)备料:按照小麦粉5000份、小麦胚芽粉100~200份、枸杞25~35份、山楂17~23份、泽泻15~25份、甜叶菊10~20份、何首乌10~15份、决明子10~15份、螺旋藻8~12份、玉米须8~12份、菌陈4~6份、虎杖3~5份、甘草3~5份比例备料;
(2)中草药原料预处理:将中草药原料去除生虫或腐烂者,然后根据原料的不同特性分别进行原料预处理:
山楂、枸杞:向清洗后的山楂后枸杞加入1.5~2倍水,打浆,按0.2~0.4g/100mL比例加入果胶酶,45~50℃条件下酶解1.5~2h;
②其他中草药:将清洗后的其他中草药粉碎,过40目筛;
(3)超声波辅助浸提:将步骤(2)中各项原料混合,加水至固液比1:5~8,按0.1~0.2g/100mL、0.4~0.8g/100mL、0.2~0.4g/100mL比例分别添加淀粉酶、糖化酶、纤维素酶,在超声波辅助作用下浸提30~60min,超声波频率300W,浸提温度60~80℃;
(4)离心:离心得上清液和固体残渣;
(5)二步超声波辅助浸提:固体残渣加入纯净水至固液比1:5~8,在超声波辅助作用下浸提20~30min,超声波频率300W,浸提温度60~80℃;
(6)离心:离心得上清液和固体残渣;
(7)蒸煮:固体残渣中加入纯净水至固液比1:5~8,煮沸保持10~20min;
(8)离心:离心得上清液和固体残渣;
(10)吸附:合并上清液,加入小麦胚芽粉,烘干;
(11)混合:将烘干后的小麦胚芽粉与小麦粉混合均匀。
