本发明属于食品饮料加工技术领域,涉及一种保健果蔬复合饮料,其产品可以用于解渴,长期饮用并具有抗抑郁和缓解精神压力保健功效。
背景技术
目前,市场供应的饮料多种多样,分为不含酒精饮料和含酒精饮料,不含酒精饮料又分为碳酸类饮料、果蔬汁饮料、功能饮料、茶类饮料和乳饮料等。果蔬汁饮料深受消费者喜爱,是营养丰富的流质食品,但是其中的果蔬混合汁饮料要么经过高温处理使果蔬植物内的蛋白质活性降低,或是处理工艺复杂使果蔬内的营养物质过多浪费,且无论从口感还是营养、风味上都不够理想,特别是没有新鲜果蔬的鲜味,口味较涩,加之人工色素、调味香精、增稠剂和防腐剂等添加剂的使用,使果蔬汁饮料存在着诸多影响健康的不安全因素,不具有新鲜果蔬本身的天然营养,改变了果蔬的天然味道。因此,现有果蔬饮料的选材及加工技术限制了果蔬饮料的营养和天然色、香、味功能的深层次开发与利用。
在天然植物中,雪梨梨味甘微酸、性凉,入肺、胃经;具有生津、润燥、清热、化痰,解酒的作用;用于热病伤阴或阴虚所致的干咳、口渴、便秘等症,也可用于内热所致的烦渴、咳喘、痰黄等症。梨果:生津、润燥、清热、化痰等功效,适用于热病伤津烦渴、消渴症、热咳、痰热惊狂、噎膈、口渴失音、眼赤肿痛、消化不良。梨果皮:清心、润肺、降火、生津、滋肾、补阴功效。香蕉中含有生物碱,可以振奋人的精神,而且香蕉中含有色氨酸和丰富的维生素B6,它们是合成血清素的重要成分,而血清素具有镇痛、催眠、安神等作用,因此香蕉能够减少紧张、缓解压力,对于治疗抑郁症有很好的疗效。
西瓜堪称“盛夏之王”,清爽解渴,味道甘味多汁,是盛夏佳果,西瓜除不含脂肪和胆固醇外,含有大量葡萄糖、苹果酸、果糖、蛋白氨基酸、番茄素及丰富的维生素C等物质,是一种富有很高的营养、纯净、食用安全食品。瓤肉含糖量一般为5~12%,包括葡萄糖、果糖和蔗糖。甜度随成熟后期蔗糖的增加而增加。西瓜中所含的糖、蛋白质和微量的盐,能降低血脂软化血管,对医治心血管病,如高血压等亦有疗效。西瓜皮及种子壳所制成的西瓜霜,能够治疗口疮、口疳,牙疳,急性咽喉炎待喉症。西瓜果皮、果肉、种子都可食用、药用,富含蛋白质、葡萄糖、蔗糖、果糖、苹果酸、瓜氨酸、谷氨酸、精氨酸、磷酸、内氨酸、丙酸、乙二醇、甜菜碱、腺嘌呤、蔗糖、萝卜素、胡萝卜素、番茄烃、六氢番茄烃、维他命A、B、C、挥发性成分中含多种醛类。西瓜果肉所含瓜氨酸、精氨酸成分,能增大鼠肝中的尿素形成,而导致利尿作用。有清热解暑、解烦渴、利小便、解酒毒等功效,用来治一切热症、暑热烦渴、小便不利、咽喉疼痛、口腔发炎、酒醉。
芦荟蕴含75种元素,与人体细胞所需物质几乎完全吻合,有着明显的保健价值,被人们荣称为“神奇植物”、“家庭药箱”。芦荟中的粘液(mucin,就是蛋白质),是以arboran ABaloe mannanaloetin等多糖类为核心成分,粘液类物质是防止细胞老化和治疗慢性过敏的重要成分。粘液素存在于人体的肌肉和胃肠粘膜等处,让组织富有弹性,如果液素不足,肌肉和粘膜就会丧失了弹性而僵硬老化。构成人体的细胞,如果粘液素不足,细胞就会逐渐衰弱,失去防御病菌、病毒的能力。另外,粘液素还有壮身、强精作用。对人工创伤鼠背芦荟有促进愈合功效,对人工结膜水肿的兔芦荟可缩短治愈天数。芦荟浆汁制剂对皮肤创伤、烧伤以及x线局部照射均有保护作用。芦荟中的异柠檬酸钙等具有强心、促进血液循环、软化硬化动脉、降低胆固醇含量、扩张毛细血管的作用,使血液循环畅通,减少胆固醇值,减轻心脏负担,使血压保持正常,清除血液中的“毒素”。芦荟素A、创伤激素和聚糖肽甘露(Ke-2)等具有抗病毒感染,促进伤口愈合复原的作用,有消炎杀菌、吸热消肿、软化皮肤、保持细胞活力的功能,凝胶多糖与愈伤酸联合还具有愈合创伤活性。芦荟中含的多糖和多种维生素对人体皮肤有良好的营养、滋润、增白作用。翠叶芦荟是最适宜直接美容的芦荟鲜叶,即库拉索芦荟,它具有使皮肤收敛、柔软化、保湿、消炎、漂白的性能。还有解除硬化、角化、改善伤痕的作用,不仅能防止小皱纹、眼袋、皮肤松弛,还能保持皮肤湿润、娇嫩,同时,还可以治疗皮肤炎症,对粉刺、雀斑、痤疮以及烫伤、刀伤、虫咬等亦有很好的疗效。对头发也同样有效,能使头发保持湿润光滑,预防脱发。
将上述果蔬混合制成具有解渴和缓解精神压力,抗抑郁症状的天然饮料的技术尚未见报道。
发明内容
本发明的目的在于克服现有技术存在的缺点,寻求设计一种保健果蔬复合饮料,用雪梨、西瓜、芦荟、秋葵、玛卡和香蕉汁为原料,经过科学配比混合成具有促进血液循环、保持血压正常、消除精神疲劳、缓解精神压力和抑郁症等多重功效的天然果蔬饮品。
为了实现上述目的,本发明涉及的保健果蔬复合饮料的组成原料重量配比为:雪梨汁20~30份,西瓜汁20~30份,芦荟汁30~40份,玛卡汁5~15份,秋葵汁5~15份,香蕉汁5~15份,蜂蜜3~10份,各种果蔬汁原料均为新鲜果蔬,蜂蜜选用市售槐花蜂蜜。
本发明涉及的保健果蔬复合饮料的制备工艺如下:
(1)先将雪梨洗净晾干经榨汁得雪梨粗汁,过滤后静置10~30分钟取上清液得雪梨汁于10℃以下存放备用;
(2)将西瓜洗净晾干经榨汁后过滤静置10~20分钟取上清液得西瓜汁于10℃以下存放备用;
(3)将包括根部的芦荟洗净晾干表面水分,切成小段在重量百分比浓度为4~6%的醋酸水溶液中浸泡3~5分钟后经榨汁和过滤再静置10~20分钟取上清液得芦荟汁于10℃以下存放备用;
(4)将鲜秋葵洗净去蒂,晾干表面水分在控温80~100℃条件下浸煮2~5分钟,捞出放于温度低于15℃的凉水中冷却后按等重量加入纯净水混合经榨汁、过滤后静置10~20分钟取上清液得秋葵汁于10℃以下存放备用;
(5)将玛卡去皮,玛卡瓤切成尺寸为2~3cm的块状,放入重量百分比浓度为30~50%的乙醇水溶液中浸泡3~5分钟捞出放在80~100℃的水中浸煮10~20分钟熟透后捞出冷却,按重量比1:1加入纯净水后榨汁,过滤后静置10~30分钟取上清液存于10℃以下备用;
(6)将新鲜成熟香蕉去皮后,加入香蕉肉3~5倍重量的纯净水打浆,得到香蕉原浆,再加入香蕉原浆重量0.1~0.5%的淀粉酶进行酶解过滤得香蕉汁存于10℃以下备用;
(7)将步骤(1)~(6)所得的各果蔬汁上清液混合均匀并加入果蔬汁总重量3~10%的蜂蜜调节糖度后进行巴氏灭菌处理,密封包装得保健果蔬复合饮料,其常温下保质期可达260小时。
本发明步骤(1)~(6)中的过滤所得固体物混合回收后用于制备动物饲料或有机肥料;采用槐花蜂蜜利于调节口感和甜味,也可冲淡其他果蔬汁中的异味;所选用的芦荟为山东平度地区驰名商标品牌的马家沟芦荟。
本发明与现有技术相比,采用新鲜水果和蔬菜为原料,制备成口感舒适、具有减轻精神压力,缓解抑郁之功效的纯天然饮料,且配方科学合理,无毒副作用,制备工艺简单成熟,适应人群广泛,保存周期长,口味好,营养丰富。
具体实施方式
下面通过实施例对本发明作进一步详细描述。
实施例1:
本实施例涉及的保健果蔬复合饮料的各原料成份重量配比为:雪梨汁20份,西瓜汁20份,芦荟汁30份,玛卡汁5份,秋葵汁10份,香蕉汁10份和槐花蜂蜜8份;适于中老年人群饮用,利于缓解精神压力和抑郁症状。
本实施例涉及的保健果蔬复合饮料的制备工艺如下:
(1)先将雪梨洗净晾干经榨汁得雪梨粗汁,过滤后静置10~30分钟取上清液得雪梨汁于10℃以下存放备用;
(2)将西瓜洗净晾干经榨汁后过滤静置10~20分钟取上清液得西瓜汁于10℃以下存放备用;
(3)将包括根部的芦荟洗净晾干,切成小段在重量百分比浓度为4~6%的醋酸水溶液中浸泡3~5分钟后经榨汁和过滤再静置10~20分钟取上清液得芦荟汁于10℃以下存放备用;
(4)将鲜秋葵洗净去蒂,晾干在控温80~100℃条件下浸煮2~5分钟,捞出放于温度低于15℃的凉水中冷却后按等重量加入纯净水混合经榨汁、过滤后静置10~20分钟取上清液得秋葵汁于10℃以下存放备用;
(5)将玛卡去皮,玛卡瓤切成尺寸为2~3cm的块状,放入重量百分比浓度为30~50%的乙醇水溶液中浸泡3~5分钟捞出放在80~100℃的水中浸煮10~20分钟熟透后捞出冷却,按重量比1:1加入纯净水后榨汁,过滤后静置10~30分钟取上清液存于10℃以下备用;
(6)将新鲜成熟香蕉去皮后,加入香蕉肉3~5倍重量的纯净水打浆,得到香蕉原浆,再加入香蕉原浆重量0.1~0.5%的淀粉酶进行酶解过滤得香蕉汁存于10℃以下备用;
(7)将步骤(1)~(6)所得的各果蔬汁上清液按所述重量配比混合均匀并加入蜂蜜调节糖度后进行巴氏灭菌处理,密封包装得保健果蔬复合饮料,其常温下保质期可达260小时。
实施例2:
本实施例按实施例1步骤制备的保健果蔬复合饮料的各原料重量份为:雪梨汁30份,西瓜汁30份,芦荟汁40份,玛卡汁10份,秋葵汁15份,香蕉汁15份,槐花蜂蜜10份;适于少年群体饮用、利于缓解精神压力和抑郁症状。
实施例3:
本实施例按实施例1步骤制备的保健果蔬复合饮料的各原料重量份为:雪梨汁25份,西瓜汁25份,芦荟汁35份,玛卡汁15份,秋葵汁10份,香蕉汁10份,蜂蜜5份;适于60岁以上老年人群饮用,以缓解精神压力和抑郁症状。
实施例4:
本实施例按实施例1步骤制备的保健果蔬复合饮料的各原料重量份为:雪梨汁28份,西瓜汁22份,芦荟汁35份,玛卡汁6份,秋葵汁15份,香蕉汁15份,槐花蜂蜜8份。
本实施例制备的各种不同重量配比的复合果蔬饮料分别经不同年龄段人群一个月以上的连续饮用,具有明显的压力缓解和抗抑郁功效;特别适应于青年学生人群的长期饮用。
Claims (2)
1.一种保健果蔬复合饮料,其特征在于各组成原料的重量配比为:雪梨汁20~30份,西瓜汁20~30份,芦荟汁30~40份,玛卡汁5~15份,秋葵汁5~15份,香蕉汁5~15份和蜂蜜3~10份;各种果蔬汁原料均是新鲜果蔬,蜂蜜选用市售槐花蜂蜜。
2.如权利要求1所述的保健果蔬复合饮料的制备工艺步骤如下:
(1)先将雪梨洗净晾干经榨汁得雪梨粗汁,过滤后静置10~30分钟取上清液得雪梨汁于10℃以下存放备用;
(2)将西瓜洗净晾干经榨汁后过滤静置10~20分钟取上清液得西瓜汁于10℃以下存放备用;
(3)将包括根部的芦荟洗净晾干,切成小段在重量百分比浓度为4~6%的醋酸水溶液中浸泡3~5分钟后经榨汁和过滤再静置10~20分钟取上清液得芦荟汁于10℃以下存放备用;
(4)将鲜秋葵洗净去蒂,晾干在控温80~100℃条件下浸煮2~5分钟,捞出放于温度低于15℃的凉水中冷却后按等重量加入纯净水混合经榨汁、过滤后静置10~20分钟取上清液得秋葵汁于10℃以下存放备用;
(5)将玛卡去皮,玛卡瓤切成尺寸为2~3cm的块状,放入重量百分比浓度为30~50%的乙醇水溶液中浸泡3~5分钟捞出放在80~100℃的水中浸煮10~20分钟熟透后捞出冷却,按重量比1:1加入纯净水后榨汁,过滤后静置10~30分钟取上清液存于10℃以下备用;
(6)将新鲜成熟香蕉去皮后,加入香蕉肉3~5倍重量的纯净水打浆,得到香蕉原浆,再加入香蕉原浆重量0.1~0.5%的淀粉酶进行酶解过滤得香蕉汁存于10℃以下备用;
(7)将步骤(1)~(6)所得的果蔬汁上清液混合均匀并加入果蔬汁总重量3~10%的蜂蜜调节糖度后进行巴氏灭菌处理,密封包装得保健果蔬复合饮料,其常温下保质期可达260小时。
