Abstract
本发明公开了一种猕猴桃醋,包括如下步骤制备:选取猕猴桃果肉清洗,灭酶,胶体磨磨浆,制成果浆;果浆采用复合酶酶解,将积雪草、美舌藻、清半夏、照山白、川乌混混合进行粉碎,加入蒸馏水,然后加入纤维素酶进行酶解,得到中药酶解液;将经过酶解处理的果浆和中药酶解液混合,灭菌,加入活化后的醋酸菌,在30℃左右进行密封发酵,时间为20天;发酵好的混合物送入陈酿罐,经过20‑25天的后熟陈酿,过滤、灌装、杀菌、制成成品。本发明口感好,并对于缓解慢性胆囊炎有很好的治疗效果。

本发明涉及一种猕猴桃醋及其应用,属于食品技术及其保健领域。
背景技术
猕猴桃,也称奇异果,狐狸桃、藤梨、羊桃、木子、毛木果、麻藤果、杨汤梨等,果形一般为椭圆状,早期外观呈绿褐色,成熟后呈红褐色,表皮覆盖浓密绒毛,不可食用,其内是呈亮绿色的果肉和一排黑色或者红色的种子。因猕猴喜食,故名猕猴桃;亦有说法是因为果皮覆毛,貌似猕猴而得名,是一种品质鲜嫩,营养丰富,风味鲜美的水果。
猕猴桃的质地柔软,口感酸甜。味道被描述为草莓、香蕉、菠萝三者的混合。猕猴桃除含有猕猴桃碱、蛋白水解酶、单宁果胶和糖类等有机物,以及钙、钾、硒、锌、锗等微量元素和人体所需17种氨基酸外,还含有丰富的维生素C、葡萄酸、果糖、柠檬酸、苹果酸、脂肪。
慢性胆囊炎是临床上的常见病、多发病, 患者多表现为轻重不同的腹胀、上腹或右胁下胀痛或隐痛、口干苦、纳差、厌食油腻等症状,目前没有猕猴桃醋饮品相关的介绍,及其猕猴桃醋对于慢性胆囊炎治疗方面的报道。
发明内容
针对上述现有技术存在的问题,本发明提供一种猕猴桃醋,口感好,能够有效的治疗慢性胆囊炎,无副作用。
为了实现上述目的,本发明采用的技术方案是:一种猕猴桃醋,所述猕猴桃醋的原料配方包括以下质量份的成分:
(1)原料:猕猴桃;
(2)中药:积雪草、美舌藻、清半夏、 照山白、川乌;
所述胡萝卜醋按下列步骤进行:
(1)、选取猕猴桃果清洗,灭酶,胶体磨磨浆,制成果浆;所述果浆采用复合酶酶解,酶解反应温度为36℃,酶解时间2h;
(2)、积雪草、美舌藻、清半夏、 照山白、川乌混合进行粉碎,并用10目的筛网进行过筛,弃掉粗大原料形成原料;加水均匀混合并通过20兆帕均质机进行均质,然后进行喷雾干燥,得到粉状颗粒,将上述粉状颗粒加入蒸馏水热至70-75℃,然后加入纤维素酶进行酶解,此过程中温度维持在70-75℃,持续时间100分钟,得到中药酶解液;
(3)、将经过酶解处理的果浆和中药酶解液按9:1的质量比混合,加入白砂糖使混合液的初始糖度调整为12-14%;
(4)、酒精发酵:加入活化好的活性干酵母菌0.03-0.05%,进行酒精发酵,用柠檬酸调整初始

(5)、醋酸发酵:加入白酒将首次发酵后混合液的初始酒精度调整为8%,加入醋酸菌1.5-1.7%,进行醋酸发酵;发酵酸碱度为pH=4-4.5,发酵温度为28-34℃,发酵4-5天,在发酵的同时进行搅拌,其搅拌速度为120-160r/min;
(6)、离心:将发酵后的果醋在3000-4000r/min的转速下离心20-30min,收集上清液,除去肉眼可见的固形物和杂质;
(7)、超滤:将离心后的果醋用果醋过滤机超滤,操作压力0.07-0.108MPa、操作温度30-35℃、料液流速4-8L/h、超滤时间15-20min,除去造成原果醋浑浊、沉淀的大分子蛋白、色素、果胶、植物纤维、细菌、酵母等杂质成分;
(8)、灌装、灭菌:将超滤后的原果醋用灌装机装入清洗干净的饮料瓶中,在75-80℃温度条
件下杀菌30min,得到成品。
所述复合酶由果胶酶和纤维素酶按6:1的质量比组成。
所述原料配方优选为以下质量份的成分:
(1)原料:猕猴桃50-60kg;
(2)中药:积雪草1 -2kg、美舌藻2 -3kg、清半夏1 -2kg、 照山白0.5 -1kg、川乌0.8 -2kg。
本发明的果醋将猕猴桃与中药配合使用,中药包括积雪草、美舌藻、清半夏、 照山白、川乌通过加入纤维素酶来酶解激活了中药的活性,并以猕猴桃醋为载体,协同作用,可促进总胆汁量和胆盐成份排出增加,明显抗菌消炎作用,并能减少血栓形成, 改善血液循环,加强胆囊收缩,对慢性胆囊炎有着很好的疗效。申请人还发现含有中药的草莓醋保质期相比较于没有中药添加的草莓醋长10%,通过酶解的中药与草莓果汁再次酶解后消除中药苦涩的口感,酸甜可口。
具体实施方式
下面对本发明作进一步说明。
实施例1:
一种通过酶解制备的猕猴桃卜醋,原料配方包括以下质量份的成分:
(1)原料:猕猴桃50kg;
(2)中药:积雪草1 kg、美舌藻2 kg、清半夏1 kg、 照山白0.5 kg、川乌0.8 kg;
所述保健果醋按下列步骤进行:
(1)、选取50 kg猕猴桃清洗,灭酶,灭酶温度100摄氏度,胶体磨磨浆,制成果浆;所述果浆采用复合酶酶解,由果胶酶和纤维素酶按6:1的质量比组成,共0.4kg,酶解反应温度为36℃,酶解时间2h;
(2)、藜芦1 kg、白芷2 kg、细辛1 kg、黄芩0.5 kg混合进行微粉碎,并用10目的筛网进行过筛,弃掉粗大原料形成原料;加水均匀混合并通过20兆帕均质机进行均质,然后进行喷雾干燥,得到粉状颗粒,将上述粉状颗粒加入15L蒸馏水热至70-75℃,然后加入0.007kg的纤维素酶进行酶解,此过程中温度维持在70-75℃,持续时间100分钟,得到中药酶解液;
(3)、将经过酶解处理的果浆和中药酶解液按9:1的质量比混合,加入白砂糖使混合液的初始糖度调整为12-14%;
(4)、酒精发酵:加入活化好的活性干酵母菌0.03-0.05%,进行酒精发酵,用柠檬酸调整初始
pH=4-5,发酵温度为24-32℃,发酵持续时间为2-4天;所述活性干酵母在灭菌后的5%蔗糖溶液中、在26-32℃温度条件下活化30-50min;
(5)、醋酸发酵:加入白酒将首次发酵后混合液的初始酒精度调整为8%,加入醋酸菌1.5-1.7%,进行醋酸发酵;发酵酸碱度为pH=4-4.5,发酵温度为28-34℃,发酵4-5天,在发酵的同时进行搅拌,其搅拌速度为120-160r/min;
(6)、离心:将发酵后的果醋在3000-4000r/min的转速下离心20-30min,收集上清液,除去肉眼可见的固形物和杂质;

实施例2
一种猕猴桃醋,所述保健果醋的原料配方包括以下质量份的成分:
(1)原料:猕猴桃60kg;
(2)中药:积雪草12kg、美舌藻3kg、清半夏2kg、 照山白1kg、川乌2kg;
所述保健果醋按下列步骤进行:
(1)、选取60kg猕猴桃清洗,灭酶,灭酶温度100摄氏度,胶体磨磨浆,制成果浆;所述果浆采用复合酶酶解,由果胶酶和纤维素酶按6:1的质量比组成,共0.4kg,酶解反应温度为36℃,酶解时间2h;
(2)、:积雪草12kg、美舌藻3kg、清半夏2kg、 照山白1kg、川乌2kg混合进行微粉碎,并用10目的筛网进行过筛,弃掉粗大原料形成原料;加水均匀混合并通过20兆帕均质机进行均质,然后进行喷雾干燥,得到粉状颗粒,将上述粉状颗粒加入15L蒸馏水热至70-75℃,然后加入0.007kg的纤维素酶进行酶解,此过程中温度维持在70-75℃,持续时间100分钟,得到中药酶解液;
(3)、将经过酶解处理的猕猴桃果浆和中药酶解液按9:1的质量比混合,加入白砂糖使混合液的初始糖度调整为12-14%;
(4)、酒精发酵:加入活化好的活性干酵母菌0.03-0.05%,进行酒精发酵,用柠檬酸调整初始
pH=4-5,发酵温度为24-32℃,发酵持续时间为2-4天;所述活性干酵母在灭菌后的5%蔗糖溶液中、在26-32℃温度条件下活化30-50min;
(5)、醋酸发酵:加入白酒将首次发酵后混合液的初始酒精度调整为8%,加入醋酸菌1.5-1.7%,进行醋酸发酵;发酵酸碱度为pH=4-4.5,发酵温度为28-34℃,发酵4-5天,在发酵的同时进行搅拌,其搅拌速度为120-160r/min;
(6)、离心:将发酵后的果醋在3000-4000r/min的转速下离心20-30min,收集上清液,除去肉眼可见的固形物和杂质;
(7)、超滤:将离心后的果醋用果醋过滤机超滤,操作压力0.07-0.108MPa、操作温度30-35℃、料液流速4-8L/h、超滤时间15-20min,除去造成原果醋浑浊、沉淀的大分子蛋白、色素、果胶、植物纤维、细菌、酵母等杂质成分;
(8)、灌装、灭菌:将超滤后的原果醋用灌装机装入清洗干净的饮料瓶中,在75-80℃温度条
件下杀菌30min,得到成品。
对比例1:原料配方包括以下质量份的成分:
(1)原料:猕猴桃50kg;
(2)中药:藜芦1 kg、白芷2 kg、细辛1 kg、黄芩0.5 kg;
所述保健果醋按下列步骤进行:
(1)、选取50kg猕猴桃清洗,高温灭酶,胶体磨磨浆,制成果浆;所述果浆采用复合酶酶解,由果胶酶和纤维素酶按6:1的质量比组成,共0.4kg,酶解反应温度为36℃,酶解时间2h;
(2)、:积雪草12kg、美舌藻3kg、清半夏2kg、 照山白1kg、川乌2kg混合进行微粉碎,并用10目的筛网进行过筛,加入15L纯净水熬制中药液;
(3)、将经过酶解处理的果浆和中药液按9:1的质量比混合,灭菌,加入活化后的醋酸菌,在30℃左右进行密封发酵,时间为20天;
(4)、发酵好的混合物送入陈酿罐,经过20-25天的后熟陈酿,过滤、灌装、杀菌、制成成品。
对比例2:与实施例1区别在于,中药原料为积雪草12kg、美舌藻3kg、川乌2kg,其他无差别。
对比例3:积雪草12kg、美舌藻3kg、清半夏2kg、 照山白1kg、川乌2kg熬制成中药液。
试验对比:
对收治的125例溃疡性结肠炎患者随机分为5组,所有患者均根据病史、临床症状及纤维结肠镜检查确诊,且排除严重肝肾功能不全、肠梗阻、肿瘤等患者。5组患者从年龄、性别、病程等方面比较差异不大(P>0.05),具有可比性。
诊断标准:西医诊断标准参照《实用内科学》诊断标准, 中医证候诊断标准参照《中药新药临床研究指导原则》与《中医内科学》的中医相关诊断标准:①持续性右上腹钝痛或不适感, 或伴右肩胛区疼痛;②有恶心、嗳气、反酸、腹胀和胃部灼热等消化不良症状,进食油腻食物后加重;③病程长, 病情有急性发作和缓解交替的特点;④胆囊区可有轻度压痛和叩痛;⑤B超可见胆囊结石, 胆囊壁增厚, 胆囊缩小或变形;⑥胆囊造影可见胆结石, 胆囊缩小或变形, 胆囊收缩功能不良等。凡具备⑤-⑥项中之一, 加①-④项中之两项者, 即可诊断。
治疗方法
实施例1组:口服实施例1的猕猴桃醋饮品,每天口服两次,一次50ml。
实施例2组:口服实施例2的猕猴桃醋饮品,每天口服两次,一次50ml
对比例1组:口服实对比例1的猕猴桃醋饮品,每天口服两次,一次50ml。
对比例2组:口服实对比例2的猕猴桃醋饮品,每天口服两次,一次50ml。
对比例3组:口服对比例3的中药。
5组患者均以连续4周为一个疗程,连续治疗2个疗程后观察治疗效果
疗效判断标准:参照卫生部《中药新药临床研究指导原则》制定之标准:临床治愈:症状和体征完全消失, 影像学检查提示胆囊或胆囊壁的壁厚、毛糙、透声3 项恢复正常。显效:症状和体征基本消失, 影像学检查上述3项中2项或2项以上明显改善。有效:症状和体征大部分消失, 影像学检查上述3项中只有1项明显改善。无效:症状和体征及影像学检查无改善。
由表1可以看出,实施例1、2组与对比例1、2、3组总有效率比较差异显著(P<0.01),具有统计学意义。
通过微生物实验得出,实施例1对比例1相比,具有好的灭菌效果,保质期能够延长10%。
Claims (4)
1.一种猕猴桃醋,其特征在于,所述猕猴桃醋按下列步骤加工:
(1)、选取猕猴桃清洗,灭酶,胶体磨磨浆,制成果浆;所述果浆采用复合酶酶解,酶解反应温度约为36℃,酶解时间约2h;
(2)、将积雪草、美舌藻、清半夏、 照山白、川乌混合进行粉碎,并用10目的筛网进行过筛,弃掉粗大原料形成原料;加水均匀混合并依次通过20兆帕、55兆帕、30兆帕均质机进行均质,然后进行喷雾干燥,得到粉状颗粒,将上述粉状颗粒加入蒸馏水热至约70-75℃,然后加入纤维素酶进行酶解,此过程中温度维持在70-75℃,持续时间100分钟,得到中药酶解液;
(3)、将经过酶解处理的果浆和中药酶解液按9:1的质量比混合,加入白砂糖使混合液的初始糖度调整为12-14%;
(4)、酒精发酵:加入活化好的活性干酵母菌0.03-0.05%,进行酒精发酵,用柠檬酸调整初始
pH=4-5,发酵温度为24-32℃,发酵持续时间为2-4天;所述活性干酵母在灭菌后的5%蔗糖溶液中、在26-32℃温度条件下活化30-50min;

2.根据权利要求1所述一种猕猴桃醋,其特征在于所述复合酶由果胶酶和纤维素酶按6:1的质量比组成。
3.根据权利要求1所述的一种猕猴桃醋,其特征在于所述原料配方优选为以下质量份的成分:
(1)原料:草莓50-60kg;
(2)中药:积雪草1 -2kg、美舌藻2 -3kg、清半夏1 -2kg、 照山白0.5 -1kg、川乌0.8 -2kg。
4.一种如权1-权4任意一种猕猴桃醋在治疗慢性胆囊炎方面的应用。
