中国的豆类及其制品生产厂有数千家之多,品种繁多最主要的有豆腐类、豆豉类、豆瓣酱类和原豆类,其中豆腐类是中国传统吃法工艺简单全国各地都有普遍生产大到工厂小到家庭作坊。而豆豉和黄豆酱类比较出名的有四川豆豉、海天的黄豆酱等主要集中在西南的湖南、贵州、桂林、云南、四川和天津及广东一带,生产已经具备一定的规模,占领了大部分的市场。 而中国市场上销售的原豆类食品大约有几个品种,但产品配料基本上以黄豆原料为主,产品比较单调、口味平淡。
为了丰富豆产品种类,满足不同饮食习惯的消费群体,许多原豆生产企业正在根据本地特色不断研究新风味的产品品种,如徐州生产的纳豆,因配方中加入了辣椒和生姜而深受消费者宠爱。
酒豆是一道口味醇、香的杂粮加工,主要食材是黄豆、白酒,为皖北特色小吃。

本发明目的是提供一种一风味独特的酒豆食品及生产方法,同时,还具有健胃消食的保健功效。
本发明的方案如下,一种酒豆食品,由以下重量份原料组成:
黄豆130-180份、白酒10-20份、红菜椒4-10份、生姜5-10份、大蒜瓣5-10份、白糖18-26份、食盐2-10份、味精1-5份、胡椒2-6份、花椒1-4份、茴香1-5份、山梨酸钾0.2-0.8份、乳酸粉0.3-0.9份、牛肉香精0.3-0.6份、植物油15-30份、中药粉0.1-0.5份。

一种酒豆食品的生产方法,步骤如下:
a、挑选淮北产饱满无霉点黄豆,清洗后用沸水煮5-10分钟,再用常温水浸泡12小时;
b、挑选红菜椒,清洗后搅碎;生姜、大蒜瓣清洗后搅碎并与搅碎后的红菜椒混合,构成混合料Ⅰ,备用;
c、将步骤a处理过的黄豆与混合料Ⅰ混合,并加入白酒、白糖、食盐、味精、山梨酸钾、乳酸粉、牛肉香精、中药粉进行混合搅拌,得混合料Ⅱ,备用;
d、将植物油加热至120-130℃,加入胡椒、花椒、茴香煎1分钟后,将上述植物油混合物与混合料Ⅱ混合搅拌;
e、搅拌后密封5小时,既得酒豆食品。
本发明中药粉中各未中药药理如下:
白叶火草:味淡;性平。祛风,清热,利尿。治感冒发热,支气管炎,哮喘,肾炎水肿,急性膀胱炎。《云南思茅中草药选》:"清热发散,定喘,驱虫。治感冒高热,尿赤尿闭,肾炎水肿,气管、支气管炎,哮喘,蛔虫症。"
山楂:酸甘,微温。入脾、胃、肝经。消食积,散瘀血,驱绦虫。治肉积,症瘕,痰饮,痞满,吞酸,泻痢,肠风,腰痛,疝气产后儿枕痛,恶露不尽,小儿乳食停滞。消食健胃,行气散瘀。用于肉食积滞、胃烷胀满、泻痢腹痛、瘀血经闭、产后瘀阻、心腹刺痛、疝气疼痛、高血脂症。
蝉翼藤:辛、甘、苦、酸、咸,微寒。茎、根入药,有活血散瘀、消肿止痛、清热利尿的功能。主治:跌打损伤;用根浸酒搽患处。风湿骨痛,急性胃肠炎;根皮治风湿关节炎,疗效很好。
木香:辛味辛;苦;性温。行气,止痛,健脾,消食
主治:行气止痛;调中导滞。主胞胁胀满足;脘腹胀痛;嗳吐泄泻;痢疾后重。用于胸脘胀痛、泻痢后重、食积不消、不思饮食;中气不省;突发耳聋;蛇虫咬伤;牙痛。
紫苏叶:辛,微温,无毒。脾经、肺经二经。理气,和营。治感冒风寒,恶寒发热,咳嗽,气喘,胸腹胀满,胎动不安。并能解鱼蟹毒。用于感冒风寒,发热恶寒,头痛鼻塞,兼见咳嗽或胸闷不舒者。常配伍杏仁、前胡等,如杏苏散;若兼有气滞胸闷者,多配伍香附、陈皮等,如苏散。脾胃气滞,胸闷,呕吐之证。本品具行气宽中,和胃止呕功效。偏寒者,每与藿香同用;偏热者,可与黄连同用。偏气滞痰结者,常与半夏、厚朴同用。
小叶金花草:苦,寒。(叶,微甘)。《福建中草药》:"清热利尿,凉血止血。治风热感冒,疔疮。"《广西实用中草药新选》:"解毒消炎,去腐生肌。治急性胃肠炎,可解野山薯毒、木薯毒、砷中毒等。"
合掌消:微苦,平,无毒。清热,祛风湿,消肿解毒。治急性胃肠炎,急性肝炎,风湿痛,偏头痛,便血,痈肿,湿疹。
芜菁花:辛,平,无毒。补肝明目;敛疮。主虚劳目暗;久疮不愈。
红石耳:淡、微苦,平。健胃消食,理气止痛。用于消化不良,小儿疳积,腹胀,腹痛,痢疾。
碗花草:味辛;苦;性寒。清热利湿;泻肺平喘;解毒止痒。

一种酒豆食品,由以下重量份原料组成:黄豆155份、白酒16份、红菜椒8份、生姜6份、大蒜瓣6份、白糖22份、食盐6份、味精3份、胡椒4份、花椒2份、茴香4份、山梨酸钾0.7份、乳酸粉0.4份、牛肉香精0.5份、植物油19份、中药粉0.3份。
中药粉由以下重量份原料组成:
白叶火草1份、山楂5份、蝉翼藤2份、木香3份、紫苏叶5份、小叶金花草2份、合掌消2份、芜菁花3份、红石耳1份、碗花草6份。
将上述各味药粉碎后研磨,过500目筛选,即得。
生产方法,步骤如下:

Claims (4)
1.一种酒豆食品,其特征在于,由以下重量份原料组成:
黄豆130-180份、白酒10-20份、红菜椒4-10份、生姜5-10份、大蒜瓣5-10份、白糖18-26份、食盐2-10份、味精1-5份、胡椒2-6份、花椒1-4份、茴香1-5份、山梨酸钾0.2-0.8份、乳酸粉0.3-0.9份、牛肉香精0.3-0.6份、植物油15-30份、中药粉0.1-0.5份。
2.根据权利要求1所述的一种酒豆食品,其特征在于,由以下重量份原料组成:
黄豆155份、白酒16份、红菜椒8份、生姜6份、大蒜瓣6份、白糖22份、食盐6份、味精3份、胡椒4份、花椒2份、茴香4份、山梨酸钾0.7份、乳酸粉0.4份、牛肉香精0.5份、植物油19份、中药粉0.3份。
3.根据权利要求1或2所述的一种酒豆食品,其特征在于,所述的中药粉由以下重量份原料组成:
白叶火草1-3份、山楂4-12份、蝉翼藤1-3份、木香2-4份、紫苏叶3-10份、小叶金花草1-4份、合掌消1-3份、芜菁花2-5份、红石耳1-3份、碗花草3-6份。
4.根据权利要求3所述的一种酒豆食品的生产方法,其特征在于,步骤如下:
a、挑选淮北产饱满无霉点黄豆,清洗后用沸水煮5-10分钟,再用常温水浸泡12小时;
b、挑选红菜椒,清洗后搅碎;生姜、大蒜瓣清洗后搅碎并与搅碎后的红菜椒混合,构成混合料Ⅰ,备用;
c、将步骤a处理过的黄豆与混合料Ⅰ混合,并加入白酒、白糖、食盐、味精、山梨酸钾、乳酸粉、牛肉香精、中药粉进行混合搅拌,得混合料Ⅱ,备用;
d、将植物油加热至120-130℃,加入胡椒、花椒、茴香煎1分钟后,将上述植物油混合物与混合料Ⅱ混合搅拌;
e、搅拌后密封5小时,既得酒豆食品。
