本发明涉及一种食品添加剂,尤其涉及肉制品保鲜剂。
背景技术
我国是世界第一肉类生产大国,肉制品消费在整个食品消费结构中占有举足轻重的地位,随着人们生活水平的提高,消费者的消费观念开始由粗放型、数量型向质量、安全、绿色、健康型转变,人们对高质量的绿色安全肉类食品的需求十分迫切,然而目前,在肉制品中,国家允许使用的保鲜剂种类很多,而高蛋白肉制品中比较常用的是山梨酸钾、乳酸链球菌素和乳酸钠,这些保鲜剂有的在初始菌数较大时更加容易变质,有的成本高,增加产品费用。

为了解决现有技术中的问题,本发明提供了一种肉制品保鲜剂,该肉制品保鲜剂包含以下的重量份的组成成分:海藻酸钠2-4份、丙氨酸1-3、葡萄糖酸内酯3-7份、壳聚糖2-8份、绿茶汁3-8份、姜汁2-6份、蒜汁2-6份。
作为本发明的进一步改进, 该肉制品保鲜剂包含以下的重量份的组成成分:海藻酸钠3-4份、丙氨酸2-3、葡萄糖酸内酯4-6份、壳聚糖3-7份、绿茶汁4-7份、姜汁3-5份、蒜汁3-5份。
作为本发明的进一步改进,该肉制品保鲜剂包含以下的重量份的组成成分:海藻酸钠3.5份、丙氨酸2.5、葡萄糖酸内酯7份、壳聚糖5份、绿茶汁5份、姜汁4份、蒜汁4份。
