Abstract
[课题]提供一种饮食物,在液状、凝胶状、半固体状、固体状等任意的形态的饮食物中,都不产生鱼腥味所代表的这样的恶臭、且基于经时变化的恶臭的产生得以抑制;进而提供与以往的来源于鱼类的含有EPA及DHA的食品相比较,特别是血小板凝聚抑制作用优异的饮食物。[解决手段]含有藻类提取油、动物性或植物性蛋白质和乳化剂。
Description
技术领域
本发明涉及含有藻类提取油的饮食物。
背景技术
一直以来,存在很多含有不饱和脂肪酸二十碳五烯酸(EPA)、二十二碳六烯酸(DHA)的饮食物。
已知EPA和DHA具有血小板凝聚抑制作用、血中中性脂肪降低作用、血中VLDL及LDL胆固醇降低作用等作为生理活性效果,并具有动脉硬化性疾患的预防及治疗效果等。
作为含有这些EPA、DHA的饮食物,例如存在以高浓度含有来源于鱼油的EPA和/或DHA的豆乳类。用于该豆乳类的鱼油,设为含有10%以上的EPA的鱼油、优选总计含有25%以上的EPA和DHA的鱼油、或含有28%以上的EPA的鱼油。(专利文献1)
进而,作为这样的饮食物,存在含有来源于鱼油的EPA和/或DHA的氧化、乳化稳定性优异的酸乳。该酸乳通过添加酸而制成pH4.5以下的酸性,由此,具有5℃下15日以上的氧化·乳化稳定性。(专利文献2)
另外,还已知在含有EPA、DHA的鱼油中,有特殊的臭味,极其容易被氧化,发生风味的变差而变得呈现出不快的气味和味道。
然而,上述豆乳类和酸乳中,不呈现来源于用作原料的鱼油的鱼腥味,味道、香气及口感均为良好,EPA、DHA的保存性也良好。

发明内容
发明要解决的课题
上述专利文献1、2中所示的豆乳类、酸乳,虽然都不呈现来源于用作原料的鱼油的鱼腥味,味道、香气及口感均为良好,但是已知只要用鱼油作为原料,若其含量变多,则明显呈现出鱼腥味,因此,即使以高浓度含有EPA和/或DHA,其高浓度范围也是受限的。
另外,上述专利文献1、2中所示的饮食物受限于豆乳类和酸乳,至于使鱼油含有于其他的饮食物中的情形,并不能保证不呈现来源于鱼油的鱼腥味。
于是,本发明是以解决上述以往的问题点为其课题,以提供如下饮食物为目的而成的发明:在液状、凝胶状、半固体状、固体状等任意形态的饮食物中,都不产生鱼腥味所代表的这样的恶臭、且基于经时变化的恶臭的产生得以抑制的饮食物。
进而,本发明是以提供与以往的来源于鱼类的含有EPA及DHA食品相比较,特别是血小板凝聚抑制作用优异的饮食物为目的而成的发明。
用以解决课题的手段
本发明的饮食物是含有藻类提取油、动物性或植物性蛋白质和乳化剂的饮食物。
本发明的饮食物中,藻类提取油是提取自微藻类的盘蜷纲(Labyrinthulea)的藻类提取油。
本发明的饮食物中,动物性或植物性蛋白质是选自乳蛋白、大豆蛋白、胶原肽中的至少一种。
本发明的饮食物中,藻类提取油含有30~50wt%的DHA、1~20wt%的DPA。
本发明的饮食物中,藻类提取油还含有0.1~1wt%的EPA。
发明效果
本发明的饮食物,无论为液状、凝胶状、半固体状、固体状等任意形态,都不产生鱼腥味所代表的这样的恶臭,且基于经时变化的恶臭的产生得以抑制。
进而发现,本发明的饮食物与以往的来源于鱼类的含有EPA及DHA食品相比较,血小板凝聚抑制作用优异。

具体实施方式
以下,对用于实施本发明的饮食物的方式详细地进行说明。
本发明的饮食物是含有藻类提取油、动物性或植物性蛋白质和乳化剂的饮食物。
藻类提取油于本发明的饮食物中含有1~30wt%。而且,所述藻类提取油含有30~50wt%的DHA(二十二碳六烯酸)、1~20wt%的DPA(二十二碳五烯酸)。优选含有35~45wt%的DHA、10~15wt%的DPA。进而,所述藻类提取油中,除DHA、DPA之外,含有0.1~1wt%EPA(二十碳五烯酸)。
作为藻类提取油,优选为提取自微藻类的盘蜷纲的橙黄壶菌种(Aurantiochytriumsp.)、裂殖壶菌种(Schizochytriumsp.)等的藻类提取油。通过设为来自这些微藻类的提取油,可以得到DHA(二十二碳六烯酸)、DPA(二十二碳五烯酸)的含量多的提取油。作为这样的藻类提取油,具体地可以举出台湾的味丹生物科技有限公司制造的藻类提取油(商品名:富DHA油(DHArichoil))。
本发明的饮食物中含有2~50wt%动物性或植物性蛋白质。作为所述动物性或植物性蛋白质,优选为选自乳蛋白、大豆蛋白、胶原肽中的至少一种。
作为可以用于本发明的饮食物的乳蛋白,并不受特别限定,可举出牛乳、脱脂乳、浓缩乳、脱脂浓缩乳、全脂乳粉、脱脂乳粉、炼乳、脱脂炼乳、豆乳、酸乳、乳酪、黄油、酪乳、乳脂、乳脂粉、浓缩乳清、乳清粉等。
作为可以用于本发明的饮食物的大豆蛋白,只要是含有于大豆中的蛋白质即可,并不受特别限定,可举出豆乳、浓缩大豆蛋白、分离大豆蛋白、大豆肽等。作为这样的大豆蛋白,可以使用作为辅助食品、饮食品用原材料等市售的大豆蛋白。
作为可以用于本发明的饮食物的胶原肽,是将胶原或明胶用酶或酸进行水解而得的物质,并不受特别限定,优选平均分子量为100~300,000左右的胶原肽。作为这样的胶原肽,可以使用作为饮食品用原材料等市售的胶原肽,粉末状、液体状均可以使用。
相对于所述藻类提取油,含有80~300wt%乳化剂。作为所述乳化剂,优选为选自甘油脂肪酸酯、蔗糖脂肪酸酯、大豆卵磷脂(soylecithin)、蛋黄卵磷脂等中的至少一种。
本发明的饮食物中,除所述藻类提取油、动物性或植物性蛋白质、乳化剂之外,可以含有水、香料、矫味剂、调味料、有机酸、pH调节剂等。
作为香料,可举出酸乳香料、柠檬香料、菠萝香料、葡萄柚香料、青柠(lemonlime)香料、橙子香料、苹果香料等。
作为矫味剂,可举出绿茶、红茶、乌龙茶、咖啡、杏仁油、薄荷(Peppermint)油、留兰香(Spearmint)油、桂皮油、薄荷醇等。
作为调味料,可举出盐、砂糖、甜料酒、日本酒、葡萄酒等。
作为有机酸,可举出乳酸、苹果酸、柠檬酸、酒石酸、抗坏血酸等。
作为pH调节剂,可举出所述有机酸和其盐类、磷酸及其盐类、碳酸及其盐类等。
接着,对本发明的饮食物的制造方法的概略进行说明。
首先,作为第一工序,将藻类提取油和乳化剂混合。该藻类提取油和乳化剂的混合比率为1:0.1~1:50。
作为第二工序,在由第一工序得到的藻类提取油和乳化剂的混合物中加入冷水或热水,搅拌直至乳化。混合比率为任意,冷水或热水的温度为5~100℃。搅拌时间虽也为任意,不过优选5分钟~24小时的期间。
作为第三工序,在由第二工序得到的乳化液中,加入动物性或植物性蛋白质即乳蛋白和/或大豆蛋白和/或胶原肽,进一步混合搅拌。所述乳化液和动物性或植物性蛋白质的混合比率为1:0.1~1:500。搅拌温度、搅拌时间、搅拌方法为任意。
向经这样的工序而得到的乳化混合液中,加入维他命C或柠檬酸、酒石酸等,制成将pH调节为1.5~5的酸性液。
接着,可以将所述酸性液做成加入到牛乳或豆乳中的饮料,或将所述酸性液做成直接或经稀释而加入了果汁等的饮料。
进而,可以将所述酸性液做成直接或经稀释而配合于甑煮食品(Retortfood)、饼干、脆饼干等烤制点心中的食品。
另外,可以将所述酸性液直接或经稀释而加入增粘剂或多糖类,从而做成凝胶状食品、胶(Jelly)状的半固化或固体化的食品。
实施例
接着,对本发明的饮食物通过实施例来详细地进行说明,不过本发明的饮食物并不被这些实施例限定。
(基于经时变化的恶臭的产生的抑制评价)
采用本发明的饮食物中所使用的藻类提取油和市售的鱼油,为了进行基于经时变化的恶臭的产生的抑制评价,由10名男女,进行了如下所述的监视测试(期间约1个月)。
作为藻类提取油,使用了味丹生物科技有限公司(台湾)制造的藻类提取油(商品名:富DHA油)。作为鱼油,使用了一般用作食品的精制鱼油。
让10名男女每隔一周闻所述藻类提取油和鱼油的气味并持续4周,通过以下评价标准,将产生恶臭的程度进行点数化,求得了平均值。将结果示于图1中。
评价基准分为3个等级,将完全闻不到的情形评为“0”点,将略微闻到的情形评为“1”点,将少许闻到的情形评为“2”点,明显闻到的情形评为“3”点。
进行了所述监视测试,结果,于2周后,藻类提取油的产生恶臭的程度为“1”点,鱼油的产生恶臭的程度为“2”点,数值上来看,关于产生恶臭的程度,藻类提取油是鱼油的50%。进而,于4周后,藻类提取油的产生恶臭的程度为“1.7”点,鱼油的产生恶臭的程度为“3”点,数值上来看,关于产生恶臭的程度,藻类提取油是鱼油的约57%。
(血小板凝聚抑制作用的确认)
制备使用了一种本发明的饮食物中所采用的藻类提取油和两种市售的鱼油的健康饮料,使用该健康饮料进行血小板凝聚抑制作用的确认。
含有于健康饮料的藻类提取油使用了味丹生物科技有限公司(台湾)制造的富DHA油(DHA:38wt%,EPA:0.4wt%),含有于健康饮料的鱼油设为一般用作食品的精制鱼油DHA27油(DHA:27wt%,EPA:8wt%),以及一般被使用的精制鱼油DHA46油(DHA:46wt%,EPA:5wt%)。
试样的制备中,对人血液进行离心分离,采集多血小板血浆(PRP:plateletrichplasma),对该PRP进行离心分离,采集血小板血浆(PPP:plateletpoorplasma)。
进而,在所述PRP中加入血液凝固因子(腺苷二磷酸、花生四烯酸盐、血小板活化因子(PAF)),使血小板凝聚。
向所述试样中添加各DHA油,将凝聚物质添加前的PRP透过率设定为0%,将PPP透过率设定为100%。然后,以凝聚物质添加后的PRP透过率的最大值为最大凝聚率(%),即为血小板凝聚率(%)。结果,将三次试验的平均值示于图2~4中。
进行了上述血小板凝聚抑制作用的确认,结果为如下。
关于用于本发明的饮食物的藻类提取油,于腺苷二磷酸中为89%,于花生四烯酸盐中为88%,于PAF中为89%。
关于市售的两种鱼油,于腺苷二磷酸中为73%、60%,于花生四烯酸盐中为69%、49%,于PAF中为67%、60%。
以下,对本发明的饮食物的实施例,就制成了健康饮料或胶状食品的饮食物进行说明。
[实施例1]
(健康饮料的成分)
藻类提取油(味丹生物科技:富DHA油) | 3,000mg |
甘油脂肪酸酯(乳化剂) | 3,600mg |
蔗糖素(50倍液) | 1,000mg |
柠檬酸 | 10mg |
胶原肽 | 5,000mg |
酸乳香料 | 400mg |
香草香料 | 100mg |
纯化水 | 86,790mg |
上述成分的健康饮料是通过在先所述的制造方法制备的。将该健康饮料装瓶、封盖,于冷藏库(库内温度:10℃)保管1个月后,开盖闻气味,完全没有酸乳香料、香草香料以外的气味。
另外,所述健康饮料中含有血小板凝聚抑制作用优异的来源于藻类提取油的DHA及EPA,因此,通过长期饮用,可以期待动脉硬化性疾患的预防及治疗效果。
[实施例2]
(胶状食品的成分)

纯化水 | 5,028mg |
上述成分的胶状食品是通过在先所述的制造方法制备的。将该胶状食品放入合成树脂制容器并封盖,于冷藏库(库内温度:10℃)保管1个月后,开盖闻气味,完全没有酸乳香料、粉红葡萄柚以外的气味。
另外,所述胶状食品含有血小板凝聚抑制作用优异的来源于藻类提取油的DHA及EPA,因此,通过长期食用,可以期待动脉硬化性疾患的预防及治疗效果。
Claims (5)
1.饮食物,其特征在于,含有藻类提取油、动物性或植物性蛋白质和乳化剂。
2.权利要求1所述的饮食物,其特征在于,所述藻类提取油是提取自微藻类的盘蜷纲的藻类提取油。
3.权利要求1或2所述的饮食物,其特征在于,所述动物性或植物性蛋白质是选自乳蛋白、大豆蛋白、胶原肽中的至少一种。
4.权利要求1~3中任一所述的饮食物,其特征在于,所述藻类提取油含有30~50wt%的DHA,1~20wt%的DPA。
5.权利要求4所述的饮食物,其特征在于,所述藻类提取油还含有0.1~1wt%的EPA。
