技术领域
本发明属于食品领域,是一种补钙骨泥巧克力及制造方法,特别是一种由食用骨泥细粉配巧克力原料加工而成的即补钙又美味的巧克力制品。
背景技术
以往的补钙食品有液体、片剂、软糖、有碳酸钙、磷酸钙等,它们的共同缺点是口味较差,使人们接受度不高,骨泥软糖口味尚可,但经常吃糖果,对人健康不利,本发明采用骨泥细粉加入巧克力大板(巧克力半成品,市场有售)制成骨泥巧克力,口感极佳,而且富含钙、微量元素、多种氨基酸维生素等营养成份,发热少,抗氧化,控制脭固醇升高,防癌抗衰老,适于人们经常食用,克服了其他补钙食品的缺点。
发明内容
本发明是一种补钙骨泥制造方法,是采用细度达60目以上的骨泥粉,配巧克力大板(巧克力半成品,内含可可脂,可可粉、奶油、食糖、香料等),经巧克力调温锅加热50℃溶化,再经模具浇镇成各种形状的巧克力块,用糖果包装纸或巧克力专用包装纸包装即成。也可以在溶化巧克力大板时加入果仁碎块,浇铸后制成果仁巧克力。或者加入巧克力大板重量5%的奶油,溶化后搅拌均匀,制成巧克力酱。
有益效果:
骨泥巧克力,由于巧克力的粘细包裹作用,骨泥味道显不出来,口味香甜,在享受巧克力美味同时,给人体补充了钙元素,增加了营养,骨泥巧克力发热少,含维生素E、多种氨基酸,普及面积广。有抗氧化、抗衰老功能,人们乐于食用。
具体实施方式
1、骨泥的制备,选择新鲜食品动物骨,砸成碎块,装入金属容器,置高压锅内,密封加热至121℃,气压1.5公斤/厘米(开始加热时注意排出锅内冷气)60分钟,降至常压后取出,用食物粉碎机粉碎,凉干,过60目筛,筛上物再行粉碎过筛,反复三次,小量筛上物弃去。
2取上述骨泥粉和巧克力大板,按骨泥粉10%,巧克力板90%的比例投入巧克力调温锅内(巧克力大板先用刀刨成细条)加热至50℃,搅拌均匀,即成巧克力混合料,然后将其注入巧克力模具,凉后翻模倒出采用糖果纸或巧克力专用包装纸包装即成。
3、在调温时加入果仁碎块,其成品就是骨泥果仁巧克力。
4、调温搅拌均匀后,用巧克力模具浇铸成2克重左右的小粒,翻模倒出后用糖衣机包上糖衣,即成骨泥巧克力豆(包衣材料含食糖、明胶、滑石粉等)。
5、把骨泥10%、巧克力大板50%、奶油40%加入调温锅,加热调温至50℃,搅拌均匀后装瓶,即成骨泥巧克力酱。以上产品经检验合格即成。
Claims (2)
1.一种补钙骨泥巧克力及制造方法,包括新鲜食品级动物骨及所制成的骨泥,巧克力大板(半成品)奶油、食糖、香料、干果仁,其特征在于即美味好吃有营养又能补钙,主要材料是骨泥粉,1-15%,巧克力大板99-85%,按下述方法配制:
在巧克力调温锅内投入骨泥粉1-15,巧克力大板碎块99-85%,调温至50℃,搅拌均匀成骨泥巧克力原浆,可制成多种形式的骨泥巧克力食品;
第1种,把骨泥巧克力原浆直接用模具浇铸成块状,冷后翻模倒出,包装即成,调温时加果仁碎块,即成果仁巧克力骨泥;
第2种,将骨泥巧克力原浆用模具浇铸成2-3克重小片状,然后用包衣锅包上糖衣,成为骨泥巧克力豆;
第3种,取骨泥巧克力原浆加入50%的奶油,调温50℃装瓶内,即成骨泥巧克力酱。
2.权利要求1所述一种补钙骨泥巧克力及制造方法,其特征在于骨泥的用量10%为最佳。
