本发明涉及一种食品的加工方法,尤其是涉及一种金瓜软糖的制作方法。
背景技术
金瓜所属葫芦科,原产南美热带,一年生草质藤本。叶大,卷须,花黄色,单性,生于叶腋,雌雄同株;果实为瓠果,成熟时鲜橙红色,也有金黄、橙黄色,下部常呈灰绿色;瓜壳较硬,不开裂,近柄处粗大呈扁球形,下部则明显收细,成三个突起,总形略似香炉,有多数种子。
金瓜的作用:1.解毒:金瓜含有维生素和果胶,果胶有很好的吸附性,能粘结和消除体内细菌毒素和其他有害物质,如重金属中的铅、汞和放射性元素,能起到解毒作用;2.保护胃粘膜、帮助消化:金瓜所含的果胶可以保护胃胶道粘膜,免受粗糙食品刺激,促进溃疡愈合,还能促进胆汁分泌,加强胃肠蠕动,帮助消化食物;3.防治糖尿病、降低血糖:金瓜含有丰富的钴,钴能活跃人体的新陈代谢,促进造血功能,并参与人体内维生素B12的合成,是人体胰岛细胞所必需的微量元素,对防治糖尿病、降低血糖有特殊的疗效。
金瓜的生长周期短,无法四季供应,用于加工成金瓜软糖可实现对金瓜原料的综合利用,可以直接食用,味道鲜美,贮藏时间长,提高其经济价值。

本发明的目的是提供一种金瓜软糖的制作方法,可以直接食用,味道鲜美,贮藏时间长。
本发明解决其技术问题所采取的技术方案是:
一种金瓜软糖的制作方法,其特征在于:采用原料处理→粉碎→熬制→成型切块→包装为主要加工步骤,具体操作步骤为:
(1)原料处理:选用无霉烂虫蛀、无机械损伤的金瓜,清洗后,对半剖开去籽后冲洗沥干,放入烘房烘干备用;
(2)粉碎:将干燥后的金瓜粉碎成细粉;将枸杞、红枣、桔梗洗净后干燥,再粉碎成细粉,加入金瓜粉中,得金瓜混合粉;
(3)熬制:将果糖、饴糖、甘草、薄荷、阿胶和红橘香精放在锅中加少许水,以小火煎熬到较稠厚时,加入金瓜混合粉,调匀即停火;
(4)成型切块:趁热将糖倒在表面平整、涂过黄油的大搪瓷盘内,待稍冷,将糖压平,用刀切成小块,冷却后,即成金瓜软糖;
(5)包装:用聚乙烯袋密封包装。
有益效果:本发明产品甜而不腻,香酥味美,具有金瓜鲜美的风味,而且营养丰富,本产品有利于保护胃粘膜、帮助消化,还对解毒排毒和降低血糖有特殊的疗效,食用方便,操作简单。
具体实施方式
实施例1
一种金瓜软糖的制作方法,具体操作步骤为:
(1)原料处理:选用无霉烂虫蛀、无机械损伤的金瓜,清洗后,对半剖开去籽后冲洗沥干,放入烘房烘干备用;
(2)粉碎:将干燥金瓜和干香菇粉碎成细粉;
(3)熬制:将赤砂糖和果葡糖浆放在锅中加少许水,以小火煎熬到较稠厚时,加入金瓜粉、枸杞粉和香菇粉,调匀,再加入适量的蜂蜜、冰糖,调匀即停火;
(4)成型切块:趁热将糖倒在表面平整,涂过大豆油的大搪瓷盘内,待稍冷,将糖压平,用刀切成小块,冷却后,即成金瓜软糖;
(5)包装:用聚乙烯袋密封包装。

一种金瓜软糖的制作方法,具体操作步骤为:
(1)原料处理:选用无霉烂虫蛀、无机械损伤的金瓜,清洗后,对半剖开去籽后冲洗沥干,放入烘房烘干备用;

(3)熬制:将赤砂糖、姜末、豆蔻和淀粉糖浆放在锅中加少许水,以小火煎熬到较稠厚时,加入金瓜粉和核桃粉,再加入少许牛奶、冰糖、蜂蜜及柠檬香精,调匀即停火;
(4)成型切块:趁热将糖倒在表面平整、涂过植物油的大搪瓷盘内,待稍冷,将糖压平,用刀切成小块,冷却后,即成金瓜软糖;
(5)包装:用聚乙烯袋密封包装。

(1)原料处理:选用无霉烂虫蛀、无机械损伤的金瓜,清洗后,对半剖开去籽后冲洗沥干,放入烘房烘干备用;
(2)粉碎:将干燥后的金瓜粉碎成细粉;将枸杞、红枣、桔梗洗净后干燥,再粉碎成细粉,加入金瓜粉中,得金瓜混合粉;
(3)熬制:将果糖、饴糖、甘草、薄荷、阿胶和红橘香精放在锅中加少许水,以小火煎熬到较稠厚时,加入金瓜混合粉,调匀即停火;
(4)成型切块:趁热将糖倒在表面平整、涂过黄油的大搪瓷盘内,待稍冷,将糖压平,用刀切成小块,冷却后,即成金瓜软糖;
(5)包装:用聚乙烯袋密封包装。
