Abstract
一种鸡汁麦麸紫薯条,由以下重量份原料制成:紫薯全粉400-430、马铃薯全粉110-120、香蕉50-60、鲜牛奶60-70、麦麸25-30、银耳15-20、乳酸菌1-2、番茄60-70等;油炸薯条时会产生丙烯酰胺,这是一种致癌物质,利用果汁对薯条浸泡抑制丙烯酰胺的生成,本发明用番茄汁浸泡过薯条,再进行油炸,能够有效抑制丙烯酰胺这种致癌物质的产生,加入经过乳酸菌发酵的麦麸、银耳,其可溶性膳食纤维含量增加,人体吸收后有利于肠道蠕动,帮助人体即食排出有毒物质,配以灵芝、黄精、山药、陈皮、党参等中药提取物,有一定的滋补身体、增强免疫力的功效。

本发明涉及紫薯制品,尤其涉及一种鸡汁麦麸紫薯条及其制备方法。
背景技术
紫薯富含花青素、硒和铁,能够防癌抗癌,是人体抗疲劳、抗衰老补血的必要元素,还能够清楚人体自由基,增强免疫力,紫薯能够制成各种副食品,口感好,市面上所售的紫薯制品品种不多见,不能够满足人们多紫薯这种营养食品的需求。
发明内容
本发明克服了现有技术不足,提供了一种鸡汁麦麸紫薯条。
本发明是通过以下技术方案实现的:
一种鸡汁麦麸紫薯条,由以下重量份原料制成:紫薯全粉400-430、马铃薯全粉110-120、香蕉50-60、鲜牛奶60-70、麦麸25-30、银耳15-20、干桂花5-6、鸡汤45-50、乳酸菌1-2、番茄60-70、灵芝5-6、黄精4-5、山药6-7、陈皮4-5、党参3-4、荷叶灰2-3、食盐适量、蔗糖适量、大豆油适量、水适量。
一种鸡汁麦麸紫薯条的制备方法,包括以下步骤:
(1)将香蕉去皮,将香蕉果肉与鲜牛奶混合倒入粉碎机中,制成香蕉牛奶,再倒入锅中,加热至微沸,保持3-5分钟,再冷却待用;
(2)将干桂花用纱布袋装好,与麦麸、银耳混合放入锅中,加入适量水,加热焖煮1-1.5小时,将麦麸、银耳取出,与鸡汤混合打浆,将浆液与乳酸菌混合,搅拌均匀,在38-40℃条件下密封发酵5-6小时,得发酵物待用;
(3)将番茄洗净,放入榨汁机中榨汁,得番茄汁,按照果汁:纯净水为2:10的比例兑入纯净水,稀释待用;
(4)将灵芝、黄精、山药、陈皮、党参、荷叶灰用5-10倍量的水先浸泡30-40分钟,再加热提取,过滤,取滤液待用;
(5)将剩余原料中除水外的其他物料与香蕉牛奶、发酵麦麸银耳、步骤4中滤液合并,加适量水,充分搅拌成型,用制薯条机制成薯条,将薯条放入盛有稀释过的番茄汁的容器中,浸泡1-1.5小时;
(6)将浸泡好的薯条取出,沥干水,用大豆油炸至焦脆即可。
与现有技术相比,本发明的优点是:
油炸薯条时会产生丙烯酰胺,这是一种致癌物质,利用果汁对薯条浸泡抑制丙烯酰胺的生成,本发明用番茄汁浸泡过薯条,再进行油炸,能够有效抑制丙烯酰胺这种致癌物质的产生,加入经过乳酸菌发酵的麦麸、银耳,其可溶性膳食纤维含量增加,人体吸收后有利于肠道蠕动,帮助人体即食排出有毒物质,配以灵芝、黄精、山药、陈皮、党参等中药提取物,有一定的滋补身体、增强免疫力的功效。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种鸡汁麦麸紫薯条,由以下重量份(Kg)原料制成:紫薯全粉400、马铃薯全粉110、香蕉50、鲜牛奶60、麦麸25、银耳15、干桂花5、鸡汤45、乳酸菌1、番茄60、灵芝5、黄精4、山药6、陈皮4、党参3、荷叶灰2、食盐适量、蔗糖适量、大豆油适量、水适量。
一种鸡汁麦麸紫薯条的制备方法,包括以下步骤:
(1)将香蕉去皮,将香蕉果肉与鲜牛奶混合倒入粉碎机中,制成香蕉牛奶,再倒入锅中,加热至微沸,保持3分钟,再冷却待用;
(2)将干桂花用纱布袋装好,与麦麸、银耳混合放入锅中,加入适量水,加热焖煮1小时,将麦麸、银耳取出,与鸡汤混合打浆,将浆液与乳酸菌混合,搅拌均匀,在38℃条件下密封发酵5小时,得发酵物待用;

1.一种鸡汁麦麸紫薯条,其特征在于,由以下重量份原料制成:紫薯全粉400-430、马铃薯全粉110-120、香蕉50-60、鲜牛奶60-70、麦麸25-30、银耳15-20、干桂花5-6、鸡汤45-50、乳酸菌1-2、番茄60-70、灵芝5-6、黄精4-5、山药6-7、陈皮4-5、党参3-4、荷叶灰2-3、食盐适量、蔗糖适量、大豆油适量、水适量。
2.如权利要求1所述的一种鸡汁麦麸紫薯条的制备方法,其特征在于,包括以下步骤:
(1)将香蕉去皮,将香蕉果肉与鲜牛奶混合倒入粉碎机中,制成香蕉牛奶,再倒入锅中,加热至微沸,保持3-5分钟,再冷却待用;
(2)将干桂花用纱布袋装好,与麦麸、银耳混合放入锅中,加入适量水,加热焖煮1-1.5小时,将麦麸、银耳取出,与鸡汤混合打浆,将浆液与乳酸菌混合,搅拌均匀,在38-40℃条件下密封发酵5-6小时,得发酵物待用;
