本发明公开了一种黄晶果酒及其生产方法,以黄晶果为原料,同时配伍数味中药材,经黄晶果预处理、护色澄清、常温发酵、超低温发酵等步骤加工而成,生产工艺简单,生产出来的黄晶果酒富含多种氨基酸、维生素等,营养成分未流失,保持了黄晶果特有的风味,填补了黄晶果加工行业的空白;在配方中,加入松子仁、番石榴、麦冬、玉竹、黄芪、砂仁等中药成分,起到了着色和调味的双重作用,使酒液总体呈深金黄色,更加香醇爽口,同时,该果酒还具有促进消化,润肠通便的功效,能有效地增强身体的整体素质,提高身体的免疫力。

【技术领域】
本发明属于果酒酿造技术领域,具体涉及一种黄晶果酒及其生产方法。
【背景技术】
黄晶果又称加蜜蛋黄果、黄金果、黄星苹果,属山榄科胶木属。黄晶果为原产亚马逊河上游的热带果树,主要分布于安地斯山脉东侧,包括委内瑞拉、秘鲁、厄瓜多尔、巴西等,并传入澳洲北部及马来西亚、菲律宾等国。黄晶果成年树高4至16米,叶互生,单叶簇生枝端。花两性,单生或数朵丛生叶腋处,每结果枝开花20至280朵,浆果卵圆形或圆球形,柱头宿留,直径6至12厘米,果100克至600克,大者可达1500克,幼果绿色,成熟时黄色,果皮光滑,革质厚约5毫米。黄晶果风味独特,肉质柔软,果肉营养丰富,富含多种维生素,具有促进消化,增强体质,护肤美容的功效。
【发明内容】
本发明的目的在于以黄晶果为原料,同时配伍数味中药材,提供一种能有效促进消化,润肠通便的黄晶果酒及其制备方法。
为实现以上目的,本发明所采用的技术方案如下:一种黄晶果酒的生产方法,包括以下步骤:
(1)取表皮完整的新鲜黄晶果,用流动水清洗干净,沥干体表水,去皮去核,置入液氮环境中90~120s后取出,待黄晶果恢复常温后榨取黄晶果汁;
(2)按重量体积比向黄晶果汁中加入50g/L中药粉、0.1~0.2g/L果胶酶,搅拌均匀,加热至55~75℃,冷却并静置12~24h,以中药成分对果汁进行护色,避免破碎后的果肉果汁氧化褐变,并起到抑制杂菌的作用;
所述中药粉由以下重量份数的原料制成:松子仁20~30份、番石榴16~24份、麦冬10~15份、玉竹5~10份、黄芪6~12份、砂仁3~5份;
(3)将步骤(2)处理后的黄晶果汁通入已灭菌的发酵罐,向发酵罐中加入黄晶果汁质量的0.05~0.1%的酿酒酵母并发酵,温度20~28℃,发酵时间3天;
(4)向发酵罐中加入黄晶果汁质量的2~8%的中药粉,将发酵罐置于温度为-28~-18℃的氮气环境中,超低温发酵60~80天,精滤后勾兑成酒精度为6%,制得黄晶果酒。
优选的,在步骤(2)、(4)中,所述中药粉的制备方法如下:将松子仁、番石榴、麦冬、玉竹、黄芪、砂仁置于75℃的水中,浸泡30~60min后煎煮,水开后保持压力在0.4MPa、磁场条件下微沸45min,然后将上述煎煮液通过200~300目的滤网过滤,将滤液在0.03MPa条件下浓缩得到中药粉。
本发明所采用的几种配料的功能分别为:松子仁,味甘,性温,归肺、大肠、肝经,具有润肺止咳、润肠通便的功效;番石榴,味甘,性平,归大肠经,具有收敛止泻、健脾理胃的功效;麦冬,味甘、微苦,性微寒,入肺、心、胃经,具有润肺清心、益胃生津的功效;玉竹,味甘,性微寒,入肺、胃经,具有养阴润燥,生津止渴的功效;黄芪,味甘,性微温,入肺、脾经,具有补气固表,利尿托疮的功效;砂仁,味辛,性温,入脾、胃、肾经,具有理气解郁,开胃消食的功效。
本发明相对于现有技术,具有以下有益效果:
1.生产工艺简单,前期采用速冻榨汁,后期采用在氮气环境下超低温发酵,生产出来的黄晶果酒富含多种氨基酸、维生素等,营养成分未流失,保持了黄晶果特有的风味,填补了黄晶果加工行业的空白。
2.在配方中,加入松子仁、番石榴、麦冬、玉竹、黄芪、砂仁等中药成分,起到了着色和调味的双重作用,使酒液总体呈深金黄色,更加香醇爽口,同时,该果酒还具有促进消化,润肠通便的功效,能有效地增强身体的整体素质,提高身体的免疫力。

实施例1
一种黄晶果酒的生产方法,包括以下步骤:
(1)取表皮完整的新鲜黄晶果,用流动水清洗干净,沥干体表水,去皮去核,置入液氮环境中90s后取出,待黄晶果恢复常温后榨取黄晶果汁;
(2)按重量体积比向黄晶果汁中加入50g/L中药粉、0.1g/L果胶酶,搅拌均匀,加热至55℃,冷却并静置12h;
所述中药粉由以下重量份数的原料制成:松子仁20份、番石榴16份、麦冬10份、玉竹5份、黄芪6份、砂仁3份;
(3)将步骤(2)处理后的黄晶果汁通入已灭菌的发酵罐,向发酵罐中加入黄晶果汁质量的0.05%的酿酒酵母并发酵,温度20℃,发酵时间3天;
(4)向发酵罐中加入黄晶果汁质量的2%的中药粉,将发酵罐置于温度为-28℃的氮气环境中,超低温发酵60天,精滤后勾兑成酒精度为6%,制得黄晶果酒。
在步骤(2)、(4)中,所述中药粉的制备方法如下:将松子仁、番石榴、麦冬、玉竹、黄芪、砂仁置于75℃的水中,浸泡30min后煎煮,水开后保持压力在0.4MPa、磁场条件下微沸45min,然后将上述煎煮液通过200目的滤网过滤,将滤液在0.03MPa条件下浓缩得到中药粉。
实施例2
一种黄晶果酒的生产方法,包括以下步骤:
(1)取表皮完整的新鲜黄晶果,用流动水清洗干净,沥干体表水,去皮去核,置入液氮环境中105s后取出,待黄晶果恢复常温后榨取黄晶果汁;
(2)按重量体积比向黄晶果汁中加入50g/L中药粉、0.15g/L果胶酶,搅拌均匀,加热至60℃,冷却并静置18h;
所述中药粉由以下重量份数的原料制成:松子仁25份、番石榴20份、麦冬13份、玉竹8份、黄芪9份、砂仁4份;
(3)将步骤(2)处理后的黄晶果汁通入已灭菌的发酵罐,向发酵罐中加入黄晶果汁质量的0.08%的酿酒酵母并发酵,温度24℃,发酵时间3天;
(4)向发酵罐中加入黄晶果汁质量的5%的中药粉,将发酵罐置于温度为-20℃的氮气环境中,超低温发酵70天,精滤后勾兑成酒精度为6%,制得黄晶果酒。
在步骤(2)、(4)中,所述中药粉的制备方法如下:将松子仁、番石榴、麦冬、玉竹、黄芪、砂仁置于75℃的水中,浸泡45min后煎煮,水开后保持压力在0.4MPa、磁场条件下微沸45min,然后将上述煎煮液通过250目的滤网过滤,将滤液在0.03MPa条件下浓缩得到中药粉。
实施例3
一种黄晶果酒的生产方法,包括以下步骤:
(1)取表皮完整的新鲜黄晶果,用流动水清洗干净,沥干体表水,去皮去核,置入液氮环境中120s后取出,待黄晶果恢复常温后榨取黄晶果汁;
(2)按重量体积比向黄晶果汁中加入50g/L中药粉、0.2g/L果胶酶,搅拌均匀,加热至75℃,冷却并静置24h;
所述中药粉由以下重量份数的原料制成:松子仁30份、番石榴24份、麦冬15份、玉竹10份、黄芪12份、砂仁5份;
(3)将步骤(2)处理后的黄晶果汁通入已灭菌的发酵罐,向发酵罐中加入黄晶果汁质量的0.1%的酿酒酵母并发酵,温度28℃,发酵时间3天;
(4)向发酵罐中加入黄晶果汁质量的8%的中药粉,将发酵罐置于温度为-18℃的氮气环境中,超低温发酵80天,精滤后勾兑成酒精度为6%,制得黄晶果酒。
在步骤(2)、(4)中,所述中药粉的制备方法如下:将松子仁、番石榴、麦冬、玉竹、黄芪、砂仁置于75℃的水中,浸泡60min后煎煮,水开后保持压力在0.4MPa、磁场条件下微沸45min,然后将上述煎煮液通过300目的滤网过滤,将滤液在0.03MPa条件下浓缩得到中药粉。
下面结合试验例对本发明做进一步的详细说明。
本发明实施例2生产的黄晶果酒经50位消化不良、不思饮食的人群,连续食用10天,每日20ml,症状明显缓解人数为41人,有效率为82%;连续食用20天,每日20ml,症状明显缓解人数为47人,有效率为94%。上述试验结果说明,本发明的黄晶果酒对消化不良的患者具有促进消化,润肠通便的功效。

(2)按重量体积比向黄晶果汁中加入50g/L中药粉、0.1~0.2g/L果胶酶,搅拌均匀,加热至55~75℃,冷却并静置12~24h;
所述中药粉由以下重量份数的原料制成:松子仁20~30份、番石榴16~24份、麦冬10~15份、玉竹5~10份、黄芪6~12份、砂仁3~5份;
