本发明属于食品技术领域,特别是涉及一种VC蛋白饮料及其制备方法。
背景技术
牛奶是一种含有丰富蛋白质、脂肪的营养滋补品,而且容易消化吸收,牛奶中98%的蛋白质可以被人体吸收利用,其脂肪中含有多种脂肪酸、卵磷脂、胆固醇,并且含有大量的钙、磷、钾、铁、锰以及维生素A、B等营养成分,因此能起到保持人体器官机能与调节代谢的作用,故有人称之为“长寿的饮料”。
巴旦木又名巴旦杏或巴达木,是新疆维吾尔人民最珍视的干果,主要产在天山以南喀什绿洲的疏附、英吉沙、莎车、叶城等县。其营养成分为:营养比同重量的牛肉高6倍。据化验,仁内含植物油55-61%,蛋白质28%,淀粉、糖10-11%,并含有少量的胡萝卜素、维生素B1、B2和消化酶、杏仁素酶、钙、镁、钠、钾,同时含有铁、钴等18种微量元素。巴旦木的功效:儿童食用可促进大脑发育,老年人食用既可安神,又可健脑,可用于老年性脑萎缩、老年性痴呆症的食疗品,同时也可作为一般的健身食品用。将甜巴旦杏制成酱食用,取得了良好的效果,可用于肾虚患者的辅助治疗,因为其口感好,又无毒副作用,乐于被患者接受,所以可长期服用。维吾尔族人近视眼发病率明显较汉族人低,与本民族一些好的生活及饮食习惯有关。甜巴旦杏是维吾尔人经常食用的一种食品,从某一方面讲,在长期的食用中,甜巴旦杏发挥了它的明目作用。
核桃仁的营养成分很高,每100克核桃仁中含脂肪58-74克,主要为不饱和脂肪酸,蛋白质约18克,碳水化合物10克,以及维生素B1、B2、C、E和钙、磷、铁、锌、镁等微量元素。现代研究表明,核桃仁是营养丰富的干果,其中的脂肪油,主要是不饱和脂肪酸,该成分对降低胆固醇,防止动脉硬化有重要作用。所含的维生素E和卵磷脂,都是已被证实的抗衰老物质,所含的锌、镁等元素也有一定的抗衰老作用。药理试验证实,核桃仁可增加血清白蛋白的含量,这对提高机体的抵抗力也有重要意义。其功效为:补肾固精、温肺止咳、益气养血、补脑益智、润肠通便。适宜肺肾两虚、久咳久喘,包括老年慢性气管炎、支气管哮喘、肺气肿、肺心病者食用;适宜中老年人肾虚所致的小便频数、阳痿、遗精、腰脊酸软、腿脚无力、头昏眼花者食用;适宜产后病后体虚、神经衰弱、营养不良、气血不足之人食用;适宜青少年食用,核桃是能有效地改善儿童智力的健脑益智,增加记忆力的营养食品;适宜癌症患者食用,它所含的多种维生素以及锌、镁等,皆可防癌抗癌;适宜肠燥便秘和尿路结石之人食用;适宜高血压病、动脉硬化、冠心病之人食用;适宜妇人脏躁症食用;适宜作为美发美容品长期食用。
虽然上述三种物质具有丰富的营养和防病治病的功效,但是,由于巴旦木、核桃仁属于干果类物质,而牛奶则属于乳品,所以习惯上消费者很少同时食用。

为了解决上述问题,本发明的目的在于提供一种消费者可以常年食用,并且营养丰富的VC蛋白饮料及其制备方法。

本发明提供的VC蛋白饮料制备方法包括按顺序进行的下列步骤:
(1)将巴旦木、核桃仁分别洗净后用开水烫30-50秒,以去除表面细菌及外皮,然后加入1倍的水并打成巴旦木浆和核桃仁浆,之后用40目筛过滤后备用;
(2)将按照上述加入量称取的白砂糖用适量水溶解,之后用120目筛过滤后备用;
(3)将按照上述加入量称取的结冷胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
(4)将上述制成的白砂糖水、结冷胶浆以及按照上述加入量称取的巴旦木浆、核桃仁浆、牛奶、维生素C和山梨酸钾加入到调配罐中,加入余量的饮用水定容并搅拌均匀,之后在10-15Mpa的压力下用胶体磨均质,由此制成VC蛋白饮料;
(5)将上述VC蛋白饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个VC蛋白饮料的制备过程。
本发明提供的VC蛋白饮料是以巴旦木、核桃仁和牛奶作为主要原料而制成,同时加入维生素C,其不仅富含多种对人体有益的营养成分,口感好,而且消费者可以常年食用,因此市场应用前景十分广阔。另外,本制备方法简单、操作方便。
具体实施方式
下面结合具体实施例对本发明提供的VC蛋白饮料及其制备方法进行详细说明。
实施例1:
本实施例提供的VC蛋白饮料制备方法包括按顺序进行的下列步骤:
(1)将巴旦木、核桃仁分别洗净后用开水烫30-50秒,以去除表面细菌及外皮,然后加入1倍的水并打成巴旦木浆和核桃仁浆,之后用40目筛过滤后备用;
(2)将7公斤白砂糖用适量水溶解,之后用120目筛过滤后备用;
(3)将0.1公斤结冷胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
(4)将上述制成的白砂糖水、结冷胶浆以及3公斤巴旦木浆、10公斤核桃仁浆、5公斤牛奶、0.02公斤维生素C和0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,之后在10-15Mpa的压力下用胶体磨均质,由此制成VC蛋白饮料;
(5)将上述VC蛋白饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个VC蛋白饮料的制备过程。
实施例2:
本实施例提供的VC蛋白饮料制备方法包括按顺序进行的下列步骤:

(2)将14公斤白砂糖用适量水溶解,之后用120目筛过滤后备用;
(3)将0.2公斤结冷胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
(4)将上述制成的白砂糖水、结冷胶浆以及15公斤巴旦木浆、20公斤核桃仁浆、15公斤牛奶、0.02公斤维生素C和0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,之后在10-15Mpa的压力下用胶体磨均质,由此制成VC蛋白饮料;
(5)将上述VC蛋白饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个VC蛋白饮料的制备过程。
实施例3:
本实施例提供的VC蛋白饮料制备方法包括按顺序进行的下列步骤:

(3)将0.15公斤结冷胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
(4)将上述制成的白砂糖水、结冷胶浆以及9公斤巴旦木浆、15公斤核桃仁浆、10公斤牛奶、0.02公斤维生素C和0.03公斤山梨酸钾加入到调配罐中,加入余量的饮用水定容至100公斤并搅拌均匀,之后在10-15Mpa的压力下用胶体磨均质,由此制成VC蛋白饮料;
(5)将上述VC蛋白饮料在135℃的温度下采用UHT方法灭菌5秒,然后无菌灌装,或灌装后在85-90℃的温度下灭菌15分钟,由此即可完成整个VC蛋白饮料的制备过程。
Claims (2)
1.VC蛋白饮料,其特征在于:所述的巴旦木浆和核桃仁浆的浓度为50%。
2.一种如权利要求1所述的VC蛋白饮料的制备方法,其特征在于:所述的制备方法包括按顺序进行的下列步骤:
(1)将巴旦木、核桃仁分别洗净后用开水烫30-50秒,以去除表面细菌及外皮,然后加入1倍的水并打成巴旦木浆和核桃仁浆,之后用40目筛过滤后备用;
(2)将按照上述加入量称取的白砂糖用适量水溶解,之后用120目筛过滤后备用;
(3)将按照上述加入量称取的结冷胶加入到适量的40-60℃温水中,然后进行强力搅拌,以使其溶解,之后用胶体磨进行磨浆;
(4)将上述制成的白砂糖水、结冷胶浆以及按照上述加入量称取的巴旦木浆、核桃仁浆、牛奶、维生素C和山梨酸钾加入到调配罐中,加入余量的饮用水定容并搅拌均匀,之后在10-15Mpa的压力下用胶体磨均质,由此制成VC蛋白饮料;
