本发明涉及一种牛肉干的生产方法,将符合卫生标准的鲜牛肉整理后,切成牛肉坯与原汤及辅料共煎熬至汁干液净,再送入带风扇电炉烘干,烘干后的牛肉干经轧松机横竖各轧1-2次,使牛肉干纤维变松起绒毛,即为成品。本发明在保持传统工艺不变情况下,增加了轧松工艺,其产品具有松软可口,不塞牙的优点。

一种牛肉干的生产方法
本发明涉及一种牛肉干的生产方法。
牛肉干是我国的传统美食,其生产一般是经过:原料整理→切坯→熬汁水→脱水四个阶段,用这种方法生产的牛肉干,其特点是柔韧甘美、耐嘴嚼,但对于牙力不佳者却不易食用。
本发明的目的是提供一种生产松软型牛肉干的方法,其产品适合各年龄层次的人食用。
本发明的加工方法是:将符合卫生标准的鲜瘦牛肉去筋、膜、肥脂后萃取血水、污物,经清水过漂、肉块过红,切成条、片等不规格的坯料,再将过漂牛肉的原汤去除泡沬后加入茴香、姜片、酱油、味精、黄酒等辅料煎熬,至浓度增加后再下坯料,文火取汁,直至汁干液净,捞起卤汁之牛肉干入带风扇电炉烘干后,再送入轧松机横竖各轧1-2次,使牛肉干纤维变松起绒毛即为成品。
以下结合附图和实施例说明本发明的详细内容。
附图是本发明的工艺流程图。
1、整理原料:选取符合卫生标准的鲜牛肉的前后腿、瘦肉,去筋、膜、肥脂后切成斤重大小方条块,放入清水浸泡约1小时,萃取血水、污物,再经清水过漂,约15分钟肉块过红后捞起,原汤去除泡沫后待用。
2、切坯:将方条块牛肉按条、片等不规格切成牛肉坯。
3、熬汁水:将茴香、姜片、酱油、味精、黄酒等辅料放入原汤中煎熬,至浓度增加,再下切好的牛肉坯料,文火取汁,直至汁干液净。
4、脱水:捞起卤汁之牛肉干,摊放在筛网上,送入带风扇的电炉烘干,温度控制在30℃-70℃,待肉干爽质硬时即可出炉。
5、轧松:将干爽质硬的牛肉干送入轧松机横竖各轧1-2次,使牛肉干纤维变松起绒毛,即为成品。
本发明的牛肉干生产方法在传统工艺不变情况下,增加了轧松工艺,其产品具有松软可口,不塞牙的优点。

1、一种牛肉干的生产方法,将符合卫生标准的鲜瘦牛肉去筋、膜、肥脂后萃取血水、污物,经清水过漂、肉块过红,切成条、片等不规格的坯料,再将过漂牛肉的原汤去除泡沫后加入茴香、姜片、酱油、味精、黄酒等辅料煎熬,至浓度增加后再下坯料,文火取汁,直至汁干液净,捞起卤汁之牛肉干入带风扇电炉烘干,其特征是:将烘干的牛肉干再送入轧松机横竖各轧1-2次,使牛肉干纤维变松起绒毛。
