荞麦是一种很受欢迎的粗粮,现在流行三高人群积极食用荞麦制品,来达到追求健康的目的。荞麦大多是制粉做成荞麦面品食用,因为色泽比较灰暗,看相不好,味道也不是太佳,所以,造成荞麦的应用面有一定的限制。经过研究发现用荞麦面为主,加入大麦面粉,再加入适当的大米粉,做成人工米,其口感就好了许多。如果加入苦荞全棵提取物,加强降血糖,降血脂的作用,制成的荞麦米,就更有价值,深受欢迎。

本发明的目的是这样实现的:a、选用荞麦粒、干燥、打粉,备用,过筛剩下的荞麦麸皮收集另做备用;b、取大麦粒,干燥,打粉,备用;过筛剩下的大麦麸皮、收集另做备用;c、取优级大米,打粉,备用;d、取苦荞全棵,切段,连叶一同采用超临界萃取工艺,获得苦荞提取浓缩液,备用;e、取银耳,发泡,打浆,低温熬制成稠胶浆,备用;f、取a步骤过筛剩下的荞麦麸皮50%、b步骤过筛剩下的大麦麸皮50%,混合提取获得二麸皮提取物,备用;g、取a步骤获得荞麦粉30-50%、b步骤获得的大麦粉20%、c步骤获得的大米粉12-32%、d步骤获得的苦荞提取浓缩液占总量的7%、e步骤获得的银耳稠胶浆占总量的9%、f步骤获得的二麦麸提取物2%,混合后入搅拌机进行搅拌均匀,成综合物料,通过膨化挤压机和模具,制成大米状颗粒,干燥,包装,即得。

荞麦的营养价值:1.荞麦蛋白质中含有丰富的赖氨酸成分,铁、锰、锌等微量元素比一般谷物丰富,而且含有丰富膳食纤维,是一般精制大米的10倍,所以荞麦具有很好的营养保健作用。2.荞麦含有丰富的维生素E和可溶性膳食纤维,同时还含有烟酸和芦丁(芸香甙)。3.荞麦含有的烟酸成分能促进机体的新陈代谢,增强解毒能力。4.据分析:荞麦其籽粒含蛋白质7.94%~17.15%、脂肪2.00%~3.64%、淀粉67.45%~79.15%、纤维素1.04%~1.33%。日本学者研究报导:荞麦的营养效价指标为80~92(小麦为70,大米为50)。5.荞麦中的某些黄酮成分还具有抗菌、消炎作用,因此,荞麦还有“消炎粮食”的美称。
大麦的营养价值:大麦性凉、味甘、咸,归脾、胃经;具有益气宽中、消渴除热、并且有回乳的功效;对滋补虚劳、强脉益肤、充实五脏、消化谷食、止泻、宽肠利水、小便淋痛、消化不良、饱闷腹胀有明显疗效。大麦具坚果香味,蛋白质、钙、磷含量中等,含少量B族维生素。因为大麦含谷蛋白(一种有弹性的蛋白质)量少,所以不能做多孔面包,可做不发酵食物,在北非及亚洲部分地区尤喜用大麦粉做麦片粥,大麦是这些地区的主要食物之一。珍珠麦(圆形大麦米)是经研磨除去外壳和麸皮层的大麦粒,加入汤内煮食,见於世界各地。

苦荞全棵:即苦荞麦生长期全株入药,性寒;归脾、胃、大肠经。健脾消积;下气宽肠;解毒敛疮。主肠胃积滞;泄泻;痢疾;绞肠癌;白沙;带下;自汗;盗汗;疱疹;丹毒;痈疽;发背;瘰病;烫火伤。富含苦荞黄酮、多种维生素、微量元素、硒、铬等有益人体健康的成分,特别是降血糖效果较佳。1.增强血管弹性:荞麦中含有丰富的维生素P,可以增强血管的弹性、韧性和致密性。又有保护血管的作用。2.降血脂:荞麦能促进细胞增生,降低血脂和胆固醇、软化血管,保护视力预防心脑血管出血,调节血脂,扩张冠状动脉并增加其血流量等。3.促进新陈代谢:荞麦中丰富的烟酸,能增强解毒能力,促进新陈代谢。4.防治糖尿病:荞麦中的铬,更是一种理想的降糖物质,能增强胰岛素的活性,加速糖代谢,促进脂肪和蛋白质的合成。还有抑制血块的形成,具有抗血栓的作用。5.止咳平喘:荞麦具有抗菌、消炎、止咳、平喘、祛痰的作用。
银耳:临床流行病学研究发现,糖尿病、高血脂、动脉粥样硬化及高血压均与膳食纤维素摄入不足有关,银耳中膳食纤维素很高,且富含胶质,有降血糖作用。含胶质利于米粒着附极有益于大米感观显得光亮,有嚼劲。

a、选用荞麦粒、干燥、打粉,备用,过筛剩下的荞麦麸皮收集另做备用;b、取大麦粒,干燥,打粉,备用;过筛剩下的大麦麸皮、收集另做备用;c、取优级大米,打粉,备用;d、取苦荞全棵,切段,连叶一同采用超临界萃取工艺,获得苦荞提取浓缩液,备用;e、取银耳,发泡,打浆,低温熬制成稠胶浆,备用;f、取a步骤过筛剩下的荞麦麸皮50%、b步骤过筛剩下的大麦麸皮50%,混合提取获得二麸皮提取物,备用;g、取a步骤获得荞麦粉50%、b步骤获得的大麦粉20%、c步骤获得的大米粉12%、d步骤获得的苦荞提取浓缩液占总量的7%、e步骤获得的银耳稠胶浆占总量的9%、f步骤获得的二麦麸提取物2%,混合后入搅拌机进行搅拌均匀,成综合物料,通过膨化挤压机和模具,制成大米状颗粒,干燥,包装,即得。

1.一种荞麦米的制作工艺,制备方法如下:a、选用荞麦粒、干燥、打粉,备用,过筛剩下的荞麦麸皮收集另做备用;b、取大麦粒,干燥,打粉,备用;过筛剩下的大麦麸皮、收集另做备用;c、取优级大米,打粉,备用;d、取苦荞全棵,切段,连叶一同采用超临界萃取工艺,获得苦荞提取浓缩液,备用;e、取银耳,发泡,打浆,低温熬制成稠胶浆,备用;f、取a步骤过筛剩下的荞麦麸皮50%、b步骤过筛剩下的大麦麸皮50%,混合提取获得二麸皮提取物,备用;g、取a步骤获得荞麦粉30-50%、b步骤获得的大麦粉20%、c步骤获得的大米粉12-32%、d步骤获得的苦荞提取浓缩液占总量的7%、e步骤获得的银耳稠浆胶占总量的9%、f步骤获得的二麦麸提取物2%,混合后入搅拌机进行搅拌均匀,成综合物料,通过膨化挤压机和模具,制成大米状颗粒,干燥,包装,即得。
