本发明涉及速食类食品及其加工工艺技术领域,主要是一种苦瓜莲子心鲜竹叶清火即食米粉及其制备方法。
背景技术
市场上即食米粉包装简易且卫生,可直接食用,另外也方便保存且时间长、携带食用非常方便,因而市场需求度大。但现有市场上即食米粉的加工原料单一,所含的营养元素少,营养不全面,长期食用影响身体健康,因而需要增加即食米粉的原料,从多种类原料中获取更多的营养,另外食用即食米粉时间长,容易上火,因而需要原料内能有清火去火的原材料。
竹叶是中医一味传统的清热解毒药,被中华人民共和国卫生部批准列入"药,食两用的天然植物",竹叶提取物有效成分包括黄酮、酚酮、蒽醌、内酯、多糖、氨基酸、微量元素等,具有优良的抗自由基、抗氧化、抗衰老、抗疲劳、降血脂、预防心脑血管疾病、保护肝脏、扩张毛细血管、疏通微循环、活化大脑、促进记忆、改善睡眠、抗癌症、美化肌肤等功效。

小米210-222、鲜竹叶10-11、食用仙人掌8-9、荞麦仁8-9、苹果皮7-8、高良姜汁6-7、乌饭果7-8、莲子心13-14、兰香子5-6、黑糖4-5、大叶种茶树籽油3-4、葡萄籽5-6、苦瓜冻干粉13-14、柴胡1.7-2、勿忘我1.5-1.9、蒲草根1-1.3、白芷1.5-1.8、营养添加剂13-14和水适量;
所述的营养添加剂,由以下重量份原料制成:
沙棘果粉12-13、红葡萄酒3-3.5、干荷花3-4、鱼籽5-6、三文鱼片4-5、蛋黄果7-9、贡菜6-7、香蕉泥6-7、苦瓜根1.4-2、赶黄草1-1.3、马耳草0.9-1、和水适量;
所述的营养添加剂的制备方法:
(1)将苦瓜根、赶黄草、马耳草混在一起,加入6-7倍的水水提2-3次,过滤取中药提取液,将中药提取液进行喷雾干燥,取中药提取粉;
(2)将三文鱼片在盐水中用大火煮,煮沸后捞出三文鱼片并将其冲洗,而后将三文鱼片与鱼籽、红葡萄酒混合放置在密闭容器内,进行隔水蒸煮,蒸熟后取出鱼籽和三文鱼片,将它们与干荷花一起冷冻干燥,最后粉碎成粉末;
(3)将贡菜、蛋黄果剁碎后一起研磨成浆,取浆料,将浆料与香蕉泥、沙棘果粉一起搅拌混匀,而后进行高温烘培,烘焙完成后磨成粉状,再将得到的粉与步骤1及步骤2的粉料搅拌混合在一起。

(3)将葡萄籽和荞麦仁在大叶种茶树籽油内煎炒,炒熟后将葡萄籽和荞麦仁自然风干,再混合苹果皮一起磨成粉,再将粉与苦瓜冻干粉、营养添加剂混合;
(4)将鲜竹叶剁碎后与小米、莲子心一起,加水焖煮,煮熟后将上述3个步骤所得的物料全部混合拌入其内,加水继续煮,同时拌入黑糖不断搅拌,直至煮成粥糊状,再烘干磨成粉,最后袋装。
