Abstract

PURPOSE: To prepare instant rice gruel which can be served within several minutes only by adding boiling water or hot water, by roasting rice grains, boiling and swelling the grains in boiling water immediately after roasting, immersing the boiled rice thus prepared in water to separate each rice grain, draining water, and freeze-drying the rice in vacuum.
CONSTITUTION: Rice containing usually ≥10% of water (e.g. ordinary nonglutinous rice) is roasted over a slow fire to a water content of 5W7%, and thrown into boiling water without delay. The amount of the boiling water is pref. 3.0W 3.5pts.wt. per 1pt.wt. of roast rice. The boiled rice is immersed in water to separate rice grains each other, and drained in a basket made of metal wire or bamboo. The drained and pref. properly air-dried boiled rice grains are frozen in a freezer adjusted e.g. at -20W-40°C, and dried in vacuum raising the temperature of the grains to obtain the objective instant rice gruel.
