卤制品是中国传统的风味熟食制品,其制作方法是先调好卤制料,然后将原料和卤制料混合并精心煮制而成,传统的卤制料一般都是个人凭经验和个人的口味加入各种不同的调味料进行混合制成,不仅需要分别购置各种不同的调味料浪费大量的人力物力,而且还会因为调味料加入量的不好控制而影响卤制食物的味道,卤制料中的调味料用量要适当,过多则卤制成品药味大、苦涩味重、色泽暗;过少则卤制成品香味不足、口感差。

小茴香:温肾暖肝,行气止痛,和胃。主治寒疝腹痛,睾丸偏坠,脘腹冷痛,食少吐泻,胁痛,肾虚腰痛,痛经;
青花椒:具有芳香健胃、温中散寒、除湿止痛、杀虫解毒、止痒解腥的功效,可除各种肉类的腥气,促进唾液分泌,增加食欲;还能使血管扩张,从而起到降低血压的作用;
香叶:祛风除湿,行气止痛。主治风湿痹痛,疝气,阴囊湿疹,疥癣;
白豆蔻:化湿行气,温中止呕,开胃消食。主治湿阻气滞,脾胃不和,脘腹胀满,不思饮食,湿温初起,胸闷不饥,胃寒呕吐,食积不消;芳香气浓,味辛略带辣且开胃消食;

山楂干:消食健胃,行气散瘀。主治饮食积滞,脘腹胀痛,泄泻痢疾,血瘀痛经、经闭,产后腹痛、恶露不尽,疝气或睾丸肿痛,高血脂症;山楂干含多种维生素、山楂酸、酒石酸、柠檬酸、苹果酸等,还含有黄酮类、内酯、糖类、蛋白质、脂肪和钙、磷、铁等矿物质,所含的解脂酶能促进脂肪类食物的消化,促进胃液分泌和增加胃内酶素等功能。此外,山楂干中含有山萜类及黄酮类等药物成分,具有显著的扩张血管及降压作用,有增强心肌、抗心律不齐、调节血脂及胆固醇含量的功效;

猪大骨头:除含蛋白质、脂肪、维生素外,还含有大量磷酸钙、骨胶原、骨黏蛋白等。猪大骨头性温,味甘、咸,入脾、胃经,有补脾气、润肠胃、生津液、丰机体、泽皮肤、补中益气、养血健骨的功效;

甘草33-37克、陈皮54-58克、砂仁14-18克、丁香28-32克、
桂皮73-77克、孜然66-70克、八角茴香75-85克、杜仲13-17克、
山楂干24-28克、辛夷8-12克、木香24-28克、荜茇43-47克、
山柰50-55克、桂丁53-57克、香砂5-9克、槟榔8-12克、
灵香草16-20克、白胡椒28-32克、生姜95-105克、香排草6-10克。
4.根据权利要求3所述的一种肉类卤制料,其特征是:所述料包由以下重量的原料组成:
罗汉果5克、九里香12克、小茴香65克、青花椒60克、
香叶56克、白豆蔻18克、草果28克、高良姜40克、
香茅22克、南姜16克、甘松6克、白芷75克、
甘草35克、陈皮56克、砂仁16克、丁香30克、
桂皮75克、孜然68克、八角茴香80克、杜仲15克、
山楂干26克、辛夷10克、木香26克、荜茇45克、
山柰53克、桂丁55克、香砂7克、槟榔10克、
灵香草18克、白胡椒30克、生姜100克、香排草8克。
5.根据权利要求1或2所述的一种肉类卤制料,其特征是:所述植物油为花生油、玉米油、豆油、亚麻油、蓖麻油、橄榄油或菜籽油。
6.一种如权利要求1所述的肉类卤制料的制备方法,其特征是:包括如下步骤:
将10-20斤植物油放入锅中加热,然后将4-8斤猪大骨头、5-7斤猪肉皮以及1只老母鸡过油炸至焦黄色出香味即可,然后向锅中加入100斤水,再放入上述重量的料包、食盐800-1500克、蚝油180-220克、白砂糖380-420克、鸡精90-110克、味精140-160克及香油18-22克,搅拌均匀后继续加热熬制,待开锅后转为小火继续熬制55-65分钟,然后将猪大骨头、猪肉皮及老母鸡捞出,即得该肉类卤制料。
7.根据权利要求6所述的一种肉类卤制料的制备方法,其特征是:包括如下步骤:
将10-20斤植物油放入锅中加热,然后将4-8斤猪大骨头、6斤猪肉皮以及1只老母鸡过油炸至焦黄色出香味即可,然后向锅中加入100斤水,再放入上述重量的料包、食盐800-1500克、蚝油200克、白砂糖400克、鸡精100克、味精150克及香油20克,搅拌均匀后继续加热熬制,待开锅后转为小火继续熬制60分钟,然后将猪大骨头、猪肉皮及老母鸡捞出,即得该肉类卤制料。
