背景技术
[0002] 蛋类如鸡蛋是人们日常生活中不可或缺的食品,它含有丰富的蛋白质和其它营养 成分。据中国农业科学院的统计,我国是世界上生产和消费鸡蛋数量最多的国家,每年人均 消费230枚左右。但与如此大的消费量不相称的是,我国鸡蛋的生产技术水平、蛋品质量都 还存在很多传统问题。如果蛋制品达不到食用健康的要求,就谈不上对人体营养健康的补 充。蛋类又有着它的特殊性,不像蔬菜、肉类可以直观地看到并通过经验判断其品质,所以, 人们反而忽略了天天都在食用的鸡蛋,它的营养问题依然存在。鸡蛋品质下降,营养失衡, 致病菌、抗生素、激素、农药残留严重超标,严重影响了人们每天对鸡蛋营养的摄取和强身 健体的需求。
[0003] 我国民间早就存在鸡蛋的卤制方法,它主要是用酱油、八角、肉桂、花椒、盐作为卤 汤的配料,这种卤制的鸡蛋仅仅是为了追求口味而已,并不具备保健功能。并在卤制过程中 完全采取作坊式作业,不能形成较大规模。尤其对鸡蛋表面杀菌方面更是严重不足,致使成 品不能远距离运输和长期存放。
发明内容
[0004] 本发明的目的是为了解决现有技术中存在的不足而提供一种具有保健作用、可以
工业化生产、能够长期存放的具有保健功能的中药卤制蛋的生产方法。
[0005] 本发明所述具有保健功能的中药卤制蛋的生产方法是:
-用一只净重为2千克的白条鸡与25千克水加50克精盐熬制
-在鲜汤内放入姜、葱、精盐、味精、糖色和香料包,用文火熬煮
-将原料蛋在巴氏消毒液和水的体积比为7 : IOO的消毒水中
[0006] 1、l鲜汤的制备-90分钟,温度为IO(TC ; [0007] 1、2卤汤的制备-20分钟;
[0008] 1、3蛋表面消毒-浸泡20分钟后用5(TC温水冲洗蛋表面;
[0009] 1、4蛋的熟化——将冲洗后的原料蛋放入蒸锅中热蒸15分钟后去壳;
[0010] 1、5蛋的卤制——将10千克去壳蛋放入20千克卤汤内,在105t:下保温60分钟;
[0011] 1、6卤制好的蛋品真空包装并在杀菌锅内用蒸汽杀菌30分钟。
[0012] 每10千克去壳蛋和20千克卤汤中所用的香料包内含有:
[0013] 筚拨10克砂仁10克肉蔻15克 肉桂l克 甘草10克
[0014] 三奈15克甘菘5克 花椒20克 砂仁10克豆蔻5克
[0015] 草果15克丁香15克小茴香20克生姜30克白芷20克
[0016] 辛庚10克香叶15克八角15克 当归10克。
[0017] 每10千克去壳蛋和20千克卤汤中还使用:[0018] 姜30克大葱150克绍酒100克冰糖450克味精15克精盐200克。 [0019] 所说蒸气杀菌的温度为120°C。
[0020] 所说的糖色是用450克冰糖与750克精炼菜油一同在锅内用文火熬制成深红色时
加入2千克沸水搅匀而成。
[0021] 所用的葱是带有根须的大葱。
[0022] 本发明所产生的积极效果在于:
[0023] 1、在卤制蛋品制作中所用的主要配料是在我国具有悠久历史的既是药品又是食 品的多味中草药,经合理配伍和科学精细加工后,适量使用既保证卤蛋的色香味形,又具有 独特诱人的口味,更增强了卤蛋的养生保健、养颜美容,强身健体,补中益气的食补功效。通 过食用卤蛋可以调整机体生理功能、降低血脂、提高肝脏生理功能及解毒能力,活化组织、 活化细胞,从而使机体恢复生理平衡,提高机体抗病能力和活力。采用多味传统中草药调味 并结合鸡蛋本身的高营养结构,长期食用可以增强人体免疫活力,固本扶正,抵御疾病的侵 袭,能达到滋血补气、增强体质的目的。
[0024] 2、通过此研制调配的卤制蛋品生产方法,可有效避免蛋体本身所存在的问题从而 影响人体正常的营养摄取,在生产过程中首先通过科学有效的消毒和杀菌,完全杀灭蛋壳 表面存在的沙门氏菌和大肠杆菌。这在传统制作方法中是最容易忽略的一个环节。而后经 过多味中草药的卤制调和,则有效避免了很多人身体本身所存在的机能弱化问题,也在一 定程度上提高了人体对蛋体营养的正常摄取。加之现在人普遍摄入脂肪和胆固醇摄入过 多,而此运用此法生产的保健蛋品所提供的中草药功效则有效改善了这一问题,提高了人 体免疫和吸收功能。既有效吸收了人体每日所必须的营养,又达到强身健体补中益气的效 果。

保质期可达180天,可有效地解决长途运输和长期存放的难题,也解决了市场供应问题。
具体实施方式
[0028] 以下实施例中仅以鸡蛋为例。

[0030] 将筚拨10克砂仁10克 肉蔻15克 肉桂1克 甘草10克
[0031] 三奈15克 甘菘5克 豆蔻5克 草果15克 丁香15克
[0032] 小茴20克 白芷20克 辛庚10克 香叶15克 八角15克
[0033] 当归10克
[0034] 按量装入宽松的纱布袋中扎口备用。
[0035] 2、糖色的制备:[0036] 将块状冰糖先在火上炙烤一下并敲碎,与750克精炼菜油一同入锅用小火熬至深 红色,掺入2千克沸水搅匀即成糖色。 [0037] 3、鲜汤的制备:
[0038] 用一只净重为2千克的白条鸡与25千克水加50克精盐熬制90分钟,温度为 100°C。
[0039] 4、卤汤的制备:
[0040] 锅置火上,倒入20千克鲜汤,汤中放入拍碎的生姜30克、精盐200克、带须洗净的 大葱150克、绍酒100克、糖色、味精15克,再放入香料包,烧沸后改用文火熬制20分钟,温 度控制在IO(TC。 [0041] 5、蛋表面消毒:
[0042] 将原料鸡蛋在巴氏消毒液和水的体积比为7 : 100的消毒水中浸泡20分钟后用
5(TC温水冲洗蛋表面。
[0043] 6、鸡蛋的熟化:
[0044] 将冲洗过的鸡蛋放入卤汤中蒸煮15分钟至熟。
[0045] 7、将10千克熟化的鸡蛋完全去壳后放入20千克的卤汤中在105t:下保温卤制60 分钟。
[0046] 8、将出锅的卤蛋放置在漏台上晾约15分钟,待蛋表面无明显卤汤残留即可入袋
包装,一般一袋装1到3枚为宜。
[0047] 9、用真空包装机将袋内空气抽干,封口。
[0048] 10、将真空包装放到杀菌锅中二次杀菌,时间为30分钟,温度控制在125°C。
[0049] 11、出锅后检验无涨袋漏气现象后即可长期保存,保质期为常温下180天。
[0050] 在所述的卤汤配方中加有糖色,且色呈棕红,称为红卤,若去掉配方中的糖色便成
为白卤。在卤汤中加入干辣椒,这样就变成辣卤了。即不同口味的卤汤可配置卤制成多中
风味的卤蛋产品,并实现产品的系列化,进而满足不同口味群体的消费者。
[0051] 在卤汤中一般应加入糖色,如此才会使卤汤有回甜味。而加入了糖色以后,便可以
不再加甘草。但从药物性能角度看,甘草有调和诸味及提鲜的作用。因此,在加了糖色以后,
卤汤中仍可考虑加10到15克甘草。
[0052] 在所述香料包中所含各味中草药的药性如下:
[0053] 1、甘菘:甘菘气味辛香,近似强烈的松节油气味,具有理气止痛、开郁醒脾的作用,
是被用作治疗胸腹胀痛、胃痛呕吐、食欲不振、消化不良的一味中药。在卤汤中加入此香料,
其香味浓郁。不过要注意量的把握,一次用量不宜超过5克,否则香气"腻人"。

Claims (6)
- 一种具有保健功能的中药卤制蛋的生产方法,其特征是本方法包括以下步骤:1.1鲜汤的制备——用一只净重为2千克的白条鸡与25千克水加50克精盐熬制90分钟,温度为100℃;1.2卤汤的制备——在鲜汤内放入姜、葱、精盐、味精、糖色和香料包,用文火熬煮20分钟;1.3蛋表面消毒——将原料蛋在巴氏消毒液和水的体积比为7∶100的消毒水中浸泡20分钟后用50℃温水冲洗蛋表面;1.4蛋的熟化——将冲洗后的原料蛋放入蒸锅中蒸煮15分钟后去壳;1.5蛋的卤制——将10千克去壳蛋放入20千克卤汤内,在105℃下保温60分钟;1.6卤制好的蛋品真空包装并在杀菌锅内用蒸汽杀菌30分钟。
- 2. 如权利要求1所述具有保健功能的中药卤制蛋的生产方法,其特征是每10千克去壳 蛋和20千克卤汤中所用的香料包内含有:筚拨10克砂仁10克肉蔻15克肉桂1克甘草10克 三奈15克 甘菘5克 花椒20克 砂仁10克 豆蔻5克 草果15克 丁香15克 小茴20克 生姜30克 白芷20克 辛庚10克 香叶15克 八角15克 当归10克。
- 3. 如权利要求1所述具有保健功能的中药卤制蛋的生产方法,其特征是每10千克去壳 蛋和20千克卤汤中使用:姜30克大葱150克绍酒100克冰糖450克味精15克精盐200克。
- 4. 如权利要求1所述具有保健功能的中药卤制蛋的生产方法,其特征是所说蒸气杀菌 的温度为120°C。
- 5. 如权利要求1所述具有保健功能的中药卤制蛋的生产方法,其特征是所说的糖色是 用450克冰糖与750克精炼菜油一同在锅内用文火熬制成深红色时加入2千克沸水搅匀而 成。
- 6. 如权利要求1所述具有保健功能的中药卤制蛋的生产方法,其特征是所用的葱是带 有根须的大葱。
