Abstract
本发明公开了一种灵芝罗汉果超微粉固体饮料及其制备方法,该固体饮料由以下重量百分数的组份组成:灵芝超微粉20~80%,罗汉果超微粉20~80%。制备方法,包括如下工艺步骤:(1)制备灵芝超微粉;(2)制备罗汉果超微粉;(3)称取灵芝超微粉20~80%,罗汉果超微粉20~80%,将灵芝超微粉与罗汉果超微粉混合,即得到灵芝罗汉果超微粉固体饮料。本发明采用超微粉碎技术,既保持了灵芝和罗汉果的所有功效成分,又克服了灵芝的苦味,配比科学合理,达到性味平衡互补、功效叠加之功效,且不添加任何辅料和食品添加剂,颗粒细腻、色泽均匀、易分散、易冲调,能完全饮用不留残渣,是一种具有保健养颜功能的健康饮品。

本发明属于固体饮料技术领域,具体地说,涉及一种灵芝罗汉果超微粉固体饮料及其制备方法。
背景技术
灵芝[Ganoderma Lucidum(Leyss.ex Fr.)Karst.]为真菌界真菌门担子菌亚门层菌纲无隔担子菌亚纲多孔菌目灵芝科灵芝属灵芝的子实体,别称赤芝、红芝、木灵芝、菌灵芝、万年蕈、灵芝草。目前,已知灵芝属真菌约100余种,分布最广的为赤芝,其次为紫芝,还有树舌、松杉灵芝和簿树芝等均供药用。我国药典中的灵芝是指赤芝及紫芝子实体两种,灵芝也是列入美国药典的仅10种法定中药材之一。灵芝药用在我国已有2000多年的历史,被历代医药家视为滋补强壮、扶正固本的神奇珍品,灵芝也被国家卫生部指定为新食品资源。灵芝为药食同源之品,被医学界誉为“上上品”,是治病、养生、美容健体的佳品。《神农本草经》记载“赤芝,味苦平。主胸中结,益心气,补中,增慧智,不忘。久食,轻身不老,延年神仙。一名丹芝。”李时珍在《本草纲目》中也指出灵芝“增智慧,好颜色”。现代研究表明,灵芝主要含有氨基酸、多肽、蛋白质、真菌溶菌酶,以及糖类(还原糖和多糖)、麦角甾醇、三萜类、香豆精甙、挥发油、硬脂酸、苯甲酸、生物碱、维生素B2及C等;孢子还含甘露醇和海藻糖。
药理研究证明,灵芝具有多方面的生物活性:
(1)保肝解毒:灵芝对多种理化及生物因素引起的肝损伤有保护作用,能促进肝脏对药物、毒物的代谢,可用于治疗慢性中毒、各类慢性肝炎、肝硬化、肝功能障碍。
(2)治疗糖尿病:服用灵芝后可取代胰岛素抑制脂肪酸的释出,可改善血糖、尿糖等症状,灵芝中的水溶性多糖,可减轻非胰岛素依赖型糖尿病的发病程度。
(3)改善心血管系统:动物实验和临床试验均表明,灵芝可有效地扩张冠状动脉,增加冠脉血流量,改善心肌微循环,增强心肌氧和能量的供给,因此,对心肌缺血具有保护作用,可广泛用于冠心病、心绞痛等的治疗和预防。对高血脂病患者,灵芝可明显降低血胆固醇、脂蛋白和甘油三脂,并能预防动脉粥样硬化斑块的形成。对于粥样硬化斑块已经形成者,则有降低动脉壁胆固醇含量、软化血管、防止进一步损伤的作用,并可改善局部微循环,阻止血小板聚集。这些功效对于多种类型的中风有良好的防治作用。
(4)肌肤美白:灵芝含有抑制黑色素的成分及多种对皮肤有益的微量元素等,这些成分能够通过减少人体自由基,加速细胞的再生,增加皮肤的厚度并增加胶原质,达到丰润皮肤、消除细纹与皱纹的效果。其中的多糖成分能够通过保持和调节皮肤水性,恢复皮肤弹性,使皮肤湿润、细腻。灵芝多糖GLA、GLB、GLC对超氧阴离子(O)自由基的产生和红细胞脂质过氧化均有抑制作用,并对羟基自由基(·OH)有清除作用,具有超氧化物歧化酶样活性,是灵芝延缓衰老的重要因素。
此外,灵芝还具有抗炎、抗肿瘤、免疫调节等作用。
灵芝性平偏温,味苦,气特殊而香,入心经,能补心血、益心气、安心神,故可用于心神不宁,失眠,惊悸,虚劳;入肺经,补益肺气,温肺化痰,止咳平喘;可单用研末吞服,或与当归、党参、五味子、五味子等其它药材配伍。
灵芝的食用方式主要有:(1)灵芝饮品:取灵芝(整芝)切片后加清水,放置文火中炖煮2小时,取其汁加入蜂蜜即可饮用。(2)灵芝水煎法:将灵芝切片,放入罐内,加水煎煮,一般煎煮3~4次。把所有煎液混和,分次口服。(3)灵芝泡酒:将灵芝剪碎放入白酒瓶中密封浸泡,三天后,白酒变成棕红色时即可喝,还可加入冰糖或蜂蜜。此外,还有灵芝炖肉、灵芝煲汤等。
灵芝传统的药用食用方法多为煎煮,水提或醇提,主要提取出灵芝中的多糖成分。现代技术有对灵芝进行超微粉碎后食用的,如申请号:CN200810073463“有机富硒灵芝保健食品及其制备方法”,采用有机富硒灵芝与有机虫草配伍,并在加工中引进微米粉碎技术;
也有将灵芝制成茶的,如申请号:CN201410085380“灵芝茶和复方灵芝茶及其制备方法”,该灵芝茶由灵芝经超声破壁和食用酒精浸泡脱苦制得,并提供一种由灵芝茶和普洱茶等其它茶组成的复方灵芝茶;为改善灵芝的苦涩口感使人能接受,采用食用酒精浸泡脱苦,虽能脱苦却也去掉了灵芝苦味的主要来源——灵芝酸,而灵芝酸为灵芝的主要辅助抗癌有效成分之一,且食用方法仍为传统的煎煮或冲泡、水提;
还有将灵芝制成固体饮料的,如申请号:CN201410157714“一种灵芝固体饮料的制备方法”,该方法包括灵芝预处理、超微粉碎、制浆、超高压处理与喷雾干燥等步骤;利用超微粉碎提高了灵芝多糖的浸出,并将浸出物制成固体饮料,而对灵芝固有的苦味未做处理。
灵芝因味苦而难以直接日常饮用,日常食用方法也未能充分吸收利用灵芝的所有功效成分以及灵芝本身丰富的膳食纤维。
罗汉果[Siraitia grosuenorii]为植物界被子植物门双子叶植物纲合瓣花亚纲葫芦目葫芦科苦瓜属罗汉果亚属植物,别称神仙果,分布区域有中国广西、广东、江西等省的热带、亚热带山区,主要产于广西桂林永福县和龙胜县。罗汉果种植已经有300多年历史,是桂林名贵的土特产,也是国家首批批准的药食两用材料之一。罗汉果含罗汉果苷,较蔗糖甜300倍;另含果糖、氨基酸、黄酮等。罗汉果所含的非糖甜味成分,主要是三萜甙类:罗汉果苷V及Ⅳ,苷V的甜度是蔗糖的256~344倍,苷Ⅳ的甜度为蔗糖的126倍;次要的是D~甘露醇,其甜度为蔗糖的0.55~0.65倍,此外,还含葡萄糖、果糖、锰、铁、镍、硒、锡、碘、钼、蛋白质、维生素C等。此外,罗汉果种仁含油脂,基中脂肪酸有:亚油酸、油酸、棕榈酸、硬脂酸、棕榈油酸、肉豆蔻酸、月桂酸、癸酸。
罗汉果苷V是罗汉果的主要甜味成分、它无毒、低热量、高甜度、热稳定性好,是作为天然甜味剂开发的物质之一,是饮料、糖果行业的名贵原料,是蔗糖的最佳替代品。罗汉果干果中含蛋白质7.1~7.8%,在其水解物中,除色氨酸未被测定外,18种氨基酸齐全;罗汉果无机元素中含量较高的元素有钾(12290mg/kg)、钙(667mg/kg)、镁(550mg/kg),而微量元素中含有的硒达到0.186mg/kg,是粮食的2~4倍,而元素硒在冠心病防治、抗衰老、抗癌方面有较好的疗效。可见,罗汉果具有较高的营养价值。中医药学认为,罗汉果甘、酸、性凉、有清热凉血、生津止咳、润肠排毒、嫩肤益颜、润肺化痰等功效,可用于益寿延年、驻颜悦色及治疗痰热咳嗽、咽喉肿痛、大便秘结、消渴烦躁诸症。常饮罗汉果茶,可防多种疾病,现代医学证明,罗汉果对支气管炎、高血压等疾病有显著疗效,还起到防治冠心病、血管硬化、肥胖症的作用,糖尿病患者亦宜服用。
罗汉果可以做成罗汉果茶,即日常用开水泡茶饮用,或与其它食材药材配伍泡制成罗汉果红枣茶、罗汉果鱼腥草、罗汉果益母草汤、罗汉果粳米粥、罗汉雪梨饮、罗汉无花果茶、罗汉夏枯茶、罗汉五梅茶、罗汉果薄荷茶等,或做成冲剂、糖浆、酒、咀嚼片和固体茶。如申请号:CN201410310928“一种罗汉果青梅酒的制备方法”,将罗汉果水煎煮液加入酵母菌发酵成罗汉果果酒,再与青梅酒混匀,即为罗汉果青梅酒;申请号:CN201410264967“一种罗汉果超微粉咀嚼片及其制备方法”,将罗汉果进行超微粉制备,配伍山楂、枸杞子、谷芽、橘红等药材(提取浓缩液),再加入微晶纤维素、甘露醇、聚乙烯吡咯烷酮等辅料制粒、压制成片,达到润肺止咳、生津止渴、健胃消食之功效,且减少矫味剂使用的目的;申请号:CN201310426951“具有保健功能的罗汉果金银花固体茶”,将鲜罗汉果和金银花分别用水进行浸提和浓缩,浓缩液与淀粉混合均匀,压片即成罗汉果金银花固体茶片,将茶片加入饮用水中即可饮用。由此可见,罗汉果的食疗和药用的形式多样,但主要是用水煎煮或浸泡出其有效成分,未能充分利用罗汉果全果的营养价值,如其含有的丰富的无机元素、微量元素硒、膳食纤维和纯天然的优质种仁油脂,或者未能无任何添加纯天然食用,如罗汉果超微粉咀嚼片虽能充分利用罗汉果全果的营养价值,却添加了大量的药用化工辅料。
超微粉碎技术是指将3毫米以上的物料颗粒粉碎至10~25微米以下的技术,由于颗粒的细微化导致表面积和孔隙率的增加,提高了物料的分散性、吸附性、溶解性和化学活性。此外,超微粉碎技术对物料原有营养成分影响较小,粉体均匀性好,并可提高物料中有效成分的溶出,从而提高机体对其中营养成分的吸收率。超微粉碎技术作为一种新型的食品加工方法,已在许多食品加工中得到应用,并得到越来越多消费者的认可。而现有技术中却没有用超微粉碎技术制备的灵芝罗汉果固体饮料。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种灵芝罗汉果超微粉固体饮料,本发明保持了灵芝和罗汉果的所有功效成分,充分利用两者的膳食价值,不添加任何辅料和食品添加剂,既克服灵芝的苦味,又口感良好,且色泽细腻、易分散、易冲调、食用简便,是一种具有保健养颜功能的健康饮品。
本发明解决上述技术问题的技术方案如下:一种灵芝罗汉果超微粉固体饮料,由以下重量百分数的组份组成:灵芝超微粉20~80%,罗汉果超微粉20~80%。
一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成粗粉,将粗粉灭菌后干燥,然后超微粉碎,得到灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成粗粉,将粗粉灭菌后干燥,然后超微粉碎,得到罗汉果超微粉;
(3)称取以下重量百分数的组份:灵芝超微粉20~80%,罗汉果超微粉20~80%,混合,即得到灵芝罗汉果超微粉固体饮料。
在上述技术方案的基础上,本发明还可以做如下改进。
进一步,一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成≤60目的粗粉,将粗粉置于卧式真空灭菌柜,110~115℃湿热高压灭菌20~25分钟,抽真空干燥10~20分钟,再在≤95℃温度下烘干至水分≤7.5%,然后超微粉碎,得到≥250目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成≤60目的粗粉,将粗粉置于卧式真空灭菌柜,110~115℃湿热高压灭菌20~25分钟,抽真空干燥10~20分钟,再在≤95℃温度下烘干至水分≤7.5%,然后超微粉碎,得到≥250目的罗汉果超微粉;
(3)称取以下重量百分数的组份:灵芝超微粉20~80%,罗汉果超微粉20~80%,混合,即得到灵芝罗汉果超微粉固体饮料。
进一步,步骤(3)中,所述混合的具体步骤为:将灵芝超微粉与罗汉果超微粉直接混合均匀,进行分装,即得到灵芝罗汉果超微粉固体饮料。
进一步,步骤(3)中,所述混合的具体步骤为:将灵芝超微粉与罗汉果超微粉分别进行分装,临用前再混合调配成灵芝罗汉果超微粉固体饮料。
本发明的有益效果是:
(1)本发明采用超微粉碎技术,既完全无损地保持了灵芝和罗汉果的所有功效成分,又克服了灵芝的苦味,充分利用了两者的膳食价值,配比科学合理,达到性味平衡互补、功效叠加之功效。
(2)本发明不添加任何辅料和食品添加剂,颗粒细腻、色泽均匀、易分散、易冲调,能完全饮用不留残渣。
(3)本发明具有保健养颜功能,安全无毒,适宜大众长期饮用,尤其是糖尿病患者亦可服用。
具体实施方式
以下结合具体实施例对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
实施例1:
一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成60目粗粉,将粗粉置于卧式真空灭菌柜,115℃湿热高压灭菌20分钟,抽真空干燥10分钟,再在95℃烘干至水分为7.5%,然后超微粉碎,得到250目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成60目粗粉,将粗粉置于卧式真空灭菌柜,115℃湿热高压灭菌20分钟,抽真空干燥10分钟,再在95℃烘干至水分为7.5%,然后超微粉碎,得到250目的罗汉果超微粉;
(3)称取灵芝超微粉20g,罗汉果超微粉80g,将灵芝超微粉与罗汉果超微粉混合均匀,按每包2g分装成50包,即得到灵芝罗汉果超微粉固体饮料。
实施例2:
一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成50目粗粉,将粗粉置于卧式真空灭菌柜,110℃湿热高压灭菌25分钟,抽真空干燥20分钟,再在90℃烘干至水分为6%,然后超微粉碎,得到300目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成50目粗粉,将粗粉置于卧式真空灭菌柜,110℃湿热高压灭菌25分钟,抽真空干燥20分钟,再在90℃烘干至水分为6%,然后超微粉碎,得到300目的罗汉果超微粉;
(3)称取灵芝超微粉80g,罗汉果超微粉20g,将灵芝超微粉与罗汉果超微粉混合均匀,按每瓶100g装成1瓶,即得到灵芝罗汉果超微粉固体饮料。
实施例3:
一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成40目粗粉,将粗粉置于卧式真空灭菌柜,112℃湿热高压灭菌22分钟,抽真空干燥15分钟,再在85℃烘干至水分为7%,然后超微粉碎,得到280目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成40目粗粉,将粗粉置于卧式真空灭菌柜,112℃湿热高压灭菌22分钟,抽真空干燥15分钟,再在85℃烘干至水分为7%,然后超微粉碎,得到280目的罗汉果超微粉;
(3)称取灵芝超微粉45g,罗汉果超微粉55g,将灵芝超微粉与罗汉果超微粉混合均匀,按每包5g分装成20包,即得到灵芝罗汉果超微粉固体饮料。
实施例4:
一种灵芝罗汉果超微粉固体饮料的制备方法,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成30目粗粉,将粗粉置于卧式真空灭菌柜,110℃湿热高压灭菌25分钟,抽真空干燥20分钟,再在90℃烘干至水分为5%,然后超微粉碎,得到320目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成30目粗粉,将粗粉置于卧式真空灭菌柜,115℃湿热高压灭菌20分钟,抽真空干燥10分钟,再在90℃烘干至水分为5%,然后超微粉碎,得到320目的罗汉果超微粉;
(3)称取灵芝超微粉40g,罗汉果超微粉60g,将灵芝超微粉按每瓶40g装成1瓶,罗汉果超微粉按每瓶60g装成1瓶,临用前再混合调配成灵芝罗汉果超微粉固体饮料。
本发明所述灵芝罗汉果超微粉固体饮料的的饮用方法:直接将灵芝罗汉果超微粉固体饮料放入杯中,加水冲泡即可饮用。
实验例1:
广西梧州王××,男,49岁,Ⅱ型糖尿病患者,体虚、易疲劳、易感冒,未服用降糖药,食用实施例1所述的灵芝罗汉果超微粉固体饮料,每日2~6g,每日1~3次,热开水冲饮,食用1个月后,气色、精力明显好转,血糖值由12mmol/L降至7.5mmol/L(正常值为5.5mmol/L~6.5mmol/L)。
实验例2:
广西梧州陈××,女,42岁,面色暗黄、多雀斑,经常失眠,食用实施例2所述的灵芝罗汉果超微粉固体饮料,每日2~6g,每日1~3次,热开水冲饮,食用1周后,睡眠质量明显改善,食用3个月后,脸色红润美白、雀斑变淡。
实验例3:
广西梧州孙××,女,78岁,直肠癌晚期手术后出院,体虚、衰弱,食用实施例3所述的灵芝罗汉果超微粉固体饮料,每日2~6g,每日1~3次,食用近一年,患者康复良好,无明显不适。
实验例4:
广西梧州赵××,男,75岁,双侧股骨头坏死,日常疼痛且伴咳嗽痰多,单侧手术治疗,术后半年疼痛依旧,并出现脑血栓症状再住院治疗,出院后开始食用实施例4所述的灵芝罗汉果超微粉固体饮料,每日2~6g,每日1~3次,同时,服用田七银杏叶胶囊和纳豆胶囊,食用近半年,各种症状明显改善,腿痛消失,少见咳嗽,痰少,气色红润,行动可自理。
以上所述仅为本发明的较佳实施例,并不用以限制本发明,凡在本发明的精神和原则之内,所作的任何修改、等同替换、改进等,均应包含在本发明的保护范围之内。
Claims (5)
1.一种灵芝罗汉果超微粉固体饮料,其特征在于,由以下重量百分数的组份组成:灵芝超微粉20~80%,罗汉果超微粉20~80%。
2.一种灵芝罗汉果超微粉固体饮料的制备方法,其特征在于,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成粗粉,将粗粉灭菌后干燥,然后超微粉碎,得到灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成粗粉,将粗粉灭菌后干燥,然后超微粉碎,得到罗汉果超微粉;
(3)称取以下重量百分数的组份:灵芝超微粉20~80%,罗汉果超微粉20~80%,混合,即得到灵芝罗汉果超微粉固体饮料。
3.根据权利要求2所述的一种灵芝罗汉果超微粉固体饮料的制备方法,其特征在于,包括如下工艺步骤:
(1)灵芝超微粉的制备:取灵芝干品切片,先粉碎成≤60目的粗粉,将粗粉置于卧式真空灭菌柜,110~115℃湿热高压灭菌20~25分钟,抽真空干燥10~20分钟,再在≤95℃温度下烘干至水分≤7.5%,然后超微粉碎,得到≥250目的灵芝超微粉;
(2)罗汉果超微粉的制备:取罗汉果干品,先粉碎成≤60目的粗粉,将粗粉置于卧式真空灭菌柜,110~115℃湿热高压灭菌20~25分钟,抽真空干燥10~20分钟,再在≤95℃温度下烘干至水分≤7.5%,然后超微粉碎,得到≥250目的罗汉果超微粉;
(3)称取以下重量百分数的组份:灵芝超微粉20~80%,罗汉果超微粉20~80%,混合,即得到灵芝罗汉果超微粉固体饮料。
4.根据权利要求2或3所述的一种灵芝罗汉果超微粉固体饮料的制备方法,其特征在于,步骤(3)中,所述混合的具体步骤为:将灵芝超微粉与罗汉果超微粉直接混合均匀,进行分装,即得到灵芝罗汉果超微粉固体饮料。
5.根据权利要求2或3所述的一种灵芝罗汉果超微粉固体饮料的制备方法,其特征在于,步骤(3)中,所述混合的具体步骤为:将灵芝超微粉与罗汉果超微粉分别进行分装,临用前再混合调配成灵芝罗汉果超微粉固体饮料。
