本发明提供一种蓝莓果实功能饮料、保健胶囊的制备方法。将蓝莓鲜果榨取果汁,收集榨取的蓝莓果原汁、果皮及籽渣备用;以质量分数计,取蓝莓果原汁 15份、纯化水80~100份、白糖1~5份、护色剂0.1~0.5份、增稠剂0.2~2份混合,用高压匀质机匀质,微滤,灭菌,即得蓝莓果实功能饮料。将榨汁所得果籽及果皮渣干燥、粉碎,以乙醇为溶剂浸提,将浸提液精滤,真空浓缩;以浓缩液为囊芯,食用明胶为囊材;将明胶与水加热融化成囊材溶液,囊芯与囊材溶液混合成混悬液,高压均质,喷雾干燥,气流雾化,将得微囊化蓝莓提取物装入胶囊中,即得蓝莓果保健胶囊。本发明对加工原料蓝莓果实不同植物组织及功能成分组和物充分利用,产品质量的稳定性较好,保质期较长。

蓝莓,又称越桔,蓝浆果,是一种具有极高营养健康作用及经济价值的多年生优良小浆果树种,果实呈深蓝色,果皮被一层白色果粉,富含花色苷,花青素、原花青素等黄酮类物质,不仅是果品,而且是保健功能食品。美国农业部人类营养中心的研究发现,蓝莓40种新鲜果蔬中抗氧化能力最高的,其花色苷的含量是红提葡萄的数十倍,被推崇为第三代新兴水果。
国内外现有研究表明,蓝莓具有抗氧化、预防癌症、改善记忆、缓解视疲劳、提高免疫力、降低胆固醇和血糖、抑制动脉硬化、抗肥胖等多种保健作用,其鲜果及加工产品备受消费者青睐。
目前,国内市场上蓝莓产品主要有果汁饮料、糖果、乳制品、烘焙食品、果酱、果酒、果冻、干果、保健品等。其中,糖果、烘焙食品、果酱、果汁饮料数量相近,分别占产品总量的17%、18%、18%和 14%;乳制品、果酒、果冻次之,分别占12%、9%和 6%,其他类型数量较少 (李炜,浅析中国蓝莓产业发展,林业调查规划,2013年8月,第38卷4期)。未来蓝莓果品加工,将向高附加值的功能食品、保健食品方向发展。
研究证实蓝莓果实中花色苷、花青素、原花青素等功能成分,主要存在与紫色的果皮与种子组织中。果皮中不同花色苷的种类、比例、含量,决定了果实外观颜色及花青素种类与含量;不同品种与不同栽培条件对蓝莓果实花青素含量影响极大,高丛蓝莓花色苷含量 25~495mg /100g,兔眼蓝莓花色苷含量230~339mg /100g。另外,蓝莓籽中主要为油酸、亚油酸、亚麻酸等脂肪酸,出油率可达18.42%,不饱和脂肪酸占87.12%,饱和脂肪酸占11.75%;其中优势成分为异戊酸L一薄荷酯(30.06%)、亚麻醇(11.82%)、视黄醛(4.07%)、亚油酸乙酯(3.10%)和角鲨烯(3.10%)等,有较高的营养保健价值,值得综合开发利用。
蓝莓果实中花色苷、花青素、原花青素等黄酮类功能成分,抗氧化性强,在加工后产品中的功能成分极不稳定,容易降解。其稳定性受多种因素的影响,例如pH值、温度、浓度、光照、溶剂种类、酶、金属离子等多种因素影响,严重制约了其应用范围。目前研究的热点是如何提高其稳定性,使其在更多领域得到更好的应用。
发明内容
本发明目的,在于提供一种蓝莓果实深加工的功能饮料、保健食品生产方法,可提高产品有效成分的稳定性,保质期长,并可最大限度的对果实中营养成分和功效成分进行高效综合开发利用。
本发明的实施方案为:一种蓝莓功能饮料的制备方法,包括以下步骤:
(1)蓝莓鲜果采摘后,清洗,沥干,用微波炉加热1~2min灭酶;
(2)用螺旋榨汁机榨取果汁,榨汁机过滤网孔径0.6mm~8.0mm,转速~400~600转/min,调节螺旋压头转柄,使果肉与皮、籽挤压分离,收集榨取的蓝莓果原汁、果皮及籽渣备用;
(3)以质量分数计,按以下配方将原辅料混合,搅拌配料液: 蓝莓果原汁 15份,纯化水80~100份,白糖1~5份,护色剂0.1~0.5份,增稠剂0.2~2份;
(4)将配料液用高压匀质机匀质15~20min,静置沉淀4~6h后,用微孔过滤器微滤,过滤精度0.2um;
(5)过滤后滤液装瓶、封盖,在水浴锅或灭菌罐中灭菌,温度60℃,灭菌时间30min,灭菌后饮料瓶避光保存。
步骤(3)中,所述护色剂为柠檬酸或苹果酸。所述增稠剂为葛根粉或琼脂。
作为一个优化的实施例,步骤(3)中,所述原辅料质量配比为: 蓝莓果原汁 15份,纯化水85份,白糖5份,柠檬酸0.1份,葛根淀粉2份;
作为另一优化的实施例,步骤(3)中,所述原辅料质量配比为: 蓝莓果原汁 15份,纯化水85份,白糖5份,苹果酸0.5份,琼脂0.2份。
以上制备的的蓝莓果汁饮料,液体呈深紫红色,饮料中原花青素含量≥25mg/100ml ,花色苷含量≥15mg/100ml,糖酸比10~12,pH值4.0~4.5,常温下保质期可达6个月以上。
本发明还提供一种蓝莓保健胶囊的制备方法,步骤包括:
a. 取蓝莓鲜果榨汁后的果籽及果皮渣,在60℃温度下干燥24小时后,粉碎至20~50目;
b. 粉碎的蓝莓籽及果皮渣以浓度为60%(v/v)乙醇为溶剂浸提,料液质量份数比1:10,加热搅拌浸提,温度40~45℃,浸提3~4h, 浸提液抽滤泵入储罐;加入1:8的60%(v/v)乙醇二次浸提,合并浸提液,用精密过滤器精滤,过滤精度60um,精滤液真空浓缩,回收乙醇,浓缩液浓缩至波美度30~32°Bé;
c. 以浓缩液为囊芯,食用明胶为囊材;将明胶以料液质量比1:1与纯化水加热融化成均匀的囊材溶液,囊芯与囊材溶液按质量比1:1比例混合成混悬液,搅拌均匀,混合液由高压均质泵入喷雾干燥塔内,气流雾化,170~180℃高温下,雾化的颗粒瞬间干燥成微囊状,收集备用;
d. 将微囊化蓝莓提取物装填于不透光的药用胶囊中。
以上制备的的蓝莓提取物胶囊,每粒原花青素含量≥70mg/100ml ,花色苷含量≥40mg/100ml,常温下保质期可达18个月以上。
本发明的优点在于:对加工原料蓝莓果实不同植物组织及功能成分组和物充分利用,物尽其才,特别是对蓝莓目标有效成分高效综合利用;在产品制备工艺中对花色苷、原花青素等多组分功效成分,采取调酸护色、微囊化处理、避光包装等多重保护措施,产品质量的稳定性较好,保质期较长。
具体实施方式
下面结合具体的实施案例对本发明做进一步的说明。
实施例1
于6月下旬采摘高丛蓝莓埃利奥克的成熟鲜果100kg,清洗,沥干,用微波炉加热2min灭酶灭菌,用螺旋榨汁机榨取果汁,榨汁机过滤网孔径0.8mm,转速600转/min,调节螺旋压头转柄,使果肉与皮籽挤压分离,得蓝莓原汁82.45kg,出汁率82.45%。取蓝莓果原汁 60kg,纯化水340kg,白糖40kg,柠檬酸0.4kg,葛根淀粉8kg,配料,混合,搅拌,用高压匀质机匀质20min,静置沉淀4h后,用0.2um微孔过滤器微滤,灌装入深棕色玻璃瓶中,规格250ml/瓶,拧紧瓶盖,放入水浴锅中,加热,保持温度60℃,灭菌30min后,装入纸箱避光保存。取样检验,果汁饮料液体呈深紫红色,饮料中原花青素含量37mg/100ml ,花色苷含量≥17mg/100ml,糖酸比10.4,pH值4.3,常温下保存6个月,无质变。
将前述榨汁后的果皮及籽渣,在60℃温度下干燥24小时,得干果渣粉4.62kg,含水量11.6%;干基4.084kg,得率4.08%;粉碎,过2号标准筛(24目),放入不锈钢提取罐中,加入60%乙醇45kg,加热搅拌浸提,保持温度40℃,浸提4h后, 浸提液抽滤泵入储罐;加入60%乙醇36kg,二次浸提3h,抽滤,合并一二次浸提液,用精密过滤器精滤,过滤精度60um,精滤液真空浓缩,回收乙醇,浓缩液浓缩至波美度30.4°Bé,得浓缩液15.6kg;称取明胶7.8kg,加入纯化水7.8kg,加热至80℃融化均匀,与浓缩液趁热混合成混悬液,搅拌均匀,混悬液由高压均质泵入喷雾干燥塔内,气流雾化,在180℃高温下瞬间干燥,得微囊粉8.24kg,用胶囊手工装填板装填于绿色1#药用空心胶囊中,装填重量规格净重280mg/粒。抽样检验,制备的蓝莓提取物胶囊每粒原花青素含量86mg/100ml ,花色苷含量≥48mg/100ml,常温下保存18个月,无质变。
实施例2
于7月中旬采摘兔眼蓝莓灿烂的成熟鲜果100kg,清洗,沥干,用微波炉加热1min灭酶灭菌,用螺旋榨汁机榨取果汁,榨汁机过滤网孔径0.6mm,转速400转/min,调节螺旋压头转柄,使果肉与皮籽挤压分离,得蓝莓原汁78.32kg,出汁率78.32%。取蓝莓果原汁 60kg,纯化水340kg,白糖40kg,苹果酸2kg,明胶0.8kg,配料,混合,搅拌,用高压匀质机匀质15min,静置沉淀4h后,用0.2um微孔过滤器微滤,灌装入深棕色玻璃瓶中,规格250ml/瓶,拧紧瓶盖,放入水浴锅中,加热,保持温度60℃,灭菌30min后,装入纸箱避光保存。取样检验,果汁饮料液体呈深紫红色,饮料中原花青素含量28mg/100ml ,花色苷含量≥19mg/100ml,糖酸比11.7,pH值4.1,常温下保存6个月,无质变。
将前述榨汁后的果皮及籽渣,在60℃温度下干燥24小时,得干果渣粉5.24kg,含水量10.4%;干基4.695kg,得率4.70%;粉碎,过3号标准筛(50目),放入不锈钢提取罐中,加入60%乙醇52kg,加热搅拌浸提,保持温度50℃,浸提3h后, 浸提液抽滤泵入储罐;加入60%乙醇41kg,二次浸提3h,抽滤,合并一二次浸提液,用精密过滤器精滤,过滤精度60um,精滤液真空浓缩,回收乙醇,浓缩液浓缩至波美度32.2°Bé,得浓缩液14.8kg;称取明胶7.4kg,加入纯化水7.4kg,加热至80℃融化均匀,与浓缩液趁热混合成混悬液,搅拌均匀,混悬液由高压均质泵入喷雾干燥塔内,气流雾化,在180℃高温下瞬间干燥,得微囊粉8.48kg,用胶囊手工装填板装填于绿色1#药用空心胶囊中,装填重量规格净重280mg/粒。抽样检验,制备的蓝莓提取物胶囊每粒原花青素含量79mg/100ml ,花色苷含量≥52mg/100ml,常温下保存18个月,无质变。
Claims (5)
1. 一种蓝莓果实功能饮料的制备方法,其特征在于,包括以下步骤:
(1)蓝莓鲜果采摘后,清洗,沥干,用微波炉加热1~2min灭酶;
(2)用螺旋榨汁机榨取果汁,榨汁机过滤网孔径0.6mm~8.0mm,转速~400~600转/min,调节螺旋压头转柄,使果肉与皮、籽挤压分离,收集榨取的蓝莓果原汁、果皮及籽渣备用;
(3)以质量分数计,按以下配方将原辅料混合,搅拌配料液: 蓝莓果原汁 15份,纯化水80~100份,白糖1~5份,护色剂0.1~0.5份,增稠剂0.2~2份;
(4)将配料液用高压匀质机匀质15~20min,静置沉淀4~6h后,用微孔过滤器微滤,过滤精度0.2um;
(5)过滤后滤液装瓶、封盖,在水浴锅或灭菌罐中灭菌,温度60℃,灭菌时间30min,灭菌后饮料瓶避光保存。
2.根据权利要求1所述的蓝莓果实功能饮料的制备方法,其特征在于,步骤(3)中,所述护色剂为柠檬酸或苹果酸,所述增稠剂为葛根粉或琼脂。
3.根据权利要求2所述的蓝莓果实功能饮料的制备方法,其特征在于,步骤(3)中,所述原辅料质量配比为: 蓝莓果原汁 15份,纯化水85份,白糖5份,柠檬酸0.1份,葛根淀粉2份。
4.根据权利要求2所述的蓝莓果实功能饮料的制备方法,其特征在于,,步骤(3)中,所述原辅料质量配比为: 蓝莓果原汁 15份,纯化水85份,白糖5份,苹果酸0.5份,琼脂0.2份。
5.一种蓝莓保健胶囊的制备方法,其特征在于,步骤包括:
a. 取蓝莓鲜果榨汁后的果籽及果皮渣,在60℃温度下干燥24小时后,粉碎至20~50目;
b. 粉碎的蓝莓籽及果皮渣以浓度为60%乙醇为溶剂浸提,料液质量份数比1:10,加热搅拌浸提,温度40~45℃,浸提3~4h, 浸提液抽滤泵入储罐;加入1:8的60%乙醇二次浸提,合并浸提液,用精密过滤器精滤,过滤精度60um,精滤液真空浓缩,回收乙醇,浓缩液浓缩至波美度30~32°Bé;
c. 以浓缩液为囊芯,食用明胶为囊材;将明胶以料液质量比1:1与纯化水加热融化成均匀的囊材溶液,囊芯与囊材溶液按质量比1:1比例混合成混悬液,搅拌均匀,混合液由高压均质泵入喷雾干燥塔内,气流雾化,170~180℃高温下,雾化的颗粒瞬间干燥成微囊状,收集备用;
d. 将微囊化蓝莓提取物装填于不透光的药用胶囊中。
