Abstract
一种富含膳食纤维的鸡排及其制备方法,其特征在于由下列重量份的原料制成:鸡肉200-210、虾仁30-40、鸡骨20-22、黑枣8-9、韭菜4-5、薏仁米17-18、葡萄籽油2-2.5、银耳4-5、白醋6-8、红薯20-22、年糕7-8、椰果粒5-6、葡萄干7-8、豆沙20-22、玉米须2-3、牛蒡子4-5、黄精4-5、白术2-3、磨盘草1-2、竹头草2-3、营养添加剂6-7。本发明的鸡排采用鸡肉与鸡骨作为主要原料,富含钙质,相较于传统的鸡排营养更加丰富,同时,本发明还添加了红薯,其富含膳食纤维,搭配玉米须等中药可起到降血糖的功效,适于高血糖患者食用。

本发明属于食品加工技术领域,涉及一种速溶茶,尤其涉及一种富含膳食纤维的鸡排及其制备方法。
背景技术
食品工业的发展直接影响人民的营养健康水平。近年来,随着现代城市化步伐的加快,亚健康问题日益突出,如肥胖症、高血脂及生活压力大引起的失眠问题等,严重威胁人们的健康。长期服用药品不但起不到理想的疗效,还会使健康进一步受损。而市面上出现的种类繁多的保健品功能单一,营养成分单一,无法均衡保证营养摄入,且价格昂贵,不适合长期服用。因此,如何通过饮食达到健康保健功效日益引起人们的重视,研发各种具有保健功能的食品已经是势在必行。
发明内容
本发明的目的是提供一种富含膳食纤维的鸡排及其制备方法,本发明具有香味浓郁、营养丰富的特点。
本发明所采用的技术方案是:
一种富含膳食纤维的鸡排,其特征在于由以下重量份的原料制成:
鸡肉200-210、虾仁30-40、鸡骨20-22、黑枣8-9、韭菜4-5、薏仁米17-18、葡萄籽油2-2.5、银耳4-5、白醋6-8、红薯20-22、年糕7-8、椰果粒5-6、葡萄干7-8、豆沙20-22、玉米须2-3、牛蒡子4-5、黄精4-5、白术2-3、磨盘草1-2、竹头草2-3、营养添加剂6-7;
所述营养添加剂由下列重量份的原料制成:榴莲10-11、话梅糖3-3.5、牛蛙肉40-45、芡实4-5、芝麻10-11、番茄酱2-3;
制备方法为:(1)取榴莲果肉,榨汁,在所得榴莲汁中加入话梅糖,大火熬化,所得物料与牛蛙肉混合拌匀,隔水大火蒸20-25分钟后出料,送入烘箱,待含水量降至6-8%时出料,进行粉碎;
(2)将芡实、芝麻、番茄酱混合入锅,加入物料重量20-30%的水,在90-95℃下焖制30-35分钟后将芡实、芝麻取出,洗净、烘干后研成粉末,然后与步骤(1)所得物料混合均匀,即得。
所述的富含膳食纤维的鸡排的制备方法,其特征在于包括以下步骤:
(1)将玉米须、牛蒡子、黄精、白术、磨盘草、竹头草加5-6倍的水文火煎煮30-35分钟,过滤除渣,得药液;
(2)将黑枣去核,然后与韭菜混合,加一倍的水打浆,过滤除渣,所得物料与薏仁米混合入锅,煮干后出料,烘干后将薏仁米搓散,与葡萄籽油混合拌匀,铺在锡纸上,用炭火烤制8-10分钟,得烤薏仁米;
(3)将鸡骨、银耳、白醋混合,隔水大火蒸50-60分钟后将鸡骨取出,敲碎,加药液研磨匀质,小火熬膏,得鸡骨膏;
(4)将红薯入开水锅大火煮30-35分钟后捞出,去皮、打成泥状,得红薯泥;将年糕切成丁,入油锅大火炸制5-7分钟后捞出、沥干油分,得炸年糕丁;
(5)将鸡肉、虾仁混合绞碎,然后与烤薏仁米、鸡骨膏、红薯泥、炸年糕丁及剩余物料混合混合拌匀,送入模具中压实,气蒸15-20分钟后脱模,送入烤箱烤制15-20分钟,即得。
本发明中的磨盘草为锦葵科植物磨盈草的全草,竹头草为禾本科植物竹头草的全草。

本发明的鸡排采用鸡肉与鸡骨作为主要原料,富含钙质,相较于传统的鸡排营养更加丰富,同时,本发明还添加了红薯,其富含膳食纤维,搭配玉米须等中药可起到降血糖的功效,适于高血糖患者食用。

鸡肉200、虾仁30、鸡骨20、黑枣8、韭菜4、薏仁米17、葡萄籽油2、银耳4、白醋6、红薯20、年糕7、椰果粒5、葡萄干7、豆沙20、玉米须2、牛蒡子4、黄精4、白术2、磨盘草1、竹头草2、营养添加剂6;
所述营养添加剂由下列重量份(公斤)的原料制成:榴莲10、话梅糖3、牛蛙肉40、芡实4、芝麻10、番茄酱2;
制备方法为:(1)取榴莲果肉,榨汁,在所得榴莲汁中加入话梅糖,大火熬化,所得物料与牛蛙肉混合拌匀,隔水大火蒸20-25分钟后出料,送入烘箱,待含水量降至6-8%时出料,进行粉碎;

(5)将鸡肉、虾仁混合绞碎,然后与烤薏仁米、鸡骨膏、红薯泥、炸年糕丁及剩余物料混合混合拌匀,送入模具中压实,气蒸15-20分钟后脱模,送入烤箱烤制15-20分钟,即得。

鸡肉200-210、虾仁30-40、鸡骨20-22、黑枣8-9、韭菜4-5、薏仁米17-18、葡萄籽油2-2.5、银耳4-5、白醋6-8、红薯20-22、年糕7-8、椰果粒5-6、葡萄干7-8、豆沙20-22、玉米须2-3、牛蒡子4-5、黄精4-5、白术2-3、磨盘草1-2、竹头草2-3、营养添加剂6-7;
所述营养添加剂由下列重量份的原料制成:榴莲10-11、话梅糖3-3.5、牛蛙肉40-45、芡实4-5、芝麻10-11、番茄酱2-3;
