Abstract
本发明具体涉及一种艾叶甜茶及其制备方法。其中包括:该茶制品是由艾叶和广西甜茶组成。制备过程是先将采集的新鲜艾叶及广西甜茶经过晒干并粉碎成粉末状,然后将两种原料按比例混合起来并搅拌均匀而得原料茶,最后分装于由过滤纸制成的包装袋中而得成品袋茶。通过实施本发明,所用的艾叶原料来源广泛,应用成本低,制备过程中不需要经过特殊的处理,保持原料茶的营养成分不流失及茶叶的原汁原味。利用甜茶独特口味来改变艾叶没有经过特殊处理而引发的苦味、涩味等不适口味,并显著的提高了茶制品的适口性;同时又利用甜茶的独特功效使茶制品更有营养、保健功效更佳,茶制品更具特色;茶制品不限制适用人群,市场前景极为广阔。
Description
技术领域
本发明属于一种新型茶制品的制备技术领域,具体涉及一种艾叶甜茶及其制备方法。
背景技术
艾叶为菊科植物艾的叶,属多年生草本。生于路旁荒野、草地、林缘。分布于中国大部分地区。5至7月花尚未开、叶正茂盛时,采叶阴干。艾叶多皱缩,有短柄,完整叶呈卵状椭圆形,羽状深裂,裂片椭圆状披针形,边缘有不规则粗锯齿,上表面灰绿色,有稀疏的柔毛及腺点下表面密生灰白色绒毛,质柔软,气清香,味苦。以叶厚、色青、背面灰白色,绒毛多、香气浓郁者为佳。
艾叶预防瘟疫已有几千年的历史,中草药可以就地取材,且现代医学的药理研究表明艾叶是一种广谱抗菌抗病毒的药物,它对好多病毒和细菌都有抑制和杀伤作用,对呼吸系统疾病有一定的防治作用。同时,艾叶的其他功效也十分显著。如下是有关记载艾叶的的主要功效:
《名医别录》:味苦,微温,无毒。主炙百病,可作煎,止下痢,吐血,下部匿疮,妇人漏血,利阴气,生肌肉,辟风寒,使人有子。又,艾,生寒熟热。主下血,衄血、脓血痢,水煮及丸散任用。
《药性论》:能止崩血,安胎,止腹痛,醋煎作煎,治癣,止赤白痢,及五藏痔泻血。煎叶,主吐血。炒艾作馄饨,吞三、五枚。以饭压之良。长服止冷痢,又心腹恶气。取叶捣汁饮,又捣末和干姜末为丸,一服三十丸,饭压,日再服,治一切冷气,鬼邪毒气,最去恶气。
《本草纲目》:艾叶生则微苦太辛,熟则微辛太苦,生温熟热,纯阳也。可以取太阳真火,可以回垂绝元阳。服之则走三阴,而逐一切寒湿,转肃杀之气为融和。炙之则透诸经,而治百种病邪,起沉疴之人为康泰,其功亦大矣。老人丹田气弱,脐腹畏冷者,以熟艾入布袋兜其脐腹,妙不可言。寒湿脚气人亦宜以此夹入袜内。
艾叶对身体好处多,而艾叶的食用方法多种多样。目前,最为普遍的是用艾叶来制备成茶制品。从有关文献了解到,艾叶茶的加工方法是:首先进行蒸热处理,在蒸热前要仔细采摘艾叶,尽量不要弄破,放在低温、阴暗处贮藏。最好采摘嫩叶,不经贮存而马上蒸热处理。蒸热处理可用100℃的饱和水蒸气处理20-60s,使鲜艾叶中的酶失去活性,防止叶绿素分解,抑制艾叶变黑,并能保持艾叶特有的绿色,除掉鲜中的青草味,产生类似新鲜绿茶的清香味;而且还可增强艾叶的柔性,有利于揉干操作。蒸热后用5℃的冷水将艾叶冷却到10℃。利用上述方法加工的艾叶茶,具有良好的色、香、味。冷却后,转入脱水工序,脱水一般采用离心式脱水机。脱水要适度,如果脱水不充分,会使茶叶、茶水产生强烈异味,失去艾蒿原有的清爽风味;如果脱水过分,也会使茶叶、茶水失去固有的香味。脱水后,转入中揉工序。将脱水后的艾叶放入中揉机中。在40-60℃的温度下热风处理20-40min。为防止艾叶的叶绿素分离,庆慢速短时间乾地。中揉机是一卧式滚筒,滚筒内有一旋转轴,轴上装有数根搅拌棒,艾叶是搅拌棒的轻度挤压下,使内部水发外溢到表面;与此同时,通入热风进行干燥,调整其含水率。中揉处理后转入干燥工序。干燥工序使用不带搅拌棒的卧工滚筒,通入热风进行干燥,使艾味自身收缩,形成卷状。这种卷状艾叶茶便于投入水中冲泡,并保持绿色和鲜艾味的清香,不但无中药味,而且带有新鲜绿茶清香味。沏出的茶水呈深绿色,放置24h仍不变色。艾蒿中所含的精油、维生素A、维生素B、维生素B2、维生素C、维生素D多糖、芦丁、叶绿素等营养成分都溶在水中,饮后无苦、涩味。保持了良好的中药效果。
这样的加工方法不但工艺复杂,而且很繁琐,经过加工后艾叶的有效成分会有所流失。
发明内容
本发明的目的就是克服现有技术的不足而提供全新的一种艾叶甜茶及其制备方法。具体包括:该茶制品是由艾叶和广西甜茶组成。制备过程是先将采集的新鲜艾叶及广西甜茶经过晒干并粉碎成粉末状,然后将两种原料按比例混合起来并搅拌均匀而得原料茶,最后分装于由过滤纸制成的包装袋中而得成品袋茶。通过实施本发明,所用的艾叶原料来源广泛,应用成本低,制备过程中不需要经过特殊的处理,保持原料茶的营养成分不流失及茶叶的原汁原味。利用甜茶独特口味来改变艾叶没有经过特殊处理而引发的苦味、涩味等不适口味,并显著的提高了茶制品的适口性;同时又利用甜茶的独特功效使茶制品更有营养、保健功效更佳,茶制品更具特色。
所述的广西野生甜茶,学名:Rubus Suatrssimus S.Lee,英文名Sweet tea。广西野生甜茶为多年生纯天然、原生态、无污染常绿木本植物。野生甜茶多分布在其叶子呈椭圆形,边缘有锯齿,味微甜。内含有的茶多酚、甜茶素、硒、锗等物质。除具备普通绿茶的功效外同时还具有防治心血管疾病、预防中风、防癌作用、预防牙齿疾病等药效,与罗汉果、合浦珍珠、广西香料等齐名为广西四大名品。广西甜茶的甜度很高,每公斤干茶叶的甜度相当于15公斤蔗糖的甜度,每公斤甜茶素相当于300公斤的蔗糖甜度。同时甜茶素是一种二萜葡萄糖低热量甜料,是能替代糖的高甜度而低热能且无毒的天然甜料植物。
野生甜茶具有相当高的营养价值,其中以广西甜茶最为代表,其所含的多种成分,具有清热解毒、防癌抗癌抗过敏、润肺化痰止咳、减肥降脂降压、降低血胆固醇、抑制和廷缓血管硬化、防治冠心病和糖尿病等众多的保健功能。甜茶含丰富的营养物质和人体所必需的微量元素。据广西技术监督局分析测试研究中心等单位测试结果证实:野生甜茶中富含18种氨基酸,每100克干品含氨基酸总量331.54毫克,特别是甜茶中富含人体必须的、人体不能生成,只能从食物中吸收的8种氨基酸。主要有钙0.84%、锌105.5mg/kg、锗5.5μg/kg、硒17.94μg/kg,及钾、镁、磷、铁、钠、铜、铬、锶、锂等多种元素,不含砷铝等有毒物质,不含会产生头晕、心跳加速、心悸、焦虑易怒、心理不适、干扰睡眠、等副作用的咖啡因;其中所含的锗、硒等,均优于一般绿茶和苦丁茶。
除上述所含微量元素外,还富含维生素C、B1、B2、B3、超氧化物岐化酶,鲜甜茶中维生素C的含量高达115mg/100g;特别是还富含最具价值4.1%的生物类黄酮、18.04%的茶多酚和5%的甜茶素。其中,用甜茶素代替蔗糖,可以生产出口味好、热值低且成本低的无糖酸奶,为甜茶素在食品中应用开辟了一条新的途径。
据《广西中药标准》记载,野生甜茶有“清热降火、润肺、祛痰、止咳的功效”。被誉为“神茶”,其药用性和食用性已为地方医药和民间所证实,它还含有3.2%以上的黄酮、8.94%的甜茶茶多酚“1和4-5%的甜茶素。甜茶茶多酚有明显抗氧化、抗突变、防癌、降低胆固醇、降低血液中低密度脂蛋白、抑制血压上升、抑制血糖上升、抑制血小板凝集、抗菌、抗食物过敏、改善肠胃微生物环境、消臭的作用吲,是目前发现最理想的纯天然抗氧化剂,用途十分广泛。
此外,广西甜茶还具有无毒副作用,降血脂、血糖、胆固醇,止咳祛痰,消炎抗过敏,分解黑色素等诸多功能。因此,广西甜茶是一种无毒、高甜度、低热能和具有保健功能的天然甜味植物,是一种理想的糖类替代品,对避免因长期过量的吃糖、致使人体发胖和诱发高血压、糖尿病、心血管病、肾脏等疾病的人们具有良好辅助疗效,是一种极具开发价值的天然植物。
本发明是通过以下技术方案来实现的:
一种艾叶甜茶及其制备方法,技术方案中包括如下步骤:
1、原料组成及配比:艾叶56~60%、广西甜茶40~44%。
2、艾叶采集及处理方法:采集无病虫害、无霉叶、色泽正常及新鲜的艾叶整株作为原料,接着将艾叶原料根系的泥土清洗干净并晒干至水分含量低于8%,然后粉碎至能过80~100目备用。
3、广西甜茶采集及处理方法:采集无病虫害、无霉叶及新鲜的野生甜茶叶及其嫩梢作为原料,接着将原料晒干至水分含量低于8%,然后粉碎至能过100~120目备用。
4、原料组合:将粉碎过的上述艾叶和广西甜茶按比例混合起来并搅拌均匀而得原料茶。
5、包装:用过滤纸制成的包装袋,然后把原料茶按每袋10~15克分装于包装袋中,并将包装袋进行封口而得成品袋茶。
本发明既有如下优点:
1、本发明所提出茶制品组份构成新颖独特,制备时工艺简单,容易实施。
2、通过实施本发明,所用的主要原料——艾叶,其原料来源广泛,应用成本低;制备过程中不需要经过特殊的处理,保持原料茶的营养成分不流失,同时还保障艾叶茶的原汁原味。此外,还为艾叶开辟了一条利用更好、增值更高的深加工门路。
3、通过实施本发明,所用的辅助原料——广西甜茶,利用该茶的独特口味来改变艾叶没有经过特殊处理而引发的苦味、涩味等不适口味,并显著的提高了茶制品的适口性;同时,又利用广西甜茶的独特功效使茶制品更有营养、保健功效更佳,茶制品更具特色。
4、通过实施本发明,制备出来的茶制品不但功效显著,而且不限制适用人群,特别是因长期过量的吃糖、致使人体发胖和诱发高血压、糖尿病、心血管病、肾脏等疾病的人们,不仅吃了无碍,而且对上述疾病具有良好辅助疗效。
5、通过实施本发明,制备出来的茶制品市场前景极为广阔。
具体实施方式
下面结合实施例对本发明的方法进一步说明。
一种艾叶甜茶及其制备方法,具体实施方式如下:
1、原料组成及配比:艾叶56~60%、广西甜茶40~44%。
2、艾叶采集及处理方法:采集无病虫害、无霉叶、色泽正常及新鲜的艾叶整株作为原料,接着将艾叶原料根系的泥土清洗干净并晒干至水分含量低于8%,然后粉碎至能过80~100目备用。
3、广西甜茶采集及处理方法:采集无病虫害、无霉叶及新鲜的野生甜茶叶及其嫩梢作为原料,接着将原料晒干至水分含量低于8%,然后粉碎至能过100~120目备用。
4、原料组合:将粉碎过的上述艾叶和广西甜茶按比例混合起来并搅拌均匀而得原料茶。
5、包装:用过滤纸制成的包装袋,然后把原料茶按每袋10~15克分装于包装袋中,并将包装袋进行封口而得成品袋茶。
Claims (1)
1.一种艾叶甜茶及其制备方法,其特征包括如下步骤:
(1)原料组成及配比:艾叶56~60%、广西甜茶40~44%;
(2)艾叶采集及处理方法:采集无病虫害、无霉叶、色泽正常及新鲜的艾叶整株作为原料,接着将艾叶原料根系的泥土清洗干净并晒干至水分含量低于8%,然后粉碎至能过80~100目备用;
(3)广西甜茶采集及处理方法:采集无病虫害、无霉叶及新鲜的野生甜茶叶及其嫩梢作为原料,接着将原料晒干至水分含量低于8%,然后粉碎至能过100~120目备用;
(4)原料组合:将粉碎过的上述艾叶和广西甜茶按比例混合起来并搅拌均匀而得原料茶;
(5)包装:用过滤纸制成的包装袋,然后把原料茶按每袋10~15克分装于包装袋中,并将包装袋进行封口而得成品袋茶。
