本发明提供了一种蛹虫草冲剂的制作方法。具体如下:按蔗糖3%、蛋白胨2%、大豆蛋白肽3%、磷酸二氢钾0.15%、硫酸镁0.05%、用水补至100%的比例配置培养基,调pH值5.8-6.1,搅拌均匀,115℃灭菌20min,冷却至25℃,接种10%蛹虫草菌液体种子,在温度24-25℃、转速150rpm条件下,培养108h,110℃灭菌15min,冷却至室温,胶体磨磨浆,按每100克浆液加入环糊精25g、果糖8g、木糖醇2g、苹果酸0.08g,混合均匀,再经均质、真空浓缩、低温干燥、造粒,即为蛹虫草冲剂,其保持了蛹虫草所特有的营养性和功能性。

技术领域
本发明属于食品加工领域,涉及一种蛹虫草冲剂的制作方法。
背景技术
蛹虫草是多种有效成分接近于冬虫夏草的食、药共用真菌,是具有较高食药用价值的虫菌复合体,其含有虫草酸(甘露醇)、虫草素、虫草多糖和SOD等多种生物活性物质。虫草酸(甘露醇)可以显著地降低颅压,促进机体新陈代谢,可以使脑溢血和脑血栓病症得到缓解。虫草素是一种具有抗菌活性的核苷类物质,对癌细胞有很强的抑制作用,并有降血糖的作用。虫草多糖是一种高度分枝的半乳甘露聚糖,它能促进淋巴细胞转化,提高机体的免疫功能,增强人体免疫力能力。SOD(超氧化物歧化酶)可以消除机体内超氧自由基,具有抗衰老的作用。
卫生部2009年第3号公告批准了蛹虫草为新资源食品,规定了食用量≤2克/天及不适宜婴幼儿、儿童、食用真菌过敏者食用。国家卫计委2014年第10号公告取消了蛹虫草的每日食用限量,只规定了婴幼儿、儿童、食用真菌过敏者不宜食用,这也有利于蛹虫草产品的研究和开发。
发明内容
本发明提供了一种蛹虫草冲剂的制作方法。
本发明的内容是这样实现的:按蔗糖3%、蛋白胨2%、大豆蛋白肽3%、磷酸二氢钾0.15%、硫酸镁0.05%、用水补至100%的比例配置培养基,调pH值5.8-6.1,搅拌均匀,115℃灭菌20min,冷却至25℃,接种10%蛹虫草菌液体种子,在温度24-25℃、转速150rpm条件下,培养108h,110℃灭菌15min,冷却至室温,胶体磨磨浆,按每100克浆液加入环糊精25g、果糖8g、木糖醇2g、苹果酸0.08g,混合均匀,再经均质、真空浓缩、低温干燥、造粒,即制成蛹虫草冲剂。
所述的蛹虫草菌液体种子是将经PDA斜面培养基活化的蛹草拟青霉菌接种于不加琼脂的液体PDA培养基中,在温度25℃、转速180rpm条件下,培养68h制得。
本发明的优势是通过液体深层培养蛹虫草菌丝体的方法从发酵液中得到与天然蛹虫草化学组成接近的活性成分,其生产周期大大缩短,生产成本也大大降低,有效解决了天然蛹虫草资源稀少、人工固体栽培周期长且不易控制条件的问题。并开发了蛹虫草冲剂产品,其保留了蛹虫草所特有的营养性和功能性。
四、具体实施例
实施方式一
称取蔗糖30g、蛋白胨20g、大豆蛋白肽30g、磷酸二氢钾1.5g、硫酸镁0.5g,溶于918mL水中,调pH值5.8-6.1,搅拌均匀,115℃灭菌20min,冷却至25℃,接种100mL蛹虫草菌液体种子,在温度24-25℃、转速150rpm条件下,培养108h,110℃灭菌15min,冷却至室温,胶体磨磨浆。称取500克浆液,加入环糊精125g、果糖40g、木糖醇10g、苹果酸0.4g,混合均匀,再经均质、真空浓缩、低温干燥、造粒,即制成蛹虫草冲剂。
实施方式二
称取按蔗糖15g、蛋白胨10g、大豆蛋白肽15g、磷酸二氢钾0.75g、硫酸镁0.25g,溶于459mL水,调pH值5.8-6.1,搅拌均匀,115℃灭菌20min,冷却至25℃,接种50mL蛹虫草菌液体种子,在温度24-25℃、转速150rpm条件下,培养108h,110℃灭菌15min,冷却至室温,胶体磨磨浆。称取200克浆液,加入环糊精50g、果糖16g、木糖醇4g、苹果酸0.16g,混合均匀,再经均质、真空浓缩、低温干燥、造粒,即制成蛹虫草冲剂。

1.一种蛹虫草冲剂的制作方法,其特征是:按蔗糖3%、蛋白胨2%、大豆蛋白肽3%、磷酸二氢钾0.15%、硫酸镁0.05%、用水补至100%的比例配置培养基,调pH值5.8-6.1,搅拌均匀,115℃灭菌20min,冷却至25℃,接种10%蛹虫草菌液体种子,在温度24-25℃、转速150rpm条件下,培养108h,110℃灭菌15min,冷却至室温,胶体磨磨浆,按每100克浆液加入环糊精25g、果糖8g、木糖醇2g、苹果酸0.08g,混合均匀,再经均质、真空浓缩、低温干燥、造粒。
