Abstract
本发明公开了一种具胚米的制备方法,其步骤如下:(1)将稻谷脱壳获得糙米;(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;(3)用40-55℃的清水浸泡30-45min后采用人工或机械淘洗具胚米;(4)将步骤(3)的具胚米捞出,沥干,用鼓风干燥机干燥到含水量为10%-17%,包装得成品。本发明不但没有改变大米的香味,而且增加了营养成分和保健成分。
Description
技术领域
本发明属于保健食品领域,具体是涉及一种具胚米及其制备方法。
背景技术
中医认为大米(稻米)性味甘平,有补中益气、健脾养胃、益精强志、和五脏、通血脉、聪耳明目、止烦、止渴和止泻的功效,认为多食能令“强身好颜色”。大米粥具有补脾、和胃、清肺功效。米汤有益气、养阴、润燥的功能,性味甘平,有益于婴儿的发育和健康,能刺激胃液的分泌,有助于消化,并对脂肪的吸收有促进作用,亦能促使奶粉中的酪蛋白形成疏松而又柔软的小凝块,使之容易消化吸收,因此用米汤冲奶粉或给婴儿作辅助饮食都是比较理想的。稻米中的黑米、红米等又是珍贵的食药兼用米,具有滋阴补肾,健脾暖肝、明目活血、降低血脂等疗效。此外,对于少年白发、妇女产后虚弱,病后体虚以及贫血等均有很好的补养作用。如黑米所含锰、锌、铜等无机盐大都比普通大米高1-3倍,含有维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分。
由于大米胚中含有的γ-氨基丁酸(GABA),对人体健康具有重大作用。因此,在食疗保健方面日益受到重视。除此之外,糙米的种皮含有丰富的维生素、氨基酸和矿物质,完全弃之会使大米的营养价值大打折扣。但是,完整的糙米不易吸水,而且口感不好。因此,需要生产出既能保留有一定比例的胚,又能提高口感,只有部分种皮的具胚米。另外,需要加工制成免淘米,以减少淘米造成的胚部损失。
发明内容
本发明提供一种具胚米的制备方法。本发明是以糙米为原料,加工成的具有完整的胚,和种皮附着量不超过50%的保健价值高、营养丰富的具胚米。
本发明的上述目的是通过下列技术方案来实现的:
一种具胚米的制备方法,其步骤如下:
(1)将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用40-55℃的清水浸泡30-45min后采用人工或机械淘洗具胚米;
(4)将步骤(3)的具胚米捞出,沥干,用鼓风干燥机干燥到含水量为10%-17%,包装得成品。
前面所述的制备方法,优选的是,步骤(1)所选糙米是白米、红米、紫米、黑米或糯米。
前面所述的制备方法,优选的是,步骤(3)清水的温度为43-53℃(优选50℃的清水)。
前面所述的制备方法,优选的是,步骤(3)浸泡时间为33-43min(优选40min)。
前面所述的制备方法,优选的是,步骤(4)干燥到含水量为12%-16%(优选干燥到含水量为15%)。
本发明的主要创新点体现在:
(1)γ- 氨基丁酸的保健价值已经得到公认,本发明的具胚米即保留了胚,又保留了部分种皮,尽量减少了养分的损失。
(2)日本学者的研究结果证明,大米经50℃的水浸泡半小时能够增加大米中γ- 氨基丁酸的含量,γ- 氨基丁酸是预防心脑血管疾病的功能性物质,对中老年人群具有预防疾病和保健作用。
本发明与现有技术相比较,其技术效果体现在:
(1)工艺简单,生产效率高,能耗及损耗小,成本低;
(2)大米具有补中益气、健脾养胃等作用,保留胚和部分种皮的具胚米,保健功能更加全面;
(3)不但没有改变大米的香味,而且增加了营养成分和保健成分;
(4)长期食用本具胚米有益气补血、健脾养胃、美容养颜和延年益寿的功效。
具体实施方式
下面结合实施例详细说明本发明的技术方案,但保护范围不被此限制。
实施例1:一种具胚米,通过以下步骤制备:
(1)首先将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用50度的清水浸泡30分钟后采用人工或机械淘洗具胚米;
(4)将步骤(3)浸泡过的大米捞出,沥干,用鼓风干燥机干燥到含水量为10%,包装得成品。制备的具胚米可以蒸饭、可以熬粥等。
实施例2:一种具胚米,通过以下步骤制备:
(1)首先将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用50度的清水浸泡30分钟后采用人工或机械淘洗具胚米;
(4)将步骤(3)浸泡过的大米捞出,沥干,用鼓风干燥机干燥到含水量为17%,包装得成品。
实施例3:一种具胚米,通过以下步骤制备:
(1)首先将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用50度的清水浸泡30分钟后采用人工或机械淘洗具胚米;
(4)将步骤(3)浸泡过的大米捞出,沥干,用鼓风干燥机干燥到含水量为12%,包装得成品。
实施例4:一种具胚米,通过以下步骤制备:
(1)首先将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用50度的清水浸泡30分钟后采用人工或机械淘洗具胚米;
(4)将步骤(3)浸泡过的大米捞出,沥干,用鼓风干燥机干燥到含水量为14%,包装得成品。

1.一种具胚米的制备方法,其特征是,步骤如下:
(1)将稻谷脱壳获得糙米;
(2)用胚芽米机将糙米加工为具胚的米粒不低于70%,种皮附着量低于50%的具胚米;
(3)用40-55℃的清水浸泡30-45min后采用人工或机械淘洗具胚米;
(4)将步骤(3)的具胚米捞出,沥干,用鼓风干燥机干燥到含水量为10%-17%,包装得成品。
2.根据权利要求1所述的制备方法,其特征是,步骤(1)所选糙米是白米、红米、紫米、黑米或糯米。
3.根据权利要求1所述的制备方法,其特征是,步骤(3)清水的温度为43-53℃(优选50℃的清水)。
4.根据权利要求1所述的制备方法,其特征是,步骤(3)浸泡时间为33-43min(优选40min)。
